We hung out with the duo behind the acclaimed Chai Wala, a family friendly dhabba style hot spot that has sparked a revolution in the local restaurant industry.
What inspired you to open up a dhabba style restaurant? While studying together at university in Australia, we discovered the outdoor cafĂŠ culture in Melbourne which we thoroughly enjoyed. Upon our return,we were disappointed to find a lack of outdoor spaces available to turn to in Karachi. This inspired us to set up a family friendly outdoor cafĂŠ with chai as our core product, given that we are a tea drinking nation. It just felt right! With a mindboggling number of coffee houses in the city, we were surprised that the same attention had not been given to chai. This drove us to launch Chai Wala, with the hope that people could enjoy the local dhabba culture in a whole new light.
What makes Chaiwala so unique? Our popular favourites such as Doodh Patti, Elaichi and Kashmiri Chai along with Nutella, Pizza and BBQ Chicken Parathas are still known to be of a higher quality and flavour as opposed to other eateries. The Chai Wala story itself is also an authentic one. By creating a trend of providing a family friendly dhabba style experience, we have managed to build a strong brand backed by a loyal customer base ever since we launched two and a half years ago.
How long has Chaiwala been operational and where is it located? We opened our first location in November 2015 and are currently located at DHA Phase 6 and Clifton Block 5 (Behind KGS), in Karachi.
Did you ever think that you would spark a revolution in offering a new style of dining to Karachiites? How does that feel? We honestly never imagined receiving so much love in such a short span of time. It’s surreal to think that we managed to spark something that has made such a lasting impact on our local food scene; that is something very special to us. Of course, with that kind of achievement you are bound to attract healthy competition. We take it as a positive because it gives us credibility and reinforces our brand ethos of promoting our local culture.
MAy 28, 2017 | 71
What kind of twist have you added to the typical dhabba staples on the menu? We’re really proud of our stuffed parathas and are in the midst of developing some new gourmet flavours as we speak. We recently introduced a new range of bun kababs and street style Afghan fries, that have received great reviews. For those looking to venture out during Sehri with Ramadan around the corner, we’ll be serving up some hot and fresh Halwa Puri at both locations! Also, keep your eyes peeled for a special house chaat that will be coming your way soon. It is crucial for us as a brand to continue evolving ourselves and the experience that we offer to our customers.
weekend | FASHion
What kind of experience can a first-timer expect to have at Chaiwala? Whether you are enjoying the cool evening breeze at our outdoor DHA outlet or taking in the truck art at our indoor Clifton branch, we promise you a great experience in a bright and vibrant environment. Not to mention, some mazeydaar chai offered in a range of flavours, paired with some garma garam stuffed parathas! That is what we are most known for.
What has been your favourite memory to date? Our first month after launching was probably the most enjoyable for us. It allowed us to take in the complete ‘chai wala’ experience first-hand, surrounded by our own friends and family. Participating at the 2016 Karachi Eat was also a blast! With the support of friends and family who helped us cater to the overwhelming crowds, our three days there were an exhilarating experience and a massive success!
Do you plan on branching the brand out into other avenues as well? We have already been lucky enough to open the doors to our first indoor outlet in Clifton, boasting a unique space and experience in comparison to other cafes in the city. We have catered numerous weddings and home events, and have also successfully managed pop stalls at Dolmen Mall Clifton that have been well received. As a brand, we are continually evolving and adapting.
Anything new / exciting we can expect from Chaiwala in the near future? Brand new stuffed paratha flavours and fresh items on the menu, with the aim of expanding to new locations, InshAllah!

Nuwara Eliya:
My name is
Haseeb Amjad
and I am a Karachi based photographer, working at Lighthouse Photography! Due to the hectic routine of my job, I like to take time off every few months to travel and unwind, and capture images and memories that are far away from my daily routine and surroundings. The destination of choice this time was Nuwara Eliya in Sri Lanka.
Located in the tea country hills in the central province of Sri Lanka, the city of Nuwara Eliya being at the highest point, offers a treasure trove of picturesque and scenic views to those who visit. I took complete advantage of the twenty-four short hours that I was there and managed not only to capture the breathtaking sunrise and sunset but also the places that the city is best known for. The tea fields, namely the Pedro Estate, were first on my list where I witnessed stunning landscapes made even more whimsical on a foggy morning. There is no shortage of fantastic eateries for you to choose from in Central Nuwara Eliya. A few recommendations that you absolutely must try include King Prawn Restaurant, Somerset Farm, Milano Restaurant and De Silva Food Center that boast the freshest ingredients, giving you an authentic taste of the dynamic local cuisine.

Nuwara Eliya is a city that feels like poetry in motion, with the surroundings evoking the vibe of a surreal oasis often only found in story books.
My favourite had to be De Silva Food Center that perfectly encapsulates the vibe of the local culture and offers some of the best vegetarian food I’ve tried to date! Nuwara Eliya is a city that feels like poetry in motion, with the surroundings evoking the vibe of a surreal oasis often only found in story books. The locals live simple lives, accompanied by stallions that are seen grazing the fields. With lush green hills in the background and low hanging clouds that often float over the city, this scenic atmosphere make this destination a sight for sore eyes. Nuwara Eliya is not a place that is brimming with activity. Its beauty is in its simplicity with urban elements mingling with nature. All you have to do is get there and take it all in. It won’t be long before you fall in love with the laidback atmosphere of the city, the surrounding environment and the locals. Its infectious! The time I spent in Nuwara Eliya may have been short but one I have very fond memories of. I would love to visit again, maybe for longer this time, so I can appreciate each and every aspect of this beautiful little gem hidden away amongst the hills of Sri Lanka!

