PUBLISHER’S LETTER Fashion, Animal Style I love animal print. Truth be told, I’m slightly addicted to it. But hey, I’ll own it. Proudly, in fact. In this past year or so, I’ve had so much fun wearing it in so many new ways. Byebye black, grey, chocolate brown, navy or whatever color is touted as the new black or the new neutral, and hello animal print! Now that a person can wear animal print in just about every way possible, there’s no way I’m ever relegating it to the back of my closet. When I say that a person can wear animal print in just about every way possible, I mean every way possible. Not long ago you only paired an animal-print garment with a solid color, usually black, ivory or maybe denim or even perhaps red, if you were feeling edgy. Now we not only wear it with a host of bold colors but also with other patterns and, shockingly, with more animal print. This fashion freedom gives us the chance to play around and to look at our clothes in a new light, and it’s certainly put an extra spring in my

step. I grab my animal print anchor piece and then see where it takes me sartorially. Color is usually where I land. Royal blue and emerald green are my faves to pair with cheetah, and mustard gold or magenta is my go-to pairing for python. I even have some fairly subtle camo-print pieces I toss in the mix for a fun weekend look. Now when I step into my closet to compose the day’s outfit, I feel completely inspired to grab something totally different and truly take a walk on the wild side. I gleefully dare to be different. If you need inspiration for your own walk on the wild side, then our chat with Holly Perry and the inspo collage from Lux Rox Boutique in the “Style File” section will serve you well. I sincerely hope they put a little wild in your spirit and bolster your couture confidence.

Accepting only a limited number of clients per year, Tod Arbogast insists on being personally involved in every home he builds. Exquisite craftsmanship, attention to detail and building with integrity are cornerstones of his company. With well over a decade in residential construction as well as a valuable background in commercial construction, Tod and his team deliver superior quality and outstanding service every time.

BUILDING EXCELLENCE IN CENTRAL TEXAS FOR MORE THAN A DECADE

SEASONED CUSTOM HOMEOWNERS ARE FANS “Since we moved to Austin in 1990, we have completed four new homes. The previous three were not bad experiences and we were aware of the negatives of building a new home. Our current home was built by Tod Arbogast, and we are, and will always be, great fans and advocates of this supreme, high end custom home builder. From the transition with our architect, meetings with the Home Owners Association, to planning and scheduling targets, the process was seamless. The most important mention I had for Tod on our initial meeting, was to not have many, if any, surprises. We asked for immediate updates during the timeline, as changes and revisions do and will happen. To his commitment of constant quality control, and his team’s immediate communication with my wife and I, it was a pleasure to have them create our vision from a house project to our Home.” -Sammy & Robi Loerch

Inspiring hope. Building beautiful families.

Secondary Infertility: The Reason It May Be a Challenge for You to Conceive Again Deciding to expand your family is one of the biggest decisions you will make with your partner. If you are experiencing challenges conceiving after already having a child, it may be secondary infertility.

What is Secondary Infertility? According to The World Health Organization, secondary infertility is when a woman is unable to conceive, carry a pregnancy, or carry a pregnancy to a live birth after previously carrying a child. It is now considered the most common cause of female infertility.1 According to Dr. Angela Kelley of Aspire Fertility in Austin, "Secondary infertility is one of the most common reasons couples come to see me. It is estimated that over 3 million women in the United States experience challenges with conceiving their second, third, or fourth child. That said, couples are often hesitant to come in for a consultation because they figure that if they’ve gotten pregnant before, it should be easy to conceive again.” One of the leading causes for secondary infertility is age.

"A major contributor to secondary infertility is the fact that both egg quality and quantity decrease as women become less young, particularly in the late 30s to the early 40s,” adds Dr. Kelley.

Secondary infertility is one of the most common reasons couples come to see me. Perhaps you or your partner have already undergone permanent birth control procedures such as vasectomy or tubal ligation. In these situations, In vitro fertilization (IVF) has proven very successful. Other recommended treatments may include medication to help with ovulation, and/or intrauterine insemination (IUI). In cases where sperm or eggs are not viable, or you are unable to carry a pregnancy to term, donor services such as egg donation, sperm donation, or surrogacy (‘third party reproductive services’) are also available.

CAUSES OF SECONDARY INFERTILITY • Age (decreased egg quality and quantity) • Hormonal issues • Weight • Endometriosis

Now she presents the same experience for men in a space with a very masculine setting that’s furnished with Men carries fashions from such designers as Ted Baker, Rails, John Varvatos, Theory and AG, among others. HEART AND SOUL Positive energy abounded at The 2019 Art of Kindness soiree in mid-November. The intimate event not only celebrated The Kindness Campaign but also celebrated Motown’s 60th anniversary. The GRAMMY Museum, which collaborated with organizers, displayed a collection of Motown memorabilia, and Claudette Robinson, the legendary singer-songwriter who’s been dubbed the First Lady of Motown, shared her thoughts during a fireside chat. Award-winni ng, genre-spanning singer-songwriter Estelle supplied a surprise performance. The evening raised close to $450,000 for The Kindness Campaign.

