ClassiC Pinball Game Gets a FaCeliFt

You can say a lot has changed in technology over the years. In fact it feels like new frontiers are being discovered every day.

Artificial Intelligence, once considered just a science fiction fantasy, is now becoming a real part of day to day living.

But it was forty-two years ago when the very first female voice came alive from the speaker of a new pinball game in 1980 and it took the arcade world by storm.

Called Xenon, it was, in fact, the very first talking pinball game created by Bally Manufacturing Corp., arguably the most popular pinball game designer of that era.

Though Bally no longer makes pinball machines, the enticing voice of Xenon can still be heard echoing through the American Clas-

sic Arcade Museum at Funspot, the largest arcade in the world, in Weirs, New Hampshire.

The Xenon pinball game at Funspot has aged over the years, mostly because its popularity has seen thousands of players over the decades drop in a few game tokens, listen to Xenon speak, and then attempt a high score.

One of Funspot’s game techs, Ryan Fields has been one of those tasked with giving Xenon a much needed facelift and to give the popular game a new life for a new generation to enjoy.

Funspot purchased the Xenon game new in 1980, said Gary Vincent who is the founder of the American Classic Arcade Museum.

“Any sort of game with speech abilities in that time frame was very expensive be-

John Adams, the nation’s first vice-president, said of the office: “I am vice president. In this I am nothing but I may be everything” and it is “the most insignificant office that ever the invention of man contrived or his imagination conceived.”

Our nation’s second Vice President, Thomas Jefferson said “The second office of this government is honorable and easy; the first but a splendid misery.”

John Nance Garner, Franklin Roosevelt’s first Vice President said that being Vice President “was the worse thing that ever happened to me.’

In 1848, New Hampshire’s Daniel Webster was offered the nomination for Vice President by the Whig party. He replied, “I do not propose to be buried until I am dead.”

I think that the most profound and humorous comment about the office belongs to Thomas Marshall, who served as Vice President under Woodrow Wilson. He said that being Vice President is comparable to “a man

in a cataleptic fit; he cannot speak; he cannot move; he suffers no pain; he is perfectly conscious of all that goes on but has no part in it.”

BIRDS For

It is not uncommon for birders at designated hawk watch sites to see more than 1,000 hawks in a single day. The fall hawk migration is most certainly a sight to see, particularly if the conditions are right.

With the sheer number of hawks and other birds of prey that migrate south through New England in the fall, it is tough to imagine that any of them remain in our region once the migration is over. But, of course, we do see a fair amount of hawks throughout the winter months in New England.

Red-tailed hawks, red-shouldered hawks and our accipiters, sharp-shinned and Cooper’s hawks, are the most common hawks we see in New England during the winter. Other birds of prey that we continue to see in our coldest months are the peregrine falcon, vultures and, of course, bald eagles, which congregate in large numbers where water remains unfrozen.

So why do most hawks fly south for the winter and some remain with us? It is the same reasons that other birds migrate to warmer climates and others stay here. Some birds have adapted to

the colder weather and survive just fine while others need the warmer temperatures and the additional food sources that come with it.

For hawks, like any bird, it is a risk-reward scenario. Food may be more scarce and harder to come by in the winter in New England, but for some birds that outweighs the risks that come with a dangerous and long migration flight. For other birds, the long migration flight offers more reward than the risk of staying north and risking

freezing or starving to death.

That is why Cooper’s and sharp-shinned hawks are more frequently seen at our feeders in the fall and winter: easy prey. I was working from my home office the other day, when a large bird flew past my window and landed on a fence post in my direct line of sight. It was a young Cooper’s hawk and its hasty and clumsy approach sent all of the songbirds scattering. The young bird remained perched on the post for a few minutes

Movie Fellowship Night At Community Church Of Alton

Om Friday, January 27th, the Community Church Of Alton invites everyone to a Church Movie Fellowship Night at the church at 20 Church Street in Alton, New Hampshire. The movie is “Greater” the true inspirational story starring Christopher Severio as American football player Brandon Burlsworth. Burlsworth is perhaps the greatest walk-on in the history of college football. Brandon had always dreamed of playing for the Arkansas Razorbacks, but was considered too short and too fat to play Division I. Undeterred, Brandon took a big risk and walked on in 1994. Written off by fellow teammates and coaches, Brandon displayed dogged determination in the face of staggering odds. It is a story of football and faith.

The night starts at 6:30 with some fellowship and a meal of homemade chilis and soups. There is no admission for the movie or the meal.

For more information you can contact the Community Church Of Alton at 603 8755561.

Community Discussion On Ukraine In Meredith

On Saturday, January 28, Altrusa of Meredith is hosting a guest speaker, Christina Vogel, to lead a community discussion on Ukraine at the Meredith Community Center—Ukraine Yesterday, Today & Tomorrow. The event is free to the public and light refreshments will be served. A snow date is set for Sunday, January 29 at 2 pm.

Altrusans, dedicated to literacy, community service and scholarship, continue to watch with disbelief as millions are displaced within Ukraine. When researching how we could help support their education system, the names Doug and Christina Vogel were consistently linked to efforts involved with immediate and future program planning assistance for Ukrainian families. With the Vogels’ guidance, we hope to be able to assist with literacy in Ukraine (books or magazines for children) or perhaps refugee resettlement programs here in New Hampshire. In the meantime, we felt that bringing the Lakes Region community together to learn more about Ukraine would be a thoughtful way to connect as neighbors and friends.

Christina Pasicznyk Vogel will share historical information and her firsthand experiences and observations as related to the current Russian invasion and war in Ukraine. Ms. Vogel, a firstgeneration American of Ukrainian descent, has participated in humanitarian aid missions to Ukraine along with her husband Doug, including a visit to L’viv, Ukraine in August 2022. She served as a Ukraine election observer volunteer in April 2019, when President Volodymyr Zelenskyy won the presidency. Ms. Vogel is a member of the U.S. Holodomor Committee for Genocide Awareness, Washington, D.C. and since February 2022, she has been interviewed multiple times by WMUR as a representative of the Ukrainian community in New Hampshire through Protection of the Blessed Virgin Mary Ukrainian Catholic Church in Manchester, NH. Ms. Vogel’s presentation will focus on Ukraine’s history, the historical dynamics of current events and implications for the future, including suggestions for how individuals can make a meaningful positive impact today. If you have been following the news you may have read that our president has been pushing the idea that all gas stoves should be eliminated over time.

He was basing it on a recent (aren’t they all) study by some group somewhere (I could look it up, but who has the time) which claims that gas stoves are a leading cause of illness in homes. They also claim that living in a house with a gas stove can cause cognitive decline in some folks.

I don’t have a gas stove, so I can’t comment on how accurate either of these statements are, but as I thought about them causing cognitive issues and then realizing that they use gas stoves at the White House, then they might be on to something.

(Of course, I have no idea if they actually do use gas stoves at the White House, but seeing that this is a newspaper, and I am writing this and it will be printed, then it must be true.)

Gas stoves aside, I do know a bit about appliances and other things that we have in our homes, since we have some of them ourselves, and I must question whether they should also be scrutinized as to whether or not they could cause potential harm.

In fact, some are being investigated by some government agencies as we speak.

Here are a few.

FRONT DOORS – It has been shown that in one hundred percent of home invasions that the invader enters through the front door eighty-five percent of the time (they don’t explain what happens in the other fifteen percent). Experts agree that eliminating front doors can cut down on crime in the home by

seventy-two percent. It has also been proven that without front doors unexpected guests arriving while you are in the middle of a really good movie can be eliminated almost entirely.