Milli Shoes is a renowned footwear brand which has been in the business for decades. They cater to a niche market, making some of the most unique hand-made designs. We sat down with Mrs Samina Shafique, the brains behind this enterprise for a conversation on her career and inspiration.
In conversation with
Mrs Samina Shafique Tell us a bit about your journey and how it all began.
It began from the times when my daughters and I would go shoe shopping and how we’d never be fully satisfied. We’d always talk about how we’d like to have more diversity and relevance in terms of design. My sister who happens to be a dress designer, suggested that we make our own shoes. At first I thought that would
require a lot of work, but having an entrepreneurial family background I decided to go ahead with it. And so the process began, one shoe lead to making another one and so on until eventually Milli Shoes became a recognised footwear brand.
Who/what is your work inspired by?
I take inspiration from everything around me. Whether it’d be a bird I just saw or a print on a fabric. This is what you get when you have an

artist’s mind. For example the fur shoes we came out with recently were inspired by a painting of parrot.
What are some of the hurdles you faced (if any) and how did you overcome them?
Of course, no one can escape hurdles when starting out a business. Trying to find the right shoe craftsmen and dealing with them can be very challenging, especially being a woman. So these hurdles come and go all the time, but gratefully when you are committed and passionate about what you do, you have the drive to make it through every obstacle.
may 28, 2017 | 92
What is your ultimate goal/dream as an entrepreneur?
As an entrepreneur, we all want one thing; for our business to sky rocket in terms of its name and sales.
What can we expect from Milli shoes next?
Our next move is to introduce mens shoes as well as to come out with new designs catering to different occasions such as Eid and Wedding Season. We also cater to those who have a difficult time in finding the

How has the Pakistani market evolved over the years?
The market has changed drastically over the years. Nowadays there’s a higher demand for designer shoes and diversity, which is very
healthy competition for us because it allows us to be more active and involved. This of course is always a good thing for the buyers.
How do you keep track of trends and incorporate them in your business?
Of course, no one can escape hurdles when starting out a business. But when you are committed and passionate about what you do, you have the drive to make it through every obstacle. You have to be in touch with fashion. I’m always on top of my game, looking at what others are coming out with as well as the consumers’ personal style and preference so we can cater to them.
If you had one piece of advice to someone just starting out, what would it be?
My one advice would be to go for it, whatever it is that you want to start out with, go ahead and do it and don’t look back. This industry needs flourishing, and our country needs to be recognized for the work we do. When our products are sold abroad we always get a lot of appreciation for it and it’s a very beautiful feeling.

IN CONVERSATION WITH
Susie Recsei Academic Director, NIS School Lahore
Nordic International School (NIS) is an upcoming school in Lahore with roots in Sweden. The classes range from Kindergarten to grade 5 and its first campus is set to launch in Muslim Town in mid-2017.
MAy 28, 2017 | 98
We had a chance to Speak to Mrs Susie Recsei, Academic Director, NIS School Lahore What do schools mean when they say research based curriculum? A research based curriculum means that it has been developed by looking at the research on proven ways for students to maximize their learning. This requires teachers to challenge, engage, support and encourage all students to achieve the learning goals to the best of the students’ abilities. Using best practice strategies for learning supports individual students to have the opportunity to engage with a rigorous curriculum. What can parents do to support education at home? The most effective support is to spend time with your children and ask them about the learning experiencesthey’ve had during the day. Talk to them about the topic they are learning about, together find out new or different information relevant to the topic. Ask them about the books they are reading, ask your child to teach you a new concept that they have learnt. Provide a quiet place and time for them to read, do homework. As important provide time for them to play and be active. How do you see the role of the teacher in the learning process? The teacher is the guide on the side, a facilitator. It is their role to prepare and provide the opportunities for students to explore ideas and concepts. Not
through rote learning drills but rather through learning experiences that challenge and require students to develop understanding and skills through the practice of learning. NIS, being a new school in Lahore, what are its aims and what sets it apart? NIS has a global perspective at its core but is securely anchored in local identity and community. Its aims are to support each child to reach their potential and make them the stars of tomorrow while being responsible civic individuals. The curriculum is a blend of international curricula whose ingredients develop rounded confident and responsible leaders of tomorrow. The International Curricula iYC, iPYC and iMYC provide the opportunities for students to connect their learning across subject areas and see topics and concepts from different perspectives. This is different to the IB curriculum. How important is focusing on students individually at NIS? / How would your school cater to students with varying abilities? One of the pillars of NIS’s philosophy is that each student is unique. This is implemented and applied in the daily structure. Students meet with teachers daily and co jointly identify and set goals for their learning improvement according to their needs. This not only helps student improve academically it also encourages to take responsibility for their own learning. What sort of ongoing professional development activities will the school be a part of? All teachers are engaged in continuous professional development through the Innovative Teaching Institute (ITI) –a Pakistani / Swedish joint venture, the first initiative of such a kind. Teachers engage in new Learning strategies and 21st Century skills so that they can develop problem solvers, critical and creative students.