BEAUTY

New Year, New Look

Less Is More If you’re a beauty product junkie like me, the idea of giving up your favorite cosmetics and other beauty products probably gives you the cold sweats. Fortunately, this trend does not require you to quit cold turkey. Instead, scale back the amount of each product you apply. For example, if you typically apply two pumps’ worth of foundation, try just one instead. Concerned you won’t get enough coverage? Then apply your foundation over freshly moisturized skin before the moisturizer has completely been absorbed and the skin is still supple. I promise that your skin as a result will look more natural, healthy and radiant. Feature Focus Are your eyes your best feature? Maybe your full lips are? Do you have amazing cheekbones? Even if your best fea32 WATERWAYS | February 2020

ture is not somewhere on your face, you can still take on this trend. Select one facial feature on which to focus your time and beauty products to thus bring other people’s focus to it. Focusing your efforts on your lips, for example, is a fantastic choice, especially if you don’t have much time in the morning to do your makeup because applying lip products can be very quick. You can choose a bolder shade of lipstick or one that carries your overall look. Remember that to make this trend work for you, keep the other makeup you apply a bit more natural so the focus can remain on that one feature you’re playing up. Unexpected Color Step outside your comfort zone by adding subtle pops of color to your look. The easiest and most flattering way is to add a complimentary color of eye shadow or eyeliner on your lower lash line. If you have green eyes, any tone with a pink, red, purple or orange undertone can make your eyes pop. For blue eyes try shades with an orange or pink hue. Purples, greens and blues compliment brown eyes beautifully. In fact, a purple shade can highlight any hazel or amber tones in brown eyes. You can keep the lid neutral. Apply a bronze liner to the lower lash line if you want to avoid the color from being too bright or colorful. >>

The launch of a new year sees many folks making resolutions—and abandoning them within a few weeks. Maybe putting up the 2020 calendar found you yearning to tweak your look or update your beauty routine, but perhaps you’re not entirely sure how to proceed. If you’re wanting to make some changes so that you can put your best face forward in 2020, consider these five trends.

Five Beauty Trends for 2020 By Lisa Jauregui

for example, is a fantastic choice, especially if you don’t have much time in the morning to do your makeup because applying lip products can be very quick.

34 WATERWAYS | February 2020

Long-Term Investment Maybe you want to change things up to make a lasting difference. If so, then this year resolve to invest in quality skincare products and invest your time into using them daily, weekly or monthly as advised by each product’s directions. Look for ingredients such as retinol, vitamin C, hyaluronic acid and glycolic acid if your aim is an anti-aging skincare routine. Consider investing in a great tool to assist in your skincare routine, such as a Clarisonic or FOREO sonic facial brush or even a microneedling derm roller. These devices can help prepare your skin to absorb anti-aging products for better effectiveness. The new year brings with it the sense of a fresh start, a chance to hit the reset button on aspects of life we find needing a change or greater attention. By implementing one or more of these beauty trends, you can achieve your goal.

SHUTTERSTOCK.COM; YUNONA URITSKY; STEFAN SCHWEIHOFER

Focusing your efforts on your lips,

Subtle Shimmer I love this trend because it’s effortless but makes such an impact. Apply a cream eye shadow or shadow stick with a sheen or shimmer to it across your eyelid, and then use your fingertip to blend it into the crease. That’s it! You can then apply a layer of eye shadow if you like, or leave it as is for a complete eye look in less than two minutes. Want to give it a shot? I recommend a light to medium shade, such as a champagne or taupe shade. Both shades blend so easily and really give the most subtle bit of glam to the eyes.

Wildly Popular Animal prints have had their ups and downs. Over the decades fashion has at times deemed animal print to be chic and sophisticated but at other times relegated it to the status of tawdry. Nowadays, however, animal print is here to stay. Embracing any print, let alone an animal print, can be a challenge, so Holly Perry, proprietress of Lux Rox Boutique shares her thoughts on walking on the wild side. Why do you think animal print is such an enduring look? I think its versatility contributes to its staying power. You can dress it up or down and know that you will make a fun fashion statement. Animal print can also be worn in any season, so it has that timeless factor in its favor. Best of all, you can count on animal print to give an outfit that wow factor, so that quality has probably a lot to do with its ongoing popularity. Because of its ubiquity, leopard print has in a way become a neutral. What are some of your favorite col-ors to pair with it besides black, white or ivory or maybe tan? I love to pair leopard print with a pop of color such as red, fuchsia or even lavender. Neon yellow or even orange can also give it a fresh, trendy look. In your view what are staple animal-print pieces for a wardrobe? Staple pieces that will serve you for years include an >>

STYLE FILE animal print clutch or handbag, an animal print skirt, a leopard-print jacket and a leopard-print or snakeskin pump or boot. What are some of the best ways to incorporate animal print into one’s wardrobe aside from garments? I love leopard and snakeskin prints for accessories such as purses, shoes and scarves. Snakeskin cuff bracelets and earrings are also fun ways to wear an animal print. Snakeskin on an accessory always lends a more upscale look. What’s your favorite animal print and how do you like to style it? I love all animal prints but especially love leopard, zebra and snake. They are super fun to style depend-ing on my mood. I have a leopard-print cami that looks great all year either with dressy black shorts in the spring or jeans and a cute blazer in the fall. I also love to wear my leopard faux fur jacket when it’s cold. I say you can never have too much leopard!

