ur eyes never tire of green, just as they never tire of a view of trees. That’s part of the the reasoning behind Pantone’s choice of “Greenery” as their 2017 color of the year. “We don't all have access to the green forest, but we do have access to things we can bring into our home environment," says Leatrice Eiseman, executive director of the Pantone Color Institute, which advises companies on color and forecasts trends. One way to do that is with this powerful color. When used on an accent wall, kitchen backsplash or throw, it will refresh and energize you. Pair it with warm whites and neutrals for a clean, tranquil vibe, or use a bright white for a fun, contemporary feel. It's especially nice in kitchens, where it's natural to want a fresh feeling, but also in entries and hallways, to transition between room colors. As Eiseman traveled the world to collect data for this year's color, she took note of people wanting a healthy diet, cooking with more herbs and embracing the green-tea powder called matcha, the color of which matches “Greenery” almost exactly. "It is a very optimistic color," says Lori Weitzner, a textile designer in New York and author of "Ode to Color." "Use it in the right way in your home, and it will keep your spirits high." One of the best places to use a bright green, Weitzner says, is in the kitchen. Add plants and herbs, but also consider a green backsplash, an accent wall or even an indoor-outdoor rug. “Greenery” is also great to use as accents in rugs and throw pillows in an otherwise neutral room," Weitzner says. "They add uplifting energy and can elevate the mood without creating too much intensity." It's widespread design wisdom that the best place to try out trends is in small accessories. A classic throw or pillow for a sofa will do, but why not go for the unexpected pouf or light fixture. If you love “Greenery” but don't know where to incorporate it in your furnishings, Eiseman recommends taking an old, shabby chair and recovering it in a solid-green or green-printed fabric. Weitzner would pair “Greenery” with other fun colors, such as melon, lavender and sunny yellow, but she'd do it in small doses. "These happy and curious colors are easy to live with in small amounts," she says. "They are not too sweet nor too saturated."

elements Benjamin Moore’s 2017 color of the year is “Shadow,” a deep, moody eggplant purple. "Allusive and enigmatic, 'Shadow' is a master of ambiance. It is a color that calls to mind a 'past,' yet it can also make a contemporary, color-confident statement," Ellen O'Neill, Benjamin Moore's creative director, said in the announcement. The hue is part of a bolder "Color Trends" palette that Benjamin Moore says reflects consumers' newfound level of confidence in using deeper, saturated colors. It’s a usable color that actually can work on four walls, not just an accent wall, particularly a library or office. Look for velvet fabrics for upholstering a sofa or chair or find a rich, dark shimmering purple silk for accent pillows. "Shadow" “Shadow” looks grand over a Benjamin mantel with a neutral color on the Moore remaining walls, or use it as a trim.

Neutrals are beginning a transition from the monochrome gray of the past five years to a more complex taupe and brown. “Consumers yearn for spaces that feel welcoming and hug them as they enter. Earthen brown combined with conservative gray, creating 'Poised Taupe', embodies all of these emotions,” says Wadden. The "Confident" palette is all about vivaciousness and impact. Its colors are saturated and bright, capturing attention and enlivening spaces. ainting is the easiest, least expensive and single most transformative tool in all of interior design. Paint can change the mood of a room and your perception of its size. It can spotlight overlooked details in your home’s architecture, and it can make blah furnishings spring to life. Look to your closet for color inspiration. If your favorite sweater is red, then chances are you’ll like the way you look in a similarly hued room. Also, when choosing colors, make sure you take into account the natural light (or lack thereof) in your room. Light is the biggest factor in how you perceive color. Too much of it, and paint loses its saturation and looks like a photo that’s blurred by a flashbulb. Not enough light, and color falls lifelessly flat. There probably are some rooms in your home that are blasted with daylight and others that rely solely on artificial light. Common knowledge would have it that dark rooms should be painted in light or bright colors to counteract their natural dimness. Consider the opposite. Pale colors tend to feel dingy and flat in low light, so instead I like to use the

A chair with a spectacular openwork back or a curvy sofa can be amplified by painting the walls a contrast color. The bedroom is the only room where you fully look at the ceiling. Dipping your whole bedroom in one hue guarantees a cozy, enveloping, cocoonlike sensation each night. If you’re wedded to keeping ceilings white, pick a shade that borders on powder blue to give the illusion of a cloudless sky.

