“ESPRESSO” Espresso is a concentrated form of coffee served in small, strong shots and is the base for many coffee drinks. It's made from the same beans as coffee but is stronger, thicker, and higher in caffeine. However, because espresso is typically served in smaller servings than coffee, it has less caffeine per serving.

Ingredients: Coffee bean, and Hot water

Steps to make Espresso: 1. Preheat your portafilter and cup by pulling an empty cover coffee) through your machine. Having your tools warmed ensures the quality of your espresso. 2. Grind: To capitalize on the best your beans have to offer, they should be freshly roasted and always ground immediately before brewing. But the texture of the grind is possibly the most crucial aspect of the quality of an espresso shot. 3. Measure: The amount of measured coffee you need to fill the portafilter is called the dose. A “double-shot” (the most common way to pull espresso) is about 3 tablespoons of grounds, or somewhere between 14 and 18 grams (hence the need for a scale). 4. Tamp: There is an art to the tamp. Tamping is the process of packing your grounds in the portafilter to guarantee even, uninform extraction as the water is forced through the coffee. The proper way is to hold your elbow at a 90-degree angle, prop your portafilter on an even surface, then apply firm pressure until the coffee has a polished, even appearance. 5. Brew: The portafilter now goes into your espresso machine’s head with your preheated cup placed underneath.

“Americano" Caffè Americano is a type of coffee drink prepared by diluting an espresso with hot water, giving it a similar strength to, but different flavor from, traditionally brewed coffee. The strength of an Americano varies with the number of shots of espresso and the amount of water added.

Ingredients: Espresso, and Hot water

Steps to make Americano: 1. Pull Espresso Shot: If you are using an espresso machine it is all about placing a cup or glass under the portafilter and pushing the start button to pull your espresso. For a standard size Americano, you will need a double shot which is about 2 ounces, but some people will also use 3-ounce espresso for their recipes. 2. Prepare the Water: Ultimately boil down to your preferences and the taste you are looking for, anything between 160 and 170 degrees Fahrenheit often works well enough. And once the cup is hot enough, you can pour water for your Americano. 3. Assemble Americano: Pouring water over the espresso can scald the coffee and make it bitter and will also mean you will lose the rich crema. The right way to assemble your Americano is to pour the espresso over the hot water slowly and steadily. And to make sure you preserve, even more, crema, you can place the cup with the water on your machine and brew the espresso directly over it.

“Lungo” Lungo (Italian for "long") is a beverage made by using a coffee – short lack (a single espresso shot) with much more water (generally twice as much), resulting in a larger coffee, a lungo. An espresso will have about 25 ml (approx 1 oz) of water in it; a Caffè Lungo will have about 50 ml (approx 2 oz). It is less strong than espresso, but a bit more bitter.

Ingredients: Espresso, and Hot water

Steps to make Lungo: 1. Grind your coffee beans to an even consistency. Normally, we grind at 9 or so for a normal espresso, using 18g of coffee in to pull our shot. For the Lungo, we're going one or two steps coarser, to 11, but dosing the same amount. To ensure your grind is uniform, grind out a few grams after making the coarser adjustment, and dispose of them before grinding the dose of coffee you'll be using. 2. Add two shots of the fee to the portafilter of your coffee machine. Tamp the beans with around 30 pounds of force. Ensure that the pressure is level, so the water can pour through evenly. 3. Adjust the extraction on the espresso machine to extend extraction to 35 seconds. 4. Pull a double shot of espresso into your cup or glass. This should take 20-35 seconds to fully pour. 5. Once pulled, serve the cup with a demitasse spoon, to mix the crema into the shot, if the drinker so desires. Add sugar to taste if you like and stir with a spoon.

5

“Caffé Doppio” Doppio is a double shot, extracted using a double hhandle and basket. This results in 60 ml of drink, double the amount of a single shot espresso. More commonly called a standard double. Doppio is Italian, meaning "double".

