P art of the charm of being in the Rio Grande Valley for the winter is the ability to hop around and explore the area. We’ve had so much fun with our Tour Division this season-helping you do just that, tour! If your activity director hasn’t already booked a private tour for your park, we have tours open to the public, and we are excited about our upcoming trip to Kingsville to tour the famous King Ranch. If you’ve never been, it’s truly on the Winter Texan bucket list.
And just like that, this is the last Welcome Home Winter Texan of the season! It has been a wonderful winter, and we have enjoyed sharing it with you!
I’d like to take this opportunity to invite you to stick around, to extend your stay for a few days, weeks, months... or even indefinitely! The fun keeps coming; we keep dancing, dining, and having fun all summer long, and we’d love to have you join us.
If you feel you must go, I’d like to invite you to help us spread the word about South Texas to everyone you meet along the way and those you see every day back home. Invite them to join you next season! We would love to have them join us. The more the merrier!
We are always ready to go, so if there is a place you would like to go, please let us know. That’s exactly what happened when a few quilters got together and wanted to attend the 24th Annual Bluebonnet Shop Hop! They are hopping on our bus and touring all eight participating quilt shops, which means they’re heading to Austin, San Antonio, Buda, Drippings Springs, Lakeway, New Braunfels, and Bandera and staying overnight in New Braunfels.
This September, we will host our second, not so annual (thanks to the pandemic), Winter Texan Reunion Tour, so we’d also like to invite you to join us at one of our stops. Stay tuned as we announce our travel plans.

The tour filled five luxury motor coaches with a total of 268 passengers. WHRGV arranged for delivery and pick-up at the terminal and transportation back to the Rio Grande Valley, too. Pickup points included Trophy Gardens in Alamo, Sunshine RV Resort in Harlingen, Bit-O-Heaven RV Park in Donna, and multiple spots in Mission.
The trip included an overnight stay at the Houston Marriott
Sugarland, where the staff is experienced in accommodating this group each year.
The Cruise group was made up of couples, multi-generational families, and single travelers-including three widows and a friend.
What Kristi Collier took away from this Cruise was the trust put into Travel by Welcome Home. “It was really cool to meet these families and hear their stories,” she said.

The largest group of travelers consisted of over-four-dozen residents of Bit-O-Heaven RV Park and Resort, including Converted Texans Ed and Kathy Hurley.
The Hurleys are cruising pros, clocking 17 cruises over the past 20 years. They say Cruise with Kristi is different. “It’s really fun to go on vacation with 50 of your best friends,” shared Ed. (They also really enjoyed the food,
entertainment, relaxation, and excursions.)
The Hurleys have already booked spots for Cruise with Kristi 2024.
“You just meet so many people; the horizon of friends grows and grows each year,” shared Ed.

several years. Residents have made friends with many of the agents and welcome their presence as additional security. The CBP is allowed to use the Park’s Rec Hall to heat meals in the microwave, purchase snacks and sodas, and use the restrooms.
One of the agents who they consider a friend is boat captain Shae Marie Rosa. Three years ago, her father, Jose Rosa, a retired law enforcement officer, and her mother, Lisa, decided to relocate from Florida to be near their daughter. They chose to become residents of Chimney Park.
As residents, they are able to keep track of Shae’s comings and goings with her boat and crew. Residents were saddened in December when the news broke that a young CBP agent, Raul H. Gonzalez, Jr., was killed on patrol when his 4-wheeler hit an unlit fence gate. Jose said it was like losing a family member. He attended the emotional and moving memorial service while Shae served in the Honor Guard.
A few weeks later, when Jose visited
the site of the accident, it was marked with a small white wooden cross, which is not uncommon across the country. As he picked up litter and debris in the area, he decided there should be a larger wooden cross marking the spot where this young agent “ended his watch.”
Together with fellow resident Ralph Spencer, a retired firefighter, a cross was built. Another resident, Gigi Nelson, the wife of another retired firefighter, painted and lettered the cross. When the cross was installed at the site, other residents--as well as CBP agents--were in attendance. James Kropenske, Chimney Park activity director, organized an informal memorial service.
Like most parks, Chimney Park has many retired members of the military and law enforcement, as well as first responders, who recognize and appreciate the city, county, state, and federal law enforcement agencies and personnel who risk their lives every day on our behalf. •
Couples Compete in La Floresta Golf Tournament

