GO EASY ON YOURSELF

On a recent visit with my sister, I finally got a chance to catch up with an old favourite character by seeing Bridget Jones’s Baby. While we watched (and laughed), a flashback in the movie inspired a deep, nostalgic memory dive into the original Jones. There’s a moment in that oldie-butgoodie that struck me as appropriate for this time of year, when we all can get caught up in the madness of the season and reach a little further than comfortable to create the perfect evening. As a younger Bridget realizes that, after hours of kitchen prep, she’s made “blue soup, omelette and marmalade� for her friends, Mark Darcy reminds her that Bridget’s friends are there to see her— damn the inadequate cooking.

Now, I’m actually a fan of throwing myself into the host role during the holidays, and I’ve been known to test-kitchen a cookie recipe several times before I’m ready to include it as my contribution to the annual exchange. But I’ve been keen to simplify this year, inspired by a couple of the people in this month’s issue.

For Lauren Mote, the bartender extraordinaire who shares her party-making tips for “Catering to Your Guests� (page 73), it’s all about the punch bowl: a simple (but delicious— hello, watermelon and gin!), make-ahead drink that lets you spend your time hanging out with friends, not playing bartender.

And for designer Amanda Hamilton, whose very untraditional holiday gathering we highlight on page 60, it’s about not getting so hung up over what people might expect from the season. Hamilton, whose holiday decor embraced Moroccaninspired fabrics and pastel shades, chose to make Southern-style dishes over classic turkey and mashed potatoes.

Despite my current intentions, I’m bound to go overboard at some point in the season, and ill-advisedly decide that the night will be that much better if I dive into my copy of Food Lab and try to execute something risky and ludicrously complex. But whether my holiday gatherings end up featuring a perfect sous vide plum pudding or just blue soup, I know my loved ones will be smiling with me in good cheer as we all dig in. Here’s wishing good friends and good cheer to you, too, whether your coming holiday dinners be ambitious feasts or happy, homey havocs.

A Vancouver salon takes style cues from vintage Hollywood.

At a mere 500 square feet, the Glamoury’s layout might seem to be a rigid, restrictive box. But by giving each area at this Vancouver salon its own look, Ste. Marie’s Kate Snyder and Jessica MacDonald managed to maximize the small square footage: the waiting lounge glimmers with red and gold, while the shampoo stations rest amid a variety of purple undertones. It’s a space that celebrates old Hollywood romance and lavish art deco design in equal measure.

“In Vancouver, you don’t see a lot of that type of look here; it’s more common in Los Angeles or other cities,” notes Snyder. Red carpets and brass tones hearken back to the days of classic cinematic glamour, while the mix of bronze and mirrored surfaces (along with an emphasis on swooping, arcing shapes) brings the deco vibe. “We started playing with shapes and textures and colours,” says MacDonald. “We just wanted to express what our own version of glamour could be.” —Carlo Javier

HOLIDAY HERITAGE Jillian Harris of Love It or List It Vancouver turns a heritage home in Vancouver’s Point Grey neighbourhood into a backdrop for a dream Christmas, past and present.

Classic pieces like the airplanes and trucks (designer Francesca Albertazzi sourced these from Spruce Collective) help create that childlike Christmas that everybody wants to escape back to.

Pare back furnishings. Christmas trees and their cornucopia of presents require room to breathe, so the designers liberated the house of any extraneous furniture (hutches, desks, side tables, we’re looking at you).

here’s one surefire way to get an extremely busy, then-secretly pregnant TV host and entrepreneur to take on yet another massive makeover project: get her to fall in love with the house. One visit to scope out an 1890s heritage home at UBC— the stately architecture, the wainscoting, the mouldings!—and it was all over for Love It or List It Vancouver star Jillian Harris. “When I first saw it, my jaw dropped to the floor,” she says.