Ingredients: Espresso, and Hot water

Steps to make Doppio: 1. Grind the fresh coffee bean into powder. 2. Place espresso bean powder into the portafilter or group (handle) of the espresso machine, tamper it hard (not too hard). 3. The group filter/coffee filter should be a double layer. 4. Turn on the espresso machine. 5. Wait for 18-25 seconds and you will have your espresso.

6

“Cappuccino A cappuccino is an espresso-based coffee drink that originated in Italy and is traditionally prepared with steamed milk foam. Variations of the drink involve the use of cream instead of your milk, using non-dairy milk, and flavoring with cinnamon or cover ingredients.

Ingredients: Double espresso, Steamed milk foam, and Hot milk

Steps to make Cappuccino: 1. Warm the espresso machine. Put the coffee in the filter basket of the portafilter, gently but firmly tamp it down with a tamper, and secure the portafilter in the brew head. Place a 5- or 6-ounce (148- or 177ml) cup directly under the brew head. 2. Brew just long enough to yield 1 to 1 1/2 ounces (30 to 44 ml) of espresso. Turn your machine off just as it finishes pouring the last of the pale-colored crema and before the espresso becomes watery, which you’ll learn with practice. The exact time will depend on your machine. 3. Turn on the steamer and let it warm up. Meanwhile, pour the milk into a stainless steel pitcher. Submerge the tip of the steam wand at least half an inch below the milk surface and turn on the practice of the wand remains just below the milk surface. As the milk begins to heat up, tilt the pitcher slightly to swirl the milk and continue to steam until the side of the pitcher becomes almost too hot to hold. 4. Very slowly pour the milk into the cappuccino. 5. Sprinkle with cocoa powder or cinnamon, if desired. Serve hot.

7

“Flat White” A flat white is a coffee drink consisting of espresso with microfoam (steamed milk with small, fine bubbles and a glossy or velvety consistency). It is comparable to a latte, but smaller in volume and with less microfoam, therefore having a higher proportion of coffee to milk, and milk that is more velvety in consistency – allowing the espresso to dominate the flavor while being supported by the milk.

Ingredients: Espresso, and Steamed milk

Steps to make Flat White: 1. Prepare two shots of espresso and pour them into a glass. 2. Steam the milk and then froth the milk for at least a minute to get it foamy. Steam the milk to 55–62 °C. Learn how the right temperature feels in your hand when holding the pitcher or use a thermometer to take the temperature of the milk or use a thermometer to take the temperature of the milk. 3. To make the milk velvety and smooth and disperse any bubbles, thump thaddedcher on the counter, and swirl the milk lightly around the pitcher. 4. Pour the hot frothy foamed milk over the espresso. 5. Make a latte art pattern on the surface of the flat white (if desire).

8

“Café Mocha” Like a caffè latte, caffè mocha is based on espresso and hot milk but with added chocolate flavoring and sweetener, typically in the form of cocoa powder and sugar. Many varieties use chocolate syrup instead, and some may contain dark or milk chocolate.

Ingredients: Espresso, Steamed milk, Cocoa powder or Chocolate syrup, and Whipped cream

Steps to make Café Mocha: 1. Make around 35ml espresso using a coffee machine and pour it into the base of your cup. Add the drinking chocolate and mix well though smooth. 2. Steam the milk with the steamer attachment and pours the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming into the center. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, thoroughly will hit the back of the cup and start naturally folding in on itself to create a pattern on the top. 3. Fill your mug with heated milk. If there's any foam, be sure to hold it back with a spoon, so it layers above the mocha on top. 4. Top with whip cream, a sprinkling of cocoa powder, and enjoy! Chocolate or caramel syrup -- or even cinnamon or turbinado sugar -is a nice touch, too.

9

“Café Latte” Cafe latte (or simply latte) is a coffee drink made with espresso and steamed milk. The word comes from the Italian cafè e latte which means "coffee & milk". It is the combination of espresso and milk.