On the morning of Sunday, January 22, residents of La Floresta Park in Mercedes took to the golf course. It was the start of the Annual Couples Handicap Tournament. The event was open to beginner golfers, as well as those with advanced skills. It was a little cool that morning but warmed up nicely.
La Floresta is home to a small, 9-hole, par 3 golf course. Due to the weather and terrain, it is more difficult than it looks!
There was no hole-in-one that day, but golfers had some amazing shots. We are all winners because we always have some good shots and some bad shots. That’s what keeps us coming back!
We congratulate the winners of the Couples Tournament, Jim Monier and Darla Strait (from Sanborn, Iowa) took 1st Place in the Gross Score category. They received a trophy and get to organize the tournament next year. Ricky and Paula Henderson (from Blairsville, Georgia) won 1st Place for in the Net Score category. •

Paradise Park in Harlingen has Spirit of Giving
F or the third year, Paradise Park RV Resort in Harlingen has been overwhelmingly generous in giving to Harlingen CISD’s Clothing Closet, operated as part of the F.A.C.E. (Family and Community Engagement) Program to assist district families in need.
In winter 2020, the Clothing Closet was selected to be the beneficiary of the Park’s Spirit of Giving holiday project, when resident Sharon Bargel heard on a local news station about the Clothing Closet and the district’s need for warm coats and cold-weather clothing. That year, despite COVID restraints and fewer Winter Texans, Park residents delivered 578 items of new clothing, as well as new shoes, to the Closet.
In 2021, Sharon co-chaired the project with Jan Walter, and 1259 new items were delivered to the Closet. When the delivery was made in January 2022, they learned the Closet had no socks or undergarments on hand and were very much needed. They also learned that underwear and socks are always needed, as well as personal hygiene products, especially shampoo, deodorant, bath soap, and similar items. The decision to make this a year-round Paradise Park Community Project was made, and Dee Rigdon came on board as co-chair with
Sharon (both are year-round residents). Totes were placed in the Activities Office and in the driveways of Sharon and Dee’s homes to collect items. Cash donations are used to purchase items on the “mostneeded” list.
Throughout 2022, the acceptance of donated new and “gently used” clothing and shoes and personal hygiene items continued, as well as donations of cash to purchase needed items.
Over 1000 items were donated between February and November 2022.
Mid-November 2022, the holiday project kicked into high gear again, with
posters and social media announcements informing residents what was most needed for the Closet: new shoes for big and little kids, hygiene products (toilet paper, bar soap, liquid hand soap, toothbrushes), and gift cards, as well as underwear, socks, and cold-weather clothing. The donations started coming in and accumulating. In December, just before the holiday cold snap, an early delivery of warm coats, jackets, and other cold-weather items were delivered to help F.A.C.E. staff meet urgent needs. January 10, the balance of items was delivered--an amazing 1300-plus items!
It is so heartwarming to know we are making a big difference in the lives of so many families and children. F.A.C.E. staff is very appreciative of the giving hearts of Paradise Park residents. The residents of Paradise Park will continue to support the needs of the Clothing Closet year-round, and donations of items or cash are always welcome.
Six residents of Paradise Park currently volunteer one afternoon a week at the Clothing Closet; organizing racks of clothing, sorting, marking sizes, and doing whatever else is needed. We see first-hand what the needs are and how important our support of the Closet is, and we witness the importance of having this resource available to HCISD families. We feel blessed to be able to help make a difference.
In addition to the other donations January 10, April Vallejo, Paradise Park RV Resort manager, presented a check for $500 to the Harlingen CISD Clothing Closet from Encore Corporation (parent company of Paradise Park) through their Making a Difference Program. Another blessing!
For all of us involved in this Community Project, our hearts are full of emotions. Giving to those less fortunate and in need fills our hearts and gives us a sense of purpose. •

