I am so thrilled to say that phrase for the first time this year. While the summer was fun-filled, I have to admit I’ve been chomping at the bit to dress in layers and enjoy all things pumpkin spice. Maybe it’s just me, but I find it energizing and revitalizing to know that change is in the air. I think it’s related to my need to keep life exciting. Perhaps it’s my inner child getting bored with the same old thing every day because I like to mix things up. I not only enjoy the lack of predictability—I embrace it. My aversion to monotony also fuels my entrepreneurial spirit. One of the great aspects of owning Waterways is that every day for me is a new adventure. No two days are alike. I wake up in the morning with a game plan for the day ahead all ready, and then that plan typically changes a few times before noon. This job certainly keeps me on my toes! Being an entrepreneur is such a rewarding experience beyond the ample variety it brings to my daily life. It allows me to create something, to make a difference in the community and to have fun doing it. I’m frequently asked if owning my own business is nerve-racking. Honestly, I don’t give it a second thought and am surprised that many people find it, well, daunting. They ask me why I like it so much, and I often tell them because it’s fun and exciting and because there’s certainly never a dull moment. Some people seem to get mired in their fears, especially their fear of failure, which prevents them from acting on their passions, on their goals. I say believe in yourself and make your dream happen—or at the very least try your hardest to make it happen. The other question I’m often asked is what I think makes someone successful. To me the key ingredient for success for any endeavor is hard work. One of my college professors always said, “There is no substitute for hard work,” and he was right. You have to be willing to put in the effort—and a lot of it!—and never give up. You need to employ an inner strength you may not even know you have. Persistence and perseverance with a pinch of passion, those are what I think fuels success. I’m excited for you to read through the pages our first men’s issue and see what drives our profilees. You just may even be inspired by them to follow your own passion—and I hope you do!

Funding the ‘Toughest Race in Texas’ Annual 4th & Goal Gala Supports Alzheimer’s Research

On November 8th, Austin City Limits Live at The Moody Theater once again hosts the 4th & Goal Gala benefitting The Darrell K Royal Research Fund for Alzheimer’s Disease. The evening starts at 6:30 PM with a cocktail reception and a silent auction. Attendees then gather on the theater’s main floor to enjoy supper, a live auction and a program celebrating the life and legacy of Darrell Royal. A little after 9 PM, The Doobie Brothers take the stage to perform hits from the band’s music career spanning some 40 years. The DKR Fund is committed to curing Alzheimer’s disease, to expanding Texans’ access to care

and treatment for this devastating disease as well as to better understanding mild cognitive impairment. Therefore, the gala’s proceeds benefit The Dell Medical School at The University of Texas at Austin, the Edith T. Royal Caregiver Initiative and the O’Donnell Brain Institute at The University of Texas Southwestern Medical Center. Last year’s sold-out event raised more than $1 million for these initiatives. “We are seizing the opportunity to build an incredible legacy of research excellence by honoring a man whose contributions to the lives of so many cannot even be measured,” said Ben Crenshaw, golf legend and Founding Vice Chair of the fund’s board of directors, at the 2018 gala. ‘If Not Texas, Where?’ Another speaker at last year’s gala was long-time family friend and DKR Fund advisory board member Matthew McConaughey. The actor reminisced about his enduring friendship with the Royals and emphasized how vital Alzheimer’s research is. He ended his remarks with this challenge: “If not now, when? If not Texas, where?” Thanks in part to grants from the DKR Fund, several Texas-based researchers have advanced our understanding of
the disease as well as potential treatments for it. “Our grantees’ valuable and tireless work…represents the drive and dedication that Coach Royal would be so proud of,” said Debbie Hanna, President of the DKR Fund. “Because of our grantees’ research, Texas will be ahead of the game in fighting Alzheimer’s and related diseases.” “The sad fact is that most everyone in our state is touched by this disease, and the Darrell Royal family is no exception,” Edith Royal has said. “The DKR Fund represents a commitment to excellence in Alzheimer’s research and care for Texans, the nation and the world. Be Wildfire Ready Free Service Assesses Homes’ Fire Risks “When it comes to wildfire,” says Chris Rea, wildfire mitigation specialist with Lake Travis Fire Rescue (LTFR), “it is not a matter of if one will occur but rather when.” To help homeowners in Travis County Emergency Services District 6 be prepared for when, LTFR offers the Wildfire Ready inspection and certification program. “The goal of the program is to educate residents about wildfire and to give folks action items that can be implemented to reduce their home’s and property’s risk,” explains Rea. “Things like caulking holes in siding, pruning vegetation around homes and keeping debris off the roof and deck can make a large difference as to if a home is left standing or not after a wildfire.” Once Rea inspects a home’s exterior and surrounding property, he provides the homeowners with a report describing what actions they must take to earn Wildfire Ready certifi-

new school to attend right in the neighborhood, thanks in part to the community’s developer, Haythem Dawlett and Legends Communities. Dawlett donated 12 acres on Bee Creek Road, valued at $1.1 million, to Lake Travis ISD in 2014. Voters in November 2017 approved funding to build the district’s seventh elementary school, and construction began this spring. “We are honored to be part of this exciting project and to have donated land within the Rough Hollow community to Lake Travis ISD…,” stated Dawlett at the time of groundbreaking. “This location was strategically selected because of its accessibility to the members of the Rough Hollow community, Lake Travis and Spicewood residents.” Pfluger Architects designed the 103,000-square-foot school, which will accommodate some 850 students even as enrollment in the district is anticipated to increase an average of 3.3% each year over the next decade. Like LTISD, the Rough Hollow lakefront community continues to grow. Even though the community has been in development about a dozen years now, about half of the nearly 1,890 acres that make up the community have yet to be developed. Triple DELIGHT Austin Symphony Celebrates Opening of 109th Season The literary rule of three suggests a trio of characters or events is most satisfying to readers, and to open its 2019– 2020 season the Austin Symphony Orchestra served up a trio to delight the audience. To start the evening and the season, the orchestra performed Franz Schubert’s Magnificat in C Major, which itself consists of three pieces and is one of the composer’s sacred choral works. Following this piece the symphony was joined by guest pianist and Van Cliburn gold medalist Jon Nakamatsu to perform Mozart’s Piano Concerto No. 21 in C Major. It too is composed of three movements, and the second is commonly

