With the money earned from catching rabbits, farm boy Percy Goss was able to buy his first car.

efore there were planes to shorten the long journey, it took months to sail from Scotland to Australia. That’s what pioneers William and Agnes Bell (and their five children) endured in 1839 – all for a new start in Australia. Luckily, the Bell family struck gold. The family leased their 25,000-acre property, known as the Gulf, in the 1840s and, when gold was discovered nearby in the 1850s, the Bells realised they could make a living feeding the thousands that flocked to the goldfields. Their homestead, Gulf Station, was built during this period. Today, Gulf Station is one of Australia’s oldest farms. A National Trust property that was occupied by the Bell family for nearly 100 years – and the location for the stunning fashion shoot featured in this issue of Eastland magazine. The Bells' youngest son, William Jr, and his wife, Mary Ann, bought

the property in 1871. With their eight children, they farmed cattle and horses until William passed away six years later, aged just 45. Mary Ann remained the matriarch of the property for the next 39 years and the family, known for their unfailing work ethic and generous hospitality, went on to breed prizewinning horses, pigs, cattle and sheep. In 1976, Gulf Station was acquired by the State Government for the people of Victoria, with management vested in the National Trust who restored the buildings and opened the station up to the public. TASTES OF SPAIN WITH MIGUEL

Celebrity chef Miguel Maestre, from Channel 10’s The Living Room, will cook up a storm at a live in-centre workshop on October 23. The Spanish-born chef, who has called Australia home for almost a decade, will host a workshop filled with the exotic tastes of his homeland and fresh ingredients from Eastland’s food retailers. “I have always kept love as my cooking philosophy,” Miguel says. It’s not all about fashion on race day – the best hair and beauty buys are a must

Race day is a great opportunity for dramatic makeup. Ensure all eyes are on you by balancing a strong lip colour with defined brows. First, perfect a dewy complexion with a long-lasting-but-luminous foundation. Next, define brows with a brow pencil or wax, then sweep soft brown eyeshadow over eyelids and along the lower lash line. Mascara and long-wearing matte lipstick in brick red, red wine and hot pink hues will complete the look.

While fascinators and eye-catching hats are firm favourites at the track, there are many options for spring racing hair accessories. Consider the look of your outfit before selecting your topper. If your look is soft, feminine and traditional, go for a pretty spray of fake flowers pinned to your head (real blooms look lovely, but they’ll wilt). If you’re sporting a more free-spirited look, a knotted headscarf will create a strong impact. And if your outfit is more tailored, look for a feminine chapeau that can be pinned just so.

MIGUEL MAESTRE’S PAELLA A LA MAESTRE SERVES 4 PREP TIME 20 minutes COOK TIME 30 minutes YOU'LL NEED Paella pan and paella burner, food processor, medium size pot, mixing bowls, spoons, ladles, chopping boards, tea towels and serving plate

INGREDIENTS

SOFRITO

1 tablespoon olive oil

150ml olive oil

400g Calasparra rice

5 large ripe local heirloom tomatoes

500g QLD U6 king prawns 250g baby calamari, cleaned, scored 5 scallops 200g fresh tuna, chunky diced 10 mussels, cleaned, alive 2L fish or chicken stock

4 cloves garlic, peeled 4 piquillo peppers ½ bunch thyme, leaves only ½ bunch parsley 1 bunch chives 1 teaspoon saffron threads

salt and pepper

1 teaspoon sweet paprika

200g fresh or frozen peas

1 teaspoon spicy paprika

2 lemons, halved

1 teaspoon smoked paprika

2 limes, halved chopped parsley, to garnish

FOR THE SOFRITO Place all ingredients in a food processor. Process until smooth. FOR THE PAELLA Heat oil in a large paella pan. Add rice. Cook, stirring occasionally, for about 5 minutes or until it changes colour from white to transparent. Stir in 12 large tablespoons of the sofrito. Cook for 3 minutes. Add seafood (except tuna) and stock. Season. Cook over medium heat, without stirring, for about 20 minutes or until stock has been absorbed and rice is almost tender. Reduce heat to low, add tuna and cook for a further 3 minutes to form a nice ‘soccarrada’ or crust on the bottom. If hob plate is not as big as pan, move pan around a little during cooking to ensure even heat. Add peas and remove from heat. Stand for 5 minutes. Squeeze over lemons and limes and season. Garnish with parsley. Serve paella warm, not steaming hot.