Can you pair an animal print with another type of print or pattern without committing a serious fashion crime? Yes, you can if you’re feeling playful—but again, the print or pattern should be in the same color scheme as the animal print. Different colors and different prints are too much though. In my opinion, a pair of camouflage jeans in tan hues can pair well with a pair of snake boots in the same shade. What inspires you when putting together any outfit? My mood for the day as well as the weather definitely inspire my outfit. Sometimes I choose what I want to be the focal point of my outfit—a shirt, pants or shoes—and then build around that. For example, if I’m feeling like it’s a gloomy day, I may choose a hot pink shirt, a fun pair of jeans and a cute pair of sneakers to perk up the day and my spirits. Lux Rox Boutique is located in Lantana Place at Southwest Parkway and William Cannon Drive and online at luxroxboutique.com.

Can you wear multiple animal prints in one outfit? For example, is it a major faux pas to wear snakeskin skinny jeans with a big-cat print top? Where do you draw the line in mixing animal species? You can wear multiple animal prints in an outfit, but they really need to be in the same color scheme. That said, I would draw the line at more than two animal prints and definitely would not wear two prints that are not in the same color scheme. I prefer to use a pop of color with one animal print and not wear different colors of animal prints in one outfit. I think that’s too wild!

OPPOSITE PAGE: PHOTOGRAPHY COURTESY OF CARING FOR CAMBODIA.

What bothers you? Of course, all of us have everyday bothers: traffic, hectic schedules, spilled coffee or the rude person in the grocery checkout line. But for Jamie Amelio it’s the big bothers that count: homelessness, obstacles to education, suicide. And she wants you to stay bothered about whatever it is that concerns you the most. Her First Big Bother Amelio first encountered her “big bother” on a trip to Cambodia in 2003. She discovered a beautiful country rich in culture and history and was amazed by the wonder of the Angkor Wat complex of ancient temples. But she saw another side of the country as well. As she was leaving the temples, a little girl tugged at her t-shirt and asked for a dollar so that she could go to school. That moment changed Amelio forever. Instead of ignoring the child or giving her the dollar and continuing on her way, Amelio asked instead if she could accompany the girl to her school. The crowded, dirty facilities shocked her into action. Later that year she founded the nonprofit Caring for Cambodia to raise funds to train teachers, provide supplies and remove barriers to education for as many Cambodian children as she could. Amelio maintains that she did nothing extraordinary and firmly believes that anyone can make a huge positive difference in the world by staying bothered—in fact, that’s both the name of the call to action she’s initiated as well as the title of her third book, which was published last November.

Finding Your Bother “You have something that bothers you,” Amelio says. “We all have it in us. We just may not know what it is yet. It could be politics and voting—but whatever it is, you can apply it to anything in the world. Once you say out loud what bothers you, it can be a great first step toward action and commitment.” One barrier that she’s noticed to people’s action is that they often think they can’t do enough to change a problem, so they end up doing nothing. “Even if you only have an hour to spend or $10 to give, I encourage everyone to take little steps toward getting involved. Sometimes things present themselves to us, and we say, ‘Oh, let someone else do something about that.’ But we should be the ones to do something.” Her firm belief in and passion about this idea led to her write Staying Bothered: Find Your Passion, Commit to Action, Change the World. “I realized that being bothered about something was one thing, but actually staying bothered about it enough to take action was another thing. I wanted to share my story about what it feels like to commit to doing something and sticking with it because that’s hard. That desire to be bothered enough to do something about it can fade. I believe it’s a matter of not letting that happen, of finding your passion and keeping it going. If it’s really important to you, you have to find a way to stay bothered.”

Taking a Stand In the midst of writing the book, Amelio found a second bother, this one much more immediate and personal. “I have two teenage sons who have dealt with anxiety, depression and addiction. One had to go into a treatment center. All of a sudden, he went down this road we couldn’t get him back from, especially when he began talking about suicide.” >>

have a career. I can do it all, but I don’t do any of it perfectly. Part of this book and call to action is to say that I’m human. You have to work at it, and be okay with not doing everything perfectly.”

Staying Bothered Her work came full circle on her most recent trip to Cambodia in fall 2019. On the way back to the hotel one day, she impulsively stopped at a roadside market. “I stepped out of the car and immediately locked eyes with the little girl who had asked me for a dollar 17 years ago.” Amelio had kept up with the child and seen her several times since that first encounter, but it had been many years. She believes that following your purpose and staying bothered creates serendipitous moments like that. “I often wonder who gets more out of it, when you give to someone else,” she says. “It’s truly a wonderful thing when that line of demarcation fades. I think if we all stay focused on continuing to really help the world, we’ll get to a better place.” Learn more about Amelio’s Staying Bothered movement at stayingbothered.com. Her latest book is available in paperback and Kindle formats on Amazon.

