A Favorite Uncle Turns 100

family party hosted by his greatniece Kim Peck and her family at their York home, where O’Connor also lives. Spry and sharp, he sat down for a friendly chat with a visitor early this week, as Peck looked on admiringly. “Why have I lived so long? I have to ask the good Lord about that — it’s in his hands,” said O’Connor. “I didn’t smoke or drink and I played a lot of sports.” O’Connor also thinks being sociable has helped. “I always have people around me and have more friends than enemies. I smile a

lot and don’t spend time being grouchy. It pays to be cheerful,” he said with a grin. O’Connor was born in Lowell, Massachusetts on December 3, 1918, the youngest of John J. O’Connor and his wife Margaret Cryan O’Connor’s three boys and two girls. “Mom was a mill girl from the Acre neighborhood and Dad was a barber and dressing tender (pattern setter) in the mills,” he recalled. Tragedy struck the family when Tom was six and their mother died. “My sister Margaret was 13 when mother died. An aunt

wanted to take me away to Medford, but Margaret said ‘no, he’ll stay here.’ She finished 8th grade, then stayed home to handle the household, care for me and my sister, Mary, 8, and cook for the older brothers and our father. She never went to high school, but she was the smartest person I knew. Everything I learned about manners and how to treat people, she taught me,” O’Connor recalled. He graduated Sacred Heart School and later Lowell High School in 1937, then worked in the mills. See UNCLE page 19...

~ Library News ~ Is China Ready for Global Leadership? YORK As China’s participation in global politics and culture increases, so does its power. But is the country ready to lead? This and other pertinent questions will be explored on Tuesday, December 4, at 7 p.m. at the York Public Library. Retired Foreign Service Officer and China expert Matt Ward will present “The Eagle and the Dragon: A New Geopolitics of the 21st Century.� Matt Ward made a career of foreign diplomacy, having served the United States from 1967 to 1996 in several countries including Vietnam, Cambodia, Haiti, Iran, Thailand, and China. He pioneered the refugee processing system for “boat people� arriving on the shores of Indonesia and Singapore, and under his directorship in Taiwan, scores of U.S. diplomats were trained in Chinese language, culture, economics, history, and politics. Ward’s expertise earned him a position in both the Bush and Clinton administrations, where he served as Director for European Economies in Transition. This office oversaw trade, developmental, and humanitarian policies for nation-states that manifested after the dissolution of the former Soviet Union. In

How to Make Your Favorite Foods Healthier After the whirlwind of the holiday season, the season of resolutions takes over. Many people resolve to live healthier, and they may not have to give up their favorite foods to do so. Research from the National Institutes of Health suggests American adults between the ages of 18 and 49 gain an average of one to two pounds every year. Grazing and overeating tends to increase when the weather cools down. A 2005 study published in the New England Journal of Medicine found that, in the fall, people tend to consume more calories, total fat and saturated fat. In the spring, people seem to prefer more carbohydrates. In addition, less powerful sunshine in winter coupled with people bundling up translates into less vitamin D being absorbed by

the body. Some researchers believe there is a link between vitamin D deficiency and weight gain as well. To ensure that certain foods do not sabotage healthy eating plans, people can employ some easy modifications and make healthier versions of the foods they like to eat. Choose crunchy foods. Those who are prone to snacking can reach for noisy foods. These include crunchy items like apples, carrots and pretzels. Scientists say that when people listen to what they are chewing - called the “crunch effect� - they eat less of that item. Tone down the cream. Delicious dishes like fettuccine alfredo typically are made with lots of butter and cream. Replace cream sauces with a healthier base made of low-fat milk thickened with

Health & Fitness Explaining Common Terms Found on Food Labels When shopping for groceries, some consumers may feel as if they need a degree in nutrition sciences to determine just what it is they’re buying. Food labels can be complex and include various terms that may be unknown to consumers. Understanding these terms can help people make sound decisions regarding the foods they eat. Cage free: Eggs labeled “cage free” means that the hens that laid the eggs were not raised in caged housing systems, which the Humane Society of the United States has described as inhumane. The organization Food and Water Watch notes that living conditions for hens raised in cage-free environments may still be poor. Daily value: According to the medical resource WebMD, daily value indicates the percentage of a certain nutrient in a food, based on a 2,000-calorie-per-day diet. WebMD notes that 8 percent is general considered to be good. Dietary fiber: The Mayo Clinic notes that dietary fiber refers to the parts of plant foods that the human body cannot digest or absorb. Fiber is typically classified as soluble, which refers to types of fiber that dissolve in water, and insoluble, which is used to describe types of fiber that promote movement of material through the digestive system. Soluble fiber can help lower blood cholesterol and glucose levels, while insoluble can help people who suffer from constipation or irregular stools.

