very anniversary is special, but when you get to double digits and beyond, the more impressive they are! This week’s cover story warmed my heart, seeing 40 years of fun at Country Sunshine in Weslaco! And I know they are not the only ones celebrating success. Paradise Park in McAllen is celebrating 50 years in 2022! I’d love to know when each resort was established and trace the history and learn the back story; that could be a great deal of fun. If only the walls of the rec halls could talk. Oh, the stories they could tell! Over the years, we’ve gained new resorts and lost a few, but the constant we see are the friendships and the fun at each and every one. Veteran, Former First Responder Continues Service to Others at Donna Resort When Ron Blane retired after 52
years as a first responder--holding positions as a Vietnam corpsman and a paramedic in law enforcement and more--his public service didn’t end there. Back in Michigan, his home state, he volunteers his summers operating the emergency rescue boat on Lake Michigan, and he serves as winter host for Donna’s Bit-O-Heaven RV & Mobile Home. “I’m a people person,” he said. “People come in from all over the country, and I enjoy getting to know them.” As winter host, Blane helps fellow Winter Texans get settled in the park, both by helping them out with any issues with their unit and by introducing them to others and informing them about all of the activities in the park. Blane is always excited to receive new visitors because he knows it won’t take long for them to feel right at home. “All the people around are friendly,” he said. “You drive in, and you can hardly even park before they start coming up and welcoming you home. It means a lot.” While Blane has friends who are now like family within the park and from other local resorts, he also gets to enjoy the company of his own
family. His mother and sister-in-law are among his neighbors. “It’s hard to get away from the Valley once you’re here,” Blane said. “The people and everything are so great.” He adds the support and thanks he receives from park management motivate him to go above and beyond in his job, taking on more responsibilities and helping wherever needed. “You enjoy working harder for somebody if they appreciate what you do,” he said. “I enjoy being able to go around picking up stuff and keeping it looking good because it means a lot to me. I love my park, and I don’t want it to look sloppy.” In his 16 years at Bit-O-Heaven, Blane previously served as camp cook. Though now in a different role, he steps up every Thanksgiving and Christmas, cooking dozens of turkeys for the park. And when the February freeze of 2021 devastated the Valley, including its RV parks, Blane stayed behind an extra month to help the park get back on its feet. “I thoroughly enjoy being able to help people,” he said. “I’ll always go out of my way to help somebody, and it has come back around so many more times.”•

12th annual quilt show January 25 in Mercedes Special to Welcome Home RGV
T
he Llano Grande Quilting Bee has been busy this year making blankets on our Community Service Sew Days. The Bee membership includes two baby blankets for each member, distributed to local hospitals and the Child Protective Services’ Rainbow Room. We also gather to quilt lap blankets for patients going through chemotherapy and dialysis at medical facilities in the RGV and to residents of local nursing homes. Recently, the Bee donated a dozen blankets to the Weslaco Elks Club for their blanket drive. In addition to quilting blankets, the Bee gave monetary donations this holiday season to the Mercedes Food Bank, the CPS Rainbow Room, and the Llano Grande Park gift tree for boys and girls at a Mercedes elementary school. Tuesday, January 25, the Bee will be presenting its 12th Annual Quilt Show from 9 a.m. to 3 p.m. at the Hynes Event Center, 2215 East West Blvd. (off Mile 2 West) in Mercedes. The theme this year is Gems of the Valley and is reflected in their annual opportunity quilt featured at the show. This year, it is a stunning queen-size quilt (88” x 99”) in shades of cream and blue. It has a lightweight, wool batting, which makes it comfortable in all seasons. Tickets for the quilt are $1 each or six for $5 and are sold at the show. The quilt drawing will be held at the end of the Show, and you do not need to be present to win.
At the Quilt Show, beautiful works of art will be displayed, with more than 250 new, never-shown-before quilts. There is $2 admission fee. The Show includes a boutique, vendors, how-to demonstrations, a purse and tote raffle, and a drawing for a sewing machine. You do not need to be present to win the raffle or drawing. The Llano Cafe will also offer a quick lunch you can enjoy while you rest your feet. •