PHOTOGRAPHY COURTESY OF CARING FOR CAMBODIA

Amelio immersed herself in learning more about what parents and society as a whole can do to help kids who are in crisis. “Suicide is the highest it’s ever been [among young people], and our schools aren’t supporting that as much as they should. I decided to take a stand and be more vocal about it in my community.” Amelio is living proof that turning your bothers into actions can have a meaningful impact. Caring for Cambodia now provides education to more than 6,000 students in 21 schools, and her son is on the road to recovery. That doesn’t mean, however, the commitment has always been easy for her to maintain. Amelio found her commitment tested after discovering a web of secrets surrounding the two Cambodian girls she and her spouse had adopted. The secrets involved practically every one of her Cambodian colleagues, and she felt betrayed. She was on the verge of leaving Caring for Cambodia but instead decided it was more important to stay bothered. “Your task during tough times is to find something, anything, that is good,” she says. “Build on that. Focus on it every day. And keep going.” She admits that for a long time she tried hard to do everything perfectly, but now she realizes that striving for perfection is self-defeating. “I’m the mother of six kids and I

“Working hard and seeing it pay off is what motivates me.” “This is the biggest rookie class [the LPGA] has had, so to be in the top two in that is a pretty big accomplishment,” she says. “I think I’ve had a really good year.” “I always enjoy going to the next level of anything,” she explains. “I always wanted the next bigger amateur tournament, then looked forward to being a college golfer and then realized I could potentially be a pro. I enjoy competition and getting better,” she adds. “Working hard and seeing it pay off is what motivates me.” One of her most exciting moments of the year came on October 25th, when she made her first career hole-in-one at the 2019 BMW Ladies Championship in South Korea. The shot won her a BMW 7 Series sedan. “I’d never had a hole-in-one [professionally], so I didn’t want to get too excited,” Gillman told a reporter after the play. “It was nice to finally have my first hole-in-one. I’m just going to go out there and try to keep doing what I’m doing.”

All in the Family

L

ake Travis High School alumna and LPGA rookie Kristen Gillman has golfed for almost as long as she can remember. Along the way, though, she flirted with other athletic endeavors. Swimming was one of those sports. She took it up in kindergarten and seemed to take to it like, well, a duck to water. “I was good at it,” Gillman recalls, but it didn’t capture her interest as wholly as golf did. By middle school she felt she ought to choose one sport on which to focus for competition. The choice wasn’t too difficult. “I was putting more time into golf, and swimming became secondary.” In the sixth grade she decided to spend more time on the links and less time in the lap lanes. “I thought that golf had more opportunities—you can play it your whole life.”

Rookie Moves Gillman showed wisdom beyond her years in making that decision. Today, at age 22, she has earned more than $492,000 in her professional golf career. In early October she came in second behind Lee Jeongeun for the LPGA Tour’s 2019 Louise Suggs Rolex Rookie of the Year award.

Her first year in the LPGA came on the heels of a successful amateur career, during which she won in 2014 both the Girls Junior PGA Championship and the U.S. Women’s Amateur Championship. She won again in 2018. Gillman played college golf for the University of Alabama, where she often competed against older sister Emily, who played for the University of Nebraska. “We grew up playing together as practice buddies and were on the same high school team for two years,” Gillman says of her sister. “We learned the sport through lessons on the course from our dad.”

‘Something Bigger Than Myself’ When she isn’t playing golf, Gillman likes to spend as much time as possible outdoors, going hiking or hanging out with friends. She is also committed to community service and has gone on three mission trips doing volunteer work over the past three years. “It’s a way to give back and do something that’s bigger than just myself,” she explains. “I don’t have much free time, but I like to do that when I can.” Her next mission trip is to Costa Rica, which she’ll take with eight other University of Alabama student athletes. “We’ll be doing sports-oriented activities with children there.” As for what’s next in her pro career, Gillman says she wants to take the lessons she’s learned so far to the next level. Her biggest goal is to win a professional tournament. “Even though I’m playing at the highest level now, I just want to improve each year.”

“The most rewarding thing about the job was getting to meet so many people and tell their stories,” Petrowski says. “I love interviewing people and having the chance to share compelling and entertaining stories with viewers.” The job came with its challenges, the biggest being the schedule. “As a morning anchor, I woke up at 2:30 AM to make it to work on time and be camera-ready for the start of our show at 4:30 AM. As you can imagine, I was always tired. Always.” In spite of the demands of the schedule, Petrowski loved going to work every day. The decision to leave in April 2019 was a tough one, she reveals but admits, “I knew I just couldn’t continue waking up at 2:30 AM and live the life I wanted outside of work.” Her last day on air at FOX 7 was one of the most emotional of her life. “I had been there for nearly 12 years, and my coworkers put together such a special goodbye show, highlighting my years as a reporter and anchor and all the big stories I had covered and fun moments during my time on TV in Austin,” she recalls.

Making Connections Petrowski in her post-TV life has capitalized on her experience in front of the camera and her love of public speaking to help organizations. Having emceed dozens of events during her TV career, she understood firsthand how an effective emcee helps

52 WATERWAYS | February 2020

events run smoothly. She recognized too how, in the case of nonprofit fundraisers, the enthusiasm the emcee brings can garner higher donations. Now freed of the super-early starts to her day, she began emceeing more events and accepting more public speaking to support many great causes around Austin. One particular organization she’s passionate about is Big Brothers Big Sisters of Central Texas, with which she’s been involved for more than 10 years. “I was a big sister for five years and have been involved in the fundraising and event-planning side ever since,” she says. “I have seen firsthand how an adult role model can have such a positive impact, and every young person deserves that.” Petrowski also took advantage of her career pivot to