Enriched: Foods that are labeled as “enriched” have had nutrients added to them to replace those that were lost when the food was processed. Fortified: Fortified describes foods that had nutrients added to them that were not present initially. A common example of a fortified food or beverage is milk, which is fortified with vitamin D to help the body absorb the calcium present in milk. GMO: GMO stands for “genetically modified organisms,” which are organisms that have had their genetic material artificially manipulated in genetic engineering labs. The Non-GMO Project says that a growing body of evidence has connected GMOs with an assortment of health problems and environmental damage. Grass fed: Grass fed implies that the animals used to produce meat and dairy were fed only grass.

Consumer Reports advises consumers to look for seals such as American Grassfed or PCO Certified 100% Grassfed to ensure that manufacturer claims have been verified and that the animals were fed 100 percent grass and raised on pasture. Hormone free: The federal government of the United States prohibits the use of hormones to raise poultry and hogs, so manufacturers who label their foods as “hormone free” have not gone above and beyond to make their foods healthier. Organic: The United States Department of Agriculture has strict criteria in regard to labeling foods as “organic.” To be labeled “organic,” dairy, eggs, meat, and poultry can come only from animals that were not given antibiotics or growth hormones. Fruits and vegetables can only be labeled “organic” if they were produced without conventional pesticides, fertilizers made with synthetic ingredients, bioengi-

Home Sales and Values Up in October AUGUSTA Statewide real estate sales were positive for the kick-off of the fourth quarter. The Maine Association of REALTORS® reported a 3.44% increase in sales of single-family existing homes for October 2018 compared to October 2017. The median sales price for homes sold in October reached $215,000, a 4.88% increase compared to October 2017. The MSP indicates that half of the homes were sold for more and half sold for less. “The statewide sold statistics through October 2018 are 2.7% ahead of this same time period from 2017, the real estate industry’s strongest year ever,” says Kim Gleason, 2018 President of the Maine Asso-

ciation of REALTORS® and Broker/Owner of McAllister Real Estate in Hallowell. “We expect a strong 2018 finish. Traditionally, the holiday season continues to be an active time to transact real estate because buyers and sellers are motivated for decision-making before year’s end.” “Overall, Maine home values continue to appreciate and it’s a good time to purchase real estate for your own use or for investment purposes. VA Purchase Loans Surge 98% in Maine For the seventh-straight year, VA purchase loans increased year-over year, with volume for fiscal year 2018 up 59% compared to five years ago, according to the annual VA loan statistics map released by Veterans United Home Loans, the nation’s largest VA lender. VA purchase loans in Maine surged 98% in FY18, compared to 2013. Nationally, the VA backed more than 610,000 loans in FY18 worth over $161 billion.

TORS®’ statistics indicate a national MSP of $257,900—a 4.3% increase. October sales in the regional Northeast dipped 6.8% compared to a year ago, while the regional MSP of $280,900 represents a 3.0% rise.

“This historical benefit program has experienced a resurgence since the housing crisis,” said Chris Birk, director of education at Veterans United. “More Veterans have used this $0 down loan in the last five years than in the prior dozen years combined. While the VA’s data show refinance loans cooled in 2018, the purchase market remains strong as more Veterans and military families turn to what’s become the most powerful home loan on the market.” VA loans now make up about 10% of the mortgage market, a huge increase in market share from even just a decade ago. VA loans allow qualified Veterans to buy with no money down, no private mortgage insurance and offer

more flexible and forgiving credit guidelines. According to mortgage software firm Ellie Mae, the VA loan has had the lowest average interest rate on the market for the past 53 straight months. Despite not requiring a down payment, the VA loan has had the lowest foreclosure rate of any loan product for 48 consecutive quarters, according to data from the Mortgage Bankers Association. “This hard-earned job benefit turns 75 years old in 2019,” Birk said. “The VA loan program continues to fulfill its original mission and help a new generation of Veterans and service members achieve the American dream of homeownership.”