Explore Historic Lighthouse Square in Port Isabel
Before reaching South Padre Island, you’ll find the Lighthouse Square at the foot of the Queen Isabella Causeway. The plaza is home to various shops, galleries, restaurants, and activities. The key attraction is the Port Isabel Lighthouse State Historic site. The Lighthouse is the only lighthouse in Texas open to the public. Entry inside is only $5.00, and visitors can climb to the top for a full view of the bay.
December 9, 2022, a 3rd Order Fresnel Lens was installed, reigniting the Lighthouse for the first time in 117 years. It was a historic occasion that drew in visitors from all over the state. The lens remains on display, as the lighthouse is lit up for special occasions, such as events or holidays.

Animal Farm at South Texas College This Week
S
outh Texas College Theatre & Dance announce their second production of the season, Animal Farm, adapted by Ian Wooldridge from the George Orwell novel.
The production will run February 23 and 25 at 7:30 p.m. and will end with a matinee at 2 p.m. February 26. Performances will take place at STC’s Cooper Center for the Performing Arts Black Box Theater at 3200 W. Pecan Blvd. in McAllen.
In George Orwell’s classic, the animals on a farm drive out their master, take over, and run the farm for themselves. The experiment is successful, except that someone has to take the deposed farmer's place. Leadership devolves upon the pigs, which are cleverer than the rest of the animals. Unfortunately, their character is not equal to their intelligence.
“ Animal Farm continues to be a classic story and one which I believe is still relevant today,” said Joel Jason Rodriguez, the play’s director. “I wanted to direct this play for some time, and I am happy we were able to include it this season. I believe the audience will appreciate our approach to this production when they see it.” General admission tickets cost $5. Seating is limited due to the capacity of the Black Box Theater, so advance purchases are encouraged.

M ay was so lonely, trapped inside a mind that could not find rest. After her husband passed away, May was placed in a nursing home. Her children never came to see her. She had a diagnosis of both dementia and schizophrenia.
I was blessed to have four years to get to know May. During that time, I was able to piece together the snippets of her life she shared with me. She had been raised by a Christian grandmother who saw to it that May went to church and learned about Jesus and the Bible. This firm foundation laid in May’s heart at such a young age would stay sure until the end of her life. Despite her numerous mental battles and struggles, the light of Christ would shine out of May’s darkness, changing my life forever.
It was no big deal to me that May never knew my name or that she did not always recognize who I was. The fact that she always knew the Word of God is what stirred my heart and served to increase my faith. Now

don’t get me wrong, May was not one of those affectionate, always happy people. More often than not, I would find her sitting in her wheelchair grumbling to herself or responding angrily to the voices that constantly seemed to torment her. To aid in snapping her out of one of these episodes, I learned to address her at eye level. From this vantage point, I would greet her and begin reciting the Gospel of John, chapter 1: “In the beginning was the Word, and the Word was with God, and the Word was God…” Before I could get to the first “and,” May would begin to recite those beautiful verses of scripture with me.
When we first began this practice, May could make it as far as verse 22 before stopping. As the years wore on and her dementia advanced, her memory would stop her at around verse 5. Reciting scripture calmed May’s anxious and tormented soul almost every time. The few times it would fail to do the job, I would employ the second-best method of soothing her, which was to sing hymns together. May taught me so many songs. I pray my memory hangs on to them the way hers did. May loved to laugh. I can still hear
her laughter in my heart. She would amuse herself as she talked to me about her husband, her children, and her past. She would beam as she spoke of them with love and concern, her broken memory painting a picture of happier times and familiar faces. I wish I could have known her back then.
I thank God for May. She taught me way more than any professor or theologian ever has or could. It’s people like her, people the world tells us we should throw away, who show us the very heart of God. •

