Here are a few reasons to cook kebabs: Small chunks of lean meat can be marinated with a variety of seasonings. Skewers can be customized for individual portions, and grilled or broiled in the oven. They cook in minutes. Best of all, they are a crowd-pleaser. This recipe uses turkey breast, marinated in a quickly assembled mixture of spices and herbs. The glaze is a finishing touch that lends a hint of sweetness and gives the kebabs a lovely mahogany finish. You’ll need to soak 6 medium-length bamboo skewers for 30 minutes. MAKE AHEAD: The kebabs need to marinate for 30 minutes at room temperature or for at least 2 hours and up to 8 hours in the refrigerator.

Apple Cider Glazed Turkey Kebabs 3 to 6 servings (Makes 6 kebabs) For the kebabs: 1 tablespoon mild olive oil 1 tablespoon apple cider vinegar 2 teaspoons light brown sugar 1/2 teaspoon kosher salt 1/2 teaspoon freshly ground black pepper 1/2 teaspoon freshly grated nutmeg 1/4 teaspoon ground ginger 1/2 teaspoon crushed mixed dried herbs, such as a combination of oregano, parsley, chives, thyme and/or fines herbes 1¼ pounds boneless, skinless turkey breast or turkey breast tenderloins, cut into 1-inch cubes For the glaze: 1½ cups unsweetened, fresh apple cider 1/2 cup homemade or no-saltadded chicken broth 2 teaspoons light brown sugar Kosher salt For the kebabs: Whisk together oil, vinegar, brown sugar, salt, pepper, nutmeg, ginger and herbs in medium bowl. Add turkey pieces and stir to coat. Cover with plastic wrap; marinate for 30 minutes at room temperature or for at least 2 hours in the refrigerator. For the glaze: Combine apple cider, broth, brown sugar and a pinch of salt in a small skillet or saute pan. Bring to a boil over medium-high heat. Cook for 10 to 15 minutes, adjusting heat as needed to maintain a steady boil, until liquid has reduced to consistency of light syrup. Watch closely to avoid over-reducing. Remove from heat. Prepare grill for direct heat. If using a gas grill, preheat to medium-high (450 F). If using a charcoal grill, light the charcoal; when the coals are ready, distribute them evenly over the cooking area. Grease the grill grate with cooking oil spray and place it on the grill. Thread turkey onto soaked skewers. If desired, place two pieces of heavy-duty aluminum foil on the grill to keep the ends of the skewers from burning. Transfer to grill; close lid and cook for about 4 minutes, until the kebabs have grill marks. Use tongs to turn over skewers. Brush cooked side of kebabs with half of the glaze. Close grill lid and cook for 4 minutes. Uncover and turn skewers again, brushing second side of kebabs with remaining glaze. Move kebabs to a cool section of the grill if browning too fast. Close lid and cook for 2 minutes. Turkey is done when an instant-read thermometer inserted into the thickest part of the turkey registers 165 F. Let kebabs rest for 5 minutes before serving.

