I saw my first robin of the season on Feb. 2 this year. So I am assuming Punxsutawney Phil’s Groundhog Day prediction of an early spring was correct. While it hasn’t been a terribly long, cold, hard winter as in some years past, I still look forward to the early crocuses and daffodils breaking through the crusty ground. Now that March has arrived, I can begin searching for budding tree limbs. I hope I can put away the snow shovel soon. Best of all, it’s time to start planning our next Spring Break Weekend Getaway. So each state in this issue features some place to go, something to do, or someone to see, or perhaps all three! Spring Break isn’t just for the college kids anymore. And the plans no longer have to include an expensive trip south to warmer climate, (even though the beach is still my favorite destination.) Hey, we ALL need a break from our fast-paced, day-to-day responsibilities. Even if it’s just an extended weekend getaway. Sometimes, trying something unique and different from your ordinary can be just as refreshing and create long-lasting memories for years to come. Try a different entree from the menu. Sanford, Fl. has plenty of new restaurants to try out. Still want that beach? There are several indoor waterparks open year round for your enjoyment. A brand new park is Dreamworks Animation in New Jersey. See P. 44. Want to go Island Hopping in Missouri? See P. 39. The state of Pennsylvania has even devised a budget-friendly way for you to visit Ancient Egypt on Spring Break. See P. 53. If you’re ready for a glimpse of summer, here are a few flower shows sprouting in major cities around the U.S. The largest and oldest flower show in the nation is hosted each year by the Pennsylvania Horticulture Society, through March 8. This year’s themed “Riviera Holiday” is “inspired by the world’s most exotic Mediterranean gardens.” Comprised of 33 indoor acres of lush, decorative gardens, the show attracts over 250,000 visitors a year and features highly competitive contests for the best designed gardens. All the proceeds benefit the Pennsyl-
vania Horticulture Society which has been helping to beautify local communities since 1827. From March 18 – 22, you can get a glimpse of summer at Navy Pier during the annual Chicago Flower & Garden Show. This year’s theme “20/20: A Focus on Flowers” will feature gardens showcasing the role flowers and plants play in our daily lives. Guests can experience 21 full-size, walk-through gardens plus seminars, DIY workshops, and a marketplace. For an outside show, head to the Coronado Flower Show, April 18 – 19, the largest tented flower show in the U.S. held in the beachside

Bakin’ and Cookin’ With a Purpose
My family thinks I’m nuts. I don’t take offense because on occasion I will do something which proves they are absolutely right! For example, I clean out my freezer in the winter. Normal responses include: “Are you crazy? It’s cold in the garage! Can’t you do that when it is warmer?” I could tackle this job in August, but if I do it when it’s cold, I work quicker. Plus, there is no risk of anything thawing out. It seemed logical at the time. Besides, I found three containers of cookies. I had forgotten baking them and I certainly don’t remember freezing them. In retrospect, I can’t imagine how on earth I managed to get them to the freezer. You see, a cookie in my house has the life expectancy of a cup of water sitting on the surface of the sun. I also found three half-loaves of banana bread, 2 bags of freez-

er-burnt ice and a large bucket of icing (no cake, just icing). But alas, I was looking for lasagna. Finding none, I had to fall back on an alternative recipe. FAKE LASAGNA frozen ravioli spaghetti sauce shredded cheese This recipe is excellent for those times when you don’t have time or just don’t want to spend hours in the kitchen preparing a meal. Let’s see, when would such an occasion occur? Spring break, of course! Who wants to spend such precious days off from work and/ or school in the kitchen? Prep time is only about ten minutes because there is no need to boil pasta, cook meat or simmer sauce. Simply layer the ingredients in a casserole dish and bake. Versatility is another perk. You
can use either meat or cheese ravioli for a vegetarian variety. The sauce can be any flavor, homemade or from a jar for speed and convenience. Now, let’s talk cheese. Most recipes call for three or four kinds of cheese with parmesan, mozzarella, ricotta and Romano topping the list. For an American version, try adding some Velveeta for some extra creaminess. Another thing I like is the ability to make any number of servings. Two for dinner? Easy. Only one for dinner? Perfect. Serving twenty? You might need to make two pans. So now you know my secret. It is versatile, fast, easy and almost as tasty as homemade. All in all, it is almost impossible to get it wrong. Unless what you really, really want is cookies.