Built a century before open concept was the mode du jour, the Vancouver home was surprisingly bright and airy, with white walls, natural woods and plenty of windows. Harris was brought in to decorate the house for last year’s Homes for the Holidays tour, and loved how it retained so much architectural character and soul even after extensive renovations to update the bathrooms and kitchen for the homeowner’s modern family and contemporary tastes. The designer had months to plan for the tour makeover but only a two-day window to physically decorate and transform the family home into a winter wonderland. To pull this off, Harris was going to need a little help. This is the part of the Christmas story where her Love It or List It elves come in.

Real garlands are a must. You can’t beat that look that says you’ve gone out into the woods, cut fir branches and woven them together yourself—store-bought will never compare. “Sure it gives you the colour, but not the feeling, or that smell you get when you walk into the house,” says Albertazzi.

Mix traditional with modern. A sophisticated and modern colour palette of ice blues, soft pinks and whites seamlessly added a fresh contemporary layer to the 1890s home.

says head LIOLIV designer Francesca Albertazzi, who, along with a team of designers from the show, tirelessly worked 10-hour days (being “hopped up on coffee” helped) to execute Harris’s vision. Luckily, she says, they “had a great canvas to work with.”

The home’s traditional turn-of-the-last-century bones were already layered in contemporary touches, like dusty-blue modern furnishings and vivacious pop prints (from the Tate Modern) in the entranceway, with everything very neutral throughout. Harris’s design concept took cues from the homeowner’s style to create a series of holiday scenes that intertwined both time periods, something the designers got to play up with a duo of show-stopping trees.

In the family room, all the reds, golds and greens of Christmas were layered on every branch of a luscious evergreen, with wooden ornaments and vintage toys adding a nostalgic touch—“the nutcracker just says ‘Christmas,’” explains Albertazzi. Old-timey pinwheels from the Cross Design and just-picked-from-the-woods-style floral arrangements in simple white vessels added a sense of quiet to the room. Milk and cookies on the table, a letter to Santa, a present or two peeking out of torn wrapping paper beneath the tree—all became

Natural boughs, garlands and flowers were a must for the TV host and interior designer, who stuck to fresh-from-the-field mixes of soft sage and blue-hued eucalyptus greens, along with blush-pink florals.

Have a clear concept.

“If you’re picking between 15 types of chairs for your dining table, how are you supposed to pick the right one if you don’t have a concept?” explains Albertazzi.

This holds true every day of the year.

Itty-bitty lighting can work magic. When things are already quite busy or you’re looking for a simple way to add a layer of holiday to the space, drape precious string lights on windows or weave them into flower arrangements.

part of that TV magic the LIOLIV crew does so well: telling a story through strategic details that make you feel like you’ve just stepped into a family’s early morning Christmas, circa 1942, the kids about to run down the stairs at any moment.

“Wrapped gifts can be really cool, kill-two-birds-with-one-stone decor,” adds Harris. Pick paper and ribbon that matches your holiday theme and stack up presents into little vignettes as you go, says the designer; the presents become part of your decor (and beat a last-minute $70 topiary tree any day). Natural boughs, garlands and flowers were a must for the TV host and interior designer, who stuck to freshfrom-the-field mixes of soft sage and blue-hued eucalyptus greens, along with blush-pink florals. (And the by-product is that gloriously woodsy Christmas smell you can’t buy in stores.)

Both Christmas trees came from David Hunter in Vancouver, and the white flocked nine-foot stunner that holds court at the centre of the house was one of Harris’s favourite design moments in the home. There, a tempered colour palette of pale pinks, dusty blues and whites signalled a decidedly sophisticated change in mood to the kids’ Christmas bonanza down the hall. Go easy on the glitz.

The designers set the dining table with restrained hits of silver and gold. “We didn’t want it to be too overbearing, so we used gold-rimmed glasses and plates—no giant gold brocade ribbons,” says Albertazzi.

after-dinner entertaining with ample sparkling wine and sweet pastel macarons.

In the bright and sparkling dining room nearby, a full dinner spread with a luscious centrepiece of greens, gifts and gold-rimmed glassware was another Christmas moment frozen in time. “Things like the fur on the chair, and those little cloches—everything’s finished. All that’s missing is the homeowner coming back in and sitting down for the meal,” explains Albertazzi. “That really draws people in.”

