Fireplace safety during the holiday season Gatherings with family and friends are an integral component of the holiday season. Certain rooms in the house are on display more than others, with kitchens, dining rooms and living areas serving as popular places to congregate. Of course, fireplaces also serve as popular gathering spots in homes that feature them. Lighting a fire in the hearth can make any space more cozy, but doing so comes with some hazards. Consider these fireplace safety tips in advance of the holiday entertaining season. • Have the fireplace inspected and swept professionally. Prior to lighting the first fire of the season, ensure that a professional inspects the fireplace, chimney and venting to ensure everything is in good condition. The chimney also should be swept to remove excess debris and buildup that could pose a fire hazard.

• Keep items away from the fireplace. Wrapping paper, rugs, clothing, magazines, and the like should be kept at least three feet away from the flames, suggests the American Red Cross. Also, make sure decorations are hung securely and a safe distance away from the fire. • Check your smoke alarms. Be sure the home has working smoke alarms on every level of the house. And keep a fire extinguisher close to the fireplace. • Never burn wrapping paper. Wrapping paper contains additives, like dyes, that make it burn extremely hot. Do not think of discarding wrapping paper by burning it in the fireplace. • Keep the tree a safe distance away. Although it makes for the perfect Christmas photo backdrop, Christmas trees and fireplaces should not be near each other. Also, the Christmas tree is not safe to burn in the fireplace after the season,

EASY CHERRY DUMP CAKE Brenda Self 2 cans cherry pie filling 1 can crushed pineapple 1 box Duncan Hines Butter Cake Mix 2 sticks butter, melted Pour cherries in the bottom of a 9x13-inch pan. Pour in crushed pineapple that you have drained ½ the juice. Then spread dry cake mix over pineapple and pour melted butter over cake mix. Bake at 350 degrees about 30-35 minutes. EASY DOES IT FRUIT CAKE Joyce Bridges 1 lb. candied cherries 1 lb. candied pineapple 1 lb. chopped dates

1 lb. shredded coconut 2 cups English walnuts 3 cups pecans 4 cups (3 Cans) sweetened Eagle Brand cond. milk Mix all ingredients in order given. Put in well-greased tube cake pan. Bake in 250-degree oven for 3 hours.

Dash pepper Cook and drain macaroni. Combine the next 6 ingredients. Mix with macaroni. Spoon into 2-quart baking dish. Bake at 350 degrees for 45 minutes. Serves 8 to 10 people. Great for covered dish meals and the kids love it.

THE GREAT MEAT LOAF Connie Conner 2 lbs. ground chuck 1 egg, beaten well 2 slices breadcrumbs 1 cup ketchup 1 med. onion, chopped Mix all ingredients well. Pour into a 9x13-inch pan. Bake in 400-degree oven 45 minutes to 1 hour. Serves 8.

65 new Driver’s License Examiners assigned to 48 DMV offices

The N.C. Division of Motor Vehicles today welcomed 65 new driver license examiners to their ranks as part of a biannual graduation ceremony that took place at the DMV headquarters. These 65 employees, following a five-week training program, will be deployed throughout the state to increase service levels at driver's license offices. This class is in addition to 57 employees who graduated in May. DMV Commissioner Wayne Goodwin remains focused on ways to increase the service levels at DMV offices across the state. The primary strategy to accomplish those goals is to add more driver's license examiners. Like many industries nationwide, DMV has faced a staffing shortage that has

affected service levels. “In the last two years, we have added over 250 driver license examiners to offices across our great state,” said Goodwin, “We continue working to attract, hire, train, and keep our employees in this challenging labor market. Hiring these additional examiners and introducing more online technology options are helping us shorten lines and wait times.” Last year, in an effort to hire new employees, the division increased the starting salary for driver license examiners while existing employees received a pay increase. DMV has also implemented additional hiring and retention bonuses. New positions may be added daily, and the application periods typically last for up to a week. In some cases, multiple people can be hired from a single posting. The new examiner and her duty station nearby is Ayesha Smith, who is assigned to Shelby. Tips to Improve Your DMV Experience While DMV continues work to address its staffing shortage, the division offers the following tips for an improved customer experience: • Renew early – Don’t wait until the last minute to renew your driver's license or ID card. DMV sends a

reminder card to the address on file six months before the expiration date. Customers can renew at any time during this sixmonth window. • Renew online – In most cases, unless they renewed online last time, customers can renew their credentials online. • Make an appointment – Customers with appointments are serviced daily from office opening until 12 p.m. Appointments can be scheduled up to 90 days in advance at skiptheline. ncdot.gov. Again, don’t wait until the last minute. It is not uncommon for the soonest available appointment to be several weeks out. • Walk-in availability – Each full-time driver's license office accepts walkin customers on weekdays from 12-5 p.m. Part-time and express offices service only walk-in customers. • Be prepared – Check the DMV website to ensure you bring the required documentation for your desired service. One frequently forgotten item is a printed document proving liability insurance. REAL ID – Customers have more time to get their REAL ID as the federal implementation date requiring a REAL ID to fly commercially or to visit federal, military, and nuclear facilities has been moved back to May 7, 2025.

SOLDIERS From Page 1 was in the army, sent to his parents in Pennsylvania during WWII. Notice the palm tree instead of an evergreen. His Dad was in the South Pacific Theater. Woody served in the Air Force and was away from his family for Christmas while stationed in Thailand and Iceland. Letters home to his family and gifts mailed from his three daughters made it feel like Christmas wherever he was. The Korean Conflict had soldiers stationed in a part of the world where we knew little about the country. No one expected the cold or heavy snow that hit Korea in 1952. Letters home requested socks, gloves, and toboggans. Cpl. Jack Whitworth from Cherryville shared that on Christmas Eve 1952, he spent the night in a fox hole when the temperature got below freezing, and Jack was never warm after that night. His wife Linda shared that Jack always had a blanket on, even in the summer. “I’ll Be Home for Christmas” quickly became popular as personnel tried to continue traditions like Christmas trees. Having a special Christmas meal was the goal of every command. My older brother John spent five Christmases in Vietnam and Clark Air Force Base. I remember my Mom would write letters to him every week. Her favorite hymn was “Silent Night.” From Christmas Eve until late in the evening of Christmas Day, she would play the song and look at the table where a place was set for John. One year, he was able to get access to a phone on Christmas Day and called home for three minutes, strictly enforced as others were waiting to call home, too. I still hear my mother singing the words to Silent Night like a lullaby, “Sleep in Heavenly peace; Sleep in Heavenly peace.” After 911 and the war on terror, soldiers in the Middle East and Afghanistan became dependent on the military

people may now use FaceTime or video conferencing to see their loved ones overseas. It becomes clear that the songs of Christmas have been a source of comfort and hope, even in the most challenging times. The timeless melodies of “Silent Night” and “I’ll Be Home for Christmas” remind us that the spirit of the holiday season surpasses time and place, offering a connection to home for those who have sacrificed so much for our country. This Christmas, stop and say a prayer for all those deployed around the globe, serving locally as law enforcement officers, EMTs, firefighters, and medical personnel who give up time with their families so you may enjoy being home for Christmas.

Foundation Supports Future Healthcare Professionals The Cleveland Community College Foundation received a $20,000 gift from the HealthCare Foundation of Cleveland County to name and endow CCCF’s Allied Health Emerging Needs fund. “We are extremely grateful for the HealthCare Foundation of Cleveland County’s support of our students. Having access to this fund for an unanticipated expense could be the difference between a student’s dropping out and graduating,” said Dr. Jason Hurst, president of Cleveland Community College.

The HealthCare Foundation of Cleveland County Endowed Allied Health Emerging Needs Fund provides need-based assistance to qualified part- or full-time students in any of CCC’s allied health programs. Funds may be used to pay tuition, buy books and supplies, or cover other expenses that could prevent a student from completing a program. “We are very excited about endowing this important fund,” said Dick Baker, Executive Director/CEO of the HealthCare Foundation of

Cleveland County. “We have outstanding higher education resources in Cleveland County, and we think it’s part of our responsibility to enhance these healthcare-related programs, particularly for county residents or for those who will stay in Cleveland County to practice. Kim’s Sugar Cookies

Seven Layer Cookies 1 cup graham cracker crumbs 1 stick margarine 1 cup chocolate chips 1 cup butterscotch chips 1 cup coconut 1 can eagle brand milk 1 cup nuts Melt 1 stick margarine in 9x13 pan. Layer: 1 cup graham cracker crumbs 1 cup coconut 1 cup chocolate chips & butterscotch chips Spread over top: 1 can Eagle Brand Milk Sprinkle with pecans. Bake at 325 for 30 minutes.

Peanut Butter Bars 1 cup peanut butter 6 tablespoons butter 3/4 cup packed brown sugar 1/2 cup white sugar 1 teaspoon vanilla extract 3 eggs 1 cup all-purpose flour 2 cups semisweet chocolate chips Mix peanut butter, butter or margarine, and sugars until creamy. Stir in vanilla. Beat in eggs. Mix in flour. Stir in 3/4 cup chocolate chips. Spread dough into a greased 9 x 13 inch pan. Bake at 350 degrees for 20 to 25 minutes. Remove pan from oven, and sprinkle with the rest of the chocolate chips. Let stand 5 minutes and spread. Cool, and cut into bars.

Chocolate Chip Cookies 2 cups all-purpose flour 1 cup packed light brown sugar

1 teaspoon baking powder 2 eggs 1 teaspoon salt 2 teaspoons vanilla extract 1 cup unsalted butter, softened 2 cups semi-sweet chocolate chips 1 cup sugar In a large bow, mix the flour, baking powder and salt. In a separate bowl: cream the butters and sugars, then add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, then gradually stir in the flour mixture until combined. Add the chips and stir again. For chewy cookies, refrigerate the dough for 2 hours or overnight. Preheat oven to 350 degrees. Drop the dough in heaping spoonfuls onto a nonstick 10x15” baking sheet, 3 inches apart. Bake for 10 to 12 minutes or until light brown. Cool for 2 minutes, then transfer to a wire rack and cool completely. Makes 44 cookies. Serve immediately.

Frosted Gingerbread Cookies 1 cup butter, softened 1 cup sugar 1 cup molasses 1/4 cup water 5 cups all-purpose flour 2-1/2 teaspoons ground ginger 1-1/2 teaspoons baking soda 1-1/2 teaspoons ground cinnamon 1/2 teaspoon ground allspice 1/4 teaspoon salt In a large bowl, cream butter and sugar until light and fluffy. Beat in molasses and water. Combine the flour, ginger, baking soda, cinnamon, allspice and salt;

gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour or until easy to handle. On a lightly floured surface, roll out to 1/4-in. thickness. Cut with 2-1/2-in. cookie cutters dipped in flour. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 1012 minutes or until edges are firm. Remove to wire racks to cool. FROSTING: 3-3/4 cups confectioners’ sugar 1/4 cup water 1-1/2 teaspoons light corn syrup 1/2 teaspoon pure vanilla extract In a small bowl, combine frosting ingredients; beat until smooth. Transfer to a plastic bag. Cut a small hole in a corner of the bag;pipe frosting onto cookies. Yield: about 5 dozen.

Peanut Butter Fudge 5 cups sugar 1-1/2 sticks margarine 1/8 teaspoon salt 1 lg. can evaporated milk 8 oz. marshmallow cream 3- 6 oz. pkg. milk chocolate chips or 1-1/2 bag 12 oz. pkg. 18 oz. jar peanut butter 1 teaspoon vanilla In a 6 qt. pot melt margarine, add milk, sugar and salt. Cook until 236 degree’s or about 20 minutes over medium heat. Remove from heat Add: chocolate chips marshmallow cream peanut butter vanilla Pour in greased 16 x 11 x 1 inch pan ( cookie sheet ) * Note: Heat marshmallow cream and peanut butter in the microwave just before

2 all purpose flour, sifted 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 2/3 cup margarine 1 cup sugar 1 egg, beaten 2 tablespoons milk 1/2 teaspoon vanilla flavoring Sifted all dry ingredients together and sit aside. Cream: Margarine, Egg, Sugar, Milk, and Vanilla. After mixing well, add dry ingredients and mix slowly on slow speed until a nice dough develops. Let dough chill for a few hours for best results. Preheat oven to 375º. Roll out on a floured surface. Cut with cookie cutters. Cook until just turning brown on the edges. Cool on cookie rack.

Peanut Butter Kiss Cookies 1-14 oz. can sweetened condensed milk 3/4 cup creamy peanut butter 2 cups all-purpose baking mix 1 teaspoon vanilla extract 1/4 cup sugar 1 13 oz. pkg. Hershey milk chocolate kisses Beat condensed milk and peanut butter at medium speed with an electric mixer until creamy. Add baking mix and vanilla, beating at low speed just until blended. Shape dough into 1 inch balls; roll in sugar. Place on lightly greased baking sheets. Bake at 350º for 11 minutes. Remove from oven, and immediately place a chocolate kiss in center of each cookie. Remove cookies to wire racks to cool. Yield: 3 doz.

White Chocolate Cranberry Cookies

1/3 cup butter, softened 1/2 cup packed brown sugar 1/3 cup sugar 1 large egg, room temperature 1 teaspoon vanilla extract 1-1/2 cups all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking soda 3/4 cup dried cranberries 1/2 cup white baking chips In a large bowl, beat butter and sugars until crumbly, about 2 minutes. Beat in egg and vanilla. Combine the

flour, salt and baking soda; gradually add to butter mixture and mix well. Stir in cranberries and chips. Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 375° until lightly browned, 8-10 minutes. Cool for 1 minute before removing to wire racks. Yields: 3 dozen.

Rocky Road Fudge 12 ounce pkg. chocolate chips 1 cup butterscotch chips 14 ounce sweetened condensed milk (save the can) 1 teaspoon vanilla extract 2 cups small marshmallows 2 cups unsalted dry roasted peanuts softened butter to grease an 8 inch round cake pan Grease an 8-inch round cake pan with softened butter. Cover the empty condensed milk can with plastic wrap and put it in the center of the round cake pan. Pour the chocolate and butterscotch chips, condensed milk and vanilla into a medium saucepan. Cook on stovetop on low heat. Stir until they melt together, about 3 minutes. Stir in nuts and marshmallows. Scoop the fudge into the cake pan all around the plasticcovered can in the center to form a wreath or ring shape. Allow it be all bumpy on top. Store in refrigerator until firm. Remove the can from the center and loosen the sides and bottom of the fudge with a spatula. Cut the fudge into thin slices to serve.

Raspberry and Almond Shortbread Thumbprints 1 cup butter, softened 2/3 cup white sugar 1/2 teaspoon almond extract 2 cups all-purpose flour 1/2 cup seedless raspberry jam 1/2 cup confectioners’ sugar 3/4 teaspoon almond extract 1 teaspoon milk Preheat oven to 350º. In a medium bowl, cream together: butter and white sugar until smooth. Mix in: 1/2 teaspoon almond extract. Mix in flour until dough comes together. Roll dough into 1-1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb and finger, and fill the hole with preserves. Bake for 14 to 18 minutes

in preheated oven, or until lightly browned. Let cool 1 minute on the cookie sheet. In a medium bowl, mix together the confectioners’ sugar, 3/4 teaspoon almond extract, and milk until smooth. Drizzle lightly over warm cookies.

Peanut Butter Cookies 1 cup unsalted butter 1 cup peanut butter 1 cup white sugar 1 cup packed brown sugar 2 eggs 2 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1 1/2 teaspoons baking soda Cream butter, peanut butter, and sugars together in a bowl; beat in eggs. In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour. Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

Oreo Truffles 1 pkg. (8 oz.) brick cream cheese, softened 36 Oreo Cookies, finely crushed, divided 2 pkg. (8 oz. each) semi-sweet baking chocolate, melted Mix cream cheese and 3 cups cookie crumbs until well blended.Shape into 48 (1-inch) balls. Dip in melted chocolate; place on waxed paper-covered baking sheet. Sprinkle with remaining cookie crumbs. Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator.

Crescent Cookies 1 cup butter softened 1/2 to 1 cup granulated sugar 1-3/4 cups all-purpose flour 2 tsp. vanilla 1 cup chopped nuts Cream butter and sugar. Mix in vanilla and flour. Add finely chopped or ground nuts. Chill dough thoroughly, shape & bake on ungreased sheet at 300º for 18-20 minutes (until slightly browned). Sprinkle powdered sugar on finished cookies. Yield: approximately 2 dozen 2 inch crescents.

