Remember to Put the Thanks in Giving By Jim Webb Jr.

H

appy Thanksgiving to all! Please celebrate this amazing day of American gratitude as you choose to do so. I am not trying to tell you how, or influence your decision regarding choosing a traditional or unconventional Thanksgiving celebration. I just want you to understand Governor-King Thomas Wolf and his Jester CDC Secretary Dr. Rachel Levine have absolutely zero authority to tell you how to spend the day. I am tired of seeing our government overstepping their bounds and trying to guilt and scare people into compliance. It is up to you to educate yourself and understand the risks versus rewards of the current COVID situation — as it should be for everyone that is a citizen of Lycoming County, the state of Pennsylvania, and the United States of America regarding personal rights provided by the Constitution. It is up to you to decide if you’re hosting that traditional Thanksgiving dinner, changing it a bit, traveling to someone else’s house, or just staying home alone. Whatever decision you make, even if you shut down Thanksgiving this year, I stand with you. God Bless you. Make sure to share the true meaning

of Thanksgiving with the children. Always begin with giving thanks and glory to our Almighty Father. Creator of all that is seen and unseen. Make sure the young folks understand the blessing of sharing Thanksgiving Day with family, friends, and loved ones. Most of all, explain the unconditional love of our God, who gave us his only son. Through our Lord Jesus Christ, all good and eternal life is possible. I also like the idea of asking the children to add something in during the saying of Grace. Please, on Thanksgiving, make sure no one is forgotten about, no matter how they choose to spend their day. Respect their wishes but find a way to share food, friendship, conversation, and caring. Psalm 100 KJV: Make a joyful noise unto the Lord, all ye lands. Serve the Lord with gladness: come before his presence with singing. Know ye that the Lord he is God: it is he that hath made us, and not we ourselves; we are his people, and the sheep of his pasture. Enter into his gates with thanksgiving, and into his courts with praise: be thankful unto him, and bless his name. For the Lord is good; his mercy is everlasting; and his truth endureth to all generations.

Wear Red for Kyri 2020 Kyri Hall was a fine young gentleman who loved basketball. He was an honor roll student, a great athlete, and a team captain that led by example. He was beloved by all. It’s hard to believe it’s been 14 years since his tragic passing. This occurred while playing hoops for the Williamsport Millionaire’s 9th grade team during a scrimmage. Through his mother’s efforts, Shantay Hall-Jason and Williamsport AD, Sean McCann, his contagious smile and love of life have carried on. The Williamsport Area School District’s Annual Kyri Hall Memorial 8th Grade Basketball Tournament features the best local hoop talent competing in memory of Kyri. The other heartfelt tribute to Kyri is the community’s wearing of red every November 25th, marking the day of Kyri’s passing. The “I Wear Red for Kyri Remembrance” was started by his mother in 2009. As you should be receiving this week’s edition prior to our cover date due to the Thanksgiving holiday, please dress in some Red to honor his memory. Shantay would like me to pass on a “Thank you for remembering my angel, Kyri.” to all.

Big Bucks Abound Good luck and safe hunting to all that will be hitting the woods for the tradition of the Pennsylvania whitetail rifle season. Remember to get those bucks entered into our 13th Annual Uncle Ron’s Monster Buck Contest. Details on page 55. It was great to see the fall archery season go out with such a bang as many Trophy whitetails got checked into the contest within the last couple of weeks. A tip of my orange Webb Weekly hunting cap with the American Flag on the side to 9-yearold Lyla Smith. The young lady harvested her first PA whitetail. A trophy 8-Point buck, sporting a 20” spread, 10 ¼” G2 tines, and scoring an estimated 140 by Boone and Crocket standards. Lyla, hunting with dad Corey, made a perfect shot with her crossbow at 18 yards. The day will provide memories for a lifetime for the father/daughter duo. Did I mention that Corey, earlier in the archery season, arrowed a trophy 9-Point? What a hunting season for the Smiths. I like Corey’s take on their success, “God is good and truly blessed us this year.” Again, congrats to both! God Bless America.

