USING THIS CONVECTION TRAY WITH YOUR BABY Q Extensive recipe testing has shown that using slightly higher heat settings for roasting and baking increases the flavor and quality food being cooked on a trivet over the tray. Remember always preheat with the lid down before you commence cooking. We have found that the ideal setting for roasting and baking on a baby Q is five marks down from the high position. (see picture) Successfully Crackling Pork needs more heat however. Before attempting to crackle pork you will need to remove excess build up of food remnants and grease from inside the bowl of your Q. Use a plastic spatula to to do this before preheating the barbecue. This will eliminate the chance of the grease under the pork from igniting. Now preheat for 15 minutes on high then add the pork. Keep cooking on high for another 25 minutes before turning the setting back to the roasting/baking setting pictured right.