REFRIGERATORS - Studies show that just about all refrigerators are proven to be health hazards. Often when opening one up, one is faced with a selection of foods, some of which, if used correctly can actually enhance health, while others, if used correctly can diminish health. Yes, vegetables and fruits are often found inside, but upon closer inspection many pies and cakes can often lurk within. The freezer section, especially small, tight ones, can be extremely dangerous as often upon opening, large containers of frozen ice cream can come loose and fall upon the unsuspecting heads of those opening the door. (It is interesting to note that damages often caused by loose frozen ice cream containers can be alleviated by placing ice, also found in the freezer, on the injured areas while eating ice cream from the container that caused the injury.) Another interesting concern for refrigerators is in those owned by single men. The once healthy food items within single men’s refrigerators can often be found to now be a detriment to health after having lived untouched for months or even years.

VACUUM CLEANERS – After years, the ASPCA has finally gotten the government to do something about vacuums after receiving various reports filed by hundreds of dogs and cats throughout the country about possible abuse from vacuum cleaner noise.

DISHWASHERS – For years homeowners have been under the false assumption that their dishwasher was one of the safest appliances in the home, but

a recent study by an engineering expert from Princeton University has proven otherwise after he bent over to remove a clean plate from the bottom rack in his home dishwasher and pulled a muscle in his back. After reading his report, The Consumer Product Safety Commission is now considering ordering makers of dishwashers to removes all bottom shelves in any machine made after 2023.

REMOTE CONTROLS – The remote control has come under a lot of scrutiny in recent years as it has had an effect on the mental health of some. In a now famous incident in Missouri, a local homeowner went to change the channel from a movie to a sporting event only to realize he could not find the remote. He searched frantically for minutes and then realizing that there was no way he could switch off the Hallmark movie to the football playoff game, he went into a rage breaking everything in his path. He was finally subdued when he grabbed at the freezer door on the refrigerator and was knocked out by a gallon of Breyers Mint Chocolate Chip Ice Cream. Things did end peacefully as the homeowner’s wife soothed his head with some ice and a big bowl of the Breyers while he watched, and actually cried at, the ending of the Hallmark movie (which they still watched even though some friends stopped by unexpectedly). The remote was finally found pushed behind the dishwasher, which they realized had been stolen by the family Golden Retriever and placed there in retaliation of their running the vacuum cleaner once too many times that week.

There are others household dangers like toasters, electric toothbrushes, microwaves, but we don’t have the space this week.

I’ll keep you updated and stay safe in there.

mCCarthy indeed a rePUbliCan leader For ComPlex times

Amid the post-mortems of the four-day, 15-vote marathon to elect Kevin McCarthy House speaker, I remind readers of the headline of my Nov. 30 column, “Kevin McCarthy, a Republican Leader for Complex Times.”

I thought then that that captured our reality, and I think the process that followed confirmed it.

oUr blUnderinG, intrUsiVe GoVernment

It is human nature to want things neat and clear. But life never cooperates.

Which is why freedom is so important. And why we need a speaker who can keep focus and move the ship forward despite heavy gale winds blowing in many different directions.

McCarthy emerges from the ordeal with plenty of criticism.

And the House Freedom Caucus cabal, some 20 strong, that held McCarthy along with 201 of their Republican colleagues captive also emerges with plenty of criticism.

McCarthy is accused of conceding too much because, per his critics, it’s all about personal ambition.

Regarding the obstructionists, they’re accused of exploiting unique circumstances to gain personal power and attention.

In my column, I noted that polling shows that indeed Democrats are more unified than Republicans.

But I don’t see Democrat woke uniformity as any strength. Democrats’ cookie-cutter mentality regarding human reality is why they love big government so much.

But freedom is so important because there is no cookie cutter for human reality.

In November 2016, newly elected Vice President Mike Pence attended a showing in New York of the hit play “Hamilton.”

When he entered the theater with his daughters, finding their way to their seats, they were met with boos.

At the end of the play, a spokesman for the cast directed critical remarks toward Pence.

When asked about the incident, Pence said he was not offended. He said, “I nudged my kids and reminded them, that’s what freedom sounds like.”

In May 1856, as Congress debated the future of slavery in America, South Carolina Rep. Preston Brooks entered the Senate Chamber and accosted abolitionist Sen. Charles Sumner with his cane, beating him until he was unconscious.

So regarding chaos and absence of civility, the U.S. Congress has seen days much

Our government seeks more and more control. Our government is not competent. These two statements are both true, and together amount to a nightmare for institutional credibility. A government that seeks more control must at the very least demonstrate credibility in implementing its goals; a government that is incompetent can only regain legitimacy by limiting its authority. And yet we have a government that presents the worst of both worlds: incapacity to perform its most basic functions, combined with an ever-expanding encroachment into daily life.

our southern border, railroad strikes barely averted by congressional force or the inability to recruit members of our military, our government seems to be failing repeatedly at issues that implicate core competency.

Thus, this week, the Federal Aviation Administration was forced to ground virtually all flights in the United States after an outage in the so-called Notice to Air Missions systems, designed to warn pilots of weather problems, runway issues or other obstacles. The NOTAM system relies on a reportedly outmoded computer system that has not been updated for years. Transportation Secretary Pete Buttigieg, who is most famous for taking a two-month paternity leave and then bragging about it repeatedly on national television, helpfully commented, “There was a systems issue overnight that led to a ground stop because of the way safety information was moving through the system.” He then reported this problem to President Joe Biden, who helpfully commented that Buttigieg ought to “restore the system quickly and safely, and to determine causes.”

Job well done, gentlemen.

The air traffic control nightmare is but the latest example of a government well over its skis. Whether we are talking about the nation’s scattershot but brutal COVID-19 lockdown and mandate policies, its utter incapacity to handle a historically unprecedented flood of illegal immigration across

And yet at the same time our government proves itself shockingly unable to perform its most basic functions, it continues to expand its ambitions. Thus, this week, we found out that the Consumer Product Safety Commission may consider banning gas stoves in the home, supposedly thanks to the risk of childhood asthma caused. There are approximately 40 million households in the United States currently using gas stoves.

When governments promise much but deliver little -- and when they seek to control much, but only succeed in controlling the most minute and irritating aspects of daily life -- they lose their legitimacy. And that is precisely what has been occurring over the course of the last century in the United States. The growth of the regulatory state means that government now reaches into the nooks and crannies of the lives of its citizens -- and yet government cannot actually do the most basic things required of it. The response of citizens, unsurprisingly, is distrust in government itself.

But that distrust does not manifest, unfortunately, in widespread calls by citizens to restrict the size, scope and intrusion of government. Instead, it manifests as a cry to “elect the right people.” This is a category error. The problem with our government is not one of staffing, but one of incentives -- and all the incentives are on the side of inefficiency, blundering and encroachment. That is not likely to stop until the American people recognize that they can have competent government or intensely involved government, but not both. In a representative republic, the problems of government are, in the end, the problems of the people who vote for them.

It’s now been three years since COVID hit.

At the start of the pandemic, “experts” shouted: “Stay home!” “Close schools!” “Wash your hands!” “Disinfect countertops!”

Clearly, disinfecting countertops and washing hands made no difference. What about closing schools and lockdowns?

The media trashed Gov. Ron DeSantis when he lifted Florida’s lockdown. “Acting irresponsibly!”

CoVid: who was riGht?

roared MSNBC’s Dr. Vin Gupta. Reporters praised New York Gov. Andrew Cuomo’s lockdowns.