focus on her other passion, cooking. On her Instagram page (@laurenpetrowski), she shares her favorite recipes, cooking demonstrations and an ongoing series called “Meatball Mondays.” “For as long as I can remember I have loved food and trying different cuisines,” she shares. “I enjoy cooking, but what I really love is getting to work with chefs and finding out what’s special about their recipes. It’s my dream to have a cooking show—but one where I’m the host, not the cook.” On her website (laurenpetrowski.com) she dishes about travel, parenting and other lifestyle topics. Each week she shares a roundup of local events that she calls “Petrowski’s Picks.” So what are some of her favorite personal picks around town? Petrowski says her perfect day starts with a slow morning, sipping coffee and making pancakes for her four-year-old son. Afterwards, they might head to Zilker Park or the Barton Creek greenbelt and follow the outing with a meal at one of Austin’s fantastic restaurant patios. “Preferably one that involves queso and margaritas,” she adds. “We’re so lucky to have so many great weather days here!” What’s next for Petrowski? The event she’s most excited about occurs in May, when she and her husband, Justin Poses, will welcome their second child, a daughter. “For this period in my life, my focus is family. While I feel like I’ve lost a part of myself, I’m excited for the change, sleep and the unknown of what I will gain.”

PHOTOGRAPHY/COURTESY OF BIG BROTHERS BIG SISTERS OF CENTRAL TEXAS

Originally from Phoenix, Petrowski first came to Austin to attend The University of Texas. “I’ve had an interest in the news since high school and have always been comfortable with public speaking, so I decided to study broadcast journalism,” she shares. “I was able to get a job as a reporter in Corpus Christi after graduation. I was there for a little over a year before landing a job back in Austin in 2007.” That job was at KTBC FOX 7, where Petrowski worked almost every on-camera position: morning reporter, evening reporter and weekend anchor. Her dream, though, was to be the morning news anchor—a dream that came true when she was offered that opportunity on Good Day Austin.

ASK THE BUILDER with national award-winning builder, Shan Jenkins, of Jenkins Design Build

Behind every great idea, there is a defining moment, and ours came the day Megan visited our office. Megan was a widow on a fixed income, but with a nest egg set aside to build her dream home. For two years she had worked with a builder and architect to design her home. The plans were perfect. She had room for the grandkids and a kitchen designed to entertain. She rolled out her worn blueprints, which had seen better days, and asked us to ball-park the cost. After we looked it over, we gave her a number. And then came the kicker. This dream home – the one she and the builder and architect collaborated on – came in at $250,000 over her budget ! Her voice began to tremble as she said, “Well, you’re the 5th builder to give me that same number.” And so we became the 5th builder to tell Megan the truth – it wasn’t possible to build the home of her dreams. We were saddened and terribly disappointed, and so was Megan! After she left the office, we said, “We have to do something!” This wasn’t a new problem, but no one seemed to be able to tackle the solution. We had to be able to give people a firm idea of the cost earlier in the process to prevent this situation. We talked about needing to get the design right, from the very beginning. Plus, we would have to hire Architects in order to have continuous feedback between design and construction. That’s the only way to prevent serious cost escalation. And so it began. Almost 3 decades ago, our business model began with an encounter with Megan. Although difficult, it completely changed the way we design homes and paved the way for better processes for decades to come.

‘Food Always Found Me’ Chef Dzintra Dzenis and Her Gastronomic Adventures By Shelley Seale Dzintra Dzenis couldn’t get away from the culinary world even when she tried. The chef-owner of Plate by Dzintra in Bee Cave has been cooking her entire life, but she initially didn’t think the culinary arts was a wise career path. “The business was very male-dominated and therefore difficult for women to break into,” says Dzenis. “I loved cooking but thought it would be wiser to get a solid education and see where life would take me.”

As it turned out, life took her to a public relations firm in New York. Always in the kitchen in her downtime, Dzenis one day took her cheesecake to work. Her boss loved it so much that he wanted the chef of his favorite Manhattan restaurant, the famous La Côte Basque, to taste it. Chef JeanJacques Rachou swore the cheesecake was the best he’d ever had and insisted she bring him five every day for his kitchen. “I soon began my moonlighting hours, working as an administrative assistant during the day and cheesecake baker at night,” she recalls. As her confidence grew, she decided to start college. Her public relations position evolved into event planning, and she was hired to work with The Russian Tea Room. “Without knowing it, I was symbiotically learning about restaurants and the food industry.” Her hectic schedule and lifestyle were “pretty insane,” however. “Quite honestly I was working myself to death,” Dzenis admits. Her parents, Latvian immigrants and entrepreneurs, agreed that a break would be wise and offered her a semester abroad in Paris.

Sojourn to La Ville des Lumières The City of Lights struck a chord, and Dzenis eventually graduated from the American University of Paris with a degree in international affairs. Thereafter, she took a position at the Latvian embassy in Paris. She married and then together with her husband ran an international distribution company. After a decade, though, they sold the company and divorced.

Husband Allen asked, ‘What do you really love to do?’ She immediately answered, ‘Cooking!’ says Dzenis. The Texas capital attracted her with its multicultural population, affluence, openness to small business and not to mention an up-and-coming food scene. In 2008, the couple and their nine-year-old daughter Samantha moved to Austin. Dzenis began working for HEB Cooking Connection in Westlake and hosting underground supper clubs. The next year Food Network auspiciously held auditions in Austin. Dzenis auditioned again and won a spot on The Next Food Network Star. “The experience was unlike any other,” she recalls. “The excitement of being on the show, the stress, learning to think on the fly, meeting and working with celebrities.... I wouldn’t have given that up for the world!” After the show Dzenis believed the natural next step for her career would be transitioning from hosting in-home supper clubs to opening a restaurant. Plate by Dzintra was born, and 10 years later is a full-service restaurant and bar. Last November she expanded with The Market + Café at Plate, which offers casual dine-in service as well as takeaway items. “When you do something you really love and enjoy, you don’t have to work as hard at it because it’s fun.”