visitors. But, this year, in honor of the resort’s 40th anniversary, the celebration at Country Sunshine in Weslaco was amped up. The staff went all out for the Over-the-Hill-themed party, with decorations, door prizes, and sashes for park residents who have been a part of the resort for 20+, 30+, and 40 years. As Regan James performed, residents filled the dance floor. Others chatted at banquet tables, each marked with a themeappropriate sign, like “Denture Hill,” “Baldy Boulevard,” and “Old Fart Highway.” After every few songs, Activity Director Debbie Stout and Carol Stites call out doorprize-winning tickets and toss 40thanniversary, commemorative t-shirts into the crowd. “They always go above and beyond,” says Encore Regional Activity Director Sandy West, referring to the staff at Country Sunshine. West goes on to say it’s one of the reasons visitors keep coming back, year after year. “They come for their friends but also for all the activities.” Ray Wininger, 92, of Iowa would agree. “We’ve had a good time coming down; there’s always something going on.” Wininger has been coming each year since the park’s inception. “Once you come down here, you start making friends. The friends keep you coming back.” Wearing his 40-year sash, Wininger addressed the crowd, sharing what the area looked like four decades ago. He wrapped up his short address with an emphasis on fun. “Over the years we’ve had some g-o-o-o-o-d times!” which received a resounding round of applause, in agreement, from the crowd “Nobody is a stranger; everybody is welcome,” says Ruth Wuelner, a 36year resident of Country Sunshine. Ruth and her husband, Joseph, came down nearly four decades ago to visit a friend and fell in love with the place. They moved down and stayed. “Everybody’s friendly. They’re always checking up on me. Everyone helps each other.” Park Manager Chris Silva sees this every day. “The staff here, everybody, we love it. It’s not just a park. It’s their home. It’s not just a community. It’s a family.” A family 40 years in the making. •

McAllen Heritage Center Presents Civil War Exhibit: War & Peace on the Rio Grande 1861-1867 Special to Welcome Home RGV
T
he McAllen Heritage Center--a museum of history and culture, in collaboration with the University of Texas Rio Grande Valley, will host War & Peace on the Rio Grande, 1961-1867, an exhibit that reveals activities, battles, and key characters who played an important role in U.S. Civil War history along the natural and international border between the U.S. and Mexico. The traveling museum exhibit, which features historical characters, events, life-size mannequins, and artifacts from the period, will be on display beginning Wednesday, January 19, and will remain through the end of March. The exhibit covers several aspects of Civil War history along the 200mile trail between Laredo and Brownsville along the Rio Grande in
South Texas. These themes include United States Colored Troops, economic trade of the region, military battles and skirmishes, and Tejanos who served on both the Union and Confederate sides of the war. The exhibit allows visitors to walk through time and experience where these historical events took place. The exhibit was designed, developed, and produced by the University of Texas Rio Grande Valley’s CHAPS (Community Historical Archaeology Project with Schools) Program in Edinburg. Visitors can engage with South Texas history and learn just how interesting, intriguing, and historically significant this subject is. The exhibit also highlights mixedrace families who settled along the banks of the Rio Grande before the
U.S. Civil War and whose ranches facilitated runaway slaves on their quest for freedom across the river in Mexico. A 50-minute documentary, Just a Ferry Ride to Freedom, highlights this activity and has been shown during the Juneteenth Observation activities since its debut in February 2019. There are also two nine-minute films that accompany the exhibit. Cotton Times is a film that discusses the economic trade importance of this “white gold” in funding the Confederacy throughout the entire Civil War, and A Letter From Roma highlights United States Colored Troops and their experience protecting the border and rebuilding forts along the Rio Grande after the war was over. The films will be available for viewing throughout the coming months of the exhibit. There
is a tremendous amount of history just waiting to be uncovered with this exhibit. The museum is located at 301 S. Main St. in downtown McAllen (corner of Chicago and Main). There is free parking in the rear of the museum building for visitors, and there is no admission fee. Current operating hours are Wednesday through Friday from 1 to 5 p.m. and the second and fourth Saturday of each month from 12 to 4 p.m. Masks will be required for entry, and social distancing will be maintained for the safety of our visitors. Show ‘N Tell with Adolfo at The Lamb’s Loom Special to Welcome Home RGV
I
t’s not just for elementary school anymore. From day one, we have enjoyed all of the fun things coming in our door. Knitting, crochet, loom knitting, or whatever fiber art you are into, we love them all. So we thought we’d share a special show ‘n tell with you here. Meet our friend, Adolfo. He is an amazing young man who is going to college here in the RGV, and he is gifted at tufting. As the story goes, he was sitting home, bored, in the beginning days of the quarantine in 2020, just minding his own business and scrolling stories on his phone. He happened across a video of someone using a tufting gun and was intrigued. After a little more wandering around the internet, Adolfo ordered a tufting gun for himself. When it arrived, he watched a few online tutorials and gathered more information; part of that was the “what and why” of the yarn to use. This is what brought him to The Lamb’s Loom for his first visit. One afternoon, he shared his story with a few of us. (OK, we were nosy and asked what he was up to.) This got us all to help Adolfo pick out yarns for his next project. We have had so much fun over the past year or so sharing in his progress on projects. Then we had a brilliant idea and asked Adolfo to create our Lamb’s Loom logo as his next tufting project, and he agreed. You see, we always have someone come and share a craft during our August birthday party, so this year was his turn to jump in there. Everyone was delighted to watch our logo come to life over a few days. Adolfo is always so patient with questions and even had a few people try their hand at it. You’re welcome to come by anytime and see our finished birthday present hanging on the wall of our Sit-n-Knit room.

