It’s no secret that our Winter Texans stimulate the economy here in South Texas. I shout it from the rooftops every chance I get! You don’t have to be a rocket scientist to see it, either, especially those of us who are immersed in the Winter Texan world. But for those who don’t witness it day in and day out like we do, it’s important for us to have the data to prove it. It’s been awhile since an economic impact study has been done, and with no indication of one in sight, we decided to take it upon ourselves to get the ball rolling so we could serve the proof--along with the pudding. In this issue, you’ll find our Winter Texan survey. I’d love it if you would participate! Please! A

s the doors opened day one of the Winter Texan Expo and Health Fair, a stream of enthusiastic visitors fanned out across the large hall of the McAllen Convention Center. Attendees carried the Expo’s signature, bright orange, reusable bags to store pamphlets, business cards, and freebies distributed by vendors excited to share. ountry Sunshine RV Resort residents Arlene Hirsch and Kathy Anderson always have Christmas on their minds. While cookies and carols are part of the reason why, it’s about more than just the season’s festivities. The friends and Converted Texans who hail from North Dakota and Minnesota, respectively, got involved with the park’s Christmas fundraiser benefiting local students a decade ago and are constantly trying to grow it to help more families. They help fundraise for the project year-round. When the season arrives, they purchase toiletries, clothing, and grocery gift cards to go to anonymous families from a local elementary school who are in need. “We find out how old they are, so we buy an age-appropriate gift for the children, and they’re very appreciative,” Anderson said. One major way they collect money is by creating baskets to raffle off during the park’s events and dances. With so many events to entertain the full-time and seasonal residents, the duo stays busy and is already at work for this year’s distribution.

“We have concerts here at the park, so we sell raffle tickets at the concert, as well as our weekly meetings,” Hirsch said. “Last week, already, we exceeded our goal of what we thought we would raise.” Hirsch and Anderson are able to create the baskets with items donated by their fellow residents. “The park jumps in to help. Everybody pitches in,” Anderson said. “We receive gift cards, bottles of booze and wine--lots of booze-they like that. It’s a good seller.” The mission has even spread outside of the park. Local restaurants donate vouchers to include, and they have had local school faculty visit to help assemble the baskets. In 2021, they raised enough money to help 22 families--with a total of 77 children--celebrate Christmas with necessities and gifts. “People within the park get very excited about it,” Hirsch said. “If we manage to do better one year, that’s great. If we don’t, we just continue to work with what we can do. We all enjoy the Valley so much and want to do something to give back to the community.” •

f you Google “sunflowers Rio Grande Valley,” quite a few articles come up with the top farms to visit in Texas, but none of the writers seem to be aware of any south of the Hill Country. However, there are sunflower fields down south, including at Tres Lagos, at the corner of Monte Cristo and Shary Roads. The best time to see them is May through June. Luckily, you don’t need a whole field to enjoy sunflowers. Last spring, sunflowers began popping up right in our back yard. •

Each hour, door-prize-ticket numbers were announced over the loud speaker. Subsequently goody bags, gift baskets, gift certificates, and t-shirts were handed out by Welcome Home RGV’s Amie Gray and orange-clad volunteers. Later that morning, a ceremonial ribbon cutting hosted by representatives and leaders from Mexico’s State of Tamaulipas, with special guest McAllen Mayor Javier Villalobos, created excitement around the Tamaulipas section of the Expo. “It’s good to be back!” mused Kristi Collier, owner of Welcome Home RGV, which puts on the Winter Texan Expo. The Expo and Health Fair showcased a variety of vendors offering information on things such as travel, financial planning, local eateries, and excursions. This year’s Expo allowed for more oneon-one engagement. Diana LeBlanc-Link has been with PPL Motorhomes for 42 years and has participated in the Expo for nearly two decades. “It’s been amazing,” she shared. “The attendance is lower, but the quality is amazing.” A focus on health-care services is paramount. Presenting sponsor South Texas Health System took every opportunity to share information with attendees regarding topics like nutrition, signs of stroke, and blood-pressure readings, to name a few. A demonstration of stretching exercises that can be done in a seated position, led by a South Texas Health System physical therapist, saw seniors sitting alongside high-school students, all joining in on the session. The Donna ISD students, looking like healthcare professionals themselves, wearing scrubs and badges, stood out from the traditional attendees of Winter Texans, retirees, and senior citizens. But there’s a growing connection between the two. “This population is continuing to grow, and we’re the future of health care,” said student Katherine Alejandro. She shared how the group learned about insurance, how health organizations operate, and health-care career opportunities. Overall, the feedback on the Expo was positive, as attendees stopped by the various Welcome Home RGV booths sharing praise of the wider aisles, entertainment lineup, and the information gathered. •

