Using this Convection Tray with your Weber速 Family QTM Extensive recipe testing has shown that using slightly higher heat settings for roasting and baking increases the flavour and quality of the food being cooked on a trivet over the tray. Remember, always preheat your Weber Family Q for 10 minutes with both burners on high and the lid down before you commence cooking. We have found that the ideal setting for roasting and baking on a Family Q when using a Convection Tray is to leave the outside burner in the high position and turn the centre burner off (see picture below). Successfully crackling pork needs more heat. Before attempting to crackle pork you will need to remove any excess buildup of food remnants and grease from inside the bowl of your Family Q. Use a plastic spatula to do this before preheating the barbecue. This will eliminate the chance of the grease under the pork from igniting. For crackling pork, preheat your Family Q for 15 minutes with both burners on high and then add the pork. Keep cooking with both burners on high for another 25 minutes (under no circumstances keep cooking on high for more than 25 minutes) before turning the setting back to the roasting / baking setting pictured below.
