September 23, 2015 is the official first day of autumn, which means school has started, the nights are getting cooler, and the leaves are falling. It’s actually my favorite season, but mostly because it’s all about comfort food! Fall pasta at the Chew Chew By ALICIA PLOMIN Contributor

The dish has been on the menu longer than any other, and even when owner and Executive Chef Scott Zimmer gets creative and changes the menu, the Penne Pasta always remains. It’s a customer favorite that was inspired by the Wisconsin smoked gouda cheese that is the defining flavor. Chef Zimmer even sends pictures of the Penne Pasta to patrons who live out-of-town to help appease their craving for it. It’s in-line with the modern american feel of the restaurant and other menu items. Think of the best spaghetti Carbonara you’ve had. Now imagine it even better, and you’ll get close to how absolutely amazing the Penne Pasta at the Chew Chew is. After having it, I’ve decided adding cherry tomatoes is a genius move). They get slightly cooked while being incorporated into the sauce and add a welcome burst of juicy sweetness that lightens up the rich, luxurious cream sauce. Freshly chopped scallions bring a brightness to it all, and the shreds of pecorino romano act as seasoning salt. Chef Scott describes the dish as comforting, and that couldn’t be more correct.

Chef Andrew Kerns

Arguably the finest fine dining spot in the Oak Park-Berwyn area By David Hammond Contributor

Autre Monde, arguably the finest fine dining spot in the Oak Park-Berwyn area, has elevated Chef Andrew Kerns to the position of Chef de Cuisine. In case you’re not familiar with the French “brigade” system of kitchen hierarchy, the Chef de Cuisine, or “chief of the kitchen,” is responsible for running the kitchen, managing staff, making purchases, developing recipes and menu, and generally maintaining a productive working environment. Kerns first joined the Autre Monde team in September 2014, working under Executive Chefs Beth Partridge and Dan Pancake. I had a few questions for him. Tell us a little about the work you did before coming to Autre Monde. Who were your influences? I started out at Bin 36, which formed a lot of my basic habits and techniques. I got into the organic, farm to table/Mediterranean focus at Urban Union and learned a lot of efficiencies and systems working at Hogsalt. High volume is a great teacher. My upbringing in a restaurant family also definitely influenced my career choice. What is it about Autre Monde that made you want to work in the kitchen there? It fits the concept and ideology of what I would like to bring forward in my own place someday. Autre Monde really emphasizes technique, seasonality and the value of ingredients. There’s authenticity in the food, wine and cocktail programs. Could you tell us a little about the people you’ll be working with at Autre Monde?

I have been at Autre Monde for a year in the sous chef role and it became pretty obvious that this was a good fit both for me and for Chefs Pancake and Partridge. They spent a lot of time sharing their techniques and philosophies with me, and it turns out we come

from a very similar place. As I have stepped into this role, however, there will be a good amount of autonomy to create what I enjoy eating. What do you think you’ll be bringing to the existing Autre Monde style and menu? Are there any specific menu items you’d like to introduce at Autre Monde?

I have been focusing on changing the menu more frequently as opposed to running a lot of specials. You see a lot of market items on our menu, which is an extension and expansion of what has been done here. In concert with Chef Pancake, I have been working towards incorporating more of a whole animal approach to our menu, like focusing on locally raised heritage breeds. In late August we launched our first supplemental menu with a number of specials that all came from the same animal (a Berkshire breed pig, raised on corn and mash from Buckledown Brewery in Lyons). This is an evolving collaboration. We’re really excited about it.