t’s time for my annual Thanksgiving list! As you join friends and family this Thanksgiving, take a moment to remember all the things you have to be thankful for this year. Times get tough, but there is always a bright side and listing them out often makes the bad seem a little better. I know this year has been tougher than most, but that’s all the more reason to remember what you are thankful for this year! Steve and Kiddo. It’s always an adventure with y’all! Thank you for keeping every day interesting! <3 My family — we aren’t perfect, and not always as connected as we should be, but family is family — always. Bulleit – my happy pupperface who just loves to love his family. You may get bigger than me, but you’ll always be my baby boy! Tacocat – my constant companion and nighttime heater. Dr. Chonkers – the newest addition to our crazy family — I hope you are enjoying your new home. ALLLLLL of my houseplants! My new obsession makes our home a little more homey. A comfy couch and fluffy blankets. Books. Kindle Unlimited, to make all those books a bit more affordable! Sirius XM radio, for always keeping me entertained when I need it. Spotify. Infinitely entertaining Sub-Reddits. A good internet connection.

Nicknames that make me smile. Long drives in the country to clear my head. RSVP Pens, because they are the best. Snapchat filters, Steph because everyone looks Nordstrom cuter with antlers or cat ears. Coffee. Gnocchi and homemade sauce. Tuesdays, because it is new book release day. Friday nights at Riepstine’s. Funny cat videos. Tik Toks that make me giggle. When your eyebrow game is strong. When a recipe turns out exactly like it is supposed to. Doritos. Books on pre-order. I love a morning new book surprise. Saturday trips to Target. Good hair days. Finding a really great foundation in just the right shade. That Alexa is always ready to tell me the weather or play music. Firesticks and Chromecast. My Dutch oven. Coffee. Please don’t underestimate how much I enjoy it. Good bourbon and craft beer. The Braves making it to the post-season — at least for a minute.

My health. The roof over my head. The food in my fridge. Comfy beds and feather pillows. Cuddl Duds sheets. The warm clothes in my closet. Living in a small community that cares about each other. A job that lets me write ridiculous Thanksgiving lists. The brave men and women, past and present, for defending our freedom. Without their hard work and sacrifice, very little of this list would be possible. One last thing. Webb Weekly’s success is dependent on small businesses. And I recommend to them that, while offering up the ascriptions justly due to Him for such singular deliverances and blessings, they do also, with humble penitence for our national perverseness and disobedience, commend to His tender care all those who have become widows, orphans, mourners, or sufferers in the lamentable civil strife in which we are unavoidably engaged, and fervently implore the interposition of the Almighty hand to heal the wounds of the nation, and to restore it, as soon as may be consistent with the Divine purposes, to the full enjoyment of peace, harmony, tranquility, and union.” Friends, no matter how ugly life gets, there are always reasons to be thankful. Complaining and arguing over the pandemic and politics will simply rob you and your family of peace and love. Instead, rejoice in your blessings, pray over your loved ones, and give thanks in the midst of the mess. If you’re willing to follow God’s will, you and your loved ones will experience one of the best Thanksgiving holidays ever. This is my prayer and hope for you. Happy Thanksgiving!

According to Korinn Saker, DVM, PhD., DACVN, and Associate Professor, Nutrition with the North Carolina State University College of Veterinary Medicine, homemade meals should not be served to dogs for longer than five to seven days because they are not 100 percent nutritionally complete. Even though many human foods are safe for dogs, pet owners may not be able to create complete and balanced blends that provide the amount of protein, fat, carbohydrates, vitamins, and minerals dogs need to stay healthy. Routinely feeding dogs human foods can lead to nutrient deficiencies over time. The Dog People, a dog information resource powered by Rover.com, advises dog owners

to aspire for a balance of lean protein and complex carbohydrates in homemade meals. Avoid excess sodium and fat, which can cause excessive thirst and stomach upset. If you’re using canned meats, rinse off the product to get rid of excess sodium. One of the easiest meals to put together on the spot is chicken and rice. In fact, when dogs are experiencing stomach issues, vets often suggest a temporary diet of bland, boiled chicken and rice. Lean beef or rotisserie chicken with the skin and bones removed are additional options. Many dogs like salmon or other fish as well. If there’s no rice, oats or plain cooked potatoes can suffice. Many vegetables, like carrots, corn and peas, also are safe for dogs. Eggs can be a great nutritional source when other proteins are unavailable. When preparing meals, there are some foods to avoid, according to the Canine Journal: Greasy, processed, salty foods, grapes and raisins, onions, garlic, deli meats that are high in sodium, bacon, cocoa and chocolate, milk, spicy foods, small bones, coffee, avocado, macadamia nuts, or foods your dog is allergic to Should a dog eat something it shouldn’t, vomiting is likely to occur. Lethargy and diarrhea also may indicate a dog ate something it should not eat. Those who are unsure of what to make for an emergency meal for their dogs should speak with a vet about foods that are safe to serve.

