NEW YEAR’S EVE MENU, WITH LIVE MUSIC At L’ALBUFERA
SALADS
COURSES
Salad bar with crudités and selection of dressings.
Stuffed spicy bread roll with creamy foie gras, accompanied with strawberry jelly and lyophilized fruits.
Rocket salad with marinated duck and cherry tomatoes. Couscous with dry fruits and mint dressing. Avocado, orange and almond salad. Marinated artichoke with prawns and feta cheese.
COLD STARTERS Fresh sea food selection. Oysters. Gravlax salmon terrine. Foie grass in toast with caramelized onion and green asparagus. Selection of international cheeses and biscuits. Gran Marnier with caramelized orange and cinnamon flavour.
SOUP Game consommé with wild mushrooms and herbs.
Soil, Sea and Air
Soil: breaking nest with marinated oyster. Sea: all the flavours of the sea in a cube of gold seeds and fresh oyster. Air: raw oyster with lime foam inside a sphere. Apple sour balls , refreshing cocktail including green apple with watermelon liqueur and whisky. Dover sole stuffed with crab, served with a duo of sauces, bisque and Morell sauce. Larded beef tenderloin with Iberian ham, baby vegetables, crispy wild rice and aromatic herb sauce.

Green tea stone on a bed of caramel pudding with crunchy chocolate and stuffed wafer tubes.
MAIN COURSES
£125 per adult
Duck breast with red fruits and cinnamon sauce. Pan fried halibut with piquillo sauce and blank ink.
Children aged 7 - 14 years inclusive £47, Children under 7 years inclusive free of charge.
Grilled beef tenderloin with aromatic red wine sauce

Baked root vegetables with sweet ginger glaze. Steamed seasonal vegetables with coriander oil. Roasted potato, sweet potato with Mari oil. Green sautéed vegetables, asparagus with pomegranate, parsnips and herbs.
HOT CARVING STATION Iberian ham and marinated home made salmon.
DESSERTS Selection of Christmas desserts including mince pies and Spanish sweets.
