Party time HVA Tailgate atmosphere draws a church

Though Martin Smith was wearing a University of Georgia cap while admitting he’s a passionate Bulldogs fan, this Hardin Valley Church of Christ children’s youth leader was helping elementary school-aged children enjoy a “Go Hawks” atmosphere Friday evening, Sept. 12. Smith and other church youth leaders treated roughly 20 second through fifth grade school-aged children, the church’s Grow Like Jesus group, to grilled hamburgers, hot dogs, chips, soft drinks and cookies. The occasion, which included nine primary sponsors including Food City, was Hardin Valley Academy Tailgate, an annual sponsordriven munch-fest held prior to the Hawks’ varsity football game versus South-Doyle. “It’s just a fun time for the little ones that don’t ever get to do cool stuff like this,” said Smith, whose two children, Jonas, 10, and Jake, 8, are part of the GLJ group. Enjoying their first HVA tailgate experience, the church “hopes to continue it” as a GLJ celebration, Smith added. Other church adult leaders on hand to cook and help make the See PARTY on Page 5C

Pulled Pork
Peanut Butter Balls

1/2 cup Rolled Oats 1/4 cup Natural Peanut Butter (can sub in any other butter) 1/4 cup Peanut Flour (or any other flour would work) 1/4 cup Honey or Agave 2-3 tablespoons Mini Chocolate Chips or Cacao Nibs 1 teaspoon Vanilla Extract Dash of Sea Salt
Directions Combine all ingredients in a bowl, and mix until everything is thoroughly mixed together. Roll into small balls, about one heaping tablespoon of “dough.” Makes about 12 balls (can double or triple recipe, as you’ll want more than one!). Store in refrigerator if not eating right away.

6 tablespoons Margarine 6 tablespoons Flour 2 cups Milk 1 jar Cheeze Whiz 1 jar Vlasic® Mild Pepper Rings Hamburger Meat Ketchup & Chili Powder to taste
1 pound(s) whole Pork Tenderloin, fat trimmed 1 teaspoon Chili Powder 1/2 teaspoon Garlic Powder 1 nonstick Vegetable Spray 1/2 cup(s) finely chopped Onion 1 1/2 teaspoon Garlic, minced 1 (15 oz.) can crushed Tomatoes, undrained 1 tablespoon Cider Vinegar 1 tablespoon prepared Mustard 1-1/2 tablespoons Chili Powder
1/4 teaspoon Maple Extract 1/4 teaspoon Liquid Smoke 4 packets Sugar substitute Salt and Pepper to taste 6 Multigrain Hamburger Buns, toasted
Directions Rub pork with 1 teaspoon chili powder and garlic powder; place in baking pan. Bake in preheated 425oF oven 30-40 minutes or until pork is well browned and juices run clear. Let stand 10-15 minutes. Cut into 2- to 3-inch slices; shred slices into bite-size pieces with fork. Spray medium saucepan with nonstick vegetable spray; heat over medium heat until hot. Saute onion and garlic about 5 minutes or until tender. Add tomatoes, vinegar, mustard, chili powder, maple extract and liquid smoke to saucepan; heat to boiling. Reduce heat and simmer, uncovered, 10-15 minutes or until medium sauce consistency. Stir in sugar substitute. Season to taste with salt and pepper. Stir pork into sauce; cook 2-3 minutes or until hot. Spoon mixture into buns.

Directions Make white sauce by combining margarine, flour and milk. Stir until thick. Add Cheese Whiz. Dice pepper rings and add to cheese mixture. Brown desired amount of hamburger (no more than one pound). Season with ketchup until moist and sprinkle with chili powder. Add to cheese sauce. Keep in fondue pot. Dip with tortilla chips.

1 1/2 cups creamy Peanut Butter 1/2 cup Butter, softened 1 teaspoon Vanilla extract 4 cups sifted Confectioners’ Sugar
6 ounces Semi-Sweet Chocolate Chips 2 tablespoons Shortening
Directions Line a baking sheet with waxed paper; set aside. In a medium bowl, combine first four ingredients (using your hands) to form a smooth stiff dough. Shape into balls (about 2 teaspoons of dough per ball). Place balls on prepared pan, and refrigerate. Place shortening and chocolate in a metal bowl. Place metal bowl over a pan of lightly simmering water, and allow chocolate and shortening to melt together. Stir occasionally until smooth and remove from heat. Remove balls from refrigerator. Using a toothpick to hold the ball, dip each one into melted chocolate to cover about 3/4 of ball. Return to wax paper, chocolate side down, and remove toothpick. Refrigerate for 30 minutes to set.
Potatoes Carrots Onion Hamburger meat Butter/Margarine
Directions Dice potatoes, carrots and onion. Spray heavy duty foil with cooking spray. On foil put two small balls of hamburger. Add potatoes, carrots and onion and two pats butter/margarine. Seal very tightly. Cook directly on coals, 10 minutes on each side.

48 whole Cherry Tomatoes 1 lb cooked Bacon, crumbled 3/4 cup Mayonnaise 3 Green Onions, chopped 3 tbs grated Parmesan Cheese 2 tps fresh Parsley, chopped
Directions Cut a thin slice off the top of each tomato. Using a melon-baller, scoop out and discard the pulp. Invert tomatoes on paper towels to drain. In a small bowl, combine all remaining ingredients and stir until well combined. Spoon mixture into tomatoes. Refrigerate until ready to serve.

Light said such fun events as the tailgate help Avery and other children “grow with Chris and build friendships.” While Smith said he’s “had a few tailgates in my time” as a Georgia Bulldogs fan, he pointed to Denton on the grill and added, “Tom’s definitely got the tailgate thing down.” The annual tailgate “is a good way to celebrate the first home game,” said Crateau, whose wife, Meshon Crateau, is an English teacher in the Science Technology Engineering and Mathematics Academy at HVA. “We decided to kind of take advantage of the crowd
and we’re right across the street [from HVA].” Joining Food City as HVA Tailgate primary sponsors were Access Solutions, Inc., Subway, Embroidery Boutique, Taco Boy, Studio C, Marco’s Pizza, Sam’s Club and Moonwalks and Such. Grilling scores of hamburgers and hot dogs was Pam Keathley, human resource coordinator for the Food City location just a few hundred yards west of HVA along Hardin Valley Road. “We have enough food for 300 … 150 hamburgers and hot dogs and we brought, like, 600 bags of chips,” said Mike Iden, head cashier/front end department head at the neighborhood Food City. “A pretty big crowd.” “We’ve been the primary [tailgate] donator for the past three years. But this is the first year we’ve been here cooking ourselves,” Iden added.