Upstairs in the girl’s room, delicate blush pinks repeated with twinkling whites and all sizes of plush bunny rabbits; the designers even made sure her sweetest party outfit was hung up, laid out and ready for the holiday festivities.

“You’ve had breakfast, Mom’s cleared that up, she’s set up the Champagne and the drinks for later that evening, and now the kids just need to wash up and get into their little outfits because the party’s going to start,” explains Albertazzi, describing the scene they created.

“Everything’s just to that point where it’s perfect and we’re waiting for the guests and the family to arrive. That was the moment we were trying to create throughout the house,” continues the designer.

ON THE WATERFRONT A house on the edge of the Sunshine Coast finds its soul.

Time Pieces Many of the furniture pieces were already in the homeowners’ collection, including the rug, which belonged to her grandmother. The sunburst clock over the fireplace was discovered 25 years ago in a dumpster—and it still works.

W

hen homeowners Andrew and Laura first pulled up to this waterfront home on B.C.’s Sunshine Coast, its exterior didn’t do much to wow them. “This house is really, really nondescript from the outside,” says Andrew, describing the home on Halfmoon Bay. But, he says, that was part of the appeal: there was a surprise inside. “You pull up to this place and it looks like nothing, and then you walk inside and see the view.” And it’s a stunner.

“We didn’t want anything that took away from that,” says Andrew of the dramatic site with views of Merry and Thormanby Islands in the foreground and Vancouver Island beyond, across the Strait of Georgia. It’s what sold Andrew and his wife, Laura, on the ’80s-era house. “I walked in the door and it was like I was on a boat,” he says of the 180-degree views.

But the 2,200-square-foot post-and-beam structure was tired and in need of a serious reboot. And yet they never thought of tearing it down. “I almost feel like houses have a soul, and that our job is to bring out the best of what the house is,” says Andrew. With great bones and an unrivalled proximity to the water (current setback rules wouldn’t allow any new building to be as close to the shoreline), they decided to renovate and turn a recreational property into the primary residence for their young family.

Hot for Teak Because so much of the home is white modern, “the teak helps to take it back to that ’60s/’70s rich grain with lots of variation in colour,” says designer Chad Falkenberg. It’s particularly striking in the kitchen, where custom pulls pair with white cabinetry, and the adjacent teak cabinets are given a matte finish. The quartz counter is also in a honed, flat finish.

Seaside Escape A vintage rosewood dresser from Fullhouse Modern is the perfect fit for the midcentury design of the home, along with a cozy low-pile shag rug from Salari. In the master ensuite (opposite), blue-green tiles from Heath “look great with the seascape that’s the inspiration for all of this,” says Falkenberg.

With a keen interest in mid-century-modern design (the couple also refurbed their Palm Springs home by themselves), Andrew and Laura knew what they wanted: a clean, simple, updated space that underscored the views outside. And, knowing what a reno involved, they decided to hire designers.

Chad Falkenberg and Kelly Reynolds of Falken Reynolds Interiors (winners in the 2016 Western Living Designers of the Year Awards) were wowed—first, upon revelation of the view, and, second, after scoping Andrew and Laura’s collection of mid-century furniture, including a Noguchi coffee table and a Saarinen Womb chair. Even the house itself had a vintage vibe, with its statement-making flagstone fireplace and fir-panelled ceiling.

“The view is so amazing that when you walk in, everything else is backdrop,” says Reynolds, “and we had to make sure it was quiet. We didn’t want to out-stage the setting.” So they made the picture windows even larger, added more of them, then played up the mid-century theme in as authentic a way as possible.

They stuck to a simple palette of bright-white walls and white-oak floors warmed with teak. “Because so much of it is white and really modern feeling, the teak helps to take it back to that ’60s/’70s rich grain with lots of variation in colour,” says Falkenberg. And the teak is repeated everywhere, from inside the master bedroom’s closets to custom drawer pulls in the kitchen. All the bathroom cabinetry is custom teak millwork, including a vanity designed to mimic a mid-century sideboard with sliding doors and integrated handles. “Falken Reynolds and the cabinetmakers probably put as much thought into the cabinets as many people do into a whole house,” says Andrew.