You recently came up with LibreOffice that not only does that, but it’s FREE! Boy-oh-boy, did you ever make my day when I opened that email of yours yesterday! You are an angel for us computer users, I do thank you profusely. This LibreOffice is an above-excellent word processor, it puts Microsoft to shame. Adobe, too. Keep sending those emails of yours, I read every one, Virginia Dear Virginia, Thank you so much for your kind words, I am including your message this week so that your discovery might help someone else. I did not have any experience with LibreOffice opening Pagemaker files, so this is good information to know and share. Thanks again, Elizabeth Dear Computer Lady, Hi! I am trying to do a ‘screenshot’ but not having any luck. My ‘printscreen’ key is the same as the ‘end’ key. Every time I hit printscreen the only thing that happens is the page advances upwards. I’ve tried several ways--windows key with the printscreen key, alt key with it, control key but nothing seems to help. What do you think I am doing wrong? I am running Windows 7 on a Toshiba laptop. Thank you for your help, Diana Dear Diana, Usually when a key has two functions, you need to hold down the “Function� or “FN� key to access one of the functions of that key. Some laptops use color coding to identify which action needs the FN key, while others use a symbol like a small box. For example, if your

FN key is blue (or has blue lettering) and your End/Print Screen key has “print screen� in blue lettering, you would need to hold down the FN key while pressing the End key to activate the print screen command. Another example would be if your FN key has a small box around the letters, your End/Print Screen key would have a box around the words, “Print Screen� indicating that you need to hold down the FN key to activate the Print Screen command. Hopefully this will help you, Elizabeth Dear Computer Lady, I really enjoy your newsletter and hope you can help me. I have been using Picasa for years to edit photos and then post on a listing to Etsy and a couple of other online stores. It has been very easy to use. Now, all of a sudden my unedited photos are showing up on etsy instead of the edited photos. Picasa does not seem to have a help desk and their user forum has tried to help but so far nothing works. Do you have any ideas? Failing that, can you recommend another photo hosting site that is not too complicated? I am not very tech savvy. Thanks! Barbara Dear Barbara, Since I have not been able to observe your process when editing photos, I can only guess at what is going wrong. Here are a few things to check. 1. Are you clicking the “Apply� button after editing your photos? 2. It appears that Picasa only saves some of the changes in the program unless you resave the file. Once you are done making your changes, click on “File� and

“Save As� and save a copy of your picture. Upload the new copy to your Etsy listing. 3. You can also export the picture to a folder of recently updated photos, then use that folder to upload your pictures to Etsy. Just click, “File�, then, “Export Picture To Folder�. Elizabeth Dear Computer Lady, Thank you for your newsletter – I find it very helpful. I recently purchased a new Dell computer with Windows 10 and Microsoft Office Home and Student 2016 with Word, Excel, Power Point and One Note. I regularly get messages from Slim Cleaner Plus and Driver Update asking to scan the computer and take appropriate action. These software packages are from Slimware Utilities Holdings, Inc. and came preloaded. There is a charge for each service ($30 each per year). My question - are they necessary? I don’t believe they are, but hesitate to uninstall them. The Driver Update software does state that updates may be available free of charge from the various companies. Instead, he built airfields in Virginia, Puerto Rico, Washington and England. O’Connor returned from the war at age 25 and married Helen Dunlay in 1945. He worked in a couple of mills. But his major career was spent working for Massachusetts Corrections for 29 years as a prison guard, carpenter and maintenance foreman at MCI Concord. “He even made friends with the prisoners,� said Peck proudly. He and his late wife never had kids of their own, but they lavished love on nieces, nephews and other family members. “He is a great uncle. He and Aunt Helen lived three houses over from us in Lowell and we were always over there,�

said Peck. After O’Connor retired, he cared for relatives and became the family’s favorite handyman, building sun porches and cellars and renovating homes, including one that Peck’s family owned at Long Sands Beach in York. These days, O’Connor enjoys sports and politics on TV and keeps up with the family. “I asked him if he wanted to go to Disney for his birthday, but he wants to have the family over, so we are,� said Peck. Praising her uncle, she notes: “Uncle Tom taught me to treat everyone with respect and kindness. He has a wicked sense of humor and he’s always laughing.� All in all, Tom O’Connor has lived a rich, happy and contented life. “People tell me ‘God bless you,’ and I tell them He already has,� O’Connor concluded, smiling contentedly.