In the right hands, the Corn Stripper seems like it would have value By David Hammond Contributor

About four months ago, we received a Corn Stripper from Crisp, the manufacturer, and it seemed like it could be a very helpful kitchen aid. We just had to wait for the corn season to begin so we could test drive it, and now with beautiful ears all over the Oak Park Farmers’ Market, we put the Corn Stripper to use. At this time of year, we always eat a lot of corn off the cob, and we usually freeze quite a bit as well. Our approach to freezing is to cut fresh kernels off the ear with a sharp knife and then vacuum seal and freeze them, to be enjoyed in the dead of winter. And in the dead of winter, farmers’ market corn is like a bite of warmth. The Corn Stripper looks a little like a Gillette Trac II, and the idea is that you “shave” the kernels off with a blade that’s slightly curved to match the contours of the cob. This approach seemed attractive in that cutting kernels off with a knife is kind of sloppy. The Corn Stripper also comes with a brush on one side to “de-silk” the cob. The Corn Stripper works best if you lay the ear flat on the table and bear down hard (much harder than you would with a razor on your face) to remove the kernels all the

way down to the cob. If you just let the blade float across the kernels, you’ll miss about half of each edible kernel. If you’re wary of knives, or if your olderyet-not-quite-knife-savvy children are helping you de-kernel the corn, the Corn Stripper makes sense. The Corn Stripper’s blade is sharp, and it can cut, but it’s not as dangerous as the big, always very sharp chef ’s knife that we’ve used to cut corn off the cob. For those of us who’ve used knives for maybe a half-century or so, it’s easier for us to control the knife blade and to cut a relatively consistent slice down the rows of kernels. It’s possible that, with time, we could become as proficient with the Corn Stripper as we are with the knife. The “de-silker,” though it does work, is not as efficient as two working hands (however, again, your mileage may vary: if you have arthritis in your hands, this brush could come in very handy). So in the right hands, the Corn Stripper seems like it would have value, and we’re going to continue using it to see if repeated efforts enable us to get as clean a cut off the cob with the Corn Stripper as we get with a good sharp chef ’s knife. Of course, if my grandson or 93-year-old mother come to visit us again during corn season, and if either of them wants to help

us clean the kernels off the cob, they might do a better job with the Corn Stripper than with our chef ’s knife – and they’d likely do much less damage to their hands.

The recipe was created by a French trained chef who chose to name it after a region in the country. Even though that chef is no longer with the Ale House, the Alsace Flatbread holds a permanent spot on the menu and is now one of the most popular flatbreads they offer.

The homemade dough is rolled thin so it gets crispy, but still is strong enough to hold all the toppings. The flatbread has just the right blend of provolone and mozzarella cheeses. In order to ensure that each flavor comes through in every bite, the bacon is chopped up in small pieces and then sprinkled over the flatbread. The caramelized red onions are the most unique element of the combination. They’re cooked with brown sugar, butter and red wine vinegar to make for a sweet tanginess that compliments the bacon. Gooey cheese and smoky bacon atop a crunchy crust makes for a satisfyingly delicious meal.

Bua Hana: A Fresh Blend of Flavors in Forest Park By Alicia Plomin Contributor

Julie Yu, a graduate of Oak Park River Forest High School, now manages the restaurant her parents started, and says the Bacon Wrap was inspired by a Malaysian bacon puff they all had once. After some trial and error, Yu crafted a perfectly balanced combination of flavors. The Bua Hana Bacon Wrap has now been on the menu for years, and you can even request a version made with cream cheese on the inside! Chicken and shrimp is pureed, creating a consistently smooth texture. The filling is flavored with soy sauce, mushroom sauce, and a blend of spices Yu says they use in a lot of their dishes: garlic powder, sugar, salt and pepper. Each round ball then gets beautifully wrapped with one full strip of bacon. Bua Hana’s homemade honey mustard only has a small bit of tang, enhancing the sweetness from the shrimp and the bacon.

Taste of Main Street in Berwyn By ALICIA PLOMIN Contributor

To me, nothing is more fun than going on a new culinary adventure! That’s why I appreciated the chance to explore what Berwyn has to offer. On Thursday, August 27, 2015 the annual Taste of Main Street took place on Cermak Road between Lombard and Kenilworth. For three hours, locals could bring their ticket to any or all of the thirteen participating establishments to receive anything from a crispy chicken sandwich to pulque, a Mexican milky alcoholic beverage made of fermented agave nectar. Tickets only cost $10 each – a great deal because everything available to sample added up to over $100!