Goodies from Mrs. Claus’ kitchen to make at home From page 1
Cranberry-Orange Streusel Bars 12-ounce bag fresh cranberries (not frozen) 1 ½ cups flour ¾ cup old-fashioned oats ¾ cup brown sugar 1/8 teaspoon ground nutmeg ½ teaspoon baking powder ¼ teaspoon salt ½ cup unsalted butter, softened 1 large navel orange 14-ounce can sweetened condensed milk 2 large egg yolks ¼ teaspoon vanilla 1/3 cup slivered almonds Let cranberries stand at room temperature for one hour. Arrange one rack in middle of oven. Preheat oven to 350 F. Line 9x13-inch baking pan with foil, with overhang on all sides. Generously grease foil. In large bowl, combine flour, oats, sugar, nutmeg, baking powder and salt. With fingers, work in butter until evenly distributed. In small bowl, reserve one cup mixture for topping. Transfer remaining mixture evenly into the bottom of pan. Bake until light gold brown, about 12 minutes. While crust bakes, grate 1 teaspoon orange peel and squeeze 1/3 cup orange juice. In medium bowl, whisk sweetened condensed milk, egg yolks, vanilla, orange peel and juice together until well combined. Sprinkle cranberries evenly over hot crust. Pour orange mixture over berries. With spatula, spread gently to evenly distribute cranberries and orange over crust. Bake 7 minutes. Remove pan from oven. Sprinkle evenly with reserved topping, then sprinkle almonds over top. Bake 30 minutes or until filling bubbles and topping is golden brown. Cool in pan on wire rack for one hour. Carefully lift out of pan using foil overhang. Cool completely on wire rack. Remove foil and cut into 24 bars. Can be frozen for up to three months.
Caramel Pecan Rolls 1 box Jiffy yellow cake mix 2 ½ to 3 cups all-purpose flour ½ teaspoon salt 1 ¼ cup warm water (110115 F) 1 teaspoon sugar 1 package yeast or scant tablespoon 1 stick butter, softened ½ cup sugar 2 teaspoons cinnamon
1 cup packed brown sugar ½ cup dark corn syrup 2/3 cups pecan halves Sift together dry ingredients. Mix together warm water, sugar and yeast. Allow yeast to proof enough to see small bubbles rise to the top. Mix dry and wet ingredients together; let rest 15 minutes. Knead until smooth or use bread maker to knead. Let rise to double in bulk. Roll out on a lightly floured surface. Spread with ¾ stick of butter. Sprinkle with cinnamon sugar (1/2 cup sugar with 2 teaspoons of cinnamon). Roll up into a log. Melt ¼ cup butter, brown sugar and corn syrup. Spread into 12 large muffin tin. Sprinkle pecan halves over the sugar mixture, approximately 4 to 6 pecan halves into each muffin tin. Cut log into 12 equal pieces and place into the butter-sugar mixture in the tin. Let rolls rise and double in size. The muffin tin can be covered and refrigerated overnight before allowing the rolls to rise. Bake at 350 F for 18 to 20 minutes. Allow to set briefly before turning out. Cook’s note: Cake mix keeps rolls from drying out as quickly as regular sweet rolls. If desired, leave out pecans. Instead mix together 1/3 cup melted butter and ½ cup brown sugar and place in bottom of 9x13-inch buttered pan. Allow to rise until double. Bake 20 minutes at 350 F.
Sharon’s Extra Chocolate Chip Cookies 1 cup butter ¾ cup sugar ¾ cup packed brown sugar 2 teaspoons pure vanilla 2 eggs 2-1/2 cups all-purpose flour (or add ½ whole wheat flour to 2 cups white flour for nuttier flavor) 1 teaspoon baking soda ½ teaspoon salt 10- or 11-ounce package milk chocolate chips 10- or 11-ounce package dark chocolate chips ½ to 1 cup chopped walnuts (optional) Preheat oven to 375 F. Cream butter and sugars until well blended. Add eggs and beat well; add vanilla and mix well. Sift together flour, soda and salt. Add to creamed mixture in two or three small batches; blend just enough to incorporate flour. Mix in chocolate chips and walnuts, if desired. Drop by small scoopsful onto an ungreased baking sheet. For jumbo cookies use an ice cream scoop. Bake 10 to 12 minutes, depending on the size of the cookie. Jumbo cookies should bake 14 minutes or until edges are just lightl browned. Do not overbake. Cool on cookie sheet

Pumpkin Bundt Cake with Caramel Topping 1 2/3 cups flour 1 1/3 cups sugar 1/3 cup cooking oil 1/3 cup water 1 large egg 1 cup canned pumpkin ¼ teaspoon baking powder 1 teaspoon baking soda ½ teaspoon cinnamon ¼ teaspoon cloves 2/3 cups chopped nuts ½ cup raisins Preheat oven to 350 F. Grease well and flour a 2-quart Bundt pan. Sift together dry ingredients. Add oil, water and egg and mix until well blended. Stir in pumpkin, nuts and raisins. Add oil, water and egg. Add pumpkin, nuts and raisins. Pour batter into Bundt pan and smooth. Bake 45 minutes or until cake tests done. Let cake cool in pan 10 to 15 minutes, then give the pan a few sharp taps on the sides before turning it out on to a wire rack to cool. For caramel topping: On a medium-low burner, combine ¼ cup butter, 1 cup brown sugar, ¾ cup water and 3 tablespoons flour. Stir until ingredients are combined and mixture thickens. Remove from heat and add vanilla. Stir. When cake is cool, spoon the caramel topping over top.