The other day I had a project fixing some water damage in my bathroom vanity. Needing to do some serious sanding, I got my old vibrating sander out. When I say “old,” I mean old. My father operated a cabinet shop when I was a kid, and that sander sat on his workbench for years, always handy for some quick touch-up work. When he passed, I ended up with quite a few of his tools.
As I worked on my project, an odd thing happened. Each time I picked up that sander, a vision of my father passed through my brain. I don’t know if Dad’s spirit was attached to his sander, but my memory of him sure was. It was almost like he was in the room with me as I worked. Add in the smell of the sawdust, the same smell that overwhelmed

One of the things I have learned is that places, smells, vehicles, photos, dates, and even tools evoke memories. What are some of the things that stimulate good memories for you? I know the
opposite can also happen, so I only ask that you raise the good ones. Ask your family members around the table sometime. I bet you get some interesting conversations.
In our basement are at least two storage bins full of photo albums of our family life, mostly from when the kids were little. We don’t get
them out much anymore, but when I am older and grayer than I am now, I hope someone brings them when they come to visit. It is fun to re-experience the good stuff. They can also bring me a can of sawdust so I can take a deep whiff and go visit Dad for a while.
I’m just sayin’. •
Baby Giraffe Gets a Name - Zoo
Asks Public’s Help to Name Another
Last year, the Gladys Porter Zoo was over the moon to welcome two giraffe calves to the herd. One calf was born to Rocket February 23, and the other calf was born to Ann September 12.
The Zoo is excited to finally announce that the female giraffe born to Ann has officially received a name. The naming rights for the female calf were auctioned off at the Zoo’s annual fundraiser, Zoofari. The winning bid went to Suzanne Shepard, former Valley Zoological Society Board president and author of the book Rocket the Space Giraffe, which was listed as the #1 Bestseller on Amazon in Children’s Zoo books.
“I am very excited that I had the winning bid at Zoofari and am able to name the Zoo’s baby giraffe, who is also Rocket’s little sister. I have decided to name her Luna, and I chose the name for two reasons. First, my niece who loves giraffes is named Luna. Second, in the book Rocket the Space Giraffe, Rocket dreams of going to the moon, so I want to name her after the moon,” said Suzanne Shepard.
Luna is currently the youngest giraffe at the Zoo, and as Shepard mentioned,
she is the younger sister of Rocket, a prominent member of the herd. Last February, Rocket became a mother for the first time; she gave birth to a male calf. As his first birthday approaches, Zoo staff is asking the public to help select an official name for this adorable, active giraffe.
“He is thriving and doing well. This juvenile giraffe is very playful and loves to get into everything. He loves to squish boxes, chase ducks, and drink out of the water hose, just like some of us did as kids,” said Vivian Padilla, zookeeper at the Gladys Porter Zoo.
Six names have already been chosen by staff, and the Zoo is asking the community to vote for its favorite name.
Voting opened on the Zoo’s website February 15 and will remain open through February 22. The winning name will be announced via the Zoo’s social media platforms on the calf’s birthday, February 23.
The Zoo greatly values the public’s input and appreciates the community’s involvement when it comes to naming some of the Zoo’s most popular animals. It’s the Zoo’s way of expressing gratitude for the community’s continued support. •

