A Perfect Winter Wedding Venue

Ascenic winter wonderland is the perfect setting for any wedding, making White Birch Wedding Barn the place for couples considering a winter wedding. A winter wedding at White Birch Wedding Barn offers a unique and magical experience for couples, especially with its picturesque setting and cozy ambiance.
“There’s so many benefits to winter weddings, from the offseason pricing to a cozy and intimate atmosphere,” explain Amie and Pat Pelham, owners of the venue.
While many wedding venues in the area close during this time of the year, the Pelhams decided to make the wedding venue the ideal place for couples looking to plan a winter wedding. With approximately 8,200 square feet of space and a guest capacity of 260 people (220 with a designated dance floor), the barn makes an indoor ceremony and reception look easy.
Inside, the climate-controlled space features a 30-foot ceiling with beams, multiple chandeliers, four custom-designed fireplaces, and multiple bar areas. For couples hoping to also use the outdoor space, there are outdoor heaters and firepits.

also benefit from having less competition for their top choices for vendors. Since fewer couples choose to get married in the winter, vendors—photographers, caterers, florists—are more available and might even have discounted rates.
Passionate about the details and providing convenience for couples and their families on the big day, Amie ensures that the venue is well decorated year-round, so couples only have to bring in guest table centerpieces. Yet, winter weddings provide a particularly special opportunity for decorations. This winter, the venue was decorated with all neutral winter decor, including outdoor greenery planters, evergreen garland, candles, and flocked Christmas trees.
“We keep our winter décor elegant and neutral, to ensure it will complement any wedding color palette the couple chooses,” Amie says.
This venue has long been a dream for the Pelhams, who began construction on the nine-acre property in 2023. Since opening last June, dozens of couples have enjoyed the seamless experience of planning and holding a wedding at the barn, where “in your dreams, every detail matters.”
By having a wedding at White Birch Wedding Barn, couples are choosing to minimize the stress of the big day. The rental fee for the White Birch Wedding Barn includes round tables, black chairs, linens, and a special head table.
On top of the basic rental fee, they also have a number of additional items that can be added à la carte. These include a golf cart to shuttle guests from the parking lot, a 22-passenger transportation bus to shuttle guests to and from hotels, an outdoor bar and dance floor, options to host the bridal shower or rehearsal dinner on site, and several others.
The Pelhams explain that they have staff on site to keep the venue looking its best throughout your event.
“We have an incredible team of staff members who constantly receive great reviews from the couples and their families,” they say. “This past year has gone really well and everyone is super excited for 2025 and 2026, and even into 2027 as we begin to book those events.”
To hold a wedding at White Birch Wedding Barn really is an allinclusive experience. On-site, there are separate suites for the bride and groom, where they can gather with their bridesmaids or groomsmen to get ready.
The bridal suite features hair and make-up stations, full-length mirrors, a private bathroom, fireplace, feature wall, serving bar with minifridge, tv and sound system, elegant seating area, and a balcony and mezzanine. That is another benefit of winter weddings, the Pelhams explain.
“The bridal suite is located upstairs, which makes winter weddings even more magical. The bride walks down the staircase before making her way down the aisle, creating a truly breathtaking moment,” they say. “In fact, during venue tours, we often see brides get emotional imagining the bridal suite barn doors slide open and their grand entrance down the stairs.”
The groom and his party will enjoy custom suit storage, a luxurious seating area, fireplace, serving bar with minifridge, tv and sound system, and a full-length mirror.
This winter season, the barn hosted a few winter weddings but is already quickly filling up for the 2025 winter wedding season.
“January is just a perfect time for a winter wedding,” say the Pelhams. “When the venue and surrounding landscaping is blanketed in snow, it creates a winter wonderland feel.”

Destination Weddings A Growing Trend

In 2024, more couples than ever before chose to have a destination wedding. Hillsdale couples can also join in on this trend.
Carolyn Scholfield, owner of Happily Ever After and destination wedding specialist at All Aboard Travel located in Hillsdale, said she is excited to help local couples plan their very own destination weddings.
“Destination weddings are a unique way for couples to celebrate their love while creating unforgettable memories with family and friends,” Carolyn explains.
According to Research and Markets’ 2024 Destination Wedding Global Market Report, the destination wedding industry grew 32% from 2023 to 2024. In 2023, it brought in $28 billion, compared to $36 billion in 2024. Experts are also predicting that this trend towards destination weddings will continue, as it becomes increasingly popular for couples to choose less traditional routes down the aisle. By 2028, destination weddings are expected to grow to over $105 billion.