Ingredients: Espresso, and Steamed milk

Steps to make Café Latte: 1. Prepare the espresso. 2. Pour milk to the pitcher. Make sure your stea wand cloth is moist. 3. Purge the steam wand and pull it to far up and straight position. Place the pitcher so that the nozzle is aligned to the steam wand. Make sure the steam wand nozzle is in the middle of the pitcher and just below the milk surface. Tilt the pitcher a bit to optimize the whirlpool later on. 4. Switch on the steam wand. Start with the nozzle just below the surface but after a second or two rises the pitcher a bit so that the nozzle gets deeper into milk. Make sure the nozzle does not touch the bottom of the pitcher! 5. Swirl the milk in the pitcher utilizes is smooth, silky, and shiny. 6. Pour the caffe latte and enjoy!

“Macchiato” Caffè macchiato, sometimes called espresso macchiato, is an espresso coffee drink with a small amount of milk, usually foamed. In Italian, macchiato means "stained" or "spotted" so the literal translation of caffè macchiato is "stained” or “marked coffee.”

Ingredients: Espresso, and Steamed milk

Steps to make Macchiato: 1. Make the espresso shot. Return the portafilter to the position in the group head and turn it to lock it in place. Place a demitasse cup under the portafilter and turn on the water to pull the shot. Stir the espresso to distribute the crema, which is the foam that builds up on top. 2. Steam the milk. Transfer cold milk to a tall metal container. Hold the container at a 45-degree angle to the steam wand. Insert the steam wand into the milk and turn on the steam. Steam until the milk has increased in volume and the container is hot to the touch. Remove the container and clean the wand with a damp towel. 3. Pour the milk and serve hot. When the milk is ready, pour the steamed milk onto the espresso. Use a spoon to scoop a dollop of foam on top.[4] Serve the mamacchiato immediately. You can add sugar, garnish the top with cinnamon, or drink the macchiato as is.

“Brewed Coffee” Brewed coffee is made by pouring hot water onto ground coffee beans, then allowing it to brew. There are several methods for doing this, including using a filter, a percolator, and a French press. Terms used for the resulting coffee often reflect the method used, such as drip-brewed coffee, filtered coffee, pour-over coffee, immersion brewed coffee, or simply coffee.

Ingredients: Coffee beans, and Hot water

Steps to make Brewed Coffee: 1. Grind the coffee. Grind coffee to a coarse ground. (If you’re using pre-ground coffee, you can skip this step). 2. Add coffee grounds to the filter. While water is boiling, add coffee grounds to the filter. Here we show the grounds in a permanent filter. 3. Get the correct temperature of the water. Once the water has boiled, wait about 30 seconds before pouring so that the water has settled down slightly from its active boiling temperature. This is called “off boil” water. 4. Begin your brew pour. Pour water steadily and evenly over the grounds. We recommend using a clockwise motion starting at the middle and moving towards the edge, and back to the center. 5. Serve & enjoy. Pour coffee into your favorite coffee mug and enjoy. Drink it black or with any of your favorite coffee bar additions.

“Ice Foam Coffee” Slightly sweetened ice-cold espresso poured through a distinct layer of surprisingly creamy, nonfat milk cold foam. Cold foam is made using a special blender that whips non-fat milk very quickly to create a texture that I can only relate to melted ice cream.

Ingredients: Non-fat Milk, Brewed Coffee, and Ice

Steps to make Ice Foam Coffee: 1. Fill that glass full to the rim with ice. If you want to get serious about your iced coffee, you can make ice cubes out of coffee too. Then you won’t get that “watered-down” effect. And if you’re into that flavored sort of coffee then go for it. 2. Pour a cup of freshly brewed coffee into a blender, adding some crushed ice cubes and around about a quarter of a cup of milk (for one serving). 3. Add any flavorings if you want to and then blend until thick, around 8-12 seconds. 4. Serve in a lovely glass and enjoy.