Alongside the custom work, the designers used the couple’s existing furniture—“all nubbly and cozy,” describes Reynolds—providing a textural balance to the white and glass and expansive views. And he convinced them to put out a circa-1940 alpaca rug from Colombia, passed on to Laura from her grandmother, as the funky centrepiece of the main living space.

Other textural interest was added through pattern and subtle variations of hue in the kitchen and bathroom tilework, whether in herringbone or vintage-looking blue-green Heath tiles. “We wanted to bring in little bits of texture and interest so it didn’t feel too stark or severe—even grout gives a little bit of softness and casualness,” says Falkenberg.

And those teal Heath tiles are a key pop of colour. “It’s a really strong mid-century colour,” says Reynolds, adding that the hue “looks amazing with teak.” That blue-green and teak also looks great with the seascape that’s the inspiration for all of this, says Falkenberg. It’s just one of many connections to the outdoors. The kitchen (once cave-like) now has extra windows, skylights (with LED-lit wells that emit a quiet, diffused light) and no upper cabinets—one of the few things Andrew and Laura weren’t sure about initially, but now happily concede is part of what makes the kitchen their favourite space. “I get pleasure out of it every day, multiple times a day,” says Andrew.

Designer Amanda Hamilton proves that festive doesn’t always have to mean classic as she invites friends home for the holidays.

P

hotographic evidence in these pages notwithstanding, Amanda Hamilton is not obsessed with the holiday season. She’s even gone so far as to say she doesn’t celebrate Christmas. She’s not religious, but perhaps more importantly, like Charlie Brown, she long ago became frustrated by the increasing over-commercialization of the season. “At some point, I’d just had enough,” says the Calgary designer, whose impressively varied portfolio of residential and commercial clients includes the stylish likes of 80th and Ivy, Native Tongues and the Beltliner restaurants. “The gift giving and a lot of the rest of it just started to feel forced.”

Grinchiness, however, is not in Hamilton’s nature. Instead, since her epiphany nearly a decade ago, she has managed to pull off a

stunning succession of holiday miracles—this year being no exception—that involves cultivating of all the festivity, warmth and delectability of the season without the predictable trimmings. “I do love the overall ambiance of the holiday, but I plan the season around more of a ‘world’ theme,” says Hamilton. She thinks of her seasonal decor, and her house in general, as an ongoing experiment in colour, texture and ambiance. “It’s kind of my playground for trying out different ideas.”

This year, as usual, Hamilton has opted for a non-traditional, subtly themed holiday style featuring touches of bronze and silver, as well as pops of peachy and blush pinks, soft blues, teal, navy and violet.

ember-roasted sweet potatoes. The table setting is a pastiche of cultural collisions, sentimental collections and contemporary takes on old-world traditions. Blush-pink placemats, chosen to complement the Moroccan artwork by her good friend Zoë Pawlak in the dining room, are set with silver-rimmed Wedgwood china (a rarely used wedding gift); vintage cut-glass rocks glasses hold bourbon sour cocktails; the beloved dining chairs, of unknown provenance, were hauled home from a trade show in North Carolina. In Hamilton’s hands, traditional cedar boughs, pine cones, berries and candles strewn loosely down the table’s centre take on a fresh, feminine feel.

(Incidentally, dinner is generally served a week before Christmas, as the couple spend the holidays in warmer climes.)

After dinner, guests are encouraged to sink into decadent nests of faux-fur throws and oversized pillows in velvets and metallic silver that, says Hamilton, give a “beachy-casual but festive vibe.” Countless vanilla and cinnamon-scented candles throughout the house ensure that, no matter how beachy the vibe, the home smells of rich wintry spices.

Atypical as some of Hamilton’s choices may be, even she can’t escape the lure of a decorated tree. This year, she custom-coloured white baubles with punches of pink, teal and violet. Likewise, the wreath above the fireplace is an artful take on the traditional form, sculpted from feather eucalyptus, camellia leaves, brunia, viburnum berry and olive.