referred to as the Elvira Madigan concerto after being used in the film of the same name in 1967. After the intermission Chorus Austin and the orchestra performed Maurice Duruflé‘s Requiem, Op. 9. This selection Austin Symphony Orchestra selected to honor the memory of long-time supporter and Austin philanthropist Jane Sibley, who died in May. Dubbed the “Fairy Godmother of the Symphony,” Sibley served the organization in some capacity starting in 1967, including a stint as its president from 1971 until 1996, and was a driving force behind the construction of The Long Center.

While no one was wearing size 29 EEE shoes, a lot of attendees at the annual Red Shoe Luncheon for Ronald McDonald House Charities of Central Texas (RMHC CTX ) were wearing red shoes of all styles and sizes. In its fifth year, the invitation-only luncheon was held in early September at Brazos Hall. Some 300 attendees sipped sparkling rosé, shopped a Kendra Scott pop-up boutique and enjoyed a catered meal, all to raise funds for the organization. The luncheon’s program included people who had benefited from the important assistance that RMHC CTX provides to the families of children hospitalized at local medical facilities. Its Ronald McDonald House near Dell Children’s Medical Center is a home away from home that not only helps families stay near their hospitalized children but also helps reduce the financial burden they’d face if forced to stay in hotels. It also has Ronald McDonald Family Room facilities at four Austin-area hospitals and at two hospitals in the Bryan–College Station area. A family room offers rooms for catching up on sleep, a kitchen and dining area, living room, showers and other amenities so that family members don’t have to leave the hospital.

Ballet Austin opened its 2019-2020 performance season by hosting its annual Fête gala and fête*ish companion party in mid-September at the JW Marriott Austin. Both events celebrated the fashion of ballet and the intersection of costuming and ballet-inspired couture. Fête attendees enjoyed a three-course meal, a live auction and a special runway show from Celestino Couture, the fashion house with Austin ties that’s been bringing show-stopping looks to many a red carpet. The design house also put on a runway show later at fête*ish. This party was rocking with beats supplied by DJ Mel for tripping the light fantastic as well as for noshing on light bites and sipping special libations. At least 70% of the funds raised benefit the dance organization’s artistic programming, arts education and other opportunities it offers.

If you’re heading out to see the oldest live music act in town and want to be sure your look is sharp and not flat, heed these tips from the ever-stylish Kendra Scott. Austin is a town that, fashionwise, anything goes. Do you feel that’s true for women attending a symphony performance?
I love that Austin is a casual yet fashionable city. We’ve always had an offbeat fashion scene, but with the arrival of new residents from all over the world, I do see the popular style being elevated. I like to use more formal affairs such as a night at the symphony as an excuse to dress up. For an evening performance I’d likely wear a dress or skirt and blouse or even a silk pantsuit. I’d wear something that fits the glamour of the occasion but is also comfortable to sit in for a couple of hours. What do you consider appropriate symphony attire for men?
I think men tend to be more informal in their fashion choices, but I always love date nights with my husband, Matt, when we can dress up and look our best. For an evening at the symphony, my favorite look for him would be a tailored suit sans tie. For hot weather I’d suggest losing the jacket or opting for a lightweight fabric such as linen. In Austin it’s common to see men rocking their boots at formal events, which I love for a token Texas look. In situations when you aren’t exactly sure what the dress code expectation is, do you feel it’s better to be overdressed than to be underdressed? >>

STYLE FILE Personally, I prefer to err on the side of overdressed. There is nothing wrong with wanting to look your best! Accessories are an easy way to make a borderline casual outfit an elevated expression of your own style. I truly believe that the right jewelry has the power to transform your outfit and your attitude. Putting together a look that expresses your own style is such a creative and personal act.
Kendra’s Dos and Don’ts Are jeans ever appropriate for any person to wear to an event such as the symphony? What about a denim jacket worn over a dress? I love jeans and wear them often, but the symphony is an event that falls in the small category of occasions that call for something special. Denim jackets are such a versatile accessory. However, I do think that throwing a denim jacket over a formal outfit like what I’d wear to the symphony would take away from the look. Jumpsuits for women made a huge comeback, but do you feel they’re appropriate for the symphony? I’m obsessed with jumpsuits and think they can look just as refined as a nice dress. For example, I have a black lace jumpsuit that’s one of my favorite looks, and I would definitely feel comfortable wearing it to a more formal affair such as the symphony.
One of Scott’s favorite pieces for layering is the Andi gold Y necklace, which she pairs with other shorter, delicate necklaces, such as the Cathleen gold small pendant necklace, “especially if I’m wearing something fancier with a deep V neckline.”

Do you think wearing gold and silver jewelry is a major faux pas? Definitely not! I love mixing metals, and that’s very on-trend right now. It’s all about how you style it to suit you. You can pair dainty layers of different shades of gold and silver together for an everyday look, or glam it up and add a statement piece for a night. What’s your favorite accessory? Jewelry, of course! I love the power that jewelry has to bring a look to life. So often when getting dressed for events, I prefer to choose my jewels first and let that inspire the rest of my outfit. You’d be surprised how a pair of statement earrings can transform a little black dress.

