Beginning December 1, guests will enjoy a curated selection of Gracias Madre favorites featuring locally sourced ingredients, which will be available at Hotel Wailea’s pool, which offers expansive views of three Hawaiian islands. The Gracias Madre offerings at Hotel Wailea include fan favorites and brandnew dishes that will surprise and delight guests’ palates. Original culinary creations made for Hotel Wailea include Ceviche de Palmitos, Tacos de la Calle, Ceviche Tostadas and more. Standout items from Gracias Madre’s menu include the signature Lettuce Cups, the Madre Bowl, Heart of Palm Crab Cakes and more.
Additionally, both guests and locals are also invited to a series of special Gracias Madre events to celebrate festive season at the hotel’s famed Treehouse, which sits under a canopy of mangos and avocados complete with stunning ocean views. Hotel Wailea Executive Chef Ryan Cruz and Gracias Madre Executive Chef Diana Briscoe will host intimate gatherings featuring select pop-up menu items and exclusive culinary creations along with bespoke libations as the sun sets over the Pacific Ocean.
Chef Ryan Cruz began cooking from a young age and has studied under culinary icons including Wolfgang Puck and Chef Raymond Weber. His innovative dishes, inspired by his love for Japanese art and intricate floral arrangements, transform each plate to replicate a vivid garden of flavors and colors, creating an interactive culinary adventure that not only captivates the palate but also engages guests in an exploration of flavors. Chef Diana Briscoe is a Colombian-born chef known for bringing wellness and sustainability in every plant-based dish that she creates. She has worked in some of the most prestigious kitchens in Los Angeles, CA using Latin American and Mexican techniques to create conscious, balanced cuisine that helps people expand their knowledge on the ingredients in their daily diets.