While the appearance of gifts may seem contradictory to Hamilton’s values, they are, in fact, the very soul of the celebration. Through a local community-health organization, The Alex, Hamilton and her family are paired with a family who needs assistance. Every guest makes a contribution, and gifts were purchased and wrapped for a family whose Christmas would otherwise be fairly bereft of tangible cheer. (A few of the gifts are for the kiddie set in the Hamilton family as well.)

True to form, Hamilton will let next year unfold as it may without clinging to any potentially new traditions, no matter how big a hit this year’s colour scheme or menu was. “Next year it might be Chinese food, who knows?� she says. One thing is certain: for people who don’t celebrate Christmas, the Hamiltons sure do it up right.

Julia’s Caesar When I used to work regularly as a private chef, the most requested item I prepared for lots of different families was Caesar salad dressing. I was often asked to leave containers of it in refrigerators all over New York City! My master plan is to one day put it in a bottle (my mother is convinced that it will sell well and then my whole family will live in the “house that Julia’s Caesar built”), but, in the meantime, here’s the most direct way to get it from my kitchen to yours. The small victory here is abandoning convention and swapping a spoonful of mayonnaise for the customary raw egg to make a creamy, thick, luscious dressing without any worry about salmonella. Plus, what isn’t improved by a spoonful of mayonnaise? —Julia Turshen

What we’re eating and drinking CAKE STUCK TO THE PAN? Try freezing the cake and pan for several hours. Often this firms the cake enough that it can be removed without breaking apart. If that doesn’t work or the cake is already broken, mix the pieces with icing and make truffles or cake pops, or layer them with whipped cream and jam to make an English trifle.

1 small garlic clove, minced 4 olive oil-packed anchovy fillets, drained 1 tbsp fresh lemon juice 1 tbsp red wine vinegar ¼ cup extra-virgin olive oil 2 tbsp mayonnaise ¼ cup finely grated Parmesan cheese Kosher salt Freshly ground black pepper 3 romaine lettuce hearts, trimmed, washed, dried and cut into bite-sized pieces A handful of cherry tomatoes, halved

1. In a blender or food processor, purée garlic, anchovies, lemon juice, vinegar, olive oil and mayonnaise until smooth. Add Parmesan and give dressing a few pulses just to incorporate the cheese. Season to taste with salt and pepper. (Alternatively, finely chop anchovies, put them in a bowl with the rest of the ingredients and whisk everything together.)

2. Place lettuce in a large bowl and drizzle nearly all

of the dressing over it. Use your hands to mix everything together, making sure each and every piece of lettuce is coated with dressing.

3. Divide dressed lettuce among four plates. Divide tomatoes evenly among the salads and drizzle the last bit of dressing overtop. Serve immediately.

Tyler Day’s Roasted Butternut Squash and Goat Cheese Tarts 24 3-inch savoury tart shells 1 small butternut squash 3 large free-range eggs (orange yolks are best) 1½ cups whipping cream 1 to 2 tbsp kosher salt 1 to 2 tbsp cracked black pepper 1 tbsp thyme leaves, stems removed 10 to 12 oz fresh goat cheese ½ cup almonds, chopped and toasted Preheat oven to 350°F. Blind-bake* the tart shells in their tin liners until light golden brown (about 12 to 14 minutes).

Remove shells and raise oven temperature to 375°F. Split squash down the middle lengthwise, remove seeds and roast cut side down on a sheet pan lined with parchment paper until caramelized and cooked through—about 20-25 minutes. Let cool slightly, then scoop out the pulp and discard the skin.

In a water jug, blend eggs and cream with an immersion blender until well combined. Incorporate the squash pulp by pulsing small amounts at a time until mixture resembles pancake batter. Blitz in thyme leaves and season to taste with salt and pepper.

Set oven to 300°F. Place baked tart shells back in tin liners and fill about halfway with crumbled goat cheese and chopped toasted almonds. Top with squash mixture and bake until set (about 18 to 20 minutes). Remove tarts from tin liners and serve warm. Makes 24 tarts.

TIP Leftover squash is delicious the next day with a little bit of butter and maple syrup! *Blind baking refers to baking the tart shells before they’re filled to prevent them from becoming soggy.