ENGLISH MAN IN AUSTIN! Kevin Charles might be new to Austin but he is certainly not new to Texas! Just five years ago Charles was crossing state lines on a weekly basis keeping his busy Beverly Hills and Santa Barbara salons buzzing while maintaining his dazzlingly popular uptown Dallas salon as the hottest place to get gorgeous in Texas! With the last of his three oldest children heading off to college and leading busy independent lives Charles decided he could finally begin to slow down a little. ‘I took a semi-retirement’ he says ‘I was still answering calls for the award shows and I maintained my celebrity clients.’ The number of celebrity clients who prefer Kevin Charles to be their first choice of hairstylist is extensive. Saving Face Going Beyond Soap and Water for Men’s Skincare Not that long ago, men were not a key target market for face care products. Razors, shaving cream and basic soap, perhaps enhanced with a “manly” fragrance, were often considered as all a man really needed to take care of his face. Today, as more men aim to better care for their faces, more skincare manufacturers are launching products specifically for men. Additionally, more men are using clinical services to care for and preserve their youthful appearances. Of course, these changes now mean that men like women are being presented with an array of products that really aren’t useful and suggestions for skincare that aren’t all that helpful. Dr. Carlo Gavino, a board-certified dermatologist with Tru-Skin Dematology, calls on his five years of experience to give gents the low down on how to care for their mugs.
Just for Men? Yes, men’s skin does differ from women’s skin. Men’s dermis— the second layer of the skin that contains blood vessels, sweat and oil glands, nerve endings and other structures and tissues—is thicker. Those oil glands in the dermis are more productive, so men generally are more likely to develop acne 36 WATERWAYS | October 2019
and have enlarged pores. Yet even with this abundance of oil, men’s skin tends to be drier. To remedy the dryness, Dr. Gavino suggests men use cream and ointment formulations of moisturizers instead of lotions. These formulations, he explains, more effectively lock in moisture than lotions. He stresses that men need to use a moisturizer containing sunscreen or use sunscreen in addition to a moisturizer because men’s skin is more susceptible to sun damage. To address the increased oil production and enlarged pores, the dermatologist recommends that men use face care products with ingredients such as salicylic acid and glycolic acid, which can penetrate pores and remove excess oil. Dr. Gavino does point out an upside to the increased oil production. It allows men’s skin in general to better tolerate the retinoids found in numerous anti-aging, anti-wrinkle products that can irritate some women’s skin.
(Facial) Hair Care Whether a man shaves or grows his facial hair in some form or fashion, addressing each situation requires its own unique considerations. “Men who grow facial hair are prone to developing seborrheic dermatitis, which causes redness, itching and flaking,” the doctor notes. To avoid this skin condition, he encourages men to care for their facial hair much like they do the hair atop >>

their heads—wash it daily. Doing so, he explains, not only removes foreign matter that can collect in the hair but also removes residue from facial hair grooming products since these products can build up and lead to skin inflammation. Regular shaving, however, can also lead to inflammation. “Repetitive shaving…results in inflammation and increases susceptibility to infections,” says Dr. Gavino. Therefore, using a face wash is important. Men who are prone to developing razor bumps should use a product that contains benzoyl peroxide or another antibiotic ingredient.
Daily Maintenance Dr. Gavino offers the following basic face care suggestions to men regardless of their age: • Use a gentle face cleanser that contains glycolic acid or salicylic acid in the morning and at night. • After the morning face wash, apply a moisturizing cream or ointment that contains vitamin C and sunscreen. If the moisturizer does not contain sunscreen, then apply a sunscreen after the moisturizer. Men who spend time outdoors should reapply the sunscreen throughout the day per the product’s instructions. • After the nighttime face wash, apply a moisturizer or similar product that contains a retinoid. In addition to this daily regimen, the doctor suggests that getting Botox injections every four to six months can soften muscles in the face, which helps prevent deep lines and wrinkles. “An antioxidant, sunscreen and retinoid are the most important ingredients of a good skincare routine,” Dr. Gavino stresses.

D
avis started in the marketing arm of the spirits business and instantly fell in love with it. Soon he was a marketing executive for Heineken USA, managing its brands. When he left Heineken he opened his own agency at which all his clients were alcohol brands. “I’ve always loved the industry and loved seeing the strategy, how brands position themselves and what those activities lead to from a growth and market awareness perspective,” Davis says.
Savor the Flavor One of his favorite spirits is tequila, and he originally started Playa Real tequila as a passion project with a friend. Then he started noticing macrotrends in the industry such as flavored alcohol, along with the growth in popularity for tequila. He sought out an expert opinion on the possibility of a true business venture: his wife, Kendra Scott. “I was ready for a new adventure, and she was the one who told me, ‘If you ever were going to launch a tequila company, this is the place to do it’,” Davis recalls. “I then went about refining and perfecting the brand and liquid product and putting together a great team to bring this brand to the shelves.” Davis and his team looked at what was going on with the other liquor categories and felt that the next category to become truly artisanal and flavor-focused was tequila. They set out to create the best flavored tequila on the market, made with 100% blue agave and triple distilled. “From many of the awards we have received, it seems
we have done a good job,” Davis says. “Just last month at the World Tequila Awards, our pineapple tequila was named the best flavored tequila in the world. That was really exciting and rewarding, knowing all of our hard work and creativity was being acknowledged.”
Family. Business. As far as running his own venture alongside his wife and her wildly successful Kendra Scott jewelry brand, Davis says it’s organized chaos. “As you can imagine, each of us is being pulled in lots of directions. But the best and most critical part of our relationship, when it comes to our businesses, is that we are both each other’s biggest fans and supporters. As such, we both understand the things that are important and crucial for our businesses and that there will be times where one of us needs to step up for the other. Both of us want the other to be the best they can be and for our businesses to be successful. And most importantly, our family comes first—that is our North Star, our guiding light.” Now that Playa Real has grown so quickly, what keeps Davis up at night is simply keeping up with demand. “We have bootstrapped this company so far, and we hope that, through sales and capital investment, we can begin to push the pedal down on marketing, production and expansion, and position this company as one of the truly innovative and authentic tequila brands on the market. I truly hope that we can be talked about in the same breath as Tito’s Handmade Vodka or Deep Eddy Vodka as a great Austinbased brand that has taken the nation by storm!”