allways are the most underappreciated, overlooked design opportunity in your house. Think about how many times you pass through them each day. What if they were something special? udroom – big or small, every home should have one Boots, umbrellas, coats and hats pile up the minute you and your family bound through the door, so if you don't already have a mudroom, it's time you did. The location of your mudroom will dictate how it is outfitted and furnished. If you usually enter your house through the front door, that's where you'll put the mudroom — you don't want it to look like a boot bomb went off. If you tend to enter your house through a back door, then you can take a more utilitarian approach. An all-weather rug protects your floor at the same time that it stands up to dirt and stains. If necessary, use double-sided carpet tape to keep the rug from curling at the sides and becoming a hazard. Buy a storage piece, such as a console fitted with several baskets, so that you have a place to stash gloves, hats and scarves. If you have room, provide a bench or chair where you can sit to
remove boots and shoes. For a more informal look, consider locker-style units or modular storage. A mirror hung above the console will make a small entry appear bigger. Place a lamp on the console so you don't always have to rely on the overhead light. Add a tray on top of the console just big enough to hold a day's worth of mail and your keys. Put your coat closet to work. Often, a front-hall closet becomes the dumping ground for backpacks, dog leashes, flashlights, toys — all the miscellaneous stuff of life. Start by weeding though what you need and don't need. Move anything that is taking up a lot of room to the garage or basement. Assess what you have left and group like items together. Hang a clear plastic shoe bag on the inside of your door. In each pocket, you can store and easily see items such as flashlights, dog leashes, sunglasses, sunscreen, mailing tape, twine, umbrellas.

Mary Cook is president of Chicago-based Mary Cook Associates and author of "The Art of Space: The Seven Fundamentals That Guarantee Great Interior Design." The award-winning pros revealed decorating mistakes that drive them crazy and shared insider tips and tricks for creating a harmonious room design.
Mistake No. 1: Ignoring scale and proportion
Cook: Scale and proportion are the holy grail of design. Scale is the size of things, and proportion is the relationship of those sizes to each other and the room as a whole. Americans get seduced by large, expansive spaces, but without good proportion in those spaces, they will lack harmony and impact. Managing volume space is intimidating and where I see people struggle the most.
Smith: This is a really, really terrible one. To have a 9-foot sofa in a small room can be kind of treacherous. Make sure furniture decor has similar scale. It's all about scale, proportion, measuring, being conscious of the overall plan. People buy things in isolation and don't think of how they work together.

Mistake No. 2: Neglecting
room function
Smith: People get trapped in the way things should feel and less focused on the way things should function. Making a dining room into a dining library gives it function. You could make the living room a study or put a TV in it so you could actually use it. Think of how much furniture you need. What's the best way to have it be functional in a great way? hether your gallery wall contains rare French lithographs or drawings by your children, you should do your best to protect what you have chosen

Often we hang things up quickly when we move in, not taking into consideration factors that may damage art over the long term, such as exposing it to sunlight or direct heat from a radiator or HVAC vent. But how do you actually clean your artworks? Experts say as little and as gently as possible. And if you have cleaning help or a cleaning service, make sure to go over the procedures you would like them to follow when dusting your framed items. Tiarna Doherty, chief of conservation at the Smithsonian American Art Museum, also oversees programming for the Lunder Conservation Center, which has free clinics on art conservation. She offered solutions for concerns about keeping paintings clean and some basic guidelines for hanging art safely. For specific concerns about a piece of art, she recommends the American Institute for Conservation, which has a "find a conservator" service.
Go over this list and see if you are making some common mistakes when it comes to the care of your framed art.
Using glass cleaner. You should not spray or pour any
glass cleaner on your framed art. As tempting and as efficient it might seem, this fluid can seep into the edges of the frame and damage the art and the mat, Doherty says. To clean the glass on a piece of art, use a dry cloth. Or you can mix a little water with rubbing alcohol, dip in a corner of a soft cloth and then wipe your glass.
Cleaning wood frames with furniture polish. Spraying
or wiping furniture polish on frames is not recommended. You could disrupt a coating or a patina on your frame, Doherty says. An old frame may be made of wood with gilding and should be handled with care. It's best, she says, to lightly dust a frame with a small, soft dry brush that you can pick up at an art store. Don't ever use water or any other liquids to clean a frame.