Behind the service doors of Vancouver’s Railtown Cafe you’ll find Tyler Day’s catering kitchen. The café’s relaxed but vibrant atmosphere is filled with people craving made-from-scratch sandwiches, seasonal soups and build-your-own salads, and the wooden tables, along with red metal chairs, give it a lively, cool vibe. The catering kitchen, though also vibrant, is not quite so chill. This is where a team of 23 full-time cooks, 60 part-time cooks, partner Dan Olson and chef Day make things happen.

As you pass the first walk-in fridge, a cook is making a big batch of chimichurri. Céline Dion’s “Because You Loved Me” plays on the stereo, and while Day would prefer listening to Bob Dylan, there are a lot of different personalities in the kitchen, resulting in a pretty eclectic mix of music.

“What I love,” says Day, “is how different every day is.” Being a caterer, compared to being a restaurant chef, means being able to adapt. From a wedding to a barbecue or from a social cocktail party

to a plated dinner, every function is unique. “They’re all nice for their own reason,” says Day. And the menu they offer at each event is unique as well. Day and his sous-chefs get inspiration from what’s in season and what they feel like eating. “If something sounds good and my mouth starts watering when I’m thinking about it,” he says, “then I might put it down on paper.” And, eventually, on your plate.

Chef Day moves fast but gracefully, as someone who’s not only comfortable with but also thrilled by his environment—a guy whose passion for food continues past his 17-hour days, who comes home to make his own pasta from scratch. And in the meantime, he and his team will be opening three new Railtown Cafe locations around Vancouver in the next eight months. That, combined with the holiday season on the doorstep, will keep him busy for a while. He could be catering a wedding, cooking in front of a customer or, his personal favourite, barbecuing. Tyler Day’s Thai Lemongrass Meatballs One of the great truisms in the world is that everyone loves meatballs. These ones are elevated into the exotic but still use only a small list of ingredients stocked at every grocery store.

1 lb ground pork (keep cold until ready to mix) 1 tbsp palm sugar 3 tbsp Thai fish sauce 2 tsp lemongrass, chopped 2 tbsp sambal oelek chili paste 2 cloves garlic, roughly chopped 2 makrut lime leaves, broken up Cold water, as needed 2 eggs 2 tbsp rice flour 3 tbsp Thai basil, roughly chopped Peanut oil, for searing

In a small saucepan (or in the microwave), warm palm sugar with fish sauce until sugar is dissolved. Using a countertop blender, combine lemongrass, sambal oelek, garlic, fish sauce and lime leaves and blend until a smooth paste has formed. Add cold water if mixture is too thick and won’t blend on its own.

Whisk together eggs and rice flour until smooth. In a large mixing bowl, fold whisked eggs and rice flour, Thai basil and blended seasoning mixture into the ground pork, and mix vigorously with a wooden spoon until everything is well combined and the mixture starts to become slightly sticky.

Form mixture into balls (slightly smaller than a golf ball). Heat a small amount of peanut oil in a heavy-bottomed cast iron skillet or stainless steel frying pan over medium heat, and carefully brown meatballs. Ensure pork is cooked through before serving. For a unique and interesting presentation, skewer each meatball with a stick of lemongrass. Makes 12 to 14 canapés.

Birch Syrup Mousse ¼ cup birch syrup 2 cups whipping cream 1 cup icing sugar 3 egg whites 1 package Knox gelatin Prepare gelatin per package instructions and set aside. Place syrup and cream in a mixing bowl and whip on high until soft peaks form. Add ½ cup icing sugar and continue whipping until stiff icing peaks form.

Place cream mixture in a large bowl and set aside. In a separate bowl, whip egg whites to stiff peaks, adding remaining sugar gradually. Fold ⅓ egg whites into cream mixture to lighten, then fold in remaining whites. Fold in dissolved gelatin. Place into individual serving moulds (or one large mould) and refrigerate for 2 hours or until set.

When ready to serve, dip moulds into warm water for a couple of seconds and run a thin-bladed knife around the inside of each one. Turn onto serving plates and remove moulds. Garnish with fresh berries (saskatoons are best) and serve.