It all went naturally with my life,” says the chef/owner of Hai Hospitality, which operates the Uchi restaurants along with several others. “I found a job I was really meant to do.”
The Start of a Love Affair
Soon Cole moved to Musashino Sushi Dokoro, where he completed an intensive traditional apprenticeship under owner Takehiko Fuse. “I knew I could get better at being a sushi chef there,” he recalls. Fuse was so impressed by Cole’s skill and dedication that he took him to Japan to experience the food at its origin and gain more technical skill. By this time with more than seven years of training under his belt, Cole was ready to strike out on his own. “I had learned as much as I could. I wanted to see if I could do it myself, and I wanted creative autonomy.” He also thought he had a unique perspective that came from being American. “I thought I could create menus that people would crave,” he says. “I wanted to make [my sushi] accessible to the American palate, familiar yet unique. They could recognize something in it, while also being something they’ve never seen before.” An Empire Begins Cole teamed up with Daryl Kunik, who had been a customer of his at the other restaurants for years. They searched for the perfect location for more than a year, finally finding the red bungalow in South Austin that would become the home of Uchi, which opened in 2003. “We wanted to bring our own sushi experience to the table,” Cole explains. “It’s best by the bite, the very second that you make it. This means that service is just as important as the food. It has to be eaten the very minute it’s created.” While Kunik and Cole complemented each other well as partners, Kunik was always focused on improving, while Cole admits he just wanted to be the best. >>

This journey began back in 1994, when 23-year-old Cole was hired at the now-closed Kyoto Japanese Restaurant on Congress Avenue to wash dishes and wait tables. “I did everything,” he recalls. “I was very poor, and they took care of me. I just fell in love with the people and got addicted to hospitality very early on. I loved the job and quickly realized that was what I wanted to do for the rest of my life.” Along with his new calling for hospitality, Cole’s time at Kyoto also fostered his love affair with sushi. The Japanese culture is one that shows love and caring through food. Eating is as much about community as sustenance. Cole says that meld of Japanese cuisine and hospitality is organic. “They fed me every day, and I loved the food,” he says. “They were so passionate and caring and welcoming. I kept driving for more responsibility and tried making sushi myself in the kitchen.” When some of the sushi chefs left, Cole saw his opportunity. “They were hesitant at first because I was American. They were worried about the product not being authentic.” As it turned out, having an American make and serve sushi to other Americans went over well, especially in a market such as Texas where sushi was not as well known at the time.

“I wanted to be the best sushi bar ever, the best restaurant in the country. It was maybe a little overconfident, but I wanted people to love sushi as much as I did. My goal is to get people addicted to sushi. I have such a passion and excitement for it, and for taking care of people, and I just wanted to share that.” Cole says that in those first few years, he never imagined having more than one restaurant. But after four years, it was clearly time to grow. The team opened Uchiko on North Lamar in 2010 and then two years later expanded outside of Austin with a second Uchi location in Houston. Uchi Dallas followed in 2015, then Uchi Denver a year ago. Last year Cole also introduced to an entirely different concept, partnering with barbecue legend and fellow James Beard winner Aaron Franklin to open Loro, an Asian-Texan smokehouse on South Lamar. Teaming up with Franklin made perfect sense, he says. “[Franklin] spends so much time and effort making the 48 WATERWAYS | October 2019
meat, and then people eat it right then,” just like they do with sushi. Loro embraces the same hospitality concept, but focuses on meats instead of seafood. “The main thing about this new venture is that it’s touching different people,” Cole says. “It’s a different clientele in some ways; some crossover but also many new customers. It’s accessible and more of a common denominator for Austin.” It’s hard to imagine how a restaurant from two celebrated, award-winning celebrity chefs could be anything but a success. “Aaron is so famous, but I get why,” says Cole. “He brings it. He’s super talented and super creative and always pushing to get better. He works his tail off.” What’s next for Cole and Hai Hospitality? A fifth Uchi is set to open next summer, this time in Miami. “I’m super excited,” he says. “It’s going to be a good opportunity to really expound on what we do. I never imagined becoming a restaurateur or having an ‘empire.’ It means so much to touch people’s lives, and I feel incredibly grateful.”

Zoltan David knew that he was going to be an artist since his teen years. Growing up in Edmonton, Canada after his family emigrated from Hungary, David dabbled in a range of creative arts throughout school, from music and theater to painting and sculpture.

“I was very curious about how things worked and how I could make things,” he recalls. “The more I experienced that curiosity, I realized that I would be an artist and create things. I felt it in my heart. At that point I tried to figure out how—what kind of an artist, what kind of a designer? What was I going to do with this calling that I have?” By his second year of university, David knew that higher education wasn’t for him. He had taken a sculpture course in college and was good at it but was concerned that he wouldn’t be able to make a living. “I took a more practical avenue and narrowed it down to two things I love: woodwork, and rocks and metals,” he says. “So I looked at furniture design and jewelry design.”