T he Kingsville Monthly Wine Walk series will continue in the city’s Historic Downtown District with a pair of nighttime events aimed at inviting visitors and locals to experience small-town charm and Texas-sized pride with a little bit of wine!
“We first began Wine Walks in 2020 as evening events,” said Janine Reyes, director of tourism. “They were wildly successful, and we are so very excited to bring them back as an evening experience once again.”
Wine Walks later returned as a daytime event and are returning to evenings due to popular demand. The February 25 and March 25 event series will take place from 5 to 9 p.m. and include live music and entertainment, special sales, and freebees and give guests many opportunities to win hundreds of dollars in prizes.
When wine walkers check in at our 1904 Train Depot, volunteers will capture a group photo, issue guests your keepsake wine glass or beer mug, and hand visitors your
keepsake passport, which takes shoppers on a self-guided journey through more than 30 stop shops. At these shops, wine walkers
collect unique stamps and sample your pick of wine or beer along the route. There are more than 14 varieties of wine to wet your pallet with, including sweet options, dry options, and both red and white wines. Several craft beer varieties, along with domestic choices, will be available, and non-alcoholic passports will feature a series of mocktails. Come early and snag a free charcuterie bag, available while supplies last. The Kingsville Coffee Cup will distribute samples of coffee from all over the world, and Eve’s Heavenly Delights has a spread of desserts like no other.
Visitors who want to extend your stay in Kingsville can book a Wine Walk VIP experience. Chicken Enchiladas with Spinach Sauce (Serves 8-12)

2 dozen corn tortillas
1 medium onion, chopped
1 – 1½ cups vegetable oil
1 (3-4 lb.) chicken, boiled, skinned, boned, and shredded
3 cups shredded cheese (cheddar or Monterey Jack)
Preheat oven to 350 degrees.
Lightly grease two 13 x 9 baking pans. Dip tortillas, one at a time, in very hot oil, just long enough to slightly darken and soften. Generously spread a one-inch central strip of each tortilla with shredded cheese, chopped onion, and shredded chicken. Roll up, using toothpicks to secure, if necessary. Place seam side down, side by side in baking dishes. Try to leave at least ½-inch clearance between enchiladas and the sides of the pan; do not pack the enchiladas too tightly. This will allow room for plenty of sauce to coat and penetrate the enchiladas. Cover generously with spinach sauce.
Creamy Spinach Sauce
1 (10 oz.) box frozen chopped spinach
2 (4 oz.) cans chopped green chilies, undrained
1½ cups water
¼ teaspoon salt
2 (10½ oz.) cans condensed cream of chicken soup
1 pint sour cream
1½ cups shredded cheese (same type as in enchiladas)
3-4 green onions, minced
Cook spinach in a large saucepan with water. Add condensed soup, green onions, chilies, and salt. Stir with a large whisk or put in a food processor to blend smoothly. After mixture simmers, remove from heat; add sour cream. Mix well. Pour over enchiladas. Sprinkle with shredded cheese. Bake uncovered for 30 minutes. Remove toothpicks before serving or storing.
This is the perfect do-ahead recipe, since flavor is enhanced with time! Just bake, refrigerate, and reheat before serving.

Do you ever have to feed a crowd, like being a football mom who makes food for the team of hungry players who will each eat three of these? Sloppy Joes are a favorite with most people, and this is a good basic, easy recipe. You can spice it up or adjust the onions according to your tastes. Also, the recipe can easily be halved for fewer sandwiches or in case you are feeding a girls’ team.
Sloppy Joes for EightDozen Sandwiches
15 pounds lean ground beef (OR half beef, half pork)
6 medium yellow onions, peeled and diced
1 gallon ketchup (feel free to use generic brand)
¾ cup Worcestershire sauce
½ cup packed dark brown sugar
½ cup prepared yellow mustard
¼ cup white vinegar
1 tablespoon chili powder (or more, to taste; or some cayenne, if you like them spicy)
96 hamburger buns, split Sliced dill pickles, if desired
I n two large soup kettles, over medium heat, cook and stir the meat and onions together until the meat is no longer pink. Drain off any extra grease using a large strainer. Stir in the remaining ingredients, except the buns and pickles, mixing well. Bring to a boil; reduce the heat and simmer, uncovered, for 2 hours to allow the flavors to blend. Stir occasionally to avoid burning on the bottom. Spoon about 2/3 cup of this mixture onto each bun, and top with a dill pickle slice, if desired.