The 90th Diamond Anniversary Celebration started January 20 with the Texas Citrus Fiesta Carnival, and

Livin’ La Vida Loca in Progreso Get your sombreros and head for the border by Gretchen Losi

I

f you haven’t been to visit our neighbors to the South in Nuevo Progreso (known locally simply as Progreso) for the day because it’s a tad overwhelming and you’re not sure just where to start…it’s here. Here is where to start! Let us help take the guesswork and intimidation out of what will likely become one of your favorite places to shop and eat for the afternoon. There is so much to see and do in this colorful border town that one visit--or five—is never enough to take everything in. The streets are lined with every vendor under the rainbow, selling novelties hard to resist, including monogrammed grains of rice and dog tags, authentic sombreros and palm hats (like the Tula Hat), handmade holiday decor, wallets, purses, children’s toys, and custom jewelry, to name a few. Then there’s the food vendors. Oh, those glorious food vendors, with their elotes, churritos, and fresh fruits and vegetables, with or without a sprinkling of their traditional chamoy. There are men with coolers filled with vapor tacos, lonches, tamales, empanadas and chicharones. It’s a street foodie’s paradise. For those not brave enough to dive into the street food, have no fear. There’s a tasty restaurant on every corner. Ponchos is a long-time favorite among locals and visitors alike, a great place for friends to gather for an afternoon of live music and dancing to go with their tacos and beers. A quieter, more reserved dining experience is waiting for you just up the street at Arturo’s, where their cabrito and fajitas are legendary. They have been serving these favorites for several decades, to the delight of at least four generations in the Rio Grande Valley and Mexico. Then there are the shops. They are a bit like Disneyland for grown-ups. There is so much to see and experience, and everything is so full of color that it’s almost a stimulation overload--in the best way. In shops like Galerias and El Disco Super Center you’ll find the best Mexico has to offer in terms of pottery, handmade art, cookware,

molcajetes, and comals. They also have all the fun stuff, like lucha libre masks, wooden Mayan masks, musical instruments, and traditional home decor. And, of course, there’s the coveted Taxco silver jewelry. For the chef in your life, you’ll want to grab some Mexican vanilla (You’ll thank us later!) and some famous Mexican chocolate. While you’re at it, stop into a local tortilleria and bring home warm, fresh, corn and flour tortillas. I mean, how many people get to have tortillas they brought straight from Mexico? What a treat! There’s also a world-class collection of liquors, especially tequilas. Many of the bottles are beautifully designed and unique, more like pieces of art than bottles of booze. They make great gifts and are a favorite of many. Take note! Customs can be stinkers about this, so always verify the current regulations for the amount of liquor the law allows each person to bring into the U.S. duty-free. As with the pharmacy, if you have questions about what you can and cannot bring back to the States, ask your clerk. Most speak English and are very familiar with the laws and are happy to help you navigate them. There are also a few Facebook pages that offer tips and recommendations for planning your day, including Welcome Home RGV and Nuevo Progreso. Pro Tips: From the locals Walk, don’t drive. It’s just safer and easier all the way around. If you want a bigger item, like furniture, feel free to ask the store clerk for a “runner” who will transport your larger goods, either meeting you across the bridge that day or scheduling a delivery to your home. There is an additional charge. Dress comfortably, and don’t wear open-toed shoes. The streets can be grimy after a rain, and many sections have dirt roads. Stay on the main road with the crowds. There will be a host of loud, anxious locals screaming for your attention to take you to their pharmacy to dentist or to shop,