Learning His Craft Ultimately landing on jewelry, David set out, determined to become the best artisan at his chosen craft that he could be. His new goal was to find the best jewelry designer in Canada to apprentice with, and he pursued Toni Cavelti, who had designed pieces for Queen Elizabeth, until he hired him. After a few years learning at Cavelti’s side, David moved on to German avant-garde master jeweler Karl Stiggen. “I spent eight years with those two, learning everything I could.” Then, in 1979, he entered a De Beers diamond design competition and was a category winner. “When I won that prestigious award, all my contemporaries who had been happy to share their knowledge with me stopped doing that. I realized that I had learned what I was going to learn there and started my own business in 1980 in Vancouver.” David’s first clients were his two previous employers. Since then, David has crafted dozens of award-winning pieces, has adorned celebrities and designed bespoke pieces, including wedding jewelry and custom requests.
Patented Success Much of his success has come from a unique process he created one evening about 20 years ago, a few years after he relocated to Austin. “I was working at my goldsmith bench, experimenting with ways of working with different metals and an inlay process,” he recounts. “I started shaping and forming the inlaid metal in a way that I had never seen before. It was a ‘what if’ moment—I realized it had tremendous potential.” It was a new ornamentation process, and he decided to protect it with a patent. Today, this inlay can be found in all his work, and it’s what makes a Zoltan David piece instantly recognizable. “It plays into everything I’ve made since then and is my calling card,” he says. “To achieve that as a jewelry brand is pretty rarified.” One of his favorite pieces is Iris (shown opposite page), a complex necklace featuring a rare marquise-cut moonstone from India that weighs more than 35 carats that is surrounded by smaller iridescent blue moonstones and diamonds. The setting is bronze and platinum.
“It took a long time to design before I even started to make it. I fell in love with it and decided to enter it into one of the biggest design competitions in North America.” Of the nearly 500 entries in the 2017 American Gem Trade Association, David’s Iris won. Then the Smithsonian National Museum of Natural History came knocking. “They asked to put it on permanent display,” David says. “The piece became a part of history, it will be there when I’m dead and gone, and my grandchildren can go look at it. I would take that one event and exchange it for the 30 or so awards that my work has won over the years.” For David, the most rewarding thing about his four-decadesplus career has been creating original works of beauty. “I’m on a journey, discovering the piece as I make it. A Boost in Tough Times “Some of the old guard Austin boutiques were starting to fail, and I thought it would help keep the doors open longer,” he says. “It was an opportunity to bring shoppers to local retail establishments in a bad retail economy.” The event was planned during the “dead zone” of the fashion industry: late July to early August. The aim was to highlight the city’s creative capital from a fashion standpoint and to generate both business for and awareness of local boutique owners. While the fashion week concept had its ups and downs and has gone through several iterations, a decade later Swinney has rebranded it Fashion For Good and now focuses on emerging designers in Austin and beyond. “It did what it was supposed to do those early years—drive retail and local designers to create more of an industry in Austin,” Swinney says. “We don’t have a full vertical here, but we do have a consumer base that is interested in supporting local businesses across the board.” Fashion For Good also embraces online shopping as a pivotal part of its business model since more and more designers want to sell directly to consumers via the internet. “We’ve really tried to focus on that and give those designers that opportunity.” Expanding Fashion Consciousness The biggest part of the evolution is the social impact aspect. Swinney says that in addition to the commitment to buy local, the Austin community very much supports nonprofits. 54 WATERWAYS | October 2019

With his venture Fashion For Good, Swinney aims to redefine the conversation around fashion to promote inclusion and diversity as well as to champion important causes. He created the social impact brand as Austin Fashion Week in 2009, focusing on local designers and retail businesses.
“Over time we just really started focusing on how we could benefit the community at large,” he explains. “We started making sure every event was tied to a nonprofit in some form. When we rebranded to Fashion For Good, we left that term good very broad. Now everything we do has that social aspect.” That broad definition of the concept of good includes the nonprofit organizations that the fashion events support, including Ballet Austin and The Arc of the Capital Area, as well as inclusivity and environmental impact issues. “Fashion has been a terrible polluter, and there are issues with child labor. But small designers are generally much more responsible,” notes Swinney. “They use every scrap of fabric, and they do a lot of upcycling. I saw all this amazing stuff happening, while at the same time the media was showing only the negative impact. I could see on a local level all these good things happening, and it just wasn’t reconciling for me.” Along with the sustainability issue, Swinney is committed to promoting inclusion and diversity on the runway so the catwalk is a place where people of all sizes, shapes, colors, genders and abilities are represented. “At the end of the day, we want everyone to feel like they’re represented. Body type, gender, ability level…we want everyone to see someone and think, that person looks or acts like me.” For Austin Fashion Week this past February, dancers from Ballet Austin were the runway models for a show that benefitted the Pink Pilates program, which provides free exercise programs and support to breast cancer survivors. At the event benefitting The Arc of the Capital Area, more than 20 differently abled models took the stage, including participants who have Down syndrome and others who use wheelchairs. “It’s an empowered group of people who should be heard and listened to,” Swinney says. “The beauty piece of it is great, but it’s really more about being seen and being valued.” Swinney would like to have transgender models on the runway and is quick to recognize the support that both the Austin community and his customers have for recognizing and celebrating our differences. “We’ve established enough credibility with the consumer base that they trust us. Being able to really represent on the runway as many different types of people that we can has been rewarding for me.” He hopes the sponsors will follow, but ultimately believes it’s worth the risk. “We’re to a point where we don’t want it to just be fun anymore, we want to tell a story.”

For Waterways readers the Austin-based interior designer shares her insights on how to create spaces that combine the masculine and the feminine to satisfy all dwellers.

Avoiding Clichés
Q: Which traditional rooms of a house do you think are best suited for a more masculine feel? A: This really depends on personal preference, but my couple clients and male clients typically want sitting rooms, secondary living rooms and game rooms to feel more masculine.
Q: The look and feel of a “man’s space” seems to fall into one of a few stereotypes. There’s the formidable office or library with dark wood, heavy furniture and heavy fabrics or leather. Conversely, there’s the utilitarian, impersonal space filled with electronics. Lastly, there’s the museum preserving bachelor days, replete with memorabilia and mismatched furniture. How can one avoid these clichés when creating a space for a man that’s also inviting to a woman? 56 WATERWAYS | October 2019

