Roasted Rack of Lamb Preparation Time: 10 minutes, plus marinating time
3 sprigs rosemary
Cooking Time: Roast setting, 30-40 minutes
1/2 cup olive oil
You’ll need: trivet
salt and pepper, to taste
2 racks lamb, 6-8 chops each, well trimmed
Combine the marinade ingredients in a bowl and mix well. Add the lamb racks and turn to coat in the marinade.
Marinade
Cover and refrigerate for several hours or overnight.
1 tablespoon sweet paprika
Cook the racks on the trivet for 30-40 minutes. Protect the
4 cloves garlic, crushed
bones by putting foil around them whilst cooking. Serve with
2 teaspoons fresh mint, chopped (or 1 teaspoon dried)
carrots, peas and minted new potatoes.
2 tablespoons fresh oregano, chopped (or 1 teaspoon dried)