A Christ mas Cake Th at Is Destined To Live Forever By Jim Fabiano Every morning it is my job to make the coffee before my wife joins me for some breakfast and conversation. This has been a tradition in our marriage ever since it began almost thirty-five years ago. While I was getting the coffee pot ready I noticed a large jar on the counter. It must have had a gallon capacity but was only a quarter filled by some kind of yellowish

liquid. The liquid was brewing because its surface was covered with tiny bubbles. When my wife came downstairs I asked what this newest of inhabitants of our kitchen was. She told me it was a starter cake. Not having a clue as to what a starter cake is supposed to be I asked for an explanation. She told me she got the starter liquid from her sister. She explained that every time one made the cake

Then these people would make their cakes and have a couple of starter liquids to give to other people so the same cake starter would spread around our known universe. This intrigued the hell out of me to the point I wondered where the starter cake liquid had been and where it was destined to go. I remember last holiday season when my sister-in-law made the cakes and brought some over for Christmas Eve. Tradition has my entire family and many of our friends end up at my house on Christmas Eve to celebrate the reality we are all part of a good and perpetually growing family. The cakes she brought were exceptional because they tasted fresh and were packed full of fruit

and nuts. My wife loved them to the point she asked her sister if she could have a starter cake. She agreed and the starter cake from somewhere in the past was destined to become a part of our many futures now rests on our kitchen counter. Staring into the contents of the gallon jug now brewing on my kitchen counter I imagined where parts of our Christmas cake came from. My mind’s eye took me back to a time when avocado green was the color of choice in most of our nation’s kitchens. I watched a smiling young woman in a flowered apron and very high hair stirring her Christmas cake after adding pineapple, cherries, and nuts. She must have known in a few short days she would be serving the most delicious of all the holiday cakes. But, she was also staring into the bubbling gold

colored liquid looking through her own mind’s eye imagining another time when the ancestors of her cake had reigned supreme. The colors of this kitchen were black and white. The table and counters were made of wood. Even the spoon the young woman with the tightly pulled back hair who was stirring the starter cake was made out of wood. She was young and wearing a tan colored blouse and trousers that made where the blouse ended and the trousers begin impossible to find. She was wearing a bright white and stiffened apron hoping to produce what was promised to be the dessert of the Christmas season. As she was watching the bubbling liquid move with her spoon she imagined what it must have been like for the person who gave her the start of her Christmas cake. The kitchen of her imagination was even darker than hers. The stove was coal fueled and the woman doing the stirring wore an open collared polka dot house dress that had little need for a belt to break up the monotony of the bleached out dots that once held their color instead of appearing like old washed out stains. This woman was stirring her Christmas cake but did not have the money to buy the pineapple, cherries, and nuts that would flavor the Christmas cakes of her future. She used apples, peanuts, and even pieces of old bread to make her Christmas cake the best the hard times of her present could produce. She also stared into the See CAKE page 31...

Bette Ann Brown (Cole), 85 ELIOT – Bette Ann Brown passed away peacefully on November 27, 2018 surrounded by her family. She was born January 9, 1933. She lived in Kennebunkport where her grandfather started the “Clam Shack� and adjacent “Fish Market� downtown. She later moved to Eliot where she graduated from Eliot High School. Bette was a homemaker, cosmetologist and later worked at Liberty Mutual before retiring. Bette was a loving mother, grandmother and great grandmother. She had a passion for cooking and loved to attend church. She loved to feed her family and send out her famous pies and cookies to her friends