Q: Are floral fabrics or fresh flowers an option for a masculine space? A: I don’t typically incorporate floral fabrics into a masculine space, but fresh flowers are acceptable anywhere. Men appreciate them just as much as women.
Designing for All Q: Can you offer any tips for how to successfully incorporate two themes into one space? A: Themes can be a bit cliché and lack longevity. Instead of going all in on a particular theme, I like to incorporate pieces that speak to the style of each member of the family until I find the right balance. Q: How can you use dark colors in a room without making the space feel cavelike? A: In general I like to break up dark colors with wallpaper, an accent color on the ceiling, contrasting trim colors, artwork on the walls or room-softening elements, such as draperies. It’s also important to make sure there is sufficient lighting in the room, whether it be natural or artificial. Q: How many accent colors do you recommend in a room in which all the walls are painted the same color? A: In my opinion accent colors are overused and a bit outdated. I like to go for bold and paint the entire room or use wallpaper to add excitement. 58 WATERWAYS | October 2019
Q: If a room’s walls are painted in a neutral shade, is it ok to paint the ceiling a color? A: One hundred percent! Ceiling colors are a great way to add excitement to a room. Patterned or colored wallpaper are also great options.
Getting Personal Q: What’s your favorite space to decorate and why? A: It’s hard to say—I love it all! If I had to choose, though, it would be a toss-up between master bedrooms and family rooms. I love designing bedrooms because they’re a retreat for the homeowners, somewhere they can go at the end of a long day and just unwind. Family rooms are fun because they are typically the center of the home where everyone gathers, so I enjoy making this space a true reflection of the homeowners. Q: What design and décor trends do you foresee for 2020? A: I see a lot of 70s-inspired spaces with open floor plans that are divided by walls made of natural materials, such as wood. Wood is definitely trending for everything from floors to accent walls to doors and shelves. I see colors such as pinks, greens, blues and purples balanced with neutral tones continuing to trend. There’s also a huge push for sustainability right now, so I see people continuing to use sustainable and recyclable materials as much as possible. Rooted in History Mattie’s Executive Chef Holmes Comes Full Circle By Lauren Jones Austinite Ethan Holmes always dreamed of becoming a chef. His pursuit of that dream started early. He learned how to make eggs sunny-side up from his grandmother at age four. As a gift for his 11th birthday, he got to peel potatoes at Green Pastures restaurant. Fast forward a number of years to late 2018, when Holmes was named executive chef of Mattie’s, the restaurant that now operates in the historic Green Pastures mansion. His modern takes on classic Southern dishes using locally sourced ingredients along with his desire to create an unforgettable experience for each patron has made Mattie’s a must for both locals and visitors alike.
From an early age Holmes found solace in the epicenter of his grandma’s home, the kitchen. “She was always cooking,” he recalls. “She taught school during the day but would make these elaborate dinners. It was always special at her house.” Even something as simple as a sandwich got a special touch. “She would have three or four different kinds of meats, cheeses, pickles and mustard. It was a whole production,” he says. To this day Holmes credits his culinary success to his grandmother and the instinct for cooking he developed “almost by osmosis” from all those days spent by her side. “The trajectory really started with her.” Holmes was named Top Overall Student during his studies at the New England Culinary Institute. He then honed his craft as the chef de cuisine for Omni Hotels & Resorts as well as at Second Bar + Kitchen and as the executive research and development chef for prepackaged food maker Snap Kitchen. When La Corsha Hospitality Group, the company that now owns the Green Pastures property, offered him the top position at Mattie’s, the rising chef in a way had come full circle. “I was honored to be able to be the proper caretaker of a place that represents so much for Austin. We went to Green Pastures for special events like my grandma’s birthday,” Holmes recalls. “It was our place and it was a big deal to go. We’d get all dressed up.” 60 WATERWAYS | October 2019
Part of Austin History The 23-acre Green Pastures property dates back to 1895. In 1916 the farm became home to Henry and Martha “Mattie” Faulk and their five children. Daughter Mary Faulk Koock developed a flare for cooking, often whipping up dishes for friends and family. In 1939, she moved back home and in 1946 she transformed the home into Green Pastures Restaurant. From day one it hosted all Austinites regardless of color and creed along with a number of weddings, governors, foreign dignitaries and celebrities. Today, the restaurant is still a gathering place, serving updated

In the kitchen Holmes is truly where he belongs and feels the most at ease when the restaurant is at its busiest. He produces each plate with the same care and love his grandmother once did. And running the kitchen at Mattie’s is the ultimate realization of his childhood dream.
KENTUCKY PORCH TEA Courtesy of Jason Stevens, Director of Beverage and Bars for La Corsha Hospitality Group Yield: 3 cocktails 1.75 ounces Kentucky bourbon 0.5 ounce honey syrup 0.75 ounce fresh lemon juice 2.5 ounces double-strength brewed mint-verbena tea 1 dash Angostura bitters 1. Prepare the honey syrup by adding three parts wildflower honey to one part hot water. 2. Prepare the tea. Brew a double-strength 8 oz. cup of mint-verbena tea, such as from Harney & Sons or Tea & Company. Follow the instructions for a single cup, but use twice the amount of tea. After the tea has steeped, remove the teabags, and then place the tea in the refrigerator to cool. 3. Combine in a cocktail shaker the bourbon, honey syrup, lemon juice, tea and bitters with ice, shake well, and then pour into a tall, chilled glass filled with ice. 4. Garnish with fresh mint sprigs, lemon slice and, optionally, fresh lemon verbena.
SEARED SALMON WITH SWISS CHARD, MUSHROOMS, ENGLISH PEAS AND HAM HOCK BROTH Yield: 4 servings versions of the Southern classics that helped it earn its reputation. Dishes such as the smoked duck breast and the burger made from beef raised at Grassfield Farm in Hondo, TX, are elevated takes on traditional flavors. Folks seeking Southern comfort can find it in the buttermilk biscuits and fried green tomatoes. During the summer months, Holmes and his team aim for options guests can enjoy even on the hottest of days, while fall calls for heartier plates. “Mattie’s is a fun place for people to come,” he says. “It’s a place for people to feel like they are being taken care of, and when it comes [down to it], we wanted to stay true to what Mary Koock intended.” For many, a trip to Mattie’s is a walk down memory lane, complete with one or more of the peacocks that have long roamed the property. “The history here is profound,” he says. “A woman came in the other day for her 90th birthday and was friends with Mattie and her daughter Mary.” He’s also met diners who held their weddings or at least their rehearsal dinners at Green Pastures. “It’s such an iconic place.”
For the Plate 4 Scottish or king salmon fillets, 6 ounces each, skin and pin bones removed 1 bunch rainbow or Swiss chard, cleaned, ribs removed and leaves cut into chiffonade 1½ cups English peas 4 tablespoons butter 8 ounces cremini mushrooms, cleaned and quartered 1 fresh thyme sprig, leaves removed 3 garlic cloves, minced ¼ cup shallots, minced 1 tablespoon sesame seeds, toasted 1 whole preserved lemon, minced 12 leaves Italian parsley, rough-chopped Grape-seed or canola oil Salt and pepper to taste >>