Vesecky’s Bakery and was greeted by the smiling faces of owner Nancy Vesecky and employee Laura Surprenant. After getting two flakey kołaczkis (round sweet cookies with filling in the center, kind of like a miniature Danish), Nancy was happy to tell me that Vesecky’s Bakery has been around for over 100 years. Over 250 people came out to experience new places and everyone was welcome to wrap up the food tour with an after-party at Wagner’s Lounge, complete with live music by Caliente and a contest to win an iPad. The Taste of Main Street was organized by the Cermak Road Special Events Commission of the Berwyn Development Corporation and Berwyn Main Street.

Not only was the event a perfect opportunity to connect with neighbors, but the fact that most business owners were serving the samples themselves made for a more unique interaction. For example, I went into

For Pete’s sake: Oak Parkers give grocery store the thumbs up Residents are all smiles at Pete’s Fresh Market opening By TIM INKLEBARGER Contributor

As employees passed out free samples of sushi, homemade breads and freshly squeezed fruit juices, giddy customers packed the aisles, searching for their favorite products and examining new ones – The Kinks’ “Come Dancing” played lightly in the background. September 2nd was opening day for the long-awaited Pete’s Fresh Market, which takes the place of the Dominick’s grocery store that closed up shop in late 2013. Doug Smith, an Oak Park resident who lives near Fenwick High School, tried a sample of the store’s homemade juice. He tells Wednesday Journal he refused to come to the old Dominick’s but will make it out to Pete’s on a regular basis. “This is great; I love this store now. I’m so happy this place is open,” he said, before rushing off to check out the store’s seafood counter. Ken Taylor, a long-time Oak Park resident, said he lives in the neighborhood and can’t remember a time when Pete’s, located at 259 Lake St., wasn’t a grocery store – except maybe for the almost two-year hiatus between today’s opening and the Dominick’s closure.

“I think it’s absolutely spectacular,” Taylor said of the new store. “This is going to be a great addition to the neighborhood.” Oak Park residents Alice Daniels and Cecelia Thornton stood near the check-out aisle exchanging notes on the grocery store. Daniels said she was amazed at how different the new store was compared to the Dominick’s. “I like that there’s a lot of variety,” she said. “I liked Dominick’s, but this is better.” Thornton agreed, noting that Pete’s has a more extensive selection of prepared and deli foods. “I’m a little overwhelmed at trying to find everything,” she said, noting the breadth of the store’s selection. Daniels said the store’s opening is “a lifesaver” because she can now walk to pick up groceries, rather than having to drive to a nearby Jewel-Osco. She said that once Dominick’s went out of business, Jewel increased its prices because, she suspects, of the lack of competition. “They’re going to have to adjust their prices [if they want to compete],” she said. Stephanie Dremonas, executive officer of Pete’s, was found working alongside the store’s hourly employees in the bakery department.

Dremonas said she’s gotten nothing but positive feedback since the store opened its doors this morning at 7 a.m. – you better believe there was a line of people waiting to get in, she said. “They’re saying it was worth the wait, and they’re happy that it’s not an old Dominick’s with a paintjob,” she said. “They say it’s a completely new store because it is.” Dremonas said she got little sleep the night before and showed up early this morning to get things working in the bakery, which puts out fresh goods daily. “I was a little anxious,” she said of opening day of the Chicago-based chain’s 12th store. Dremonas noted that unlike other grocery stores, Pete’s has a juice bar, donut cases full of pastries, a coffee shop and lunch café.

The lunch café even has a counter for local sweet-tooths with a taste for homemade gelato and sorbet. “You can get your lunch here – pizza, sandwiches, sushi, salmon, brisket, ribs – all that’s homemade and you can enjoy it in the café,” she said. Among the other offerings at the deli counter are barbecue tips, honey wings, potato wedges and cheese burger rolls, to name a few. Those on a health kick can check out the deli’s salad bar. And those stressed out about grocery shopping can pick up a little something to take the edge off. “You can get a glass of wine and craft beer and walk around the store and enjoy it,” she said.

Halloween Fear Home Makeover Contest