For 35 years the Newberry Lioness Club has proudly served and supported the greater Williamsport community and beyond and it is now time to say a final farewell. In 2019 our Lioness Club learned of a change being made to our organization from our parent club Lions International. Effective in 2021 Lions International will no longer allow our club to operated as a Lioness Club. They mandated our options would be to continue operating as part of a local Lions Club or go defunct. It was with much thought and consideration after receiving this news that a decision needed to be made. In light of many factors that were considered among an on-going national pandemic, it is with pride and sadness that we share this news of our club’s decision. By majority vote the 31 Lioness of the Newberry Club decided the time had come for an end. It has been a great pleasure and honor that we have been able to help so many in need. Looking back over the span of our 35 years it brings us great joy to know that our volunteer and service efforts have changed lives. We have enjoyed caring for the Newberry Dunkin flowers, hosting Yard Sales, Burger Burns, Spring Flings, HOPE Christmas Parties and so much more over the course of our time. It is with heartfelt thanks that we say our farewell to all of you who have purchased Lucky 4 tickets from us, supported our Sandwich Sales, bought our funnel cakes and tasty treats during bake sales throughout the years. I mean, come on; you know, just a simple smile can go a long way. Take, for instance; I was at Weis on Lycoming Creek Road grabbing a few things. I am typically a Wegmans shopper but only needed a few items, so I just popped in there quick instead. A man about my age was coming out from the aisle I was turning in. I told him to go ahead. No french onions. It’s one of a kind! You’ll definitely want to double this recipe for a bigger crowd. Ingredients:

• 2 cans green beans (drained) • 1/2 cup sharp cheese (extra 1/2 cup to sprinkle on top) • 1 cup sour cream • 1 tsp. Onion • 1 tsp. Sugar • 1/4 tsp. Pepper • 1 tsp. Salt • 2 Tbsp. flour • 3 Tbsp. melted butter Directions: Mix all together in a bowl. After mixing well, transfer into a casserole dish. Sprinkle remaining 1/2 cup of cheese on top. Bake at 350 for 30 minutes.

A

n exciting “wild turkey chase” occurred recently at Bodines according to a correspondent who supplies the following

details. The turkey appeared in a neighboring field. Ira High, a noted trapper and unerring hunter and a lot of other things too numerous to mention, was promptly notified. He girded himself for the hunt, seized his rifle and set out, followed by a considerable portion of the female population of the village who wanted to see the famous hunter at work. The turkey was sighted making for the woods. It was a long shot, but Ira risked it. The turkey reared, plunged forward, turned several somersaults, and started off on a new track, heading for the shelter of the woods. Ira dashed off in pursuit, soon outdistancing the women, who were

forced to watch the remainder of the hunt from a distance. Then appeared a worthy Bodines woman crying loudly to the hunter to spare the life of her prize turkey, which had escaped from the pen from which she was fattening it for Christmas, Ira was too intent on sustaining his reputation as a hunter to hear the pleas of the distracted owner of the bird and kept on firing until the gobbler made good his escape. Mr. High returned to the village very much crestfallen to think that before such a group of admiring spectators he had missed a number of fair shots. He was doubly chagrined when he found that it was not a wild turkey but a common barnyard fowl which had outwitted him. The truant gobbler was recovered from the fright and returned from the shelter of the woods and is again undergoing the fattening process.