Lesley Darling, 63 WELLS – Lesley Alice Darling of Wells and formerly of Cambridge, MA, died unexpectedly November 24, 2018 at York Hospital following a period of failing health. Lesley was born February 16, 1955 in Cambridge, MA, the daughter of Ralph and Louise Nelson Darling, and attended local schools there. She is a 1972 graduate of Cambridge High and Latin School. Lesley furthered her education attending Holy Cross, where she was the first female ROTC member, then transferred to Suffolk University, where she earned her undergraduate and a master’s degree in Finance. Growing up, her family spent their summers on Wells Beach, and at the age of 16, she took flight lessons at Sanford Airport, eventually earning her pilots license, which her entire family was very proud of. Lesley was employed for

14 years with Raytheon, where she was a part of the Patriot and Stinger missile program. Following her mothers move to Wells, she opened Lesley Darling Appraisals, which she operated successfully for over 20 years in Wells. Active in her community, she was a member of the Wells Library Board, Save Our Shores, and Ocean View Cemetery Board of Directors. She also was a founding partner of Time and Again Consignment Shop in Wells. She loved dogs, and over the years rescued many dogs, which gave her such satisfaction. Survivors include her brother Ralph “Toby� Darling and his wife Mary Margaret of Canton, MA, nieces and nephew Janine Hechter and her husband Joshua, Thomas Darling and his wife Ashley, Bridget Darling and Rosemary Darling, her cousin Louise Ciaizzo of Wells, and two great nieces, Violet and Minnie Hechter. She also has many cousins in the Boston area. Visitation will be held 9:3010:30 a.m. Saturday December 1, at Bibber Memorial Chapel, 111 Chapel Rd, Wells, followed at 11 a.m. by a Funeral Mass at St. Mary’s Church, Eldridge Rd, Wells. Elaine M. (Buck) Peverly, 94 YORK – Elaine Peverly passed to new life on November 23, 2018, with her family at her side at Sentry Hill in York. She was born and grew up in Medford, MA. She married Arthur Peverly of Melrose, MA, and they were married 63 years. With their RV they enjoyed many trips traveling around the country visiting friends, relatives and camping at RV sites with others from the United Methodist Camping Association. Elaine was a homemaker, mother of four children and worked from home during the 1960s and 1970s as a correspondent for the Portland Press Herald and the Portsmouth Press Herald. Elaine wrote a feature newspaper article about the family’s 1967 trip to England to meet relatives and see some of continental Europe. She participated in Kittery and York writing and poetry groups and attended the Ocean Park Writer’s Conference. She also authored and selfpublished numerous local history, family history, poetry and children’s books. She is particularly known for her book on the building of the Piscataqua River Bridge and as co-author of “The Dummy� (the history of the Boston & Maine Railroad’s Old Orchard Beach seaside branch). Elaine served the Town of Kittery as recorder for the Planning Board and the Town Council. She was chairperson of the Kittery Bicentennial Committee and with Arthur delivered Meals on Wheels for many years. Elaine especially enjoyed being a Justice of the Peace (19781994) and performed over 100 wedding ceremonies at many locations, including one on top of the submarine USS Portsmouth at the Portsmouth Naval Shipyard. She was a member of the local Republican Committee, Kittery delegate to the ME State Republican Caucus and served for many years as a voting THANK YOU ST. teller. Elaine’s faith was most important to her and she was very active over the years in nearly all of the groups and committees at St. Mark’s UMC, especially the history committee. Elaine was appointed to the Governor’s Maine State Museum Commission serving 12 years. She was a founding trustee of the Kittery Naval and Historical Museum and served on its board as well as being a member of the Kittery Cemetery Committee and the Maine Old Cemetery Association. She was a longtime member of the Old York Chapter of DAR serving in numerous capacities and was given the Women in History award in 2015. Music was a very important part of Elaine’s life as a pianist, cellist in her earlier years and singing in church choirs. A group very important to her consisted of about 12 friends from the Medford church who called themselves the Roundabouts and who continued to meet together until just a few years ago. She is survived by her children Donna (Ken), Craig (Shirley), Marcia, Robert (Jennifer), 5 grandchildren and 5 great grandchildren. She was predeceased by her parents, husband, sister and brother-in-law, son-in-law and grandson. Visiting hours will be 2-4 p.m. Friday, December 7 at the J.S. Pelkey Funeral Home in Kittery. A private family burial will be held Saturday, December 8, and a celebration of life service will take place Sunday, December 9 at 2 p.m. at St. Mark’s United Methodist Church, 60 Government Street, Kittery, with a reception following at the church. School in 1964 before marrying Robert N. Winn in July of 1966. She was a stay at home mom for the first years of their 3 daughters’ lives before going to work for the 1st National Bank in town. She made banking her life-long career, following the company thru many mergers; retiring from Bank of America. Fay will always be remembered for her thoughtfulness through the many things she did for others, including knitting afghans, hats and mittens to all of her family and friends as well as making sure everyone in her calendar of events received a greeting card for their special day. She and Bob enjoyed their camp in Milo on Boyd Lake; snowmobiling and watching the birds she so loved. She and her mother were fortunate enough to share a large garden together for many years. As the grandchildren came along, she made a special day for them to make Christmas cookies together, no matter how much mess they made, “Mame” loved every minute of it. Fay never missed an opportunity to go out to eat with friends and family and especially enjoyed her trips to Oakfield to visit her dear friends. Fay was also dedicated to supporting the Suicide Prevention, Out of the Darkness walks each year. Her humor, her caring soul and loving kindness will forever be missed by all those she touched.