Both of these things can damage art, possibly causing it to fade or crack. Try to hang original artworks in a more stable environment away from exterior doors.
Storing surplus art in a basement, attic or garage.
This is a no-no. Basements can be damp environments and attics and garages tend to have vast temperature fluctuations and can get very hot in the summer months, which is not a good environment for original art. Generally, says Doherty, if you are not displaying your artworks, store them leaning against a wall in a closet or a guest room. If you have a stack of them, separate them by boards. W
hen late winter and early spring days are drab and gray, brighten your indoor landscape with paper flowers. Did you ever make tissue-paper flowers? Well, our version for a poppy is easier because instead of tissue paper, we use coffee filters! Simply dye the coffee filters the colors that you love and assemble “poppies” to fill vases around the house, use as a centerpiece for a brunch or buffet, or even give as gifts.
you’ll need:
» 2 sizes coffee filters (our large one measures 14 inches across) » 1 small black tassel (for each flower) or 4 –inch piece black fringe » 24-inch green crepe paper streamer » Masking tape » Glue » Pipe cleaners » Paint (we used orange for poppies, but use any color you chose) » Plastic or glass bowl » Newspaper
For the petals: Spread a thick layer of newspapers in your work space. You’ll need room to spread out the filters to dry after dipping. Dilute paint to a watery consistency in your bowl. Fold filter to form a cone. Dip the cone into the paint, then use your fingers to gently squeeze out the excess. Be careful because filters tear easily. Lay filter open and flat to dry. You also can do this over a bowl. For flower stamens: In a bowl, mix together glue and water to a thin consistency. Soak fringe or tassel in the water-glue mixture. Squeeze and form into a scrunched ball. Set aside and let dry. To assemble: Layer to sizes of filter, bigger one on the bottom, then pinch in the center to form a cup. Place stamens inside squeezed cup. Tape back of flower to secure squeezed cup. Put 1 pipe cleaner on each side of the tape and tape again. Then twist pipe cleaners together and wrap with more masking tape, then cover with green streamer to form stem.

Editor’s note: Dye a coffee filter sized for 4-8 cup coffee maker, along with the two other sizes, then three together layer to create a rose. It’s easiest to make the flowers in stages. First, dye all the coffee filters in the colors you want, and dip fringe in gluewater mixture. Let them all dry thoroughly. Then set up an assembly line to actually create your flowers.

ow do you compete with an absolutely breathtaking view of the Mississippi River? You don’t, of course. What you do is, make the most of it by incorporating each panoramic scene into the overall landscape design. CVHG has featured the interior of this comfortable and elegant Old World-inspired Fort Madison family home in the Spring 2012 issue. At the time, a series of multi-level patios, screened porch and landscaping served to enhance the rear of the home, situated on a bluff that overlooks the Mississippi. As their children grew older and discovered swimming as a favorite activity, their parents decided to take the plunge and build a swimming pool. That major step also provided the opportunity to rejuvenate and alter other areas of the landscaping and dĂŠcor. “They wanted to create a relaxing family atmosphere. They entertain a great deal by hosting large family gatherings and charity benefits, so they wanted room for guests to comfortable mingle and enjoy the setting for all of the vantage

points,” says Rhonda Staley, IIDA. “They’re also very aware — and enjoy — that they’re in Mark Twain territory, so the exterior furnishings are a blend of the European look they love without going over the top, and incorporating comfort and sensibilities in the fact that they’ve right over the banks of the Mississippi,” she explains. Staley, an interior designer at Iowa City’s The Mansion, collaborated with the homeowners on the project, as she had on furnishing and decorating the home’s interiors. One of the first changes was to create dining space on the lower level porch. “It had been a covered patio with brick arches, and we were able to engineer sliding screen doors in the archways to enclose the space for dining,” she says. The lower-level patio is near the recreation room with its pool tables and other entertainment options, but with the swimming pool and hot tub just steps away, its uses have multiplied. “They all love the pool, but it’s the firepit that they spend hours and hours during the evening, talking and relaxing. They say it’s one of the best things they’ve ever done. We brought in all of the colors — the warm tones from inside the house that she prefers — to the outdoor furnishings. The colors go beautifully with the stone and brick,” Staley notes. H&G