On CNN, Andrew’s brother Chris gushed, “I am wowed by what you did!” By contrast, he said, Florida was “in such dire straits.”

But actually, adjusted for population, Florida and New York had about the same number of deaths. Given that Florida has more old people, Florida did better than New York. Much of the media just reports what it wants to believe.

My new video this week covers which states and countries handled COVID well and which didn’t. For the most part, there are

few dramatic differences between states that opened up and those that didn’t. The two states in the continental U.S. with the fewest deaths: Vermont and Utah -- a red state and a blue state.

The leftist media also got a lot wrong covering the rest of the world.

When Swedish health officials let the virus spread to try to reach herd immunity (and allow younger people to live normal lives), the media’s “experts” were horrified.

Time: “A Disaster!” NBC: “Sweden’s failed experiment.”

But it wasn’t a failed experiment. COVID deaths did surge at first,

but data from the Organization for Economic Co-operation and Development show that Sweden has done better than most European countries.

The OECD ranks countries by comparing “excess deaths,” deaths above the pre-COVID average. That’s a better way to compare because some countries undercount COVID.

India reported fewer than a million COVID deaths, but the World Health Organization says the real number is probably much higher, because there were 5 million excess deaths in India over the past three

JaPan’s deFense reawakeninG

There’s a significant sea change affecting Japanese defense policy. Some would say it’s the result of a political Tsunami. Others would argue it’s a long overdue wake up call.

After years of scrupulously keeping within the limits of its post-war Constitution, and maintaining selfimposed spending norms of keeping military spending at 1 percent of GDP, the Tokyo government has green lighted a doubling of defense spending and taken a more assertive political stance on the global stage.

The doubling of defense spend-

ing; from one to two percent within five years, may not sound like much but before anyone smirks, the increase makes Japan’s military budget the world’s third largest, only behind the United States and communist China!

Talismans for change in Tokyo’s policies include the enduring missile threat from nearby North Korea and China’s widening military shadow over Taiwan and the South China Sea. Russia’s war against Ukraine, refocused the threat from policy hypotheticals to a clear and present danger facing Japan itself.

A new National Security Strategy has emerged. Japanese Prime Minister Kishida visited Washington and met with President Joe Biden in what’s described as “a historic moment for our Alliance, the Indo-

Pacific, and the world.” A Joint Statement affirmed, “Our security Alliance has never been stronger.”

Significantly the Statement asserts, “ the importance of maintaining peace and stability across the Taiwan Strait as an indispensable element of security and prosperity in the international community. We encourage the peaceful resolution of cross-Strait issues.”

It added, “President Biden commended Japan’s bold leadership in fundamentally reinforcing its defense capabilities and strengthening diplomatic efforts.”

Japan’s emboldened stance at the United Nations, as a nonpermanent member of the Security Council, and its unequivocal statements on North Korea are a clear example.

For a generation policy analysts decried Japan as an economic giant with feet of clay. Others viewed a prosperous Japan as getting the proverbial “free ride” from the United States through the Mutual Defense Treaty, where American military forces defended Japan while the Japanese factories turned out improved products often devastating U.S. companies.

Even back in the 1980’s I recall the focus of U.S./Japan relations reflected on trade deficits and how to convince the Japanese to assume a greater share of their own defense responsibilities.

First, a bit of history. Following the defeat of militarist Japan in 1945 at the end of WWII, the United States led occupation un -

Letters From God

This series of Letters From God is an attempt to put the thoughts of God as revealed in the Scriptures as they relate to individuals and the nation of the USA.

Letters From God

QUESTION: Why Can’t People Recognize The Deceptions Made By Their Leaders?

In my last letter I reminded you that before my Son Jesus, your Savior, returns to the earth to consummate human history, a world political leader called the Antichrist will appear.

As I mentioned he will be marked by a number of godless characteristics.

We have already examined the fact that he will be lawless. He will reject my laws and form his own, which will include breaking the laws he has pledged to uphold and defend. I also reminded you that until the time of his appearance, there will be a “spirit” of lawlessness. This “spirit” includes the collective values of the Antichrist which will be present in many leaders before the final lawless one is revealed (2 Thessalonians 2:3,7). This “spirit” of the Antichrist is alive and well and becoming prominent in your country and in the world. It is being manifested in many dramatic ways. You have brought into leadership many who either actively or passively have forsaken me and my word. Your country was built and established primarily by men and women who bowed before me

and were devoted to my word and will. They sought to create standards and laws that were based on my desires and commands.

Over time however, because you have forsaken me, you have grown a corps of leaders who follow and espouse the beliefs of the Devil. These are the same beliefs that the Antichrist, when he is revealed, will exhibit and promote.

A second major characteristic of both the actual Antichrist as well as the “spirit” of the Antichrist is that deceptions and lies will be commonplace. You will be deceived with brazen lies and deception.

Let me share a portion of my letter recorded by my servant Paul, to a congregation of believers in the town named Thessalonica. I specifically spoke about this problem as well as why people will be deceived and follow the lies. It will also answer your question of why people can’t recognize the deceptions made by their leaders.

I said, “The coming of the lawless one will be in accordance with the work of Satan displayed in all kinds of counterfeit miracles, signs and wonders, and in every sort of evil that deceives those who are perishing…” (2 Thessalonians 2:9-10a).

Notice the phrase, “every sort of evil that deceives those who are perishing.” It will be the modus operandi of the Antichrist and is the “spirit” prevalent today. Have your eyes been opened to the newly re-

vealed facts, that for the past years your current political leaders have concealed efforts to collude with many of the most powerful government agencies, created to expose deceptions intended to harm you, in order to conceal deceptions intended to harm you? This involves serious revelations of corruption, compromise and collusion with federal protection agencies like the FBI and CIA, major social media sites like Twitter and Facebook as well as hostile foreign countries. As a result of factual revelations, these “hidden” alliances have now been proven to have radically influenced election results through disinformation and censorship, illegally removing your constitutional right to free speech and branding any oppositional challengers of these deceptions as “terrorists” and anti-democracy.

Sadly, most can’t see the efforts to deceive, despite the dire destructive consequences to your freedom and genuine democracy “of the people, by the people and for the people.” It is stunning that you have become so tolerant of a political ideology that is destroying the very foundations, which for so long have elevated you to unequalled prominence and prosperity. At the same time, you are suffering terrible economic, social, spiritual and national decay, and decline.

But now, let me answer your question of why you have tolerated this deception, that will destroy you. Listen to the rest of my words

through Paul to the Thessalonians. “… They perish because they refused to love the truth and so be saved. For this reason, God sends them a powerful delusion so that they will believe the lie and so that all will be condemned who have not believed the truth but have delighted in wickedness. (2 Thessalonians 2:10b-12).

For many, you have walked away from me, God, and the truth of my word. You have not been delighting in truth but what is false and contrary to my will. You have even rejected my Son, Jesus, and his provision to save you from the penalty of your sins and restore you to me, your Creator and Father. If you had honored me and my word you would have immediately detected the deception and moved to remove it. Because you stand for nothing you are falling for anything.

Your only hope is to turn back to me, to my word and my standards for right living. Then you will have my wisdom and eyes to see the deceptions and move to change them, replacing leaders with others who will “put off falsehood and speak truthfully to his neighbor.”

(Ephesians 4:25)

I love you enough to speak the truth to you, God

The following article is not meant to diagnose or treat any particular medical condition. Always consult your physician before engaging in a new lifestyle change, especially if you have a pre-existing condition. Seek further guidance to safely perform such practices.