TIP This recipe is great because it’s super-simple, but the use of the outof-the-ordinary birch syrup—available at specialty grocery stores like Edible Canada—makes it both hyper-local and unique.

Pink Elephant Punch

1 Make punches. From eggnog to fish house, there’s nothing better for true “ahead of time” planning than punches. Use mismatched bowls, cups, glasses and saucers, and let people help themselves from bottles with nice labels or antique crystal bowls.

10 oz Tanqueray 10 gin 10 oz watermelon juice (fresh is best; Chasers is a good fresh brand) 10 oz fresh lemon juice 10 oz vanilla bean and ginger syrup (recipe follows) ½ oz Bittered Sling Zingiber crabapple bitters 30 oz sparkling water (Perrier, Pellegrino or club soda) Cucumber slices, for garnish

2 Make a thematic beverage to fit your event’s program—feel free to create your own menu, written on a chalkboard or something cheeky and playful, to let guests know what’s in store.

3 Start the party earlier in the day. We LOVE doing our entertaining at lunch or late afternoon and then changing the theme to something low-key or crazy upbeat in the evening, depending on who’s left standing.

4 Consider changing locations later in the night—it’s easy for a

party to get exciting and over the top, and that can cause problems if you live in an apartment or a duplex where the neighbours might lodge a noise complaint. Make an appointment ahead of time at a bar or karaoke joint so you can continue the fun, and you won’t have to flick the lights on and off at 11 p.m. to kick everyone out.

5 Give guests their own hostess gift. Consider handing out some of your summer preserves: tomatoes, jams and jellies, hot sauces, bitters or bottled cocktails that guests can take home with them.

Combine all ingredients except the sparkling water. Stir gently for only a few seconds to dilute the mix, then strain into clean, dated bottles. (You can store these in the fridge for up to 2 days before your event.) To serve, add one large cube or hand-chipped pieces of ice to each glass, add 4 oz of bottled punch mix and top with sparkling water. Garnish with a couple of cold cucumber slices.

Makes 10 servings.

Vanilla Bean and Ginger Syrup 1 vanilla bean, split and scraped 1 oz freshly juiced ginger 2½ cups water 3 cups white sugar Split and scrape the vanilla bean and combine with water in a saucepan.

Bring water to a slow simmer, then turn off heat. Add sugar and stir to dissolve.

Place in fridge and allow vanilla bean to steep in the syrup for 24 hours.

Add ginger juice to the cold, steeped syrup. Strain out vanilla bean and store in clean, dated, refrigerated bottle for up to 7 days. Makes 1 litre.

ull disclosure: I was late in life when I came into the bubbly embrace of Champagne. My path to wine geekdom was through Bordeaux, a region obsessed with classification and ranking. A great wine? It’s a first growth. An excellent one? A second growth, and so on. On top of this, in Bordeaux even the years are accorded scores, so one can take the quality of the wine on one axis and the quality of the year on the other and empirically determine the wine’s worth.

Champagne, on the other hand? Most of the time the top wines don’t even have a vintage. They’re blends of various years—not unlike wine that comes in a box, except 20 times more expensive.

Moreover, not only are there no stately chateaux smack dab in the middle of the vineyards, a big portion of the time, the Champagne houses were in the towns of Reims or Épernay and didn’t even grow their own grapes. I mean, who were they fooling?

The problem was, every time I ran into someone who knew more about wine than I did, they couldn’t stop going on about Champagne. My anecdotal sample of the Masters of Wine I’ve met revealed that the bubbles were far and away their most cherished wines. Same with master sommeliers and pretty much anybody else who was serious about wine. So I began to pay more attention.

Instead of throwing back a flute of bubbles in celebration, I began to imagine I had a Burgundy in my glass. I sniffed, swirled and eyeballed. It turns out: here I had been, ready to trip an old lady to get to a bottle of Chablis, and it had been in front of me the whole time—it was just obscured by the bubbles.