s summer transitions to fall, many changes take place. In addition to changing landscapes, men and women may need to adapt their health and wellness habits to ensure that they stay healthy and happy. Part of that daily regimen includes how to care for skin as the seasons change. Just as skin requires certain protection from the sun and heat in the summer, skin has special needs in the fall and winter. Fall and winter are often characterized by cold, dry weather, which can make these times of year particularly challenging for people with dry or sensitive skin. These tips can help people maintain their skin’s appearance and health. • Don’t skip the sunscreen. Sunscreen is not a summer-only requirement. UV rays can damage the skin any time of year, even if the rays are not as strong as during the summer. UV radiation accelerates and increases the risk of skin cancer. It also can lead to premature aging. Utilize a sunscreen with an SPF of 30 or higher every day. • Invest in a humidifier. Dry, cold temperatures can rob the skin of essential moisture, even indoors. Dermatologists suggest using a humidifier at home to

boost the amount of moisture in the air. This can make skin more comfortable and can have other health benefits as well. • Skip hot showers. It can be tempting to sit under a hot stream of water to warm up. However, hot water dries out the skin by depleting its stores of natural oils, says Glacier Med Spa. Take warm showers instead and don’t stay in for longer than 15 minutes. • Limit exfoliation. While exfoliation can remove dead skin, overdoing it can make already sensitive skin more raw. Increase the time between exfoliation treatments. Consult with a dermatologist for more advice about dealing with flaky skin. • Don’t forget your lips. Using a thicker moisturizer on the body and face can help add and retain moisture. But pay attention to your lips and eyes as well. Something as simple as petroleum jelly on the lips can help prevent chapping. Invest in a quality eye cream to help the delicate skin around the eyes as well. Modifications must be made to skincare routines in anticipation of seasonal weather changes.

ou may be experiencing fatigue related to the COVID-19 pandemic and precautions, but now is not the time to relax your practices – especially with the holidays just weeks away. Prevention is still our best means in fighting the spread of the virus, so it’s important to follow all the latest local, state, and CDC guidance when making your plans for Thanksgiving, Christmas, Kwanzaa, Hanukkah, and the new year. Keep Your Loved Ones Safe While we continue to learn more about this virus every day, one thing we do know is that human contact is the biggest opportunity for spreading the virus. While large events and gatherings increase the risk of spread, even small household gathers can be a contributor to the rise in COVID-19 cases in the region. Here are some tips and alternatives to help you get the most out of the upcoming holidays, while keeping you and your loved ones safe: Host a Virtual Holiday – Find the techsavvy member of your family to hook up your smart TV, tablet, phone, or computer so that you can connect with family all over the world during your special event.

Chose a Safe Location – Outdoor gatherings with plenty of space to socially distance are ideal for reducing the spread. It may be difficult to find an appropriate space during November and December, but if you want to meet in-person, it’s essential. In addition to social distancing, be sure to require mask wearing, proper hand-hygiene, and make sure the space is adequately ventilated. Avoid a Potluck-Style Party – Identify one person to serve sharable items or have guests bring food and drinks for their household. It may seem unconventional, but researchers feel COVID-19 can spread by surfaces and objects, including utensils and food. If you share serving platters, designate a space for guests to wash hands before and after touching or eating food. Follow Good Pandemic Hygiene – Keep your mask on during the celebration and only remove to eat or drink. Wash your hands after touching common surfaces and clean the restrooms regularly. Be sure to cover your cough or sneeze, and if you’re sick, stay home. Choose Your Guest List Wisely – Make sure the people you invite have been careful following the CDC guidelines for the last few months. Look at inviting people who already live in the same household and share space daily. Ensure

While program design is both an art and a science and might sound complicated, the implementation of a training or exercise program can be made fairly simple. Basically, you get what you train for. Define your goals. Then build a program using the ratios of training variables that best suit your needs. So what are these mystery “ingredients”? All of us have the same training variables available to us: Intensity, Density, Volume. The fitness industry has oversimplified them over the years in an effort to make them easier to understand and has sometimes used the FITT model (Frequency, Intensity, Time, and Type) but I feel that this is a disservice and

does not properly allow for true program design specificity. Training variablesIntensity - Can be defined as how hard one is exercising. For strength training it is usually measured by weight. For cardiovascular training, heart rate is typically used as the measure. Density - This is, unfortunately, seldom used or measured and is a critical component in training. It can be defined as how much work is performed in a given time. Typically, a person would measure their training density by timing their rest breaks. Though more complicated formulas exist. For example, 100-meter sprints with a 1-minute break are denser than sprints with a 2-minute break. All of