Thinking of Saint Augustine for your Spring Break? One of their best kept secrets is the Amphitheater. I attended a Willie Nelson concert there and had a blast. Willie Nelson was the opening act for the 2020 concert season at Saint Augustine Amphitheater. He proved age doesn’t matter when you have the talent. His show was a fantastic mix of his own songs and tributes to several other musical friends. He opened with his old traditional “Whisky River” inviting the audience to join in all the songs. Then went on to a mix of his own classic numbers like “On the Road Again,” “You Were Always on My Mind,” “Mammas Don’t Let Your Babies Grow Up to Be Cowboys,” “Beer for My Horses,” and more of his old favorites. He added tribute songs to Waylon Jennings’ with “Good Hearted Woman” and several Hank Williams numbers like “Jambalaya,” “Hey Good Lookin’,” and “Move it on Over.” His song that got everyone laughing was when he did Mac Davis’ “It’s Hard to be Humble.” His sons, Lukas and Micah, are part of his band. Micah, who records under the name Particle Kid, did a hilarious version of “Everything is Bulls**t.” Lukas provided backup on his electric guitar and a solo of one of his own songs, “Texas Flood.” Willie’s opening act, Cassidy Daniels, was fabulous. She did a knockout version of “Me and Bobbie McGee” a couple of songs from her debut album. Watch for her as a rising star. It’s been voted Top 50 Amphitheatre Venues Worldwide. The amphitheater was built to commemorate Saint Augustine’s 400th birthday in 1965, just about the same time Willie’s singing career took off. This is around the same time he first performed on the Grand Ole Opry and cut his first RCV album, “Country Willie – His Own Songs.” The amphitheater opened originally as the venue for “Cross and Sword,” Florida’s state play that told the story of Pedro Menendez, and his founding of Saint

Augustine in 1565. The “Cross and Sword” had a 32-year run before shutting down. The amphitheater is built on what was once a coquina quarry. The stone used to build many buildings in St. Augustine, including the Castillo de San Marcos, was dug here. Over the years, the Amp has played host to some musical legends including Little Richard, Aretha Franklin, The Beach Boys, Bob Dylan, and a host of other big names. Probably Willie won’t be performing when you visit but you can see bands like Justin Moore & Tracy Lawrence, Jason Isbell and the 400 Unit and Old Crow Medicine Show, Wilco, or Ringo Starr. They are all coming this year. The Amp also host smaller acts in their Backyard Venue. Besides the featured performances there are sever-
al free events held at the amphitheater. Their Night Market is held the second and fourth Tuesday from March - October. The Night Market gives you a chance to meet over 50 local handmade crafters plus dining, a full bar and live entertainment all for free. Then there are events like The Taste of St. Augustine where local restaurants showcase St. Augustine cuisine. You pay only $5 (free parking and children free) and then buy $1 tasting tickets. Tuolumne County
SONORA - Spring is blooming throughout the rolling hills of Gold Country, the meadows of Yosemite National Park, and the peaks of the High Sierra. Warmer weather melts the snow, making for amazing waterfalls. Flowers start to bloom on mountainsides and in vast meadows, painting the landscape with vibrant shades of yellow, blue, purple, and orange. The days are extended with lasting sunshine that gives adventurers more time to explore the great outdoors. Spend the longer days exploring Tuolumne County, just 2.5 hours from the San Francisco Bay Area. Yosemite National Park- Over half of Yosemite National Park is in Tuolumne County and it’s the less crowded half. Hetch Hetchy is an off the beaten path, hidden gem in Yosemite National Park. Once known as the twin to the famous valley floor, it is now home to a reservoir that serves as San Francisco’s drinking water. Hetch Hetchy is a mecca for wildflowers and wildlife that line the trail to Wapama Falls. Hug a tree and marvel at some of the oldest trees in the world at the Tuolumne Grove of
Giant Sequoias. With a short 2-mile round trip hike, visitors will be surrounded by nearly two dozen sequoia trees. Spring wouldn’t be complete without a frolic and Tuolumne Meadows is perfect for frolicking, rock climbing, and sightseeing. One of the largest high elevation meadows in the Sierra Nevada, Tuolumne Meadows, usually opens in late spring. Spring starts the kick-off to whitewater rafting and what better place to raft than the famous Tuolumne River. With runs starting at the base of Yosemite National Park, outfitters offer trips for beginners and seasoned rafters alike. Gold Country- Take a trip back in time to and celebrate Columbia State Historic Park’s 75th anniversary. The park has free admission and is open year-round with a working blacksmith, gold panning, stagecoach rides, an old-time photo parlor, and suds-serving saloons, but one of the most authentic experiences is the Columbia Diggins’ 1852.