Another Great Ron Hoover Event in the Books Special to Welcome Home RGV
R
on Hoover hosted its annual Open House January 12 - 13. Close to 10,000 attendees came out to enjoy a day full of vendors, entertainment, great food, and giveaways. In addition, free health screenings were offered to everyone. The first day of the event, Mary Kranza from Ontario was the grandprize winner, taking home a new 4-wheeler. Day two’s grand prize of a Bad Boy zero turn mower went to Darrel Dennis of Amarillo. The annual event is also a fundraiser for the South Texas Juvenile Diabetes Association. This year, $15,300 was raised for the organization. With the help of on-site donations and off-site activities, an additional $1,400 was contributed, thanks to the generosity of our Winter Texans. •

Let’s Go to Progreso Lakes

World-Famous 1015 Onions, Talavera Await
f you’ve driven to Progreso, Mexico, then you’ve driven through Progreso Lakes. It’s a tiny little sweet spot on the map that can be easily missed…but shouldn’t be! Progreso Lakes is home to the sweetest honey, the world-famous 1015 onion, and coveted Talavera pottery from Mexico, and it was a water tower that’s out-of-this-world. As you drive in, you’ll be on FM 1015. Many think this is where the Rio Grande Valley’s famous sweet 1015 onion got its name. While there are, indeed 1015, onions growing along this famous stretch of road, the history actually starts in the Bermuda Islands. The sweet onion was introduced to South Texas by Dr. Leonard Pike of Texas A&M, who turned the Bermuda native into Texas magic. It became the 1015, the sweet, firm, world-famous onion that doesn’t make you cry and that we all know and love today. And it’s called a 1015 because it is planted October 15--10/15. And the best place to buy a bag of these sweet 1015s is on FM 1015, next to the fields where they grow,
at the 1015 Fresh Farm stand or “Mike’s.” They carry bags of fresh 1015 onions year-round, along with local seasonal fruits, vegetables, and plants. As if that’s not enough, they are home to jars of the sweetest, most flavorful local honey in South Texas. Next door to the fruit stand is a good acre of pottery. Their lot includes planters of all shapes and sizes, along with chimineas and holiday decor for any season. The prices are fair, and the staff is always happy to help load your treasures into your vehicle. Cash is preferred, but they also accept cards. Head a bit North, and you’ll find El Disco Supercenter USA. Trust us! You won’t miss it. This mammoth store is home to all things Mexico without having to cross the border. They have an extensive collection of the coveted Talavera pottery, starting from small tiles and decor to elaborate sculptures that can run into thousands of dollars. They also have the standard terra cotta and Mexican pottery, great for outdoor plants and indoor design. Their aisles are filled with Mexican
candies, vanilla, furniture, cookware, molcajetes, yard decor, bird houses, clothing, and jewelry. Chances are you’ll find a few treasures there for you and a few gifts for some lucky others. It’s a treat for the senses that can make a fun dent in your wallet. Next door is Gabii’s, where you’ll find a smaller version of El Disco Super Center that’s a bit higher end. While you’re in town, be sure to
spot Progreso Lakes’ unique water tower. Most Texas towns have one, but theirs is just a bit...different. Like a spaceship or something from the World’s Fair back in the 1950s, their saucer-shaped tower is one of the strangest you’ll find. For the best look or for a fun photo, drive over to the post office, and it’s there, standing proudly behind it. •