just as you enter Mexico. Trust us! Everything you need is right on the main street. There is no need to follow anyone you don’t know, anywhere. Bring change. You’ll need it to get into Mexico and also to get out. If you’re feeling charitable, bring all the change you have and share it with any one of the dozens of children who will have their hands out, either under the bridge or on the streets. Many will also sell you novelty items, like gum or bracelets. Fanny packs are in--at least they are here. And for the protection of your wallet and personal items, it’s suggested you wear one. (This rule applies to traveling anywhere). It makes it harder for someone’s thieving fingers to get what belongs to you. If you go to a pharmacy, do your homework first. You want to go to one that has been around a long time and has a solid reputation. Parking is on either side of FM 1015, making it easy to just walk across. The cost of parking is minimal at both lots. If you are a U.S. citizen, it’s easiest with a passport. If you don’t have one, a driver’s license or state-issued ID, along with a birth certificate, will also suffice to come back to the U.S. •

Celebrate 10th Annual

Lunar New Year Festival at IMAS Special to Welcome Home RGV

C

elebrate the Year of the Tiger at the International Museum of Art & Science (IMAS) Sunday, January 30, from 1:00 to 5:00 p.m. The 10th Annual Lunar New Year Festival will feature traditional Chinese, Korean, and Taiwanese calligraphy, crafts, games, performances, and vendors. Lunar New Year Festival at IMAS is made possible with support from the IMAS Guild and a grant from Humanities Texas. Musical and dance performances will be open to visitors as part of this cultural celebration. At 1:30 p.m. Dr. Young Sin Choi, violist, and Dr. Stacy Kwak, pianist, will perform a short set. Students of Connie’s Music Studio will perform on piano at 2:15 p.m. Visitors can dance to K-pop with Levanter Dance Team at 4:00 p.m. Activities include Chinese red envelopes, story time with the McAllen Public Library, traditional Korean games and activities coordinated by Mijin Oh-Villarreal, K-pop bingo hosted by the Korean International Student Society, and calligraphy by Pierre Lu and Chandler Kang. Visitors can take a special token home by participating in fan painting for $2, while supplies last. End the day with a relaxing 10-minute meditation during Zen Time with Chandler Kang, starting at 4:20 p.m. Special vendors featuring handmade items inspired by

Chinese, Korean, and Taiwanese traditions and K-pop fashions will be on site. Participating vendors include RGVKPOPLIFE, Stardust Menu, Blvehour Shop, Adaxce Kreations, and HMG Designs, among others representing a diverse array of distinctive cultural items. “I am thankful for the support of the local Asian and Asian-American community who make it possible for IMAS to host such a rich and educational cultural event,” said IMAS Director of Education Claudia Martinez Gray. “We recognize the importance of honoring all cultures, and Lunar New Year is a significant event that we are pleased to celebrate with our community.” Special thanks to participating performers and our community partners, Korean International Student Society (K.I.S.S.), McAllen Public Library, Taiwanese American Association, and UTRGV Writing and Language Studies – Korean. ecently, we were at our friends’ house; they have a grandfather clock that has been silent for years. That bothered me. It bothered me because the clock… simply…was not designed to be silent, but there it stood, regal, handmade by Charlene’s grandfather, one of a pair for each sister…silent. When we took a good look at the clock, we could see the polished pride of a grandfather’s love for his kin. We could see the work of making the structure not only beautiful but strong and sturdy. Only one thing was wrong; the heart of the clock, the reason for its being, didn’t run. There was no tick, no tock, no chimes, just a silent piece of beautiful wood taking up wall space with no functionality. Pretty as the grandfather clock was, it didn’t have a purpose except to say, “Well, my grandfather made it for me, but it isn’t working now.” Curt and I took the back off, attached the chains, hung the weights, set the pendulum and started it swinging! To our surprise, the clock started ticking--tick, tock, over and over again. The hands moved, the chimes chimed. We were really proud of ourselves…until it stopped after fewer than five minutes. Darn. We thought we had it solved. We tried everything--leveling the structure, gently blowing the dust out of the clockworks, making sure the chains were on right and not hanging up. Nothing worked. It seemed the heart of the clock just was not going to run. Finally, we tried one other thing. We checked to see if the clockworks were level. After several tries, we had the mechanism level. Again, we swung the pendulum--tick, tock, tick, tock. The clock sounded different; the sound of the ticking was solid. Two hours later, and it was still running! What was the difference? A simple, theological concept. When your heart is right (level) with God, you are in sync