this can be quantified and measured. Volume - Volume is the total work performed. It is most commonly measured in sets and repetitions in strength training, though more advanced programs could use total tonnage in a given workout or time period. For activities such as running or cycling, mileage could be used. Like intensity and density, more complicated methods for measurement are available. In the next article in this series, I will give examples of program design and how to get the most out of your exercise/training program. Like I said, it is up to us to manipulate the available training variables to produce the outcomes that best serve our needs. Simply put, you get what you train for!

This same thinking can be applied to the physiological adaptions people go through during sports and/or fitness training. Simply put, we are exposed to a stress, which would be exercise, then our bodies adapt to that stress specifically by gaining strength, endurance, or whatever the program is designed to do. This adaption takes place during rest, or an active recovery. If we time the next stress properly, we can achieve another adaptation. If we wait too long, we lose our progress. If we don’t wait long enough or the initial stress is too great, we overwhelm our systems and adaptation/ progress will fail to occur. ealthy foods are essential for the well-being of companion animals. Many pet owners turn to premade foods because they are readily available and can fulfill nutrition requirements for pets. But the convenience of premade foods has been compromised during the pandemic, when empty shelves have become the norm. The pandemic has disrupted supply chains, slowed down shipping times and caused other interruptions. For some pet parents, this may mean that they are unable to get the dog foods they normally purchase before their existing supply runs out. Because of that uncertainty, it pays to learn which items in the pantry and refrigerator can serve as substitutes when commercial dog foods are unavailable. According to Korinn Saker, DVM, PhD., DACVN, and Associate Professor, Nutrition with the North Carolina State University College of Veterinary Medicine, homemade meals should not be served to dogs for longer than five to seven days because they are not 100 percent nutritionally complete. Even though many human foods are safe for dogs, pet owners may not be able to create complete and balanced blends that provide the amount of protein, fat, carbohydrates, vitamins, and minerals dogs need to stay healthy. Routinely feeding dogs human foods can lead to nutrient deficiencies over time. The Dog People, a dog information resource powered by Rover.com, advises

dog owners to aspire for a balance of lean protein and complex carbohydrates in homemade meals. Avoid excess sodium and fat, which can cause excessive thirst and stomach upset. If you’re using canned meats, rinse off the product to get rid of excess sodium. One of the easiest meals to put together on the spot is chicken and rice. In fact, when dogs are experiencing stomach issues, vets often suggest a temporary diet of bland, boiled chicken and rice. Lean beef or rotisserie chicken with the skin and bones removed are additional options. Many dogs like salmon or other fish as well. If there’s no rice, oats or plain cooked potatoes can suffice. Many vegetables, like carrots, corn and peas, also are safe for dogs. Eggs can be a great nutritional source when other proteins are unavailable. When preparing meals, there are some foods to avoid, according to the Canine Journal: Greasy, processed, salty foods, grapes and raisins, onions, garlic, deli meats that are high in sodium, bacon, cocoa and chocolate, milk, spicy foods, small bones, coffee, avocado, macadamia nuts, foods your dog is allergic to Should a dog eat something it shouldn’t, vomiting is likely to occur. Lethargy and diarrhea also may indicate a dog ate something it should not eat. Those who are unsure of what to make for an emergency meal for their dogs should speak with a vet about foods that are safe to serve.

WAHS Senior to Compete as Division Finalist in MTNA Senior String Performance Competition

illiamsport Area High S c h o o l s e n i o r Michael Fisher will virtually compete as a division finalist in the Music Teachers National Association (MTNA) Eastern Division Senior String Performance. Fisher secured his spot after his recent win in the Pennsylvania State Senior String Competition. “Being the Pennsylvania representative in this competition is a true honor,” Fisher said. “I have worked so hard for so long — it’s just so nice to see it pay off. I am simply thankful for the opportunity to be a part of the real musical world.” Division-level winners will advance to compete virtually in the National Finals. Finalists from that round will be announced in mid-January. The son of Don and Kristin Fisher, the high school senior has studied violin