tocking up on provisions before heading to their Clear Lake retreat usually means stopping at the grocery store for a few things to toss on the grill, then a swing past Starboard Market. There they’ll pick up homemade salads and sides and delectable desserts to feed a hungry hoard for an entire weekend. “It’s my way of effortless entertaining. Family, friends and food — that’s how our weekends evolve, grilling out and cocktails on the deck. It’s a very indoor-outdoor style of entertaining with family and friends. Everyone wants to be casual, easygoing and have fun,” says the homeowner. “We’re a young family, and we wanted every room to be comfortable and welcoming and take advantage of all the assets of a lake home. It’s a fun, lively setting with a coastal vibe, and the surfaces and fabrics have to be able to stand up to use and abuse of kids with snacks and adults with cocktails.” Interior designer Jessy Whitinger with Austin's Interiors and Design in Waverly, chose traditional style with a nautical flair — “just lake-y enough,” unified by soft, warm taupe-gray. “We needed the neutral wall color to ground the furnishings and accessories,” she says. “Pops of fun color keep things from getting too serious.” In the living area, cushy club chairs are dressed in coral polkadot linen blend. The Hancock and Moore sink-into sofa with metal legs welcomes guests to settle

in front of the fireplace. The upholstery is a hardwearing fabric in subtle herringbone, “a nice play against the floor.” Oak planks are glazed and waxed for a matte finish that effectively — and attractively — conceals wear and tear. Throw pillows in a mix of patterns, including a few sayings like “Every little thing is gonna be alright,” and artwork that includes their children’s first bathing suits framed in shadow boxes add liberal dashes of humor and color. A bright orange ottoman and parrot-themed draperies complete the look. White Westridge cabinetry gleams in the kitchen. Navy blue bar stools add snap to the large island and countertop dressed in matte-finish Caesarstone quartz, and the ceiling is tongue-and-groove beadboard with twin gleaming lanterns dangling down — more nautical touches. Here, accessories are kept to a bare minimum so as not to compete with the amazing views of sparkling Clear Lake. “With the big island for mingling, hanging out and serving meals, and the living room and deck, this whole area is a gathering place with space for lots of bodies,” says Whitinger. Kids sleep in the bunk room — a bedroom with two sets of bunk beds with deep, cozy comforters, or in the upstairs loft space. There’s also a guest room. drama to the serene master bedroom with a private deck overlooking the lake. There are twin chaise lounges upholstered in animal print, and it’s only a few steps to the large master bath with its 24- by 24-inch Italian porcelain tile laid in a herringbone pattern. “The glass door on the shower isn't here yet, but that’s coming. With three young kids in the tub, there’s definitely a car wash effect. Water gets everywhere, but bathroom is built to take it. Life is short, and you want spaces you can live in and enjoy without worrying,” she says. Some evenings after the kids are bathed and in their PJs, the homeowners strap them into life vests and everyone climbs aboard a boat for a ride around the lake. “The kids wind down and get sleepy because it’s so calming on the water,” says the homeowner. The family bought the home in 2014, recognizing it needed some major renovation, such as electrical and mechanicals. But when the home was gutted, they discovered serious structural problems. Working with contractor Darin Dietz of Dietz Construction LLC in Nashua, they were able to beef up the bones, change the roof slope and make other structural changes to create a safe and sturdy vacation home. “They were lucky to have such a good contractor in Darin. He loves a challenge, and he’s a problem solver,” Whitinger says. One of their favorite spots in the home is just inside the front door, where a tent, table and crayon station give kids of all ages a chance to draw. “We ask that all our guests sit down and paint a small canvas for the living art wall describing what they liked best about their stay," says the homeowner. "It’s a way of leaving a little bit of themselves behind.” H&G