That’s right, the first head coach of our beloved Dallas Cowboys was born right here in Mission--and they won’t let you forget it! Their high school’s impressive 8,800-capacity stadium with its artificial turf and state-of-the-art scoreboard, is named after the kid who lived down the street and played for the team so many years ago. It’s because of our local legend that this is one of only two stadiums in the country with permission to use the official Hall of Fame logo as part of its playing field. Around the corner from the

T
he SPI Kite Fest is back, for a weekend full of beautiful displays and shows that’ll captivate the audience. Everyone flew a kite as a kid, and this is the perfect event to rekindle that childhood nostalgia. The festival will be held at the South Padre Island Convention Centre and will start February 3, with the indoor kite performances at 6:30 p.m. The indoor shows will run for two hours, as master kite flyers showcase their skills with their beautifully choreographed maneuvers. For the indoor performances, tickets are available and must be purchased before January 22 at B&S Kites. The outdoor performances will take place February 4 and 5 at the Flats, located next to the Convention Center. The outdoor shows will
start at 10:00 a.m., with displays, performances, and food concessions going on all day. The outdoor shows are free to the public, and everyone is encouraged to come. This is the perfect opportunity to bring the family together and check out the colorful, larger-than-life kites. The winter weather is perfect for this event, as the strong winds are ideal for flying kites, and cool temperatures let you relax. After the outdoor performances February 5, there will be a buffet at the Isla Grand Beach Resort at 6:30 p.m. for those who want to eat a good meal and support the SPI Kite Fest. • Trust Jesus • In our travels, we have seen, many,
many times, the sign “Trust Jesus.” This statement hangs from telephone poles, light poles, and on the side of buildings. Occasionally, we have observed it on trees. The signs look the same, as if there is an individual, perhaps several, or an organization placing them across the United States. These signs, which I have observed, have been in every state where we have traveled. They appear when I need to see them and to be reassured about the trust I have in Jesus and His grace and mercy. Once I saw one when I was wary of driving, getting punchy and tired; the statement refreshed me. Another time, in severe weather, again I saw one while I was in a traffic jam. Trust Jesus, a two-word sentence, a simple statement, yet a complex concept for those who do not know Him, even those who know Jesus or know about His works here on earth. P roverbs 3:5-6 reads, “Trust in the Lord with all your heart and lean not on your own understanding; in all your ways submit to him, and he will make your paths straight.” Now, not all roads are straight. Some are curvier than others. Sometimes, frankly, one wonders why that path (route) was chosen. Yet, “trust Jesus” can be the focus, goal, destination, and final result in all circumstances. Roads and highways lead to somewhere; Jesus leads to eternity. Roads can take you where you do not want to go. Jesus will lead you to

Almost everyone loves bananas!
I know there are a few palates that don’t find the sweet, buttery, fragrant fruit pleasant, but I don’t know too many of them, personally. A ripe banana eaten out of hand, sliced onto cereal, or combined with peanut butter in a sandwich is a favorite of mine. Baking with bananas is also common, and this recipe takes our beloved banana bread to another level with coconut and pistachios, a truly tropical treat for the tropical climate in the RGV (most months)! • Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the Winter-Texan season at Palm Shadows RV Park in Donna. Banana Quick Bread with Coconut and Pistachios

2 cups all-purpose flour ¾ teaspoon baking soda ½ teaspoon salt 4 tablespoons real butter, softened 1 cup white sugar 2 eggs

1 tablespoon apple juice 3 tablespoons plain, low-fat yogurt 1½ cups mashed ripe bananas ½ cup sweetened, flaked coconut 1 teaspoon real vanilla extract ¼ cup shelled pistachios, chopped
Preheat the oven to 350 degrees, and place a rack in the center position. In a large bowl, combine the flour, baking soda, and salt, stirring with a wire whisk to combine. Set aside. In the large bowl of an electric mixer, beat the butter and sugar on mediumhigh speed until well blended, about 1 minute. Add the eggs, one at a time, beating to combine between additions. Add the apple juice, yogurt, bananas, coconut, and vanilla. Beat on medium speed until well blended. Add the dry ingredients, and mix on medium speed just until blended and no flour is visible. Stir in the nuts. Spray a 9x5-inch loaf pan with cooking spray, and spoon the batter into the pan. Bake 55-65 minutes or until a toothpick inserted into the center comes out clean. Remove from the pan and cool on a wire rack. •