Preheat oven to 350 F. Line several baking sheet with parchment paper. Slice logs into ¼-inch slices. Bake for 10 to 12 minutes or until lightly golden. Let cool on pans for 2 to 3 minutes. Remove from pans. Let cool completely on wire racks.

Makes 5 (6x3 ¼-inch) loaves 1 cup butter, softened 3 cups sugar 5 large eggs ¾ cup sour cream 1 (20 ounce) can pineapple chunks, drained and juice reserved 1 teaspoon vanilla extract 3 cups all-purpose flour ½ teaspoon baking powder ¼ teaspoon salt ¼ teaspoon baking soda 1 cup sweetened flaked coconut Preheat oven to 300 F. Spray 5 (6x3 ¼-inch) loaf pans with nonstick baking spray with flour. In a large bowl, beat butter at medium-high speed with a mixer until creamy. Add sugar, beating for 2 to 3 minutes until fluffy. Add eggs, one at a time, beating well after each addition. Add sour cream, ¼ cup reserved pineapple juice and vanilla, beating well. In a large bowl, sift together flour, baking powder, salt and baking soda. The U.S. Department of Housing and Urban Development has been delaying a decision for months about whether to punish the Apache ASL Trails housing complex in Tempe, Ariz., for the sin of renting 85 percent of its units to the hearing-impaired — for whom the facility was actually designed (equipped with comfort and safety features to serve the deaf). However, HUD has threatened to withhold federal funding because Apache is suspected of illegally discriminating against the non-hearing-impaired (who under guidelines should, HUD believes, occupy three-fourths of Apache’s units). Joshua Goverman, 29, was arrested in Glendale, Ariz., in October for allegedly stealing copper wiring from the back of an air-conditioner truck in a driveway. Her committee created a unique and comfortable setting by placing the dueling pianos in the middle of the ballroom, lining the stage perimeter with overstuffed chairs and adding high-top tables. EPI director Chris Sparks noted it was the organization’s first foray into planning a fundraising gala. “Of course we hope to raise a few dollars for our employment program and children’s services but more importantly we want to raise awareness,” said Sparks. Individuals served by EPI live and work in our community and earn wages in various work settings, which in turn helps to provide local businesses a stable, quality work force.

A. You could teach one
dog to always walk on your right side, and the other to always walk on your left. To get this started, plan on taking some time to train each dog separately to walk on the desired side. Enlist the help of a trainer who can help you achieve your goals in a positive and gentle manner. Within a few weeks you should be able to walk them together again. Another option is to attach a coupler, a 6- to 12-inch leash that has clips at each end. You clip the ends to your dogs’ collars, and then they walk in tandem while you hold only one leash. You can teach the dogs to walk out in front of you, or both walk on the same side of you. Again, this will require a bit of training.

have unrealistic expectations about how their dogs should treat their toys. While there are some dogs out there who gently mouth toys, most dogs enjoy shredding them when they can. The solution is to reframe how you think about the ways your dog gleans enjoyment from toys. Since your dog clearly loves to shred those soft toys, plan on purchasing those with the mindset that they won’t last very long. You may pick some up at a dollar store or a yard sale. Watching your dog destroy a toy hurts less when you haven’t paid much for it — and you should learn to enjoy the glee with which your dog goes after those toys — it may make for a great YouTube video. One point of concern is that your dog not swallow a great quantity of the soft toy’s innards. Eating the plastic squeaker or the stuffing could pose a significant health threat, so when you give your dog access to these toys, make sure you are around to pick up and dispose of the stuffing as it comes flying out. This is what I do with my own dogs; the hilarity ensues when I give my Dachshund a plushy toy. I sit on the floor, collect the stuffing as it is removed, and when it’s all out, I can relax while my dog continues to toss around the remaining fabric shell. On the flip side, spend a few more dollars and invest in some super resilient toys that are meant to be chewed on. They’re out there, although you have to really search to find them. Look for products with moneyback guarantees if your dog is able to destroy it; heavy, rubber-type toys are often a good bet. Better still are ones with a port so you can add a swipe of peanut butter or cream cheese to make it a bit more interesting. These toys would be a safer choice to leave for your dog to enjoy when you are gone.