nyone whose second home is on the lakefront expects to play host to plenty of weekend guests. Who can resist the idea of summer days on the water spent boating, fishing or waterskiing, or the simple life of kicking back on a lounge chair to soak up some rays? Late spring and summers are especially busy for owners of this Lake Ponderosa vacation home. “We have a big family, and we love entertaining, so we have a lot of coming-and-going,” she says. “We’re on the main channel of the lake, and the view is just awesome.” At night, there are grill-outs and a party atmosphere on their double-decker barge just down the hill from the home, or family and friends head out for pub food and live music at the marina, Jumpin’ Jimmys, the Frost Bar or other lively hang-out. Lake Ponderosa, west of Montezuma, is a private lake with seven miles of shoreline surrounded by about 700 homes. Some residents live at the lake year-round, while others are frequent vacationers who appreciate the setting and familyfriendly atmosphere. These owners have vacationed here for about six years. This is the second home they’ve owned at Lake Ponderosa, and after
three years, decided to do some renovations, particularly the kitchen. They enlisted interior designer Jennifer Ferson’s expertise in making it happen. “The kitchen didn’t take advantage of the lake view at all. There was a window above the kitchen sink but it was so high you couldn’t see the lake. What’s the point of being at the lake if you can’t see it? We wanted to lighten up the kitchen and let in the view,” says Ferson, owner of Ferson Kitchen & Bath Design in Cedar Falls. What once was a dark and drab kitchen with flat 8-foot ceilings is now a crisp white kitchen with a nautical air. The ceiling was opened up and vaulted — “without having to alter the roof,” Ferson says, and clerestory windows added for natural light. Above the Elkay composite sink, the window was enlarged to offer the spectacular view. Dated oak cabinetry was replaced with Dura Supreme white cabinets and a Viking suite of appliances is professional chef-quality gear. Countertops and peninsula are dressed in HanStone quartz in “Blackburn,” a speckled blend of black, gray and white, while the backsplash is Carrera marble. Underfoot is an easy-care, durable luxury vinyl tile that can handle the traffic. . “The shape of the peninsula

mimics the octagonal shape of the breakfast nook and allows for easy movement in the kitchen. We also added French doors to visually open up the kitchen even more to the lakefront view,” Ferson notes. In the dining space, a soaring stone fireplace adds natural drama and complements the custom-built corner wine-bar cabinet. The two-sided fireplace introduces interest in the living room, as well. “We wanted to open up and brighten up, and now our home is so bright and cheerful. It’s exactly what I wanted to accomplish,” the owner says. In four or five years, she expects the vacation home to become their full-time residence. H&G

entertaining If you’re in the mood to make something easy and delicious for supper, just reach for one of these recipes provided by one of CVHG’s favorite chefs. Chef William Gerstenberger of Crossroads Hy-Vee has created these week-night wonders that appeal to both comfort lovers and sophisticated palates. And because no one likes cleaning up a mess, these dishes are mostly made in one pot.
mond ay Shrimp Pho Vietnamese Noodle Soup “Pho” Serves 4
8 ounces rice noodles, thin or pad thai style 1 teaspoon whole coriander seeds ¼ teaspoon ground cloves ¼ teaspoon ground black peppercorns 1 tablespoon toasted sesame oil 2 tablespoons minced ginger root ½ tablespoons garlic paste 8 cups chicken broth 2 strips lemon peel 2 tablespoons soy sauce 2 tablespoons fish sauce 2 tablespoons lime juice 2 tablespoons hoisin sauce 1 teaspoon cinnamon 8 cups bok choy stem, thinly sliced 1 pound 26-30 count raw shrimp, peeled, shelled and tail-off Prepare rice noodles according to package directions and set aside. In a large soup pot, add toasted sesame oil and heat for about 1 minute until its starts to shimmer. Add ginger, garlic paste and stir for 30 seconds to release flavors. Stir in chicken broth, lemon peel, soy sauce, fish sauce, lime juice, hoisin and cinnamon. Bring mixture to a boil, then add shrimp and bok choy. Turn down to a simmer. When shrimp turns a pinkish/opaque white, about 3 to 4 minutes, taste to check seasonings. Add salt, pepper and soy sauce, as needed.

You’ll need: one 9-inch spring form pan, or 9- by 13inch casserole dish 1 pound cooked spaghetti pasta 2 cups marinara sauce or tomato sauce, homemade or jarred 2 eggs, beaten 1 small yellow onion, chopped 3 cups shredded mozzarella cheese, divided 20 small meatballs (small), homemade or frozen 4 ounces cream cheese 1 cup fresh vegetables, such as zucchini, optional Preheat oven to 350 F. Spray the 9-inch pan with nonstick cooking spray. Set aside.
In a large bowl, soften cream cheese in the microwave for 15 seconds. Add eggs and whisk until smooth and combined. Add pasta, sauce, onions, meatballs and half of the mozzarella cheese; stir to combine. Pour half of the spaghetti mixture into the springform pan or casserole dish. Add remaining spaghetti mixture and top with remaining mozzarella cheese. Press everything down to make it compact. Cover springform pan with foil and bake for 55 minutes. Remove foil and broil until cheese is golden brown on top. Remove from oven and let rest for 15 minutes. Serve with a nice merlot.