Tuolumne County - Continued Happening every May, with a small admission price, visitors can wander through the gold diggins’ encampment and feel the true Historic experience. Spring into Historic Downtown Sonora, and re-fresh with a tea for the ailments and an ionic foot soak at Amala Detox and Tea Lounge. Spring welcomes the seasonal Sonora Farmers Market with farm-fresh goods, flowers, and products from local merchants. Jamestown offers wildflower lovers the chance to see the blooming Mother Lode. Wildflower train rides at Railtown 1897 State Historic Park run during the month of April and take riders through the rolling foothills with an Interpretive Park Ranger. Soak in the fresh spring air with a wildflower hike through the Red Hills. Explore the vast beauty of the forest and catch some sights of wildflowers and waterfalls on one of these accessible trails: the Pinecrest Lake Loop, the Sugar Pine Railway Trail, or the Westside Railroad Trail. As the snow melts in the High Sierra, the wildflowers put on a show all the way into summer, catch the bloom in the higher regions by way of horseback. Royal Gorge
CAÑON CITY – Looking for privacy, scenery, and as little work as possible. Then Royal Gorge Cabins are a great choice for a Spring Break. Spend the day rafting on the river, then enjoy the nearby comforts and outstanding views with regional moderate weather. All the ingredients are there for a fun extended weekend getaway. Less than an hour from Colorado Springs, the cabins are located in Colorado’s “Banana Belt,” a microclimate that occurs because the Arkansas River Valley on the lee side of the mountains and the upslope and downslope winds divert moisture away from the region. The Royal Gorge region is often pleasantly warm, even when nearby Colorado Springs and Denver are experiencing colder weather. The nine luxury Royal Gorge Cabins are open year-round and
include one- and two-bedroom options with expansive southwest-facing views of the Sangre de Cristo Mountains. The living areas feature a fully equipped galley-style kitchen, flat-screen television, eat-in granite bar and leather couches. The Irish Capital

et’s celebrate St. Patrick’s Day all week long from March 8 - 14 in the City of O’Neill, “Nebraska’s Irish Capital” O’Neill, the county seat of Holt County, was founded by General John O’Neill, a native of Ireland and veteran of the American Civil War. The “general,” a rank bestowed on him by admirers because he commanded three Fenian incursions into British-governed Canada, first directed colonists in 1874 to this fertile Elkhorn Valley site which bears his name. General O’Neill also induced other Irish groups to settle at Atkinson in Holt County and in Greeley County. Many Irish coming to O’Neill had emigrated to America earlier, as result of famine and economic distress, temporarily settling in
eastern cities. General O’Neill, knowing the agricultural heritage of his people, said his object in founding Nebraska colonies was “to encourage poor people in getting away from the overcrowded cities of the East.” Residents in O’Neill prepare for the St. Patrick’s Day celebration in March honoring the patron saint of Ireland. The celebrations have doubled the population of the “Irish Capital of Nebraska” each year for the past several years. O’Neill, which was founded by an Irish native and proclaimed the “Irish Capital of Nebraska” by the governor in 1969, is home to the world’s largest shamrock. City officials began by painting the giant shape at the intersection of Highways 20 and 281 in the middle of
town, but decided to make it permanent in concrete in 1993. (You can even see its outline on Google Maps.) These days, the giant shamrock is a big tourist attraction, with people coming all year to see it. There have even been proposals and weddings at the site, Fritz said. On St. Patrick’s Day, the city of about 4,000 doubles its population, with visitors flocking to see the painting of the shamrock (it gets a fresh coat of paint every year just before the main celebrations), O’Neill’s grand parade, Green Eggs and Ham -- a children’s breakfast that features green scrambled eggs -- and other activities.

Loon Lake
LOON LAKE /PRNewswire/ -Loon Lake Lodge and RV Resort, located at the scenic Oregon Coast Range recreation lake near Reedsport, will open early this year on April 1. Ancient Egypt
PHILADELPHIA – Newly opened at the Penn Museum, Ancient Egypt: From Discovery to Display provides visitors an opportunity to walk in the shoes of an archaeologist. Explore the journey artifacts take on their way to museum display, from excavation to conservation to storage and research. More than 200 fascinating objects, many of which have never been on view before, are included throughout the three-part, 6,000-square-foot exhibition. Eventually, these objects will become a part of the re-envisioned Ancient Egypt and Nubia Galleries, a much-anticipated cornerstone of the Museum’s Building Transformation. “Unlike most exhibitions about ancient Egypt, Ancient Egypt: From Discovery to Display provides an insider’s look into how objects are excavated, conserved, and stored—treating visitors to a unique experience of the Museum’s world-renowned Egyptian collection as we prepare for the renewal of the full Ancient Egypt and Nubia galleries,” says Dr. Jennifer Houser Wegner, exhibition curator. In the exhibition’s first stop, visitors
are introduced to what life was like in ancient Egypt through objects representing gods, royalty, and everyday individuals. Highlights include a wooden stela (memorial sculpture) from 662–525 BCE that honors two versions of a sun god and a life-sized memorial statue depicting the overseer of priests. But, then, visitors begin to “peel back the layers,” as they follow artifacts through their journeys—in reverse. In the second gallery, Museum-goers will get a closer look at breathtaking artifacts from the Old Kingdom, also known as the “Age of the Pyramids,” starting in 2613 BCE, through the time of Cleopatra’s death in 30 BCE. Objects in this “visible storage” section include two magical model boats (a sailboat and a rowboat) featured in the critically-acclaimed Smithsonian book History of the World in 1,000 Objects, a stunning turquoise-colored glazed ceramic ware necklace, the 2,000-year-old mummy of a young woman, and a child mummy that was recently CT scanned in partnership with the Chil-
dren’s Hospital of Philadelphia. The final gallery, also known as the highly-popular Artifact Lab, will provide visitors with an opportunity to learn more about excavation and to observe conservators in action as they work to preserve Egyptian artifacts, including the mummy of a 40-yearold named Hapi-Men and his dog, exquisite gold jewelry worn by the ancient Egyptians, and an intricate model of the throne room of the Palace of Merenptah (the 13th son of Ramesses II), the columns and portals of which will be erected at full height in the Ancient Egypt and Nubia galleries. Take it from Adventures on the Gorge (AOTG), Southern West Virginia’s largest river rafting outfitter, which employs more river-loving guides and offers more guided rafting trips on the New and Gauley Rivers than any other outfitter in the region. This year, Adventures on the Gorge is introducing Kids Raft Free for ages 11 and under with a paying adult. “Even a single rafting trip can help build self-esteem, teamwork and an appreciation for natural places,” said Roger Wilson, CEO of Adventures on the Gorge. “Screen-free time on the river is also a great way for family members to thoughtfully re-engage. Wyoming Spring Break
Fat Biking
Fat bikes, mountain bikes with extra-wide tires (usually 3.7 inches or wider), are designed to cruise on unstable terrain like snow. Designed for riders of all skill levels, fat biking is a growing trend, and groomed trails for the sport are popping up all over the state. Curt Gowdy State Park near Cheyenne recently added a 4-mile loop for fat biking, while Grand Targhee Resort in Alta gives fat bikers access to their more than 9 miles of Nordic trails and 2 miles of single-track routes. More places to find fat-biking trails in Wyoming include Nordic Trails Center at Casper Mountain in Casper, Sinks Canyon State Park in Lander and Jackson Hole Mountain Resort.
Spring Skiing
Many of Wyoming’s ski areas and resorts stay open through March and even into early April, which can mean shorter lift lines, great powder
and sunny skies. At Jackson Hole Mountain Resort, Grand Targhee Resort and other high-altitude ski areas, snowy nights and comfortably warm, sunny days are not uncommon during the spring. Other places to find prime spring skiing include Snow King Resort in Jackson, Snowy Range Ski Resort in Centennial and Hogadon Ski Area in Casper.
Snowmobiling
Many of the state’s snowmobiling areas receive enough snowfall to keep trails open until mid-March or later. The Wyoming Range, between Alpine and Kemmerer, has about 336 miles of trails that can have substantial snow for riding through May. The popular Continental Divide Snowmobiling Trail follows the Wind River Range for 829 miles and has a grooming season that typically runs until mid-March. Road Biking & Mountain Biking
While roads in Yellowstone and Grand Teton national parks don’t open to motorized vehicles until midto late April, many are plowed for non-motorized use in late March (exact dates are determined by National Park Service). Depending on road conditions, spring biking in Yellowstone is permitted on roads between the park’s west entrance and Mammoth Hot Springs. In Grand Teton National Park, Moose-Wilson Road and Teton Park Road, running from Taggard Lake parking area to Signal Mountain Lodge, are accessible for spring bikers, hikers and roller bladers.