IT’S ABOUT THE PERFECT DAY TRIP FROM PAR IS On those rare occasions when the French rail system isn’t on strike, a TGV train from Paris to Reims is 49 minutes, barely longer than the trip to packed-with-tourists Versailles. Once there, that no-chateau business is suddenly your ally, with the numerous houses (Pommery, Taittinger, Ruinart, Lanson) all within close proximity. But the standout is the immense underground caves of Veuve Clicquot—les crayères—that date from Roman times, sprawl for kilometres under the city, and house rack and after rack of the famed yellow label. And if you need to repent for drinking before noon, there’s Reims Cathedral, the 13th-century temple where the kings of France were crowned—if we’re being frank, it’s quite a bit more impressive than Paris’s Notre Dame (and a tenth as crowded). westernliving.ca / n o v e m b e r

making wine hasn’t changed that dramatically since ancient times. Pick grapes, extract juice, let juice ferment, et voilà! You can add wooden barrels, you can add extra aging, but generally Nero would recognize the basic elements of a modern winery. But Champagne is a different, much more expensive, beast. It starts as normal wine in a bottle, but then you add the liqueur de tirage—a mixture of reserve wine and sugar— and reseal the bottle. A second fermentation then occurs in the bottle (that’s where the bubbles come from) called tirage. The Champagne continues to age in the cellar for sometimes five or more years, and, as it nears its completion, every bottle is placed in a special holder that keeps its neck pointed down so that the sediment can gather. To facilitate this process, each bottle is turned a quarter-turn repeatedly until the wine is clear.

But we’re not done. Next, the neck of every bottle is frozen so the sediment can be removed, a dosage is added (a mixture similar to the liqueur de tirage, this determines how sweet the wine will be), and it’s finally ready for the final famous cork to be inserted. Phew!

Add to this some of the most expensive vineyards in the world, and you realize that entrylevel Champagne is sort of a bargain.

What’s a “Grower” Champagne?

Most large Champagne houses—Moët, Mumm, et cetera—source their grapes from numerous growers throughout the region. A grower Champagne is one made more like a traditional wine, where the grape grower is also the winemaker, and uses grapes from his or her own land. Unlike the big houses, this, in theory, means the wine may more accurately reflect the terroir of a specific site. It also means the wines are apt to vary in quality and taste from year to year, something the large houses are able to remedy by blending multiple vintages to reflect their “house style.”

A further complicating factor: many grower champagnes also subscribe to the low- or zero-dosage theory, wherein very little or no extra liquid is added to the Champagne after the sediment has been removed. This makes for an exceptionally—and some claim excessively—dry style of bubbles.

Flutes Are for Amateurs Don’t shoot the messenger, but you know those lovely Champagne flutes Aunt Bertie gave you for your wedding? Ditch ’em. Here’s the problem: the slim, tapered design of the classic flute was created to concentrate the bubbles in a beautiful, constant stream, and it is excellent at doing this . . . but not at much else. In particular, the design sacrifices the ability to take in the wine’s distinct nose, or bouquet, which, on a bottle of wine that might be $300, is a travesty. Instead, source one of the new breed of glasses, like Riedel’s Veritas Champagne glass, which allows you to appreciate all aspects of the wine. And if you order a bottle at a restaurant and they have only flutes? Ask for white wine glasses while looking askance at the somm.

THE ONE TIME IT’S ACCEPTABLE TO USE CHAMPAGNE IN A COCKTAIL As a rule, people who use $80 bottles of Champagne in cocktails are . . . indulgent. But the one exception is the beautifully simple creation practised by Veuve Clicquot’s Benjamin West.

The playful painting of Marilyn Monroe by artist Michael Moebius was actually the first piece the homeowners bought for this Stephanie Brown–designed dining room. “They picked it up before construction even started!� laughs Brown. “It really had to be the focal point.� The artwork inspired Brown to create a room with just as much retro fun—but that still felt thoroughly modern. How? By pairing ’80s-cool geometric pieces (like the credenza, rug and chandelier) with softer lines. “The dining chairs and the oval table are more organic, and that balances out the harsher angles,� explains Brown. “It’s that mix that keeps it feeling fresh.�
