Seven-year-old Lawndale youngster is a Dutch Oven cooking champion! National Dutch Oven Gathering 2023 Youth cook-off Champion wins first place second year in a row by MICHAEL E. POWELL CF Media michael@cfmedia.info There really isn’t a certain age when a child learns to (or even wants to, for that matter) cook, but as Courtney and Seth Dedmond of Lawndale know, all it takes is the desire. Oh, yeah, a little bit of talent and innate skill doesn’t hurt either. Take for example their seven-year-old genius chef, Gabriel, a.k.a., Gabe. This is one talented little gourmand who isn’t afraid to tackle the hard things in the culinary arts and has proven his skill as one mean Dutch Oven empresario. He has further proven his mettle, she recently noted, by winning a number of contests and cook-offs and is looking forward to entering in, and winning, even more in 2024! Gabriel’s mom, Courtney, wrote to the Shopper, “My husband, Seth, and I have always camped. When Gabe was three, we got in touch with Southeast Campers, a local Dutch Oven cooking group.” She said Gabe would always “…try to help us cook as we were outside,” and it just took off from there. Courtney said her husband was born and raised in Lawndale, NC, adding she is from Florida and moved to North Carolina in 2016. “Gabriel has two older sisters, Olivia and Sophie,” said Mrs. Dedmond, who added, “Neither of them cook but they do come and support when they can.”

The way all this with Gabe and his love for Dutch Oven cooking came about, noted Courtney, is, “In 2022 we went to the National Dutch Oven gathering in Hanover, Pennsylvania, for us to just enjoy. (At the) last minute, Gabe informed us that he wanted to cook in the youth competition. “At the age of six, he won the youth division making a Shepherd Pie and a Pineapple Upside-down Cake.” She continued, “We practiced more with Gabe to get ready for the 2023 competition in Rayne, LA, where he won at the age of seven, cooking a Flank Steak Pinwheel and a Pineapple Upside-down Cake with a rum glaze. “This astounded us,” said mom, Courtney, as the event is a five-hour event. Both parents have noted, “Now, we are next off to Mitchell, Indiana, (in) 2024 (where he will compete at the age of 8).” See CHAMPION, Page 4

From Page 1 Mom and dad both know he is good, adding Gabe has pretty lofty aspirations going forward as “…he wants to look into being a professional cook and still be able to camp and cook outdoors.” Courtney continued, “When Gabriel is wanting to cook, we allow him to experiment as best as he can and teach him what we know. When he does cook, we will help with starting the charcoal or cutting. He does cut the food some now that we have been working with a knife more often.” His family all note how young Gabe is very blessed and fortunate in that he has a whole crew standing behind, and with, him in his hobby and passion – cooking in general, and Dutch Oven cooking, in specific. The North Carolina Department of Health and Human Services Low Income Energy Assistance Program will begin accepting applications from older adults and people with disabilities on Dec. 1, 2023. The federally funded program helps low-income households with a one-time payment sent directly to their heating vendor to offset the high cost of warming their homes during the cold weather months. "We know the cost of most things is increasing, and keeping homes warm and safe this winter will be a bigger burden for some of our neighbors," said Carla West, Senior Director for Human Services at NCDHHS. "LIEAP helps ensure North Carolina’s older adults and people with disabilities who may be facing a financial hardship have the funds to help stay warm throughout these colder months." Payments will be distributed automatically to heating

vendors beginning in December 2023 if a member of the household meets the following three requirements: • Is age 60 or older or a person with a disability receiving services through the NCDHHS Division of Aging and Adult Services, • Currently receives Food and Nutrition Services and • Received a LIEAP payment during the 2022-2023 season. Households meeting the requirements for the automatic payment will be notified of their eligibility in November 2023 and do not need to re-apply for LIEAP. Any household with a person 60 or older or with a disability who is receiving services through the Division of Aging and Adult Services who did not receive notice of an automated payment can apply online at epass.nc.gov. Applicants can also call their county department of social services to apply by phone, in person, or print a paper application from epass.

To be eligible for the LIEAP program, a household must: • Have at least one U.S. citizen or non-citizen who meets the eligibility requirements, • Have income equal to or less than 130% of the federal poverty limit, and • Be responsible for their heating cost. Beginning Jan. 2, 2024, all other eligible households who meet the eligibility requirements may begin applying. Applications will be accepted from Jan. 2, 2024, to March 31, 2024, or until funds are exhausted. Last year, the LIEAP program provided approximately $63 million to help more than 143,000 households pay their heating bills from December 2022 through March 2023. Gaston County Bee Keepers Assoc. Beginners Bee course starts Jan. 22 Join the Gaston County Beekeepers for their Annual 10-week Bee School and learn everything you need to know to get started in beekeeping. The course covers beekeeping history, bee anatomy, and behavior, setting up and managing your hive, keeping your bees healthy, nectar sources and blooming times, and honey production and marketing. In addition to classroom lectures, students will participate in two field days in April, where they will have the opportunity to work with live bees and apply what they’ve learned to demonstrate the proper way to open a hive, use a smoker, inspect a hive for the different types of bees, brood and honey, and pollen storage. There will also be additional optional workshops to teach specific activities (e.g., assembly of hive parts, honey harvesting). Tuition is $95.00, including the class textbook and a one-year membership in the Gaston County Beekeepers Association and the NC State Beekeepers Association. In addition to the course, students will have the chance to take part in our wooden-ware assembly workshop and two field

NC creates position helping with child care support for employees The NC Department of Commerce has created a Child Care Business Liaison position that will partner with businesses, local communities, government and philanthropic organizations to develop strategies employers can utilize to provide child care support to their employees. The creation of this new position, initially funded for three years, is part of North Carolina’s multi-year strategic economic development plan, which is entering its next stage. Part of the next phase of the plan is addressing the insufficient supply of highquality and affordable child care in North Carolina. Applications for the position are now being accepted through Jan. 15, 2024. The Child Care Business Liaison position is also supported by Invest Early NC, a funder collaboration that promotes the development and sustainability of a comprehensive early childhood system in North Carolina. NCDHHS will equally invest in the new position and the NC Department of Commerce, connecting child care, economic development, and philanthropic resources to offer innovative solutions to North Carolina businesses. North Carolina’s multiyear strategic economic development plan entered its next stage of implementation on December 21, with the creation of a new position in the North Carolina Department of Commerce devoted to addressing the insufficient supply of high-

quality and affordable child care in North Carolina. The new Child Care Business Liaison, initially funded for three years at the state’s lead agency for economic development, will partner with businesses, local communities, government, and philanthropic organizations to develop strategies employers can utilize to provide child care support to their employees. “Education is the foundation of North Carolina’s economic success,” said Governor Roy Cooper. “Quality early childhood education gives children the start they need, gives the parents the opportunity to work, and gives employers the opportunity to hire those parents to strengthen their workforce. The person in the new position will help coordinate these efforts to help children, parents and businesses get the excellent childcare they all need.” “Our strategic plan for economic development focuses squarely on the need to provide companies with the best workforce in the world, and child care issues are workforce development issues,” said North Carolina Secretary of Commerce Machelle Baker Sanders. “Employers benefit when parents know their children are receiving quality care in a healthy environment -- and I know firsthand that those parents are more likely to stay in the workforce and are more productive and focused at work.” The Child Care Business Liaison position is also sup-

Decorating a home for holidays is quite popular. A survey from the National Retail Federation found that 53 percent of respondents said they were planning to decorate their home or yard for Halloween in 2023. Lombardo Homes polled 1,000 Americans in 2021 and 94 percent said they celebrate Christmas in at least some way, and 84 percent said they decorate. According to Time2Play, which surveyed 1,000 Canadians about their holiday decorating habits, Manitoba puts up Christmas decor earlier than any other province, with these residents taking out decorations 4.3 weeks ahead of Christmas Day on average. With so many avid holiday decorators, individuals will need to find ways to organize and store their seasonal items. Holiday decor comes in many different sizes — from the smallest tree ornaments to illuminated statues for the yard or inflatable items. Figuring out a storage plan can take a little effort. These seven tips can help. 1. Purchase clear, similarly sized storage bins and shelving racks, hanging them where you plan to keep the decorations. Most people prefer an out-of-the-way spot, such as in the garage, attic or basement. Label each bin by holiday and put the bins in chronological order to make finding items more convenient. Uniform bin sizes make it easier to stack and store. 2. Store smaller items inside larger decor items. Decorative baskets or wrapped boxes brought out for Christmas or Chanukah are ideal places to keep smaller tchotchkes like ceramics, dreidels, candlestick holders, or mantel hooks. Delicate items can be tucked into Christmas stockings or wrapped and stored in a fluffy tree skirt. Egg cartons can be used to keep small items safe as well. 3. Label everything so you will not need to dig through boxes or bins to know what is inside. This might be a good year to ask for a label maker for the holidays! 4. Use overhead or wall storage for holiday decor. Overhead spaces in the garage or basement walls can be good spaces to keep holiday decorations. Always keep bins and boxes off the floor so they are not vulnerable to damage related to leaks or floods. 5. Garment bags can protect larger decorations, such as wreaths, artificial trees or signs. If you have a large number of mechanical, illuminated or inflatable lawn ornaments, consider investing in a small shed where these items can be safely kept. Wrap the extension cords and any bracing stakes or strings used with the decorations so it’s easy to find. 6. Utilize pieces of cardboard as well as toilet paper or paper towel tubes to keep lights and wires tidy. Tuck cords into the toilet paper tubes, and wrap lights around the cardboard to avoid tangles. 7. Each year, take inventory of your decoration collection and toss out anything that is damaged or has seen better days. Storing holiday decorations will take some time, but once you establish a system, things will be simple year after year.