As a doctor, I love seeing the patients that have the desire to take their health to the next level. I call it fully optimizing their health. I also love patients that are burnt out on taking supplements, botanicals, and having to follow unsustainable diets. As a naturopathic doctor licensed in the state of New Hampshire, treatment plans often do not include more supplements and medications. While supplements are certainly necessary to elicit a therapeutic effect, they are not necessarily meant for the long term in all cases, and they are costly. The following suggestions do not really cost anything more (and actually may save you money), other than an optional at-home initial investment.

What can be difficult from a doctor’s perspective is when a patient says, “I tried that. It doesn’t work”. Especially from a “natural” approach to healing, in which treating the root cause of illness is desired, chronic disease takes a long time

reverse, and CONSISTENCY is key. One may notice over time the wonderful benefits of implementing some life-changing practices. To be consistent, one must engage in these practices several times per week.

Another side note to the following practices is to keep in mind that the following health habits are not going to be comfortable initially, and that is okay! What these particular practices are doing is creating “unfavorable” cellular environments.

As you start to carry out these health habits, keep in mind that in creating such stressful cellular environments, you are essentially activating self-preservation mechanisms – in the form of inherent stem cells, growth factors, hormones, proteins, and much more – all with tremendous health benefits to promote longevity.

1) FASTING - Did I mention you may save money? In fact, it’s free, and one of the most beneficial things you can do for your health. Here is where patients may say “So you want me to starve? How is that good?” Please do not confuse “fasting” with “starving”. They are vastly different, with the operative word being… control. Starving is the involuntary act of not receiving nourishment. Fasting is the voluntary practice of not consuming food for spiritual

and physical benefits. While one can write an entire book on fasting alone, just a few of the benefits of fasting will be highlighted.

Since the modernization of food and its availability to humanity at any given moment, chronic disease has sky rocketed with increases in obesity, cardiovascular disease, stroke, Alzheimer’s, chronic pain, and diabetes to name a few. It is no coincidence that the over consumption of food is implicated in such diseases. Chronically elevated levels of insulin and blood sugar due to constant eating and snacking has put health at risk.

On the contrary, our bodies are made to go long periods without food and even perform better with higher functioning brain power, thanks to the body’s conversion to fat as a fuel source, rather than glucose.

In a fasting state the following occur:

- Decrease in insulin – leads to decrease in cardiovascular disease, blood pressure, hyperlipidemia, and Alzheimer’s.

- ncrease in adrenaline – leads to increase in metabolism, and energy.

- Increase in HGH –leads to the promotion of lean muscle mass, athletic recovery, and tissue healing.

- Autophagy activation – “Cellular cleaning” in ridding of old cells to be replaced with new cells, decrease in-

flammation.

Happy New Year! Happy New Year! & Healthy & Healthy

- Digestive system recovery and rest –Decreases gut inflammation, tightens “leaky gut”, improved nutrient absorption.

- Enhanced brain function – Increases in the preferred brain fuel source – ketones, which enhance brain function.

These benefits are just a few of the “super powers” that can be attained with fasting. To gain the benefits of fasting, the body will benefit from just one fast. However, consistent fasting on a regular basis will promote a cumulative effect on the body. Fasts can be performed daily for 16 hours, weekly for 24 hours, monthly for 4 days, every other month for 8-9 days, or a time frame combination.

2) SAUNA - Upon initial thought, most love the idea of a nice hot sauna session on the regular. The trick is to stay in long enough to feel uncomfortable. Sauna sessions create that “unfavorable” environment after prolonged exposure to heat and is a positive stressor on the system. It should be noted that one should not stay in a sauna to the point of feeling faint. Merely stay in long enough that there is significant perspiration build-up on the skin.

There are several benefits to sauna therapy. One being de -

“Motion is lotion for the brain” is a phrase I once heard a doctor say at a neurology seminar and it has since stuck with me. It reminds me of the care we use when we apply lotion to our skin and the protective benefits of keeping the tissues soft and supple so new cells can be made and the signs of aging and roughness can be reduced. The benefits of physical activity on brain health are substantial and similar to this mental image in many ways. And, the best part is, much like applying lotion to the skin, you don’t have to be an expert to know how to do it, you just need to be consistent to see the health benefits. Daily movement such as taking walks, mopping or vacuuming your floors, shoveling snow, taking the stairs instead of an elevator, and especially performing cardiotype exercises, such as brisk walking, jump roping, running, and swimming, all count as motions capable of transforming your brain into a healthier,

more well-oiled, or in this example “well-lotioned,” machine. Although it is fairly common knowledge that physical activity can reduce your risk of developing heart disease, stroke, and diabetes, as well as helping to lower blood pressure and weight, most individuals do not realize that by continuing to move, one can also improve memory, cognition, brain fog, mood, energy levels, anxiety, and even depression!

So, what happens to your brain when you exercise to give you these effects? With aerobic type activity, the heart rate in the body increases, causing more blood to course throughout not just muscles, tissues, and various organs of the body, but also to the brain. This flow of blood is important as it is responsible for carrying not just oxygen, but also vital nutrients necessary for promoting neurogenesis, or the birth of new brain cells, which is essential for brain function and healing. This circulation also assists in reducing inflammation that may be in the brain due to exposure to toxins in the environment, an individual’s diet, or even from a recent trauma such as a concussion or mild traumatic brain injury (mTBI). Regular exercise can also protect your brain from premature aging and neurodegenera -

tive diseases. Longitudinal studies done on humans have demonstrated that regular exercise can increase the size of the hippocampus and prefrontal cortex, areas which are important for memory and attention, and also which are both susceptible to decay from conditions like dementia and Alzheimer’s disease. Studies have also shown that every time you move your body, a number of beneficial substances called neurotransmitters (namely dopamine, norepinephrine, serotonin, and acetylcholine) responsible for decreasing feelings of anxiety and depression, are released. Lastly, exercise can even improve the health and function of the synapses between neurons allowing for better transmission and communication of these important cells so that our bodies can have better coordination and reaction times.

At this point, you may be asking yourself just how much exercise is enough to receive all these incredible health benefits? Research shows that most adults should get at least 30 minutes a day of moderate intensity physical activity, 5 days a week or 150 minutes weekly, in order to experience a positive impact on brain function. Keeping in mind that this also includes daily activities such as walking, cleaning, and

opting for the stairs instead of taking the elevator might help to make this goal more attainable. If this still sounds daunting, working your way up to this by doing even 10-minute increments, is still beneficial. And typically, when we start exercising and feeling better, we will naturally increase our

activity levels without even realizing it. So, ask yourself, when will you start applying the “lotion of motion” to your brain to begin reaping these amazing health benefits and rewards? Don’t we all owe this to ourselves!?

11 — THE WEIRS TIMES, Thursday, January 19, 2023—

The drama and trauma surrounding Buffalo Bill Damar Hamlin’s recent heart-stopping and game-stopping medical emergency has reignited debate about American football. And our gridiron sport has always had many detractors.

“It’s too violent.”

“It’s too expensive.”

“It’s too male.”

“And it’s a silly game anyway.”

So let’s take up the

is Football really silly?

view video replays and challenges etc.

So did anyone who watched the recent World Cup soccer tournament notice that the matches had only one official? ONE! And these brave soccer refs generally seemed to do great jobs, especially with the world’s best athletes constantly falling down and pretending to be hurt.

So yes, detractors, your points are welltaken. Football is arguably silly. But did you notice that NFL games are the highest-rated and most watched “shows” on television? What’s up with that?

“silly” issue.