for 14 years. At WAHS, he’s a member of the orchestra, choir, Williamsport String Quartet and Strolling Strings. He sat as concertmaster for the 2018 Pennsylvania Music Educators Association (PMEA) District 8, Central Region and AllState orchestras. He also was selected to participate in the 2019 National Association for Music Education (NAfME) All-National Honors Orchestra. In addition to the music education he receives at WAHS, he also trains under Professor James Lyon of Penn State University. In the community, he’s performed with the Williamsport Symphony Orchestra and at St. Boniface Catholic Church. Over the years, the young musician has secured a number of awards and recognitions. P

resident Trump’s legal challenge to the Pennsylvania voting process is being heard here at federal court in Williamsport. This litigation is just one going on around the country, and even if they don’t have any impact on the final outcome, it is still an important process to ensure that future elections have more veracity than this past one. Living and teaching in the former Soviet Union provides me with a unique perspective for the times we are now living in our country. The USSR was a facade in so many ways. One of the more popular expressions was, “the government pretends to pay us as we pretend to work.” This extended into everything including education. Cheating was so rampant, teachers did not even attempt to stop it, and it was impossible to know what students actually did know. The Swedish government was the first country to recognize the independence of the Soviet Republic of Latvia when it was declared so in 1991. Besides establishing an embassy, they also made a branch campus of their prestigious Stockholm School of Economics in the capital city of Riga in 1994. All the professors were Swedes, but they came up short in the Human Relations Management area and I was hired in 1996 to fill that gap. One of the significant features of this school was that cheating was absolutely

forbidden. One strike and you were out. As prestigious as the school became, it was its reputation for integrity that became as highly valued as the quality of its faculty and curriculum. In the early 2000s, one of my favorite students named Kristaps goofed up and had notes he used for quick review on the back of his calculator which he forgot to remove when he went to take an exam. The proctor instantly saw it and took his exam paper. Though it was clear he did not actually look at the cheat sheet, he was still expelled from school. His fellow students were irate, and every single one signed a petition to reinstate Kristaps. His family had some political clout and even the Latvian Parliament got involved. While all this was going on, he came to me and asked for my help, and I replied, “Kristaps, I will help you in every way I can… to get accepted into another school. I know you did not cheat; I know you simply made a mistake, but the

the impact and importance of honesty and integrity. All this is worth noting as our country is in the throes of what history might look back as a turning point, and not a positive one. Our voting system is far from perfect, but how much “imperfection” is acceptable? It is indisputable that some election fraud did occur this year. Perhaps it was just .001% (a hundred thousand to one) from all the votes, wouldn’t that be acceptable? Perhaps, except when one vote could be a game changer. Here is a quick review of US history in the 20th century dealing just with presidential elections. In 1916, if presidential hopeful Charles E. Hughes had received one additional vote in each of California’s precincts, he would have defeated President Woodrow Wilson’s re-election bid. In 1948,

if Republican Thomas E. Dewey had gotten one vote more per precinct in Ohio and California, the presidential election would have been his rather than the incumbent Harry Truman. (The irony here was that the polls had Dewey so far ahead, many Republicans stayed home. Only a little more than half of the registered voters actually voted). In the 1960 presidential election, an additional one vote per precinct in Illinois, Missouri, New Jersey, and Texas would have denied John F. Kennedy the presidency. It is also true in down ballot elections. In a 1910 election for a New York congressional seat, the Democrat Charles B. Smith won 20,685 votes with his opponent receiving 20,684 — Smith won his seat by one vote. In a 1955 city election in Huron, Ohio, the mayor was elected to office by one vote. In

1962, the governors of Maine, Rhode Island, and North Dakota were all elected by a margin of one vote per precinct. Even if all the the irregularities of this year’s presidential election could be resolved in the next few weeks (which is a fantasy, they will take months and possibly years to unravel), the best result would be to learn from the mistakes and establish processes and systems that insured that our next election would be a model for the world in securing a fair and honest voting process. It was an emphasis on quality and integrity in restructuring their societies and governments that helped develop the former Soviet republics into becoming prosperous countries. It would be the height of irony that we are sliding toward what those countries so desperately wanted to avoid.