Citrus Tarragon Chicken Serves 4

• 8 chicken breast halves, skinned and boned • 2 tsps. cornstarch dissolved in 1 Tbsp. water Marinade: • 1 Tbsp grated orange peel • 1 cup fresh orange juice • ¼ cup fresh lemon juice • 1/3 cup honey • 2 Tbsp. Worcestershire sauce • 1 tsp dry mustard • 1 Tbsp. fresh tarragon (or 1 tsp. dried tarragon) • Salt and pepper (to taste)
Preheat oven to 350 degrees. Combine all marinade ingredients; pour over chicken. Cover and refrigerate for 2 hours. Place chicken and marinade in a 13 x 9 baking dish. Bake, covered, for 30 minutes. Take chicken out of marinade. In saucepan, combine marinade with cornstarch. Cook over low heat, stirring until thickened. To serve, ladle sauce over chicken. Balsamic Ginger Grilled Flank Steak with Bleu Cheese Dressing
With the holidays behind us you may be focused on making some healthier
nutritional choices. If you are choosing more vegetables and fruits and almost no grains and processed foods, this dish is perfect over some field greens or paired with some grilled asparagus. The flavors begin with the marinade and if you want to go lighter you could skip the sauce and choose a vinaigrette instead. Happy Health & Bon Appétit! • • 1 1/4 pound beef flank steak • 2 tablespoons olive oil • 2 tablespoon balsamic vinegar • 1 teaspoon brown sugar • 1 teaspoon minced fresh ginger
For the sauce:
• 2 cloves garlic, minced • 1 medium red onion • 1/2 teaspoon salt • 1/4 teaspoon freshly ground black pepper • Fresh parsley for garnish
• 4 ounces crumbled blue cheese • ½ cup low-fat buttermilk • 1 teaspoon Worcestershire sauce, or more to taste
• Fresh lemon juice to taste • Kosher salt to taste

Place the steak pieces between 2 pieces of plastic wrap or parchment and pound to ¼ inch thickness. Slice the onion into 1/8-inch slices and separate into rings. In a small bowl, whisk together the olive oil, balsamic vinegar, brown sugar, ginger and garlic. Place the steak and onion rings into a sealable plastic bag with the marinade and let sit for at least 1 hour in the refrigerator (you may have to cut it into two pieces). Allow to rest at room temperature for 20-30 minutes before grilling. In the meantime, in a small bowl combine/mash the blue cheese and buttermilk until creamy. Stir in the Worcestershire, lemon juice and salt and set aside in the refrigerator to allow the flavors to come together. Spray a large grill (or grill pan if cooking indoors) with cooking spray and preheat over medium-high heat. Remove the meat from the marinade and season both sides with salt and pepper. Discard the marinade. Cook the meat over medium-high heat for about 3 minutes per side for medium rare. Add an additional minute for a slightly more well done steak, keeping in mind it will continue to cook after you remove it from the grill. Slice it against the grain and serve it with the grilled onions. Serve with blue cheese sauce and garnish a sprinkling of minced fresh parsley. •

ell, here come the Deep South Texas Master Gardeners to the rescue. February 5 and 12, we will sponsor a Gardening 101 class. You will learn to become a green thumber. Those dates Saturdays, so no excuses. Class starts at 9:00 a.m. and runs until 3:00 p.m. The cost is $65.00 per person, which includes a handbook. If you have a partner or friend who would like to attend, and you are willing to share the handbook, you both can attend for $90.00. That’s a savings of $25.00. Oh, by the way, this is a co-ed class, so husbands and wives are welcome to attend. These prices are good until January 26. After that, the prices increase to $75.00/person and $100.00/couple. Now, this is a Master Gardener class, so lunch will definitely be served; however, you may find some of those veggies on a pizza. Subjects being taught during this course are: Soil, Water & Fertilizers, Herbs in the Garden (Some luncheon