wednes d ay Pork Chops with Swiss Chard and White Beans Serves 8 to 10 people
2 tablespoons extra virgin olive oil 4 boneless pork chops (about ¾” thick) 1 teaspoon paprika 1 bunch Swiss chard, stems thinly sliced and leaves torn into bitesized pieces (about 5 cups) 1 medium onion, chopped 16 ounces cannellini beans, rinsed 2 tablespoons red wine vinegar 2 cloves crushed garlic 1 teaspoon red pepper flakes
Heat olive oil in a large skillet over medium heat. Season pork with paprika, salt, pepper and red pepper flakes. Cook pork for 3-5 minutes a side. Transfer to platter and tent with foil. Reserve the skillet. Add the onion, beans, chard leaves, salt and pepper and cook on medium heat. Toss the chard frequently for about 2-3 minutes) and or until wilted. Take the pork and return back to skillet and mix everything together. Continue cooking for 1-2 minutes to heat through. Serve with a chilled Chardonnay and crusty hard bread.

Heat olive oil in a skillet over medium heat. Saute onion until lightly browned. Stir in garlic, curry paste, cinnamon, paprika, ginger, sugar and salt. Continue stirring for 2 minutes. Add chicken pieces, tomato paste and coconut milk. Bring to a boil, reduce heat and simmer for 20 to 25 minutes. Stir in lemon juice and cayenne pepper. Simmer 5 more minutes. Serve over cooked white rice and naan Tandoori-style bread.

3 pounds sirloin, cubed 1 large bag egg noodles, cooked according to directions 3 cups sliced mushrooms 2 cups frozen peas (optional) 1 yellow onion, diced 2 small cans beef stock 2 small cans mushroom soup (do not add water) 2 cups sour cream ½ cup dry sherry wine Spritz of Worcestershire sauce Salt and pepper, to taste ¼ cup butter
Melt butter in a very large skillet; add cubed sirloin. Brown beef, then add onions and mushrooms. Saute 5 minutes, then add beef broth and soup. Reduce heat to low and cook for 20 minutes. Season with salt and pepper and stir in sherry. Add Worcestershire sauce and sour cream. Sour cream will serve to thicken the sauce mixture. Add peas and continue cooking for another 5 minutes. Add noodles to skillet and gently fold to mix together. Serve immediately.

Stunningly simple, elegant dessert lets citrus flavors shine Once in a blue moon, I make a discovery akin to finding a unicorn standing in a field of four-leaf clovers at the end of a rainbow: an easy recipe that also tastes amazing. Lemon Posset with Berries is one of those magical unicorns. The instructions have a bit more detail, but this fouringredient dessert boils down to zest lemons, juice lemons, stir, strain. The creamy, pudding-like mixture that results packs a big punch of citrus flavor. Lemon isn't the only flavor that works here, of course; I've experimented with milder orange, though brash lime is equally lovely, especially when paired with cherry. Heck, go for grapefruit, if that's your thing, but the lemon will always be tops for me.

his probably doesn't come as a surprise, but I'm hyper-critical about recipes. Recipes are like blueprints: if they're not designed well, your dish will fall apart, as surely as a house built on an uneven foundation with crumble. (I'll note here that my ire is reserved for professionals, not home cooks. If you're making money off me — whether that's through a cookbook sale or ads on your blog — I expect a quality product.) I judge the worth of a recipe in three areas, the most immediate of which is the writing itself. Are the ingredients listed in order of use? Are all of the ingredients listed, and are all of the listed ingredients called for? (I've seen examples of both!) Additionally, are the steps explained clearly? Are there good notes about the equipment required? If I'm pouring cream into hot sugar to make caramel, I know I need a saucepan with high sides to keep it from foaming over — but not everyone will. Those are the mistakes I don't forgive lightly. I'm somewhat softer in the second area: technique. There are a hundred ways to prepare any given dish, so I don't expect that I'm going to agree with the given method. On top of that, cooking is full of old wives' tales that refuse to die. Use old eggs for hard boiling! (Except fresher eggs are less apt to leave a green ring and the yolks are more likely to be centered.) Don't check on the cake early, or you'll cause it to fall! (You can literally slam your oven door shut and your cake will be fine.) That's why I don't expect every recipe writer to know, say, dissolving cocoa powder in boiling water amps up the chocolate flavor it provides. But you better believe if I have a recipe with water and cocoa, I'm adapting it so they get mixed together. My crankiness aside, those areas are fairly superficial — and easy to fix. I can rewrite a recipe in the right order with my own notes in short fashion. It's the third area — what I think of as the payoff ratio — that really counts. Is the finished dish worth all the hassle? This is incredibly subjective, of course, but it's critical. Take the recipe I use for Chicken Tikka Masala, an Indian curry. First you rub the chicken with spices, let it rest, coat it in a yogurt mixture, broil it, let it rest again and cut it into chunks. Oh, don't forget the sauce. And the rice. And the naan. Forty-two dirty dishes and utensils later, and I'm ready to eat. It's a time- and labor-intensive meal to prepare, but it's also one of the best things I've ever eaten. Therefore, it has earned a place in my personal Pantheon of Recipes. On the flip side, I like cake truffles just fine — or cake pops or cake balls, whatever you want to call them — but I refuse to make them because the finished product does not justify the aggravation of the shaping and dipping process.