ENTERTAINING For the Ham Hock Broth 2 smoked ham hocks 2 cups white wine, preferably dry 1 pound carrots, peeled and large-diced 1 pound onions, peeled and large-diced 1 pound celery, large-diced 2 garlic cloves 6 black peppercorns 1 thyme sprig 2 bay leaves 8 cups water 2 tablespoons grape-seed or canola oil Ham Hock Broth 1. Heat the oil in a medium-large sauce pot until it shimmers. Add the ham hocks and allow them to begin to sear and render. 2. Add the carrots, celery, onions and garlic. Sweat the vegetables until they become translucent. 4. Add the white wine, and then allow it to reduce by half. 5. Add the water, bay leaves, black peppercorn and thyme sprigs. Bring the broth to a boil, and then reduce heat to a simmer. Allow the broth to simmer until the ham hocks are tender and the meat is beginning to fall off the bones. 6. Remove the hocks and set aside. Allow the broth to cool. 7. Strain the broth, reserving the liquid. 8. Pick the meat off the hocks and set aside.
1. Preheat the oven to 350 degrees F. 2. Season the salmon with salt and pepper. 3. Heat oil in a sauté pan over medium-high heat until it shimmers. Add the salmon fillets flesh-side down. Sear for 2 to 3 minutes on each side, and then remove the fillets to an oven-safe dish and keep warm in the oven. 4. Carefully wipe the sauté pan clean, and then add more oil and butter. Once the butter melts and begins to foam, add the mushrooms, shallots, garlic and ham hock meat. Sauté until the mushrooms begin to brown. 5. Add the chard, peas and thyme. Stir to combine. 6. Add 1½ cups of ham hock broth. Quickly bring the broth to a simmer, and allow the chard to wilt. Remove the thyme sprig. 7. Divide the vegetable sauce equally among four shallow entrée bowls, and then place a salmon fillet atop each portion. 8. Garnish with chopped preserved lemon, toasted sesame seeds and chopped parsley and serve.

Opportunities abound to embrace the season in the Hill Country’s wine region. Says January Wiese, executive director of the nonprofit trade organization Texas Hill Country Wineries that has nearly 60 member wineries and tasting rooms, “Coming out here to the Hill Country, which covers 15,000 square miles…, you have a huge selection of wineries, from really small family-owned and -operated wineries that maybe produce just over 1,000 cases of a few specialty varietals, or you have some of our larger wineries that you can visit, where you get to experience possibly 15 different wines.” From intimate tastings to large picnic areas, live music and more, Wiese notes that there’s something for practically everyone to enjoy. 64 WATERWAYS | October 2019

What is the biggest design trend you’re seeing in homes today? Answer:
I would say the master bathroom. Traditionally, the master bathroom featured a substantial master bathtub. It was sometimes even the centerpiece of the room, but it seems that more and more clients are asking for something else. They are saying ‘no’ to the large master bathtub. Specifically, the current trend is for smaller, freestanding tubs with larger custom showers that might include body sprays, steam showers, rain heads, or even for no tub at all. Why? Aging baby boomers. As the largest generation grays, many of them are finding that climbing in and out of the tub is difficult and showers are much easier. In addition, people are realizing they do not actually use the giant tub all that often. Busy lifestyles mean less chance to luxuriate in the tub. Instead, a luxury shower allows similar relaxation benefits in less time. New shower technology means that the effect of a whirlpool can be substituted by using body sprays and rain heads. The large footprint of the giant tub is limiting what else can be done with the room and the space. Many people would rather skip the tub and have more counter space or a larger shower. All these are good reasons – but does this mean the trend is here to stay? Maybe, maybe not. For one thing, not having any tub anywhere in the house could negatively affect re-sale value. Young couples and families with young children are most likely to need a tub (for washing babies). So we are suggesting that clients either keep a small tub in the master bathroom or have a larger tub in one of the other bathrooms (which might be better for kids anyway). We also recommend giving thought to where a tub might be added later, for resale, and possibly even have plumbing behind the wall to plan for it. It costs very little to be proactive to future-proof the home if we possibly can.

