Love our gorgeous retro cover shoot? It was shot locally at Mount Lofty in Warrandyte State Park, an area rich in history. Warrandyte was originally known as Anderson’s Creek after James Anderson, who settled in the region in 1839 on the flats of the waterway. Twelve years later, the area made headlines when gold was discovered. It is believed to have been the first officially recognised discovery in Victoria.

STEP 2: Score the fat quite deeply into a diamond pattern but be careful not to cut through to the meat. Take a 360g jar of Maggie Beer Quince Glaze, $9.95, and brush it several times over the top and sides of the ham, covering all the fat generously. TIP: If you want to add a little zing, mix half a cup of seeded or plain Dijon mustard with the Quince Glaze before using. STEP 3: Leave to dry a few minutes then continue to brush with the glaze until you have used about half the jar. STEP 4: Place ham on a trivet in a shallow baking dish. Bake for 20 minutes at this high heat.

WOOLWORTHS Put together a gourmet antipasto platter of olives and cured meats from the deli.

STEP 5: Take out of the oven and brush several times again. Pour a little water in the base of the baking dish to prevent burning and return to the oven. STEP 6: Bake the ham for another 10 to 15 minutes until the whole of the ham is beautifully glazed.

“This is the perfect dish for Christmas, or any celebration where you are feeding lots of people,” says renowned cookbook author and national foodie treasure, Maggie Beer. Maggie’s number one tip is to buy the best ham you can afford, preferably meat from a heritage breed that has been traditionally smoked. STEP 1: Preheat the oven to 260ºC or as high a temperature as you can get. Take a 6kg ham and strip away the leathery skin, being careful not to remove any fat from under the skin – the fat is what will give you a beautiful burnish on the ham so don’t be afraid of it. STEP 2: Score the fat quite deeply into a diamond pattern but be careful not to cut through to the meat. Take a 360g jar of Maggie Beer Quince Glaze, $9.95, and brush it several times over the top and sides of the ham, covering all the fat generously. TIP: If you want to add a little zing, mix half a cup of seeded or plain Dijon mustard with the Quince Glaze before using. STEP 3: Leave to dry a few minutes then continue to brush with the glaze until you have used about half the jar. STEP 4: Place ham on a trivet in a shallow baking dish. Bake for 20 minutes at this high heat.