15

“Frappe” A frappe (pronounced frap-pay) is an iced beverage that has been shaken, blended, or beaten to produce a tasty, foamy, and refreshing drink. It is served cold, often with whipped cream and toppings. You can add ice before or after beating the coffee and custom additives such as sugar, milk, vanilla, and sweet sauces.

Ingredients: Whipped Cream, Milk, Sugar, Instant Espresso Coffee, and Crushed Ice

Steps to make Frappe: 1. Pour the coffee into a blender with the milk and 2 or 3 handfuls of ice cubes. Add as much sugar syrup as you like, starting with a small amount – you can always stir more in at the end if you’d like it sweeter. 2. Blend until the ice is broken into an icy slush and is foamy. Begin to blend on low speed, slowly increasing the speed to high, and blend until smooth 3. Pour into a glass, and add a scoop of ice cream or some whipped cream if you like

“Chai Latte Chai lattes are usually made with water, milk, and black tea with chai spices such as cinnamon, cardamom, black pepper, ginger, cloves, and star anise. Most chai tea bags will some variation of those spices in it so as long as you get that type of tea, you should be good.

Ingredients: Chai tea, Milk, Water, Cinnamon, and other spices

Steps to make Chai Latte: 1. Skip this step if you are using ground spices. Add the five essential spices to a small saucepan. Cook over medium heat, making sure to stir the spices or shake gently to prevent burning. The spices are toasted once they start to emit a rich, strong fragrance. 2. Brew Tea: Pour water into a medium pan and add fresh ginger and toasted spices. Simmer on medium heat for 5 minutes 3. Steep, Sweeten, and Strain: Remove the hot water from the stovetop and add in the tea leaves or tea bags. Place a lid on the pot and allow the tea and spices to steep for 10 minutes. Once the tea is steeped, add your choice of sweetener. Set the tea mix aside. 4. Froth Milk: Using a new, medium saucepan, bring the 4 cups milk to a boil, making sure to stir often to avoid burning. Shake or whisk vigorously if using whole milk. 5. Pour and Enjoy! Fill your Top with the warm, frothy milk. Add a small amount of ground cinnamon on top for garnish.

“Green Tea Latte A green tea latte is simply a latte made with green tea instead of espresso. Traditional lattes are a blend of steamed milk and espresso, but in a green tea latte, we remove the coffee and use tea in its place.

Ingredients: Matcha green tea, Milk, and Sugar

Steps to make Green Latte: 1. Spoon the matcha green tea powder and the sugar into a mug or cup. 2. Add the warm water and mix with a spoon or with a whisk until it is a smooth dark green paste to ensure no lumps form. 3. Warm the milk in a small saucepan and pour into the mug until nearly full. Use cold milk for an iced latte. 4. Use a whisk to mix the paste and milk together until smooth and light green in color. 5. If you so wish, you can add a few sprinkles of matcha green tea powder on the top for decoration. Or add ice for an extra cold iced latte.

“Hot Chocolate Hot chocolate, also known as drinking chocolate, cocoa, and as chocolate tea in Nigeria, is a heated drink consisting of shaved chocolate, melted chocolate or ccocoa powder, heated milk or water, and usually a sweetener. Hot chocolate may be topped with whipped cream or marshmallows.

Ingredients: Cocoa powder, Milk, and Sugar

Steps to make Hot Chocolate: 1. Add some sugar to the bottom of the mug. Cocoa powder is quite bitter so you may need more sugar than you realize. I go with 2 tablespoons of sugar for 1 tablespoon of cocoa. 2. Then add some unsweetened cocoa powder, 1 tablespoon. Try using a dark chocolate variety for an intense cup. 3. Then add some unsweetened cocoa powder, 1 tablespoon. . A little splash of milk just to incorporate the dry ingredients, 1-2 tablespoons. 4. Stir together until no lumps remain and the mixture is smooth. 5. Pop it in the microwave for a minute then stir to distribute the heat.