Weddings are an exciting time of life, one that most people look forward to for years, especially women. We take great steps to ensure that day will be one to remember forever. We research every vendor, every location, every flower that is available at that time of year, everything down to the smallest of details – we want to make sure the day will go off without a hiccup.
However, what we don’t want to plan for, or to even think about, is what would happen if the marriage does not work. Who would? But this is an extremely important topic that everyone, male or female, needs to discuss and to plan for as well. Discussing a division or retention of assets if the couple divorces is really not a lot different than talking about what will happen upon your death.
In this day and age, according to some sources, 45% of marriages end in divorce, while a great number of individuals also enter into second or subsequent marriages. When that happens, both parties usually come into the marriage with some assets such as retirements, savings, homes, and other things that have significant value. Because of that, marrying couples should really consider what will happen to those assets if they divorce.
In the State of Michigan, generally, whatever a person has when entering into the marriage, he or she shall retain upon divorce. However, that isn’t as simple as it sounds as there are numerous caveats as to how those assets can become marital and subject to an equal division at the time of the divorce. With that, a party can end up losing part of their retirements, savings, and home if they do not properly plan for it prior to getting married.
One general rule is that if a person starts using marital income which is any income that is earned during the marriage, no matter who the employee is, then if those funds are used to pay for, as an example, a home which the employee owned prior to the marriage, that home now becomes marital and the other spouse is entitled to his or her share of that asset upon the termination of the marriage.
However, should the couple plan for these situations ahead of time, they can determine how assets and debts will be divided upon the dissolution of the marriage. Prenuptial agreements are a great place to start as these agreements allow the couple to articulate what each person is or is not entitled to upon a divorce. Prenuptials are not an overly complex process and usually do not take an extended period of time to complete, but the time spent or the expense that may be paid up front will alleviate a lot of the time, expense, and heartache if the marriage does not work.
As with planning the wedding, planning for the dissolution of the marriage is just as important.

These BLT appetizer bites combine a crispy phyllo shell with a creamy and flavorful BLT filling for the perfect handheld appetizer!
Ingredients
• 15 phyllo shells
• 1/2 cup mayonnaise
• 1/2 cup sour cream
• 1/3 cup finely chopped lettuce
• 1/3 cup bacon pieces, set some aside for topping
• 8 cherry tomatoes, halves
Instructions
1. Chop your lettuce, and slice the tomatoes in half.
2. Arrange the phyllo shells on a plate or platter.
3. Add the mayonnaise, sour cream, chopped lettuce, and bacon pieces to a medium bowl, and stir well to combine.
4. Fill each Phyllo Shell with some of the filling. You can use a spoon or a piping bag.
5. Add a tomato half to the top of each filled Phyllo Shell. Then sprinkle a few bacon bits over the top.

Ingredients
• 7 oz. whole cranberries with sauce (one-half can)

• mini phyllo pastry shells
• fresh rosemary
Instructions
1. Pre-heat oven to 350°.
2. Slice the Brie into 1/2” pieces and place each piece into a phyllo shell.
3. Top with a 1/2 teaspoon of cranberries.
4. Bake for 5 minutes or until the Brie has melted.
5. Garnish with a piece of rosemary.

Shrimp Wonton Cups
These spicy and crispy Shrimp Wonton Cups are packed with Cajun flavors and served with a cool lime sour cream sauce!
Ingredients
• wonton wrappers
• olive oil spray
• Cajun seasoning
• 12 large shrimp, peeled and deveined
• 1 lime
• baby spinach leaves
• 3 tablespoons light sour cream
• 1 teaspoon fresh lime juice
• lemon zest, separated
Instructions
1. Heat oven to 350°.
2. Using a mini muffin pan, press the wonton wrappers down into the cups.
3. Cook for 8 mins until browned. Cool on wire rack.
4. Zest the lime and set aside for serving.
5. Mix the Cajun seasoning, shrimp and lime zest in a small mixing bowl.
6. Once well coated, lay out on a baking sheet and bake for 8-10 minutes until shrimp are cooked through.
7. In a small bowl, stir the sour cream, lime juice, and zest together.
8. Place 1-2 baby spinach leaves in each wonton cup.
9. Add a small dollop of the sour cream mixture in each cup and top with a single cooked shrimp.

Sausage Stars Appetizer
A fancy appetizer stuffed with a cheesy pork sausage mixture, perfect for entertaining or happy hour.
Ingredients
• 1 lb. pork sausage
• 1 packet of ranch mix, prepared
• 2 ½ cups cheddar cheese
• 2 tablespoons vegetable oil
• 40+ Wonton wrappers
• 2 bundles fresh green onions, chopped, plus extra for garnish
• 1 red bell pepper, diced
Instructions
1. Preheat the oven to 350 degrees.
2. Spray a muffin tin with non-stick cooking spray.
3. Add a wonton wrapper to each muffin tin. Make sure the sides stick up on the sides of the muffin tin compartments.
4. Lightly brush the wonton wrappers with vegetable oil.
5. Bake the wontons in a 350° oven for 4-5 minutes until the corners begin to turn golden brown.
6. Line a baking sheet with parchment paper.
7. Once wonton wrappers have finished baking, remove them from the muffin tins and place them onto a parchment-lined baking sheet.
8. In a skillet, brown sausage. 1-2 minutes before you are finished, add red bell pepper to the skillet and finish cooking the sausage and pepper together.
9. In a large mixing bowl, prepare the ranch dressing according to packet directions.
10. Add to the dressing, the sausage and pepper mixture, shredded cheese, and chopped green onions.
11. Stir well to combine all ingredients.
12. Spoon the cheesy ranch sausage mixture into wonton cups, about ¼ cup of mixture per cup.
13. Bake the sausage stars for 5-10 minutes in a 350° oven until warmed through and the cheese is melted.
14. Serve right away, warm.
