Welcome to the 3rd edition of our quarterly magazine, On The Menu.

Summer is here and the sun is out, and with this change comes a shift of popularity from hot and hearty meals, to lighter and more colourful dishes.

In this edition of 'On The Menu', we have included a range of our different buffet/snack foods that are perfect on a platter in the beer garden, along with details and recipes of our new Franklin & Sons Tonic range.

In this edition, we have also handpicked a variety of recipes created using some of our current products.

Eat Curious joined the Waterside Range in May after a cook up to our team proved the quality and sublime taste of these meat-free menu items. Since then, we have taken on a range of their products, including: Bangers, Fillets, En Croutes, Pieces and Tenders

5 Curious Breaded Tenders

2 Cups sticky rice

2 tbsp sesame seeds, toasted

For the Katsu Mayo:

1/2 cup vegan mayo

1/2 cup katsu curry sauce

1 tbsp lime juice

For picked carrots and cucumber

1 cucumber, ribboned

1/2 small carrot, julienned

1/2 rice vinegar

1 tsp slt juice of one lime

5 tortilla wraps

I n g r e d i e n t s M e t h o d

Preheat the oven to 180c. Spread the tenders on a baking sheet and bake for 10-12 minutes or until heated through. Cook the sticky rice as per the package instructions. In a bowl, combine the carrots, cucumber, rice vinegar, salt, and lime juice. Mix well and let it sit for at least 15 minutes to pickle. In a small bowl combine the vegan mayo. katsu curry sauce and lime juice Whisk all the ingredients together until well combined and smooth Warm the tortilla wraps slightly. Spread a generous amount of the vegan katsu mayo and the cooked rice over each tortilla. Slice and divide the Curious Tenders among the tortillas, arranging them on top of the rice Add the pickled cucumber ribbons and julienned carrots. Sprinkle sesame seeds. To assemble the burritos, fold the sides of each tortilla inwards, then roll them up tightly from one end to the other, creating neat and secure wraps.

INGREDIENTS

50ml Lyre’s Pink London Spirit

5 Raspberries

1 Lemon Franklin & Sons Premium Indian Tonic Water

METHOD

Pour Lyre’s Pink London Spirt into a highball glass, and then add ice and top with Franklin & Sons Premium Tonic Water. Gently stir and garnish with raspberries and lemon slice.

ELDERFLOWER SUZE SPRITZ

WITH FRANKLIN & SONS ELDERFLOWER & CUCUMBER TONIC WATER

Elderflower Suze Spritz captures the essence of summer in every sip. This unique spritz combines British summer hedgerow flavours with elderflower, cucumber and apple juice to create a cocktail that is both refreshing and fruity.

INGREDIENTS

30ml Suze Apéritif

50ml White Wine

20ml Freshly Pressed Apple Juice

50ml Franklin & Sons Elderflower & Cucumber Tonic Water

Cucumber Ribbon (to garnish)

Sprig of mint (to garnish)

METHOD

Fill a wine glass with ice, then add all the ingredients. Gently stir and top with more ice if required. Garnish with a cucumber ribbon and a sprig of mint to serve.