alan simmer/on cooking Lemon Posset with Berries Reducing the cream mixture to exactly 2 cups creates the best consistency. Transfer the liquid to a 2-cup heatproof liquid measuring cup once or twice during boiling to monitor the amount. Do not leave the cream unattended, as it can boil over easily. 2 cups heavy cream 2/3 cup granulated sugar 1 tablespoon grated lemon zest plus 6 tablespoons juice (2 lemons) 1 1/2 cups blueberries or raspberries Combine cream, sugar and lemon zest in medium saucepan and bring to boil over medium heat. Continue to boil, stirring frequently to dissolve sugar. If mixture begins to boil over, briefly remove from heat. Cook until mixture is reduced to 2 cups, 8 to 12 minutes. Remove saucepan from heat and stir in lemon juice. Let sit until mixture is cooled slightly and skin forms on top, about 20 minutes.
Strain through fine-mesh strainer into bowl; discard zest. Divide mixture evenly among 6 individual ramekins or serving glasses. Refrigerate, uncovered, until set, at least 3 hours. Once chilled, possets can be wrapped in plastic wrap and refrigerated for up to 2 days. Unwrap and let sit at room temperature for 10 minutes before serving. Garnish with berries and serve. Variations: For a softer-set Creamsicle Posset with Berries, substitute navel oranges for the lemons. For Cherry Limeade Posset, substitute three to four limes for the lemons and top with cherry compote or cherry pie filling. Chef's notes: The lower acidity of orange juice curdles less of the cream than lemon juice does, leaving it less firm; limes avoid this pitfall. While the recipe insists on individual portions, I serve this in a very unsexy loaf pan to no ill effect when I'm not trying to impress. Adapted from America's Test Kitchen.

his Speckled Egg Malted Milk Cake is so pretty and impressive, you won’t want to cut into it. Please do! Because the inside, OK, the outside, too … is inspired by robin’s egg malted milk Easter candies. This Betty Crocker recipe is easy to make, too, because it starts with a “SuperMoist” Betty Crocker white cake mix. Add malted milk powder for the flavor, frost with a soft blue buttercream frosting and top with a Phyllo nest filled with robin’s egg candies.
Cake: 1 box Betty Crocker SuperMoist white cake mix 1/2 cup malted milk powder 1 1/4 cups water 1/3 cup vegetable oil 3 eggs
pans. Bake 22 to 28 minutes or until cakes spring back when touched lightly in center. Cool cakes in pans on cooling racks 5 minutes. Turn cakes out onto cooling racks; cool completely, about 30 minutes. Level cakes using large serrated knife or cake leveler, if needed.
Frosting: 1 1/2 cups unsalted butter, softened 4 cups powdered sugar 1 teaspoon vanilla Dash salt Liquid blue food color
To make frosting, in large bowl, beat softened butter and powdered sugar with electric mixer on low speed until incorporated; beat on high speed 3 minutes. Add vanilla and salt; beat 1 minute longer. Add blue food color 1 drop at a time, beating until a light blue color is achieved.
Speckling Chocolate: 1 tablespoon unsweetened baking cocoa 4 1/2 teaspoons vanilla Heat oven to 350 F. Spray 3 (8-inch) round cake pans with cooking spray; set aside.