(in time) with His will. When you are not level with God, you run sometimes and then quit. Then your pendulum of commitment has to be pushed to start again. Like Charlene’s clock, we need to level with God--confess our sins, lay our cares and concerns at His altar. Then, and only then, do we find our heart, like the grandfather clock, ticks on and on because we are level with Him. When we confess our sorrows, concerns, and cares, it is like the clock. He takes them and allows us to continue running. If not, the weight of our burdens causes us not to run. We simply stop until we lift our heavy weight and give it to Him. Now the house sounds with the passing of time every 15 minutes, chimes every hour. Our lives can ring out the joy, blessings, and grace, and a clarion call of time passing before our Lord comes to claim His church--and we will run for eternity. •

T

he 26th Annual Winter Outdoor Wildlife Expo returns for an entire week of speakers, shows, exhibitors, and more! The W.O.W.E. is the perfect place to see and learn all about the ecosystem of South Padre Island. The ecosystem is diverse because of the unique location of South Padre Island, as it is surrounded by the Laguna Madre Bay and the Gulf of Mexico. The bay is home to many finfish and is an important feeding ground for the local and migrating birds. At the same time, the Gulf of Mexico brings in sea turtles, dolphins, and deep-sea fish people can interact with daily. To learn about any aspect of the ecosystem or to see the wildlife, you must visit the ecotourism facilities individually. With the Wildlife Expo, all these topics are brought together so visitors can get the whole experience in one convenient location. The Expo will be held at the South Padre Island Birding, Nature

S

pending time in a South Texas RV park, it is easy to see that Winter Texans enjoy a lot of music. Some of the events I attend are jams. This is sort of like live karaoke, with individual people going on stage and sharing a song with the band. Most of it is old-style country, and the quality of the singing varies from quite bad to quite good. But as I listen, I am struck by the impression that the visuals are all wrong. Here are 75- and 85-year-old men and women on stage singing about being crazy in love, having boots under the bed, and standing by your man. In

my brain, colored by Nashville and Hollywood, these are themes to be sung by younger, prettier people. Then I got to thinking about it. Who is the more credible artist, the current, popular 22-year-old who has never sustained a relationship for more than four months or the 80-year-old whose wife or husband is sitting in the audience cheering them on? Who has the better story, the millionaire superstar on a professionally managed tour or the gal who has lived and survived life’s hard knocks and is now singing her heart out for free? Then I thought about the private moments I got to see in my professional life. I see the faithful husband sitting with his wife in our care facility every day, never missing. I see the grieving wife sitting and holding her husband’s hand as he

prepares to depart, she hanging onto him in support of every last breath. I see love-filled relationships. I see people who have been kicked hard by life, with hard-earned wrinkles and deep wounds but who have survived to be strong. I see those who have impacted their world in profound ways and who continue to do so, even in advanced age. The visuals are wrong, but that is OK. They have earned the right to sing and to sing off key if they want to. And when they do, I will believe them because they have earned the right for their stories to be heard. I’m not talking about the lyrics of their particular song. I am talking about “their” story, the one that comes through in their voice, in their courage to stand and sing before a crowd, in their spunk that keeps them engaged in life. And it’s

OK if they sing it loud. I’m just sayin’. •

J

ust off Military Highway in the sleepy town of Progreso Lakes is a bit of railroad history that shouldn’t be missed. Built in 1926, the Missouri Pacific Lines mastered a mission-style station that still stands beautifully today. The station was part of the Spiderweb railroad, named after its intricate network of lines of spurs. This station, and the special network to which it belonged, was responsible for many endeavors, including getting the Rio Grande Valley’s coveted agriculture to markets throughout the country. It also imported goods from Mexico and served as a community hub and citrus-production center before it closed in 1931. The station was restored some 25 years ago and has been used as a commercial building for local businesses ever since. The station is located behind Beckwith Farms, off Business FM

he Ladies of La Floresta recently enjoyed a guided tour of the Basilica of Our Lady of San Juan del Valle National Shrine in San Juan. It is beautiful year-round but especially during the Christmas holiday. Our guide, Sister Rose, shared with us its

amazing history. Also on the grounds are life-size, bronze statues and solidoak crosses depicting the Stations of the Cross. Prior to the tour, the ladies enjoyed a delicious lunch at El Rancho Grande, also in San Juan. •

