Plum and Macadamia Nut Muffins Lots of people never think about cooking muffins and cakes on their Weber Q but it’s easy to get a great result. These plum and macadamia nut muffins taste great and look amazing. Extensive product testing has shown that using slightly higher heat settings for roasting and baking produces even better results when using a Q Trivet and Convection Tray. Heat settings vary for each model barbecue so check these instructions to make sure you get the best result when using a Convection Tray on your Weber Q: Baby Q (Q100 series) Q (Q200 series) Family Q (Q300 series)

Preparation Time: 20 minutes Cooking Time: Roast setting, 20-30 minutes You’ll need: Q Trivet and Convection Tray, muffin tray 1/2 cup thick natural yoghurt 125g butter 1 cup demerara or caster sugar 2 eggs 2 cups self-raising flour 1/3 cup macadamia nuts, chopped 6 plums, roughly chopped, stones removed 2 extra plums, sliced Beat the yoghurt, butter and sugar together until pale and creamy. Add the eggs, one at a time, beating well after the addition of each egg. Stir in the flour, nuts and chopped plums. Do not over mix. Spoon mixture into buttered muffin pans, placing the extra slices of plums on top. Cook on the roasting trivet for 20-30 minutes.