Bake at 350 F until golden brown, 10 or 12 minutes. Cool completely. On top of frosted cake, gently pile dough into a nest shape (use a dot or two of frosting to hold it in place) and nestle 2 or 3 speckled egg candies inside. Use any remaining pieces to decorate around the bottom of the cake, if desired. Before serving, bring cake to room temperature. Store cake loosely covered with plastic wrap. Expert tips: Buy a new stiff-bristled craft brush to use for cake-speckling purposes. Most any size will work, but a 2-inch brush or larger will cover more surface area and make quicker work. Phyllo dough usually be found in the frozen grocery aisle with the ready-made pie crusts and puff pasty. It can also be found at Middle Eastern grocery stores and international markets. The malted milk egg candies can be speckled with the chocolate to match the cake perfectly. Cover your work surface and lay the candies on a paper towel before you begin speckling them. Allow the candies to dry for 5 minutes before transferring them to the nest on top of the cake.

ho doesn’t love a pretty face? Pansies come a rainbow of colors: from crisp white to almost black, and most colors in between. Gorgeous as decorative plants in the spring or fall garden, pansies also are edible and pair well with lettuces in the vegetable garden. Most pansies fall into a few categories: Large (3 to 4 inches), Medium (2 to 3 inches) Multiflora (1 to 2 inches) and a new category of trailing pansy. Some modern Largeflowered pansy series are "Majestic Giant," bred by Sakata; "Delta," bred by Goldsmith Seeds; and "Matrix," bred by PanAmerican Seed. Medium-sized pansy series include "Crown" and "Imperial" by Sakata. Multiflora pansy series like "Maxim" and "Padparadja" won AAS awards in the early 1990s. New on the scene for hanging baskets and ground cover are "WonderFall" from Syngenta, and "Cool Wave" pansies from PanAmerican Seed, makers of "Wave" petunias. These trailing pansies spread over 2 feet wide and overwinter in fall gardens. Today’s garden pansy varieties can fill any sunny space — large or small, hanging overhead or growing underfoot — with soft fragrance and happy blooms.

magine stepping into a bathtub, and instead of bathroom tiles lining the wall next to you, there's a fresh vertical garden, lush with bright green ferns, lavender, baby's tears, mint and other fragrant plants. San Francisco-based design studio Siol created just that a few years ago for one home. Unusual ways to display indoor plants run the gamut, from built-in shelves and containers in and along walls, countertops or tables, to wall pockets and terrariums. "Decorating with plants is still one of the easiest ways to make a home feel lived in and relaxed," said James Augustus Baggett, editor of Country Gardens magazine. "There are so many different ways that people can incorporate plants into a home's design." For that living green bathroom wall, grow lights and a selfcirculating drip water system were built into the 10-by-10foot wall to promote indoor growth. Of course, a full green wall is also incredibly pricy—it can cost customers at least $10,000, at about $100 to $200 per square foot because of its embedded lighting and watering system. A much cheaper indoor-garden alternative is pockets made of various materials — including ceramic, glass, plastic, wood, metal and even macramé — that can hang directly on a wall and be filled with plants, said Baggett. They can run about $20 to $100 each. Easy-to-care-for indoor plants include snake plants — also known as sansevierias — with long, pointy green leaves that reach upward; dark green, cast iron plants; wall-crawling ivy; dangling spider plants; succulents; and foxtail ferns. Snake plants and cast iron plants, especially, require little light and watering. Bonsai trees, bay laurel trees and small fig trees can also be displayed indoors in both planters and partitioned floor areas padded with soil and rocks. Those living in smaller homes can get creative: "Vertical gardening is the hottest trend for not a lot of space," said Baggett. "There's the floating shelf — a shelf that's just sticking out of the wall — and the half wall, a waist-high wall, with plants on top of it. Recessed wall niches are also popular." Miniature gardens, from terrariums — landscapes in glass containers —to fairy gardens, have caught on for both space-conscious adults and fun-loving kids. Kokedama, a Japanese plant art that means "moss ball" in English, involves forming a moss-covered ball of soil around the roots of a plant and wrapping it with twine. Suspending these moss balls as hanging plants is also a trend.. Those with a retro aesthetic can display succulents and cacti in vintage tins and decorative pottery. Molded fiberglass bullet planters, popular in the 1950s, have also been making a comeback. The size of an ice bucket, the planter is held aloft on a three-pronged stand.