Dijon mustard 1-1/2 teaspoons Worcestershire sauce 1-1/2 tablespoons poppy seeds 1 tablespoon dried minced onion 24 mini sandwich rolls 1 pound thinly sliced cooked deli ham 1 lb. thinly sliced Swiss cheese • Preheat oven to 350 degrees. Grease a 9x13-inch baking dish. • In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish.

Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. FRESH GUACAMOLE 2 avocados - peeled, pitted and diced 2 teaspoons salt, or to taste 1 large tomato, diced 1 onion, diced 2 jalapeno peppers, chopped 1/2 tablespoon chopped fresh cilantro 2 tablespoons fresh lime juice In a medium bowl, mash the avocados and stir in salt to taste. Mix in the tomato, onion, jalapeno, cilantro and lime juice. Cover and chill in the refrigerator at least 30 minutes before serving. BAKED CHICKEN WINGS 3 tablespoons olive oil 3 cloves garlic, pressed 2 teaspoons chili powder 1 teaspoon garlic powder salt and ground black pepper to taste 10 chicken wings • Preheat the oven to 375 degrees. • Combine the olive oil, garlic, chili powder, garlic powder, salt, and pepper in a large, resealable bag; seal and shake to combine. Add the chicken wings; reseal and shake to coat. Arrange the chicken wings on a baking sheet. • Cook the wings in the preheated oven 1 hour, or until crisp and cooked through.

Gently mix in the lime juice and avocado. Drizzle with olive oil to serve. CHICKEN NACHO DIP 1 (14 oz.) can Rotel® tomatoes 1 lb. Velveeta cheese, cubed 2 large cooked skinless, boneless chicken breast halves, shredded 1/3 cup sour cream 1/4 cup diced green onion 1-1/2 tablespoons taco seasoning mix 2 TBSP. minced jalapeno pepper, or to taste (optional) 1 cup black beans, rinsed and drained Place the diced tomatoes, processed cheese, chicken meat, sour cream, green onion, taco seasoning, and jalapeno pepper into a slow cooker. Cook

on High, stirring occasionally until the cheese has melted and the dip is hot, 1 to 2 hours. Stir in the black beans, and cook 15 more minutes to reheat. CHEESY SPINACH DIP 1 tablespoon olive oil, divided 1 small onion, chopped 2 cloves garlic, minced 2 (10-oz. pkg. frozen spinach - thawed, drained, and chopped 1/2 cup milk 6 ounces cream cheese 1/2 cup shredded mozzarella cheese 1/4 cup shredded Cheddar cheese 2 dashes Worcestershire sauce salt and black pepper to taste 1/2 cup shredded mozzarella cheese • Preheat oven to 425 degrees. Grease a 1 1/2-quart shallow baking dish with 1 teaspoon olive oil. • Heat 2 teaspoons olive oil in a large pot over medium heat. Cook and stir onion and garlic in hot oil until lightly browned, 4 to 7 minutes. Add spinach and simmer until spinach is hot, about 5 minutes. Drain any liquid from the mixture and transfer to a bowl. • Pour milk into pot and return pot to medium heat. Melt cream cheese into the milk; cook and stir together about 3 minutes. Return spinach mixture to pot with 1/2 cup mozzarella cheese and Cheddar cheese; stir to combine. Season the mixture with Worcestershire sauce, salt, and pepper. Pour the mixture into the prepared baking dish and top with 1/2 cup mozzarella cheese. • Bake in preheated oven until bubbly and golden brown on top, 20 to 25 minutes.