Detractors compare it to soccer and basketball and claim football is also “too specialized.” And they have a point. Whereas every basketball player and every soccer player handles the ball during a game, most football players do not. Barring a turnover, defensive players seldom touch the ball. Offensive linemen (besides the center) never touch the ball. Only the so-called skilled players touch the ball. Even then, there are times when a wide receiver can play a whole game and never touch the ball.

So football is certainly specialized. Punters only punt. Kickers only kick. Long-snappers only long-snap. And so it goes. It is what it is.

Detractors also claim that there’s too little action in a game. And they have a point. An NBA game has 48 minutes of action, with the

ball in play throughout. A soccer game has 90 minutes of action, with the ball in play throughout. An NFL game has only 12 minutes of action.

What? Isn’t an NFL games 60 minutes long?

Technically yes. But most of the game involves the clock ticking down while players slowly get up after a play. Walk to a huddle. Huddle. Walk to the scrimmage line. Take position. Listen to a quarterback bark signals. Then there is a snap and a handoff to a running back who’s usually quickly tackled. Five seconds of action. Then the players get up and do it all over again while the 40-second play clock runs down again.

Detractors also claim that football is overregulated. An NFL game has seven officials or referees. SEVEN! Plus other officials who re-

I know I’ll be watching the silly NFL playoffs this weekend, along with countless other millions. Detractors, of course, don’t have to watch. But I have a feeling that many detractors will be watching—even if they think it’s all silly.

Because they bet money on the outcomes!

Happy 60th Birthday King Pine!

According to “A History of King Pine Ski Area” by Tom Eastman, a sweet little 11 page history book available at guest services, opening day was on Saturday December 29, 1962. On that day a new double chair carried skiers to three new trails cut through the pines on the hillside.

King Pine in Madison, NH is located south of Conway and north of Freedom right on NH Route 153.

The ski area was founded by the late Milt Hoyt. Hoyt expanded the family resort big time into the ski business. The Hoyt family also owns the adjacent Purity Springs Resort. His children and grandchildren have continued the legacy of their family-owned and operated Purity Springs Resort and the King Pine Ski Area. Truly a fine place for families and people of all ages to have great fun.

Since that day the small ski area has developed to offer everything that the big resorts have to offer except one thing. The ski area isn’t too tall, it is just right, with 350 vertical feet from top to bottom. Skiing with snowmaking, night skiing, snowtubing, ski school, ski club, snowshoeing,

Happy 60th Birthday King Pine! A skier on the ski area’s namesake trail, King Pine Trail. Sixty years ago the ski area started with a double chair and three trails. Today it boasts 17 trails and six lifts--including three triplechairlifts. King Pine has terrain for all ages and abilities. The family-owned and operated traditions continue, King Pine’s general manager Andrew Mahoney is the grandson of the ski area’s founder the late Milt Hoyt. The family friendly resort has night skiing and also snow tubing, ice skating, uphill access and cross-country skiing & snowshoe trails.

ice skating, uphill skiskinning and cross country skiing are all offered at King Pine. I met a friend to ski King Pine and she told me to wear something vintage for the celebration. I pulled out of my closet a long mink coat my mother had given me that she found many years ago in a thrift store. It is warm and I like the movie star-hunter-

trapper look!

I booted up at my car, picked up my lift ticket and met my friend at the lift. It was a nice day to ski, not too cold and the sun poked out now and then. I was impressed with their snowmaking. Nearly 60 percent of the trails were open and covered with snow edge to edge. There was natural snow, everything was pretty

white but not quite enough yet to open all 17 of their trails.

Hopefully soon Mother Nature will help us out!

The lift line was only a minute or two and we skied every trail. All the trails are named after Pines. I recall on a previous visit my husband Charlie loved the gentle Slow Pokey Pine See PATENAUDE on 22

toxification. The body is incredibly efficient at eliminating toxins through the perspiration – both organic and inorganic toxins. Heavy metal buildup and organic solvents found in everyday chemicals impede biological processes and lead to chronic diseases. Regular sauna helps manage everyday

toxin exposure.

A second major benefit of performing regular sauna sessions is the induction of what are called “heat shock proteins”. Heat shock proteins are also known as “molecular chaperones. They monitor the shapes of proteins and destroy misfolded proteins. This sounds like a rather simple process, but the folding of proteins has significant biological consequence.

Heat shock proteins clear misfolded proteins and prevent the aggregation of faulty protein complexes, that lead to serious diseases. Heat shock proteins are the definition of “anti-aging”.

There are a few options for home saunas available. The simplest version is a softshelled infrared sauna. No need for anything expensive or designing an elaborate build. Infrared also has its own health benefits – pain relief, tissue repair, an others. Please be aware of knock off

versions that emit abnormally high EMF’s and do not produce quality infrared heat. Feel free to reach out to my practice on a home

3) Cold Water Therapy - This is a difficult one to convince people to perform regularly. You will just have to believe me that after consistent practice of cold water therapy, it gets easier. At some point, you may even feel guilty for taking a warm shower. Perhaps after understanding the benefits of cold water therapy, one would be more motivated for a 1-3 minute freeze session.

Cold water therapy is becoming more and more studied for it’s beneficial effects – particularly on the immune system. Science is showing that white blood cell (immune cells) production increases. Furthermore, the circulation of these immune cells are also enhanced with exposure to cold, increasing

the “patrolling” of the cells for pathogens.

Other benefits of cold water therapy include: - Mood enhancement through the production of endorphins

-Stress reduction -Improved sleep -Increased libido -Enhanced metabolism and fat burning -Decrease in pain Incorporating cold water into your daily routine is easy enough with simply ending your shower on cold. Eventually, you will just take the entire shower on cold. Again, consistency is best here. Not only for the ongoing health benefits, but for adaptive purposes. Simply, start ending showers with cold. Make it a challenge and see how cold it can get and for longer time frames. Or if a more enhanced effect is desired, get into a cold shower from the start. This admittingly is easier after a sauna session or a workout.

Just know that any bit of cold water is beneficial.

4) Build (and Maintain) Muscle - This may be a little bit of an obvious one, however, it isn’t well known that muscle is the largest endocrine “organ” in/ on the body. Muscle itself produces and secretes what are called “myokines”. These myokines are signaling factors that have very positive effects on organ function and metabolism. Muscle is inherently “Anti-Aging”. What a better way to ensure healthy aging simply by lifting and putting down heavy objects. Not to mention, life is just more enjoyable when one is strong. To quote a famous body builder – “Muscle makes you harder to kill, and generally more useful. Again, the key here is consistency. Muscle needs to be constantly worked. It does not have to be an elaborate workout plan – walk further in the parking lot with groceries; lift the dog food bag several times; till the garden by hand.

5) Grounding/Electron/Photon Therapy

- There are 2 main reasons why we age – Inflammation, and oxidation. That’s it. These are the root causes of aging. Most of us have heard of inflammation. We have also heard of “anti-oxidants”. Antioxidants neutralize or quench free radicals of which are oxidative factors. Oxidation, by definition is the loss of electrons. Anti-oxidants work by donating an electron to the free radical molecule, so that the free-radical does not “steal” an electron from an cell/ tissue/organ. Once again, a simple process,

but an astounding and cumulative effect on the aging process.

There is really nothing we can do about free radical production and their effects on the body. But we can add electrons and photons into the system to otherwise make up for the loss of electrons, and it is so simple. Just walk outside on the ground or beach barefoot! The earth is emitting an endless supply of electrons. This is not “woo-woo” medicine.

Grounding is proven science. There are also grounding sheets to sleep on, and other electron producing devices out there.