Mind Your Self An Introduction to Self-Care for Rock-Solid Living
HALT for Self-Care The Rockmans stress the importance of checking in with yourself—physically and mentally—to ensure you’re in balance and not in what they call a HALT condition. “Never get too hungry, angry, lonely or tired,” explains Rock about the HALT acronym. “Sometimes we overextend ourselves, and we don’t think about the little things that can affect us. So being too hungry, getting too angry, allowing yourself to be isolated or being too tired, all these things can affect a person. “Sometimes that inward feeling that you have comes

through on the outside, and so you wonder why you’re snapping at the kids or why you get so irritable or…why you’re acting out in a certain way. It’s probably because you’ve allowed one of those qualities to not be aligned.” Gaining Emotional Insights Hunger and fatigue are relatively easy to resolve. Addressing anger and loneliness, however, can be less easy. “Emotions are just energy in motion,” Junice says. “They’re there to guide us, and we can help guide them as well.” Anger, she notes, is often a secondary emotion. “Anger is rooted in fear. Fear of loss, fear of rejection, fear of invalidation or significance, fear of missing out. Anger feels more powerful than sadness.” She suggests, “When you’re angry, I think a more powerful question to ask yourself, What am I afraid of?” If your reflex response to this question is I’m not afraid of anything!, then ask yourself, What am I sad about? or What’s bringing me pain? >>

HEALTH & WELLNESS Recognizing the emotion underlying anger won’t immediately resolve the issue, but acknowledging it is the first step to addressing it. The Roots of Loneliness Feelings of loneliness, the Rockmans explain, can stem from a sense of isolation or disconnection, from both other people and from ourselves. Says Junice, “Sometimes when we do feel lonely, I think that the connection and acceptance and fulfillment that we’re craving from outside of ourselves is really something we’re longing for from within ourselves.” This lack of self-acceptance, she adds, can be reflected in and impact your relationships. If you seek validation from your spouse, your friends, your boss, then those relationships can become strained and broken, leaving you feeling more isolated. “That’s why self-care is so important for men and women to take time to work on your self, to work on your life, to develop your life.” Addressing loneliness or isolation, Rock suggests, is a matter of connecting to someone in a way that is helpful
You can take the exercise one step further by asking yourself where in your body you feel the emotion you’ve named, where you’re holding it in your body. “From a psychosomatic standpoint, we feel distress in our chest area, which often represents a feeling of loss,” says Junice. Some people, she adds, experience back pain when they’re feeling unsupported. A tight throat may indicate you’re holding back words you really want to say. Chronic neck and upper back pain? You could be feeling as if the weight of the world is on your shoulders. Body Scanning To perform this physical self-awareness exercise, first close your eyes and then, while breathing normally, mentally scan your body from the top of your head to the soles of your feet. Observe what you feel in each area of your body. “When you do a body scan, you’re in tune with every inch of your body,” Rock says, “so it really helps you recognize where you’re carrying whatever it is you’re dealing with.” Disconnect from Tech Sometimes to reconnect with yourself, you need to disconnect. The Rockmans encourage

So being too hungry, getting too angry, allowing yourself to be isolated or being too tired, all these things can affect a person.” to you. “The whole thing about loneliness is that you want to connect but in your own way.” He emphasizes that being able to connect with someone you trust also allows you “to get whatever it is that we’re experiencing off our chests…and then sometimes you realize it’s not as bad as you thought it was.” Cultivating Self-Awareness Better self-care can start with simple self-checks. “In our culture today, so many of us live from our necks up,” Junice observes. “We’re so out of touch with our own bodies, and we learn to just sort of numb what we feel.” Name What You Feel This technique is an emotional checkin. Start by placing your hand where your neck and shoulder meet, and then name what emotion you’re feeling. Next, take a deep breath and then slowly release it while affirming mentally or aloud, “I choose to release this emotion.”

everyone to try a weekly tech-free day or half-day. Instead of staring at a screen, have face-to-face interactions. Make eye contact and use facial expressions, vocal intonations and other physical gestures to express yourself, not emojis. Human connection is vital to wellbeing. By taking a brief break each week from internet-enabled devices and making an effort to be fully present, you are practicing self-care. Live Music to Change Lives C4AC Supports Local Charities with Concerts Austin’s love of live music and its generous spirit combine in Concerts 4 Austin Charities (C4AC). Formed at the start of 2018, this organization that produces charity concerts is a labor of love for founders Bill and Sharon Murray and Bill’s sister, Nancy Murray. Before launching C4AC Bill and Sharon had worked with retired racer Jeff Gordon and his foundation supporting pediatric cancer patients, which then led them to organize the Chords for Kids concert series to raise money to send the siblings of young cancer patients to Any Baby Can’s Camp Grey Dove. Recognizing that they could use their connections in the Austin music scene and beyond to support not just one but multiple nonprofits, the Murrays took the idea and ran with it. As explained on the C4AC website, “We decided we could better serve a more diverse number of Austin charities and provide more support to live music in Austin if we operated independently of any one charity.” The organization sees to all aspects of the concerts it holds, from planning and budgeting to selling tickets and booking the venue and the performers. And quite the roster of performers C4AC has booked! The Murrays have teamed with a bevy of Austin music scene stars, including Patrice
Pike, Ginger Leigh, Lukas Nelson, The Peterson Brothers, Vallejo, The Texas K.G.B., Jeff Plankenhorn and more. In fact, Lukas Nelson and his bandmates headlined C4AC’s sold-out Austin Cares Concert at the Austin City Limits Live at the Moody Theater venue earlier this year. In addition to its own C4AC Music Series, the organization coproduces house concerts around town to further promote the charities it supports and to drive ticket sales for its own events. The concert organizer currently divides its net operating profits amongst three Austin-area nonprofit groups. Step Onward Foundation offers housing and other services and resources to families at risk of homelessness due to their children’s medical bills as well as to young adults who were once homeless. Superhero Kids provides financial aid to help families cover nonmedical expenses when their children are receiving treatment at the Children’s Blood & Cancer Center of Dell Children’s Medical Center. The third beneficiary is Health Alliance for Austin Musicians (HAAM), which helps Austin-area working musicians obtain affordable health care services. “We are dedicated to promoting the improved health and wellness of underserved communities in Austin,” Bill has previously stated. Chris Beck may not have been born in Texas, but he got here about as fast as he could. After graduating from Oklahoma State University with a bachelor’s degree in public relations, he spent a few years in Florida working for a local chapter of the Red Cross before moving to Austin to continue his career in corporate development. Since 2016 he’s been the Director of Philanthropy, Lakeway, Austin and Hill Country for the Baylor Scott & White–Central Texas Foundation. Community involvement is not just his 9-to-5 gig.