She imagined this house was much larger than hers and it was filled with not only the family but also an army of housekeepers and butlers to make the people of the house forever comfortable. A small woman wearing a black and white maid’s uniform was standing on a chair so as to be able to reach the top of the gallon jar that was laid on a large granite counter top. She stirred in every kind of fruit and nut available. She smiled as she stirred the magic liquid hoping this particular bash would make enough cakes to allow her and her colleagues the tiniest of taste. On and on my mind feverously worked up these images as I watched the starter cake begin to effervesce and let go of tiny bubbles that formed a kind of protective skin on top of the golden liquid. My minds eye then decided to go away from where the starter cake came from and dive into the future to where the starter cake was destined to go. I now watched a young lady in a clean, austere, and basically modern kitchen churning the yellow liquid so that it could take in the oranges, cranberries, and walnuts she traditionally stirred into the starter cake. She had two young children playing at her feet one holding onto a bright

Focusing on this young woman’s face it appeared to be a combination of my wife and me. She turned the yellow liquid over and over until it combined with the dried packages of fruit that were supposed to be made especially for the most modern of Christmas cakes. As she was stirring you could see her whole body get into the creation of what she knew would be a very special part of her Christmas. As she looked down at her children at play she started to imagine how

her daughter and maybe even her son would produce their own Christmas cake from the magical yellow starter fluid. Before my mind was able to go ahead future generations and imagine a kitchen filled with things I don’t have the capacity to envision I smiled knowing the leftovers of this Christmas cake was destined to brighten the holidays of many generations to come. Tulip Planting at Wells Elementary School Reaches 15th Year

WebMD notes that sodium intake should be limited to 2,300 milligrams or less per day. Certain people, such as those over the age of 51, African Americans or those with certain conditions, such as hypertension and diabetes, should consume no more than 1,500 milligrams of sodium per day. WELLS On November 18, shortly before snow and colder temperatures arrived, kindergarten students at Wells Elementary School emerged from their classrooms to plant tulip and daffodil bulbs in the school’s courtyard area. Over the years, this brief introduction to gardening for the school’s youngest has become a late fall tradition. As in previous years, the bulbs were purchased by the PTSA and the planting was planned and organized by Community Resource Coordinator Maryanne Foley. According to Foley, about 120 holes for the bulbs were pre-dug by school volunteers Allyson Barry, Casey Welch, and Lindsey Jenkins. Since the fall of 2003, kindergarteners have been burying tulips in anticipation of seeing

“their own” bulb – each child gets one to plant – bloom and add to the color of springtime around the school. Over the past 15 years, this age group has also planted alliums, crocus and hyacinth in varying locations on school grounds. Ryan House Project Building Toward Success NORTH BERWICK About 75 people attended the recent dedication of the Ryan Home Project on November 2. The fund raising crew helped set up the house and are now working on finalizing grant writing to bring in extra funds to support the programming and fully establish the Ryan Home Project.

Additionally, the 501(c)3 came in and they are finally official! This past week informational meetings were held for folks interested in becoming Host Families and it was also announced they were going to be the beneficiary of a New Year’s Eve gala fundraiser at the Hall at Great Falls.