Photon therapy is similar to grounding, yet, instead it is the addition of light molecules into the body that have similar regenerative effects for damaged tissue structures.

All of these daily practices will yield a higher quality of life and a longer life. Noticeable changes will be experienced in your health, and without costly supplements, or practitioner visits. Please reach out to my office for further guidance on how to implement these practices.

ments to the judiciary and see what it was that those 1913 men had done to deserve a judge’s position.

In the year 1913, during the first year that he served as Governor of New Hampshire, Samuel D. Felker of Rochester appointed more judges than any chief executive had done before him. There were many vacancies because, according to the Jan,Feb. 1914 issue of The Granite Monthly, “Deaths, resignations, promotions, constitutional requirements and legislative acts, all contributed to the total of places to be filled by His Excellency.”

I suppose that many men and women who chose to be lawyers have in the back of their minds, or maybe at the front, the dream of one day becoming a judge.

In an article on Men and Their Professions in the year 1878, William O. Clough indicated that he could not put lawyers in the same character category as he could teachers and clergy -

men. I suppose that the nature of the profession in itself makes lawyers the objects of controversy, but Clough expressed his opinion that lawyers needed to be “thick skinned “ in the matter of public abuse.

While writing “There is a good deal about the profession that we do not like,” he also wrote “He may be as honest, as conscientious and as pious as any man in the community, and yet there are those who consider and proclaim him a pirate. That he lives and thrives largely by other men’s misfortunes and misunderstandings; that his fees for services rendered are five times what they ought

to be, is true: but that he is worse than the average of his fellow men is not true.”

Clough further declared that the lawyer is not as bad as the average mind pictures him.

Lawyers often become judges so we hope that there were plenty of good, honest ones back in 1878 and 1913 and here and now in 2023, for that reason and many others. Lawyers have been around for a long time, as have judges, and, like others, it is an honorable profession as long as it is held by honorable men and women.

Let us look at the lives of a few of Governor Felker’s appoint -

The Governor’s first appointment was to the superior court, and the new judge was John Kivel of Dover. Kivel was born in Dover in April of 1855 and continued to live there throughout his lifetime. He graduated from Dover High School in 1871, worked in a drug store for a year, went to Dartmouth College as a member of the class of 1876, was a member of Phi Beta Kappa Society, and graduated with high honors. He chose to be a lawyer and his success as such was said to have been immediate and continuous. From 1887 – 1893 he was a county solicitor, from 1903 – 1913 a police commissioner of the city of Dover, and one of the first three men to be appointed to the first state liquor commission.

I don’t know how often it is that being a judge is seen as a family occupation, but that seemed to be the case with the Bingham family.

One of the Governor’s 1913 appointments was Captain Harry Bingham to be

enChilada Casserole

Have you ever had Enchilada Casserole?

The Simple The Simple

No? Then you should try this recipe. Simple to make, really delicious, and easily tailored to your tastes, Enchilada Casserole is layer upon layer of a seasoned burger mixture, salsa, cheese, beans, and tortillas.

Corn tortillas, filled or plain, served with a pepper sauce were a staple of the Aztec diet long before the Spanish set foot upon the shores of modern day central Mexico. This simple yet spicy food was introduced to the Conquistadors in the early 1500’s, first documented by a member of the Cortes party during his exploration through the region. The Aztecs held great feasts for their “guests” and the corn tortilla featured prominently. Some dishes were tortillas wrapped around meat, small fish, or other fillings, while some were just the tortilla. But, no matter how it was served, the accompaniment was a chile sauce, hence the Spanish word Enchilada came to be, meaning “to add chili (chili pepper) to.” (It must be

true, I read it on the internet!)

So, now knowing a bit of history of the Enchilada, where did Enchilada Casserole come from? I really don’t know. Raised in a house whose roots are Scotch English, American Chop Suey was about the extent of my mother’s “ethnic” cuisine; sounding vaguely Asian while it looked Italian. I never even tasted real ethnic cuisine until ¨Chinese Food¨ when I was 11. Up to that point in my sheltered existence I never even knew chickens had fingers!

Fast forward a decade and a half. I had just started my career in institutional food service; a college dining environment. “Dull and bland” were the featured main fare. But, the mid 1990’s

was a time of change. The “old guard” was retiring and students were becoming more

vocal about wanting more; variety, flavor, value, and experience.

In Section Two of the 25th, we read: “Whenever there is a vacancy in the office of the Vice President, the President shall nominate a Vice President who shall take office upon confirmation by a majority vote of both Houses of Congress. Gerald Ford was nominated by Richard Nixon to replace Spiro Agnew who resigned in disgrace. Ford has the distinction to be the only man who served as unelected Vice President and President.

Vice Presidents, while only having two constitutional duties, serve as advisors to the President, travel around the United State and the world on behalf of the president and the United States. Some have served with dignity while other have been unmitigated disasters. Our current Vice President’s job appears to be traveling around the world, and the United States embarrassing and humiliating the people of the United States while promoting division and hatred among its citizens.

before flying off to try its luck somewhere else in the neighborhood.

Winter is a good time to study hawks in New England as they are typically out in the open and exposed. The leaves are long gone and the branches on which the birds perch are bare. It’s also a good time to see the red-tailed hawk’s namesake red tail. The rusty-red feathers must be seen from behind on a perched bird.

It is always interesting to visit places where bald eagles congregate during the winter. Large, flowing rivers like the Connecticut River or the Housatonic River in New England are good

places to see dozens of eagles in one area. There are centers, sites and cruises throughout New England that specialize in winter eagle watching. They are worth checking out if you are a big fan of these magnificent birds of prey.

New Englanders who spend their winters in Florida certainly get to see more birds in the winter than the residents who remain north. There are, however, plenty of birds to see when New England turns gray. It just takes a little more effort to find them.

cause of the fact that the technology wasn’t where it is today,” said Vincent.

According to a Wikipedia post: “The voice for the female robot theme was provided by Suzanne Ciani who also composed the music for the game.”

In the attract mode, which is used to lure players to specific games, the voice will entice players by saying “Try Xeeeeenon.”

Also various “oohs” and “ahhs” can be heard from the voice during different parts of play.

“The Xenon game was operational, but in terrible shape,” said Fields. “Most of the graphics on the playfield were all worn away over the years since it was such a popular game and used so extensively.”

Ryan is new to the art of restoring games. He joins a professional team of other game technicians like Dana Ashton, Sr. who has been with Funspot for ten years and Randy Lawton, one of Funspot’s owners who has been working on games for decades. Ryan refers to himself as a rookie when it comes to the precise skills needed as he has only been doing it for a little under a year. He has been working on Xenon with master game technician Sarah St. John who owns My Arcade Repair in Pelham and also works part time at Funspot, helping repair and restore games.

St. John has an electrical engineering degree and has been working on games for forty plus years.

Ryan has worked at Funspot since he was a teenager and never thought about learning to repair games, but has now found himself learning fast with the Xenon restoration.

With about seventyfive hours of work so

The underside of the old playfield showing the intricate web of wires that had to be carefully transferred to the new playfield.

far put into the Xenon restoration, most of the work involved the playfield itself where most of the wear and tear was obvious. (The playfield is where all the bumpers, lights, flippers, etc., are located. It’s where the pinball travels on its way to scoring points.)

“We got a new playfield that just came as a plank of wood without any of the electronic components,” said Fields. “We ordered whatever else we needed from various reproduction companies to replace just about all of the original parts on the playfield. So now, pretty much everything you see on the playfield is new except for the wiring underneath.”

The new playfield is also clear coated so that it won’t suffer the same wear and tear like the

original.