DEEP-DISH JALAPEÑO & CHEESE QUICHE

While on holiday in Normandy, contemplating what her next step should be, Dzenis met her current husband, Allen, and they instantly clicked. He asked her point-blank, “What do you really love to do?” Her answer was immediate: cooking. She again enrolled in school, this time at Le Cordon Bleu in Paris. After completing its intense 18-month program, Dzenis took a job at L’Ecole Ritz Escoffier.

Cooking Stars and Lone Stars At the time back in the States, The Next Food Network Star had debuted and was making a splash. Dzenis flew to Minnesota to audition. She only made it to the semifinal round, but she was inspired by the potential. Given her burgeoning culinary career and her husband’s retirement, they decided to relocate. “Through advice of friends and much research, I chose Austin,”

For the Crust 9 oz. all-purpose flour 5 oz. unsalted butter, cold and cubed ¾ teaspoon salt ¼ teaspoon white pepper 2 oz. cold water 1. In a food processor, pulse to combine the flour, salt and white pepper. Add the butter and then pulse until it forms small beads. While the food processor is running, drizzle in the water. Stop processing once the dough forms a ball. 2. Transfer the dough to a lightly floured surface. Roll it into a circular shape that’s evenly thick and large enough to cover the base and sides of the pie pan. 3. Carefully press the dough into the pan. Be sure to press the dough up the sides of the pan to achieve a snug fit, and allow the dough to fold over the sides. Using a rolling pin, roll over the top of the pie shell to trim off the excess dough. >>

ENTERTAINING 4. Freeze the crust for at least 1 hour before baking. 5. Preheat the oven to 375 degrees. 6. Remove the crust from freezer. Line it with parchment paper, and then fill it with rice or baking weights. Bake for 40-50 minutes or until the crust begins to turn pale yellow. 7. Carefully remove the parchment paper and its contents from the crust, and then bake the crust for another 5-8 minutes to dry out the bottom of the crust. 8. While the crust is cooling, prepare the quiche filling.

For the Filling 5 eggs 5 egg yolks 17 oz. heavy cream 1¼ teaspoon salt ¼ teaspoon finely ground white or black pepper ½ teaspoon fresh oregano, minced ½ teaspoon finely ground cayenne pepper ½ teaspoon finely ground cumin 12 oz. shredded Monterey Jack cheese 1 large jalapeño pepper, sliced and with seeds removed 1. Gently whisk together the first eight ingredients. 2. Refrigerate the filling until ready to use.

Assembly and Baking

1. Preheat the oven to 350 degrees. 2. Place the crust still in its pan onto a cookie sheet. 3. Press the shredded cheese over the base of the crust, and then pour two-thirds of the filling over the cheese. 4. Arrange the jalapeño slices in a circle atop the filling. 5. Place into the oven the pie pan still on the cookie sheet, and then pour the rest of the filling into the quiche. Do not overfill the pan, or else the filling will flow over the crust while baking and create an omelet effect around the edges. 6. Bake the quiche for 1 hour, and then reduce the oven temperature to 300 degree and bake for another 30 minutes or until the filling is set (the center is firm and no longer jiggles). If one side of the quiche is turning brown too quickly, rotate it or turn down temperature or cover the quiche with aluminum foil to finish baking. 7. Remove the quiche from the oven, and allow it to cool completely before serving.

CAYMANS CALLING These Caribbean Isles Are the Perfect Spring Break Getaway By Shelley Seale

While it seems like 2020 just started, Spring Break is almost here. If you’re already dreaming of breaking away from the routine and springing into warmer weather, then get yourself to the impossibly blue waters, warm ocean breezes and soft white sands of the Cayman Islands. This British Overseas Territory consists of Grand Cayman, the main island and by far the largest, along with Cayman Brac and Little Cayman. Located 480 miles south of Miami, between Jamaica and Cuba, the Caymans are easy to get to from Austin on a relatively short flight. The customs arrival process at Owen Roberts International Airport in the capital city of George Town is a breeze to navigate, and the car rental agencies are just outside the doors. Definitely consider renting a car since public transport isn’t extensive and since the island is easy to navigate. Just remember to drive on the left side of the road.

Island of Turtles Grand Cayman may have been home to thousands of green sea turtles at one point, but they’re now an endangered species. Fortunately, Cayman Turtle Centre (turtle.ky) not only protects, breeds and releases the turtles—more than 30,000 baby turtles thus far. The center is the island’s largest land-based tourist attraction. The park spans several acres, and the biggest draw is the turtle pond, especially at feeding times throughout the day. The center is also home to other animals such as sharks, barracudas, a crocodile named Smiley as well as Amazona leucocephala caymanensis and Amazona leucocephala hesterna, the two subspecies of Cuban parrots that are native to Grand Cayman and Cayman Brac, respectively. Guests can even swim with some of the turtles in a

large snorkeling area. Elsewhere in the park is a play area featuring a freshwater pool and waterslide that’s a big hit with kids. Spending half a day or longer here is a wonderful way not only to learn about the Caymans’ native wildlife and interact with them but also to enjoy all the attractions the park offers.