JAMES EDWARD HORTON James Edward Horton, age 82, of Mooresboro, NC, passed away on Saturday, December 9, 2023. HAROLD EVERETTE FITE Dr. Harold Everette Fite, 87, passed away on Saturday, December 9, 2023. Part of the training for students in Cleveland Community College’s Associate in Applied Science in Information Technology – Cyber Security program is to compete in the National Cyber League (NCL). The NCL is a virtual training ground that allows students to test themselves against cyber security challenges that they are likely to see during their professional careers. Three cyber security students competed in the NCL during the 2023 fall semester. Two of them became eligible to apply for scholarships because of their participation and the fact that their team scored above a certain level. “There is an expectation in the industry that students who are pursuing cyber as a career compete in various cyber competitions,” said Susan Randall, instructor and department chair of computer information technology. The US Bureau of Labor Statistics predicts a 32% job growth rate in cyber security jobs over the next 10 years. This is not surprising given that technology is evolving quickly, and hackers are getting smarter. Businesses, healthcare centers, educational institutions and other organizations need cyber security

professionals who know how to protect their data. Students in the cyber security program participate in the NCL’s individual games and team games. In the competitions, students test their skills against others who are pursuing cyber security as a career. They work to solve challenges such as identifying hackers from forensic data, auditing vulnerable websites and recovering from ransomware attacks. This was the first year CCC and its students had competed in the NCL. The students met with instructors to study and prepare for this event. The instructors answered questions and showed them how to use various types of software. In addition, students worked in the NCL’s cyber gym, where they practiced and prepared for competitions. The College plans to continue this process for future competitions. “The feedback from the students who participated was positive, and students who did not participate this year plan to do so in the spring,” said Randall. Cleveland County Bass Club fished their last tournament of the year at Mountain Island Lake on Saturday, Dec 9th. They shared the landing with 2 other small clubs but it wasn’t crowded too bad. The morning weather started off well, but the weather man lied about when the rain was supposed to hit and we fished about 3 hours in the rain. For those who want to know, Mountain Island is the fullest lake around, compared to Norman or Wylie. The results are below: • 1st place - Robby Rush - 5 fish - 8.78 lbs. • 2nd place - Jamie Canipe - 4 fish - 6.94 lbs. He also took big fish honors with a 2.90 pounder. • 3rd place - John Rankin - 4 fish - 5.98 lbs. • 4th place - Tammy Willis Melton - 3 fish - 3.36 lbs. • 5th place - David Moss - 2 fish - 2.92 lbs.

WEIGHT LOSS EASY!

In most areas I hunt in, the prevailing good wind is out of the Northwest. The hardest places to hunt are the ones where that wind is downwind to my deer because I am unable to place a stand in any other position. The common phrase we hear when it comes to all hunting is, “East is least, West is best.” I believe that is pretty much accurate. And I GARY MILLER also believe a south wind is never good for me as well. So, you can imagine how I felt as I sat in a tree stand for 3 days in a southernly wind. I was not too confident, and my confidence ended up proving correct. There was very little activity. I’m not sure if this was the only reason, but it was enough to give it the blame. During those days, I kept looking at the weather forecast to see when the winds may change – both literally and metaphorically. I needed something to happen. But I just couldn’t imagine the current changing fast enough before my hunting days were over. But during the end of the week, the weather man said the winds were going to change from south to north. That seemed extreme to me. I mean that is the exact opposite direction. No long curve. No gradual bend. Just at 4:00 p.m. the winds will switch from south to north. I was not convinced. But what was good about this prediction was that I would be in the tree stand when this changeover was supposed to happen. So, it would be easy to verify such an occurrence. So, there I was at four o’clock sitting in my tree stand, when the wind that was coming out of the south, completely flipped. And what was just a minute before gusting from behind me, was now blowing in my face. It all happened that quickly. In the same way I have witnessed my circumstances change as well. I have seen God change the direction of my situation in ways that were just as radical and immediate. And I’ve seen him do it in ways, and from resources, I never imagined. That’s why I always try to remind myself that God has ways I have never even thought of. And He can turn my situation 180 degrees in one minute’s time. And He can do the same for you and with the circumstance you find yourself in right now. So, my friend, don’t give up hope. Don’t quit believing. Don’t hem God in. If He can turn water into wine, He can turn your hurts into happiness and your worries into wealth. Gary Miller has written Outdoor Truths articles for 21 years.