Most of the labor came from the painstaking and meticulous process of removing the wiring harness from underneath the original playfield and moving it onto the new one and then individually soldering each connection. The hardware is new though the wiring is original.

“They don’t make them like this anymore as far as the electronics go,” said Fields. “That is why it is so important to restore games like this.”

The head of the Xenon pinball, though still original, has been outfitted with some new LED lights to bring back the original strobe lighting effect. Somewhere over the forty plus years that Funspot has had Xenon, the original lights had been replaced.

The Xenon pinball in its new reincarnation is back on the floor in the American Classic Arcade Museum and ready for another 40 years of play.

When asked about future projects, Fields mentioned that pinballs like the original Black Knight (Williams Electronics 1980) and Superman (Atari, Inc. 1979), though not in as bad a condition as Xenon was, are on the list for a playfield restoration.

So, if you missed it as kid in the eighties, or even if you are a kid born in the twenty-first century, you can now have your chance to visit to Funspot and “Try Xeeeeenon.”

Trail. Pitch Pine is one of the steepest trails in the State but its

rope hasn’t dropped yet. Blue square rated King Pine and Pine Cone Trails skied real-

ly nicely on soft snow. From their slopes there were nice views of the frosted white

mountains high above the snow covered Purity Lake.

I enjoyed the chairlift rides too. We had a nice time visiting and chatting between runs.

I noticed a lot of small children skiing with their parents and many kids were taking ski lessons. There is a little rope tow, the Cubby Tow and we went over and joined the children grabbing

the rope for a short ride up. A rope tow makes strong arms. There were happy faces everywhere. Across the way there is a carpet lift for novices.

My friend wore a lovely Norwegian sweater. We met a group dressed in vintage day-glow 80’s ski garb. I was impressed by another’s CB Sport bright red one-piece suit. Wool, lots of wool, it is still in style but matched with a wool cap it certainly is

vintage. In the lodge, we picked up lunch in the Pine Cone Cafe. We each had a bowl of the ultimate comfort food–cheeseburger soup and we split a yummy hot and gooey grilled cheese sandwich. Especially compared to the big reports the prices seemed quite reasonable. I especially liked their homemade desserts, the oversized Rice Crispy Treat was super.

We skied more after lunch but I had to leave mid-afternoon. I was sorry to miss the end of the ski day celebration—apres ski in the Trail’s End Tavern. Prizes for coolest and best vintage fashion were awarded and ski historian Tom Eastman gave a presentation on King Pine’s history.

In the morning when I started the ski tracker on my smart watch. I remembered to look at it when I got back to my car and it recorded 19 runs. That’s a lot of skiing. Have Fun.

zens...” Judge Hobbs was born in Minnesota but came to New Hampshire when a child and attended schools in Ossipee and Tamworth. Another very busy man, the judge was also the postmaster of Wolfeboro, having been appointed by Presidents Cleveland and Wilson. He was also a businessman, being involved with the real estate, fire insurance, lumber, and investment businesses. He SMITH from 15

judge of probate in Grafton County. He was the son of Edward F. Bingham who had been the Chief Justice of the Supreme Court of the District of Columbia. Judge Harry Bingham was also the nephew of George A. Bingham who had been a Justice of the Supreme Court of New Hampshire, and a first cousin of Judge George H. Bingham who served in the United States Circuit Court. Though born in Columbus, Ohio, and being an assistant district attorney in the District of Columbia, Captain Bingham, as he was often called before aquiring the title of judge, also practiced law in Littleton, New Hampshire. He was a captain of the Seventh United States Volunteer Infantry during this country’s war with Spain.

Another New Hampshire Judge of that class of 1913, who also had relatives who were judges, was Judge A. Chester Clark of the Concord District Court. He was born at Center Harbor on

July 4, 1877 being a relative of Lewis W. Clark, a Chief Justice of the New Hampshire Supreme Court, and Judge Daniel Clark of the United States District Court. Judge A. Chester Clark graduated from Meredith High School in 1894, New Hampton Literary Institution and Commercial College in 1901, and Dartmouth College in 1906. He was business manager of the school paper during his four years at New Hampton and won a Bates prize in debating in 1900. He studied law under lawyers in Meredith and Concord and was admitted to the bar in 1913.

One might wonder how a lawyer who had just opened a practice could almost at once become a judge. His accomplishments at the age of thirty-six appear to have been many. During his years of study before being admitted to the bar he was employed as a newspaperman and had gained a good reputation in journalism. His involvement in many area organizations makes one

wonder how much time he had for his profession. According to The Granite Monthly of Jan-Feb 1914, Judge Clark represented Center Harbor at the constitutional convention of 1902, at which he was chosen to be clerk. In addition, “He is a member of the American Institute of Criminal Law and Criminology; the New Hampshire Historical Society; The New Hampshire Press Association; the

Wonolancet Club of Concord; Chocorua Lodge, No.83, A.F. And A.M., Meredith; Concord Lodge, No.8, K. of P. (past chancellor); Grand Lodge, K. of P. ( past deputy grand chancellor); Augusta Young Temple, Pythian Sisterhood: Capital Grange, Merrimack Pomona, the New Hampshire State Grange; and various other organizations.”

Frank P. Hobbs was appointed to be a special justice for the district court for the district of Wolfeboro. He was recognized as being “one of Carroll County’s most active and best known citi -

had previously been a station agent for the Eastern and Boston and Maine Railroads in Wolfeboro, high sheriff of Carroll County and a deputy sheriff of Carroll, Strafford and Belknap Counties. He was also a member of the New Hampshire House of Representatives and a delegate to the 1912 state constitutional convention.

Unlike many who became judges, Judge Hobbs was not a lawyer by profession.

1 Lb. Ground Beef

INGREDIENTS

1-10 pk. 8¨ Flour Tortillas ( there will be some left over)

1-24oz. Jar Mild Chunky Salsa (there will be some left over)

4 Tbsp. Mild Taco Sauce

1-15oz. can Black Beans (drained)

- Preheat oven to 350 degrees F.

1-14.5oz. can Whole Kernel Corn (drained)

1 pk. Mild Enchilada Seasoning Mix (or Taco Mix if preferred)

1-16oz. can Refried Beans

24oz. Shredded Cheddar, Jack, or Mexi Blend cheese (or a combination)

— Preparation —

- In a large skillet brown the ground beef. Drain the grease and return to a medium heat.

- Add to the cooked beef ½ cup of salsa, the Taco Sauce, and the Enchilada flavor packet (add the water as directed on the packet)*, stirring to mix completely.

- Add the drained black beans and drained corn, mix and heat until the mixture is hot, bubbling, and thickened. Remove from heat.

- Prepare a tortilla by spreading some refried beans over one side to its edges as if buttering a slice of bread and place the tortilla (beans up) into the bottom of a 9 inch round Casserole Dish.

- Spread a serving spoon (maybe two depending upon the spoon size) of the burger mixture over the refried beans. Over the burger spread a few tablespoons of salsa, and then sprinkle with cheese.

- Repeat the process (tortilla, refried beans, burger mix, salsa, cheese, until you have stacked to just below the edge of the dish. Then the last layer will end with extra cheese on top. (No tortilla.)

- Place this into the oven for about 50 minutes or until the cheese is nicely browned and the edges are bubbling.

- Serve hot with sour cream as a stand alone dish or with a side of Cilantro Lime Brown Rice.

* If using your own spices, do not drain the beans and corn, just add as is to the beef mixture.

FEAST from 17 dining experience they craved.