If someone calls you or comes to your door with this kind of an ultimatum about your electric service: Slow Down. Take your time. Scammers often want you to act fast. Verify. Scammers can spoof phone numbers, trick you with emails, pose as real employees or even use COVID-19 information to bait you. Stop before you act. Add egg and molasses; mix until well incorporated. In separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, nutmeg and cloves. Use mixer on low speed to add to butter mixture until combined and dough is formed. Divide dough in half, wrap with plastic film and refrigerate at least 1 hour. Preheat oven to 350 F and line baking sheets with parchment paper. Flour clean work surface. Roll dough 1/8-1/4 inches thick. Cut out shapes with desired cookie cutters. To make Orange Hollandaise: In small bowl, blend egg yolks, orange juice and salt until combined. Gradually add melted butter into egg mixture while blending. Set aside. In skillet, add water halfway up sides. Add vinegar. Bring to simmer. Break eggs into water to poach. Cook 3-4 minutes until whites are cooked through and yolks are still runny. Using slotted spoon, remove eggs and drain on paper towels. Spread butter on one side of bread slices. Place bread in skillet and cook until golden brown. Add ham to same skillet and cook until browned on both sides. To assemble, spread bread slices with orange marmalade. Top each with one slice cooked ham and one poached egg. The Roving Sportsman… Wintertime Reading By Jon Pries

emperatures are slowly dropping and the daylight hours get shorter with each passing day. Frost has greeted the morning sunrise on several occasions, and soon the landscape will be covered in a layer of white. Many of us will reduce our time out of doors and turn to inside activities as the onset of winter doldrums sets in. A great pastime for the months of “cabin fever” is the relaxing activity of reading some of the latest offerings about the sports we love. Here are a few great suggestions to help pass the time and pick up some useful information along the way: Steven Rinella, who many of you will recognize as the host of the increasingly popular TV show, “MeatEater,” has long been a favorite communicator of mine. On his show he is articulate and portrays a very positive image of hunters, outdoorsmen and conservationists. He is a hunter who advocates “fair chase” hunting and always includes as part of each TV episode the field care or cooking of whatever he is pursuing at the time. He shows continual respect for the animals that he hunts and thus presents a great example of what a responsible hunter should be. His writings are straight-forward and are good examples of how we can share the ideas of hunting with our non-hunting friends and even those who are antihunting but, perhaps, open-minded enough

to listen. His books are both entertaining and extremely informative as well. Because he is such an outstanding ambassador for hunting, I am very happy to recommend any and all of his books. In 2005, Steven Rinella penned the book “A Scavenger’s Guide to Haute Cuisine.” It was inspired by the famous French chef and author, August Escoffier, and chronicles Rinella’s humorous and often adventurefilled quest to collect the ingredients for a forty-five course feast that was presented in Escoffier’s book, Le Guide Culinaire, written in 1903 — a book that remains today as the greatest haute cuisine cookbook ever written. All of that may seem a bit dull and uninteresting, but, trust me; it really is an enjoyable read. Rinella’s next book, “American Buffalo — In Search of an Icon,” was published in 2008, after Steven won a lottery permit to hunt a wild buffalo in the Alaska wilderness. Despite the odds, Rinella managed to kill a buffalo and then raft the meat back to civilization while being trailed by grizzly bears and suffering from hypothermia. “American Buffalo” is a narrative tale of Rinella’s hunt, but it also takes us across the continent in search of the buffalo’s past, present and future. Rinella is the perfect guide for a book that combines outdoor adventure with a blend of facts and observations about history, biology, and the natural world. Published in 2012, “Meat Eater —

Finally, in 2015, Rinella wrote “The Complete Guide to Hunting, Butchering, and Cooking Wild Game.” It is a twovolume set, with Volume One covering Big Game and Volume Two addressing Small Game and Fowl. Each of these volumes discusses gear and the basics of hunting tactics and strategies for each of the species covered. Then, a complete “how-to” illustrates field care and butchering of each animal, with a final chapter on cooking methods and recipes to maximize the flavor of the outstanding table fare that they yield. If you are looking for some great reading material to help you overcome this winter’s cabin fever, any of Steven Rinella’s books will do just that. They are all entertaining, and you might just learn a trick or two along the way!