Vibrant Coral Reefs Frequently listed among the best scuba diving sites in the world, the Caymans are home to colorful marine life and a kaleidoscope of coral. Horseshoe-shaped Grand Cayman allows for an expanse of shallow waters filled with incredible living coral reefs. Just beyond it, underwater cliffs drop off to a staggering 6,000 feet into the second-deepest ocean trench on the planet. Many divers are drawn to the cliff diving, descending deeper alongside these underwater walls. Others are fascinated by the many shipwrecks that dot these waters. The snorkeling is good too. In fact, some of the shipwrecks— such as the USS Kittiwake, which is accessible from shore—are available to both scuba divers and snorkelers. Another very popular snorkel site is Stingray City, a large sandbar where about 50 of the gentle rays have made their home. They live peacefully and are so used to humans in the area that they’re almost tame and may just brush right up against you. The sandbar is so shallow that you can actually stand up even though you’re miles from shore. To make the most of your underwater adventures, visit with a well-respected operator such as Red Sail Sports (redsailcayman. com), which has a fleet of catamarans and knowledgeable crew. The outfitter even has skilled photographers on board to capture your magical moment with a stingray. >>

Where to Stay World-renowned Seven Mile Beach is an idyllic stretch of powdery coral-colored sand and blue water and is an ideal place to book accommodations. The entire waterfront is open to the public, which means visitors can walk its full length. The coastline is dotted with multiple resorts along with restaurants, beach bars and watersport companies. Another option is to book a privately owned vacation condo, such as Coral Stone Club (coralstoneclub.com). Because it’s located right on Seven Mile Beach, every condo has spectacular beach views. The two- and three-bedroom condos are spacious, with full kitchens and screened-in balconies.

Where to Eat Being a tropical destination, the Caymans in no way lack for fantastic seafood restaurants, and the international vibe here means global cuisines are plentiful. For a top dining experience, check out Blue by Eric Ripert at The Ritz Carlton, Grand Cayman. The Caribbean’s only AAA Five Diamond restaurant, it specializes in tasting menus that highlight local seafood and offers an impressive wine list with more than 700 fine wines from around the world. Another local favorite is a two-in-one experience. Cracked Conch (crackedconch.com.ky) offers indoor and al fresco dining with stunning views to accompany its global cuisine with a Caribbean twist. Don’t miss its conch bisque or signature hand-crafted cocktails. Downstairs from the restaurant is Macabuca, a tiki bar that offers casual dining and great fun. 60 WATERWAYS | February 2020

Grand Cayman is home to one of the few bioluminescent bays in the world. Although all ocean waters have the microscopic plankton, only a very few places have enough of them that their bioluminescent glowing is visible at night. You can visit the bio-bay one of two ways. The first option is to paddle through the glowing waters on a kayak with Cayman Kayaks (caymankayaks.com), offering both a peaceful night excursion as well as a close-up way to view and interact with the bioluminescence. As you paddle and swish your oars in the water, the bay glows around it and the craft. The second option for experiencing this glowing attraction is by snorkeling in the bay. When you move your hands around in the water, it looks as if hundreds of tiny stars are shooting from your fingertips. George’s Watersports (thingstodocayman.net/ georges-watersports) provides all the gear and full body-suits, and the sunset ride from the marina past some of the island’s most beautiful homes is just as breathtaking as the bioluminescence experience.

Olive You So Much! Exploring the Olive Oils of Central Texas

Take a moment to consider the olive oil you have in your kitchen. Don’t focus on the packaging or how old the bottle might be. Instead, imagine yourself in the orchard in which the olives that were pressed to make the oil grew. Did your mind transport you to some expansive, picturesque landscape in a sunny Mediterranean country? While a trip to Italy or Greece or Spain would be a welcome getaway for most of us, you don’t have to travel much at all to get great olive oil because Central Texas is home to several olive oil makers. According to the media organization Edible Communities, the Lone Star State is second only to California in U.S. olive oil production. With its rolling green hills, rocky soil and generally mild climate, the Hill Country is quite similar to Tuscany, the classic olive oil region of Italy, so it’s no wonder that a variety of olive oils are made right here so close to home.

Texas Hill Country Olive Company The father-daughter team of John and Cara Gambini started their Texas Hill Country Olive Company in 2008. Today, they grow seven varieties of olives and sell 14 different types of olive oils, half of which are extra virgin and the other half are infused. >>

“Our attention to quality versus trying to get every drop of oil out of the fruit is what sets us apart. That is why we are the most-awarded olive oil producer in Texas,” says Cara. “We are passionate about showing everyone who walks through our doors what extra virgin olive oil really tastes like.” Swing by on a Friday or Saturday for an educational orchard tours. PERSONAL DEVELOPMENT

Kathleen Malaspina and Alicia Thrasher

The Power of Sisterhood Sisters Are Doin’ It for Themselves Kathleen Malaspina and Alicia Thrasher are the cofounders of Collective Suite, which aims to amplify the professional success of women fostering a community for peer learning in which they support one another through thought leadership, inspiration and practical tools. Malaspina and Thrasher have graciously shared with Waterways their thoughts on building sisterhoods at work and in the community.

their own individual benefits. “When women feel truly supported and challenged in the workplace,” Malaspina shares, “they develop a professional confidence that comes from validation by respected peers. This support can often provide that extra bit of confidence for someone to ask for a raise with strong supporting data, request a stretch assignment or put in for a promotion before they have 100% of the qualifications.”