With a new director came opportunities for change and advancement. The department became energized with spirit and a defined vision, moving forward into a time of great revitalization and expansion. No stone was left unturned. The menu was overhauled, keeping many comfort foods because of their desirability while other recipes were tweaked to add fresh ingredients which boosted appearance and flavor. Still others were taken off the menu, replaced with more contemporary flavorfilled offerings. All this change culminated in a nationally recognized award winning program filled with awesome staff who gave patrons what they were looking for; the menu variety and

Casseroles have always been a mainstay of institutional feeding, their high acceptability factor keeps people happy. They survive the test of time because they represent comfort food; just what new students need as they navigate a world that has pushed them far out of their comfort zone. And casseroles, in general, are easy on the budget while not too labor or skill intensive. These advantages are ideal when cooking for a family too as we all seek flavorful recipes that are easy to make and will feed a brood while not going bankrupt. Too, casseroles are often a “one stop shopping” selection offering meat, veggies, and starch all in one spoonful. Be -

ing the quintessential “Plop and Go” makes the casserole a real plus to those on the run whether you are a coed between classes or a busy family on the go.

With Southwest fare never waning in popularity this Enchilada Casserole has just the right amount of heat, flavor, and versatility to appeal to nearly everyone at your table. And making this dish could not be simpler. If you can butter bread you can make this casserole. The recipe included is not the original but offers a nod in that direction. I have turned down the heat, using a mild taco sauce and a mild salsa, allowing for a more identifiable flavor profile; nothing is masked by burnt taste buds, and no need for a “Pepto” chaser as your after dinner aperitif.

Easily customizable,

I encourage you to experiment. If time is not an issue, try some fresh ingredients: green and red diced pepper, diced onion, some garlic, and diced tomatoes sauteed with your beef. Or leave out the beef, adding pinto or kidney beans for a “Meatless Monday” dish. Or add your own herbs and spices; cilantro, sage, cummin, paprika, chili powder and black pepper, rather than a seasoning packet. The addition of shredded Jalapeno Jack, which I have done on occasion to turn up the heat just a little, is also delicious. Perfect for a family on the go, the game night buffet, or as a dish to take to your next potluck, you can change it up or run with this Enchilada Casserole as is and be sure that your brood too will enjoy this Simple Feast.

der General Douglas MacArthur had the foresight to establish a democratic Constitution enshrining free political parties, land reform, Women’s suffrage, a free press and trade unions. Most controversially, the Constitution created a working parliamentary system but retained the Emperor as a figurehead, a symbol of the state and ceremonial continuity.

Equally the Constitution’s Article 9 , viewed as the “no war clause” forbade Japan having a formal military force and outlawed war as a policy option. Thus Japan was given a legal reason, many would say excuse, to avoid costly defense spending as the Cold War was heating up.

Following the formal end of the U.S. occupation in 1952, the “Yoshida Doctrine” became the agreed template for Tokyo’s policy with Washington. Japan’s democratic Prime Minister Shigeru Yoshida relied upon U.S. military security while maintaining limited Self Defense Forces, an unofficial military. At the same time, Japan redoubled its efforts on rebuilding and economic growth. The results produced the economic miracle.

In recent years, during the tenure of nationalist Prime Minister Shinzo Abe, the political tide was turning towards a more assertive geopolitical stand. The widening missile threat from North Korea and China’s ominous moves towards both the South China Sea and Taiwan were openly discussed. Moreover Prime Minister Abe’s particularity close

friendship to President Donald Trump formed the foundation for the current expansion; both men agreed on the value of a strong Japan as a counterweight to China.

Abe was tragically assassinated last year. Nonetheless Japan’s more muscular defense role must not be unilateral but placed in the wider context of East Asia, especially partnering with countries like South Korea, the Philippines, and Indonesia, all of whom suffered at the hands of the Japanese militarists during WWII. The Washington Statement stressed, “We commit to strengthening vital trilateral cooperation among Japan, the Republic of Korea, and the United States, in security and other domains.”

Yet while Washington provides the cornerstone of Japan’s defense relationships, the Tokyo government is widening its diplomatic partnerships in Europe to help in its efforts to deter China militarily. Recently Prime Minister Kishida visited Britain, France and Italy. Equally Japan looks to India, a fellow democracy, as a counterweight to China. Kishida is not putting all his eggs in the Biden basket.

years.

Maxim Lott’s excellent website, Maximum Truth, covers this “COVID Fudge Factor” in detail.

Former Soviet countries often undercount. Belarus’ dictator bragged, “There are no viruses here!” But Belarus had many more excess deaths.

Two countries that did well during COVID were in sub-Saharan Africa. I found that surprising since Africa has low vaccination rates and sparse medical care. Lott attributes it to Africa’s very young population. COVID rarely harms young people.

What does the data say about countries like Australia that imposed brutal lockdowns? It’s not clear that the brutality helped. But Australia’ rules did save lives, mostly because for two years, the island sealed its borders. That dramatically limited COVID’s spread.

But once almost every Australian was vaccinated and the government lifted its lockdown, COVID cases soared, like they are in China now.

Adjusted for population, Australia has now had more COVID cases than the United States.

But fewer Australians died, partly because the less-deadly omicron variant was circulating when the country lifted its lockdown.

Was Australia’s strict lockdown worth it? The average Australian lived two weeks longer. To me, it’s not worth it. Being locked in my apartment or shot with rubber bullets if I went out to protest just isn’t worth two extra weeks of life.

Even people in China, where protesting is illegal, recently protested enough that China lifted its most severe rules.

Lockdowns also hurt us financially. New York lost 400,000 jobs since the start of the pandemic. Florida gained 400,000.

In New York, where schools were kept closed, child obesity increased by 5%. In Florida, obesity fell.

Kids’ education suffered. Last year brought America’s lowest math and reading scores in decades. In Sweden, which never closed its primary schools, kids suffered no learning loss.

I understand that three years ago, frightened politicians wanted to do something. A

highly contagious virus does require some public health restrictions.

But I wish they’d be a little humble. All of us have different values about safety versus freedom. Life is better when we get to make our own decisions.

Every Tuesday at JohnStossel.com, Stossel posts a new video about the battle between government and freedom. He is the author of “Give Me a Break: How I Exposed Hucksters, Cheats, and Scam Artists and Became the Scourge of the Liberal Media.”

worse than what we have just been through. Having built my own organization and worked with many others, my rule of thumb is that good people will accomplish things and get things done despite a poorly designed organization. And bad people will cause damage even in the most perfectly designed organization.

Organization charts and job descriptions

matter. But what matters most is individual character.

Certainly, the rules how the House operates and the job description of the speaker are of great importance.

But of greatest importance are courageous leaders who are committed to the principles of a free nation under God.

Leaders, for instance, who have the courage to take on our broken

entitlement programs that suck up to 80% of our $6 trillion federal budget. These bankrupt programs, going back to 1936, don’t need to be tweaked but reinvented.

Every young American now entering the workforce is paying Social Security payroll taxes into a bankrupt system that will not be able to pay them their benefits.

The answer is not raising taxes or the re-

tirement age. The answer is a new system based on real ownership and investment.

But taking on Social Security and other entitlements requires real courage and commitment to principles. Do these Republicans have the courage to lead where Americans need leadership?

Polls show the American people are not happy with how things are going. This is a good sign.

The Republican oppositionists should be given benefit of the doubt that their obstructionism was rooted in genuine concern about principles and ideals.

And Kevin McCarthy should be given benefit of the doubt that he is indeed a Republican leader for complex times who knows he can’t win every battle but has wisdom to know which to fight.