Connections and Connectedness

70 WATERWAYS | February 2020

Conflicts and Cliques Just as sibling sisters sometimes fight, conflict can arise within a sisterhood, but it doesn’t have to cause an ongoing rift. When a disagreement or tension arises within a sisterhood, Thrasher and Malaspina encourage the members to presume “ignorance over intent.” “You don’t know what’s going on with others, and we often make incorrect assumptions based on our own backgrounds,” notes Malaspina. “So try to remind yourself in the heat of the moment to return to that mindset.” Sometimes the conflict or tension is due not to a differing point of view or competing solutions to a project or task but instead to personality conflicts. This type of conflict can be addressed even before it happens. >>

PHOTOGRAPHY BY INTI ST. CLAIR

Even in this day and age, the fallacy persists that a group of women inevitably will tear itself apart with in-fighting, pettiness, jealousy. While this fallacy plays out in just about any episode of one of the Real Wives TV shows, Malaspina begs to differ about what is the real reality. “I have seen firsthand how women in the workplace have come together in support of one other with incredible results. This has created amazing shifts, both for the individual involved as well as the companies where they work.” She adds, “I’ve seen how communities of networked women peers will also provide necessary feedback to help each other grow and learn by sharing their professional learning and experience to benefit one other.” In addition to the camaraderie and positive morale that benefit the whole, the individual women discover

PERSONAL DEVELOPMENT

“I have seen firsthand how women in the workplace have come together in support of one other with incredible results. This has created amazing shifts, both for the individual involved as well as the companies where they work.”

Forming a Chain More than a century ago, Canadian social activist and suffragette Nellie McClung wrote, “Women are going to form a chain, a greater sisterhood than the world has ever known.” But it’s not by happenstance of gender and workplace that a sisterhood forms. Instead, the connectedness must be cultivated. To that end, Malaspina and Thrasher offer these best practices:

72 WATERWAYS | February 2020

• Mentor junior members of the group. Communicate to others that you welcome the opportunity to help other women navigate their careers with an open office and an open ear. While the group doesn’t necessarily need to create a formal mentorship program, you do need to broadcast your intent to your peers and colleagues. • Ensure that other women receive credit for their ideas by seconding their comments and by reinforcing where the credit is due when you’re in meetings and at conferences. • Recommend women who are subject matter experts in their respective fields to be on conference panels and speaking engagements. • Take time to make personal connections with other women on the team or in the office. Regularly share lunch or coffee with others to bolster these connections. By connecting woman to woman, forging one link to another, the bond of sisterhood grows stronger, and the benefits multiply. Learn more about Collective Suite’s networking and peer learning opportunities at collective-suite.com.

PHOTOGRAPHY BY TOA HEFTIBA AND AMY HIRSCHI

The Collective Suite cofounders encourage members of a sisterhood to talk about their preferred methods of communication, communication needs and other related matters so they all can gain a better understanding of the personality types within the group. “Oftentimes doing a personality test, such as Meyers-Briggs, allows people to see others with a new perspective and use nonthreatening language when disagreements arise,” Malaspina explains. Communication can also thwart the formation of cliques and factions within a larger group. Even if someone is not necessarily the leader of a group, she can help ensure that all voices have the opportunity to be heard. “Actively seek out those who are less likely to speak up, and encourage them to participate while also limiting the ‘air time’ of typically more-vocal participants.”

PHILANTHROPY FOCUS Clients hone their job search skills

EmpowHER That doyenne of style Coco Chanel once advised, “Dress shabbily and they remember the dress; dress impeccably and they remember the woman.” The clients served by Dress for Success Austin (DFSA) not only dress impeccably thanks to the nonprofit organization but also are impeccably prepared for achieving economic independence thanks to its professional development programs. Each year DFSA helps more than 1,000 persons who identify as female from seven counties in Central Texas increase their earning power, gain better financial security and enjoy a brighter future. More than 85% of these clients are the head of her household, and almost 75% of them earn less than $15 an hour. In addition to underemployment, they may face such barriers as lacking childcare and other support as well as having limited resources. To address these needs, DFSA offers seven programs for its clients to learn and build life-changing professional skills. Its Career and Professional Elevation (CAPE) program offers workshops on such topics as career planning, job search tools and job interviews. Clients can get one-on-one assistance with career advancement as well as receive two months of mentoring through its MentorHer program. The Professional Women’s Group hosts monthly sessions for employed clients to network and more. At the heart of DFSA is its suiting service and boutique, where volunteer image consultants help clients select appropriate attire for interviews and jobs. A typical 78 WATERWAYS | February 2020

Volunteers are key to the organization’s operations, and DFSA has more than 300 of them helping clients. These volunteers deliver some 97% of the services it provides. In February 2005, UN Secretary-General Kofi Annan said in an address to open the UN Commission on the Status of Women that “there is no tool for development more effective than the empowerment of women.” Fifteen years later Dress for Success Austin is proving just how true these words are.