pples are everywhere! Depending on what recipe you are making, there are cooking apples and eating apples. Eating apples are generally crisp and sweet and are used raw in salads or desserts. Cooking apples are less sweet and don’t fall apart as much when cooked. They will retain their shape, even when totally cooked through and soft. This recipe uses cooking apples. • Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the Winter-Texan season at Palm Shadows RV Park in Donna. This season, Sandy will be sharing recipes to help readers enjoy the abundance of delicious fruits we find in our local markets. Sandy claims she’s been “a bit fruity” since childhood. Apple Pancakes • • • • •

2/3 cup all-purpose flour 2 teaspoons white sugar ¼ teaspoon salt 4 large eggs, beaten ½ cup whole milk

• 2 cups apple slices (Honeycrisp; Golden Delicious) • ¾ cup real butter (1½ sticks), unsalted, if possible • 2 tablespoons brown sugar • ¼ teaspoon ground cinnamon

Sift together the flour, white sugar, and the salt. Beat the eggs and milk together. Gradually add the flour mixture and beat until smooth. Melt 4 tablespoons of the butter in a heavy skillet and sauté the apple slices until tender. Mix the brown sugar and cinnamon together and toss with the apples. Melt 2 more tablespoons of butter in a deep 6-inch skillet. Pour in batter to the depth of about ¼ inch, and let it firm up. When set, place ¼ of the apple slices on top and cover with more batter. Fry the pancake until lightly browned on both sides. Keep it warm while you repeat the process 3 more times to use up all the batter and apples. Serve immediately, dusted with powdered sugar, if desired. Cinnamon syrup can be used, as well. •

• Grapefruit chia jam (see below) • Store-bought coconut yogurt • Grain-free granola Grapefruit chia jam: • 1 grapefruit, ½ zested and juiced, ½ segmented and cut into bite-sized pieces • 1 Tbsp. plus 1 tsp. Chia seeds • 1 tsp. fresh ginger, grated To make chia jam, combine ingredients in a small bowl and let stand for 45 minutes to 1 hour, stirring occasionally, until thickened. he Senior Ambassadors Men’s Chorus is comprised of senior men from the Rio Grande Valley and many other locations around the U.S.A. and Canada. Our members bring a broad range of musical experience and background to the group. The Senior Ambassadors’ motto is “Loving Life, Making Music.” Virgel Kroeker is in his thirteenth season as director of the chorus. The Senior Ambassadors begin rehearsals in November and perform their musical selections in many RV parks and resorts throughout the Rio Grande Valley during the months of January, February, and March. The size of the chorus fluctuates from

year to year. The Senior Ambassadors Men’s Chorus had its beginning in 1981, when eight men came together to share their love of singing. They have been entertaining audiences ever since. The members’ ages range from the 60s to the 90s. Practice sessions take place every Friday afternoon at Bentsen Grove Resort from 1:00 to 3:00 p.m. If you enjoy singing, you are welcome to attend any one of our practice sessions to find out how you can join our group. White Bean Chicken Chili

ith this colder weather, our souls and stomach’s search for warm, comforting soups and chili. If you are also trying to keep things relatively healthy, here is a way to achieve both at the same time! This white bean chicken chili is super delicious and soulfully satisfying, yet also low in fat and calories. I suggest you double or triple this recipe for a crowd. Bon Appétit! • Serves 4-6 For the Chicken: • 4 split chicken breasts, bone in, skin on* • Olive oil

• Kosher salt • Freshly ground black pepper

Preheat the oven to 350 degrees F. Rub the chicken breasts with olive oil and place them on a baking sheet. Season generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin; cut or shred into pieces. Set aside. *Chef’s note: If you are pressed for time, or just don’t feel like it, it is perfectly fine to use a rotisserie chicken or two from the grocery store, rather than roasting the chicken.

• 2 Tablespoons Pure Olive oil or Canola oil • 3 medium yellow onions, small diced • 2 cloves minced garlic • 2 red bell peppers, seeded and large diced • 2 yellow or orange bell peppers, seeded and large diced 1 • tsp chili powder • 1 tsp ground cumin

• 1/4 tsp dried red pepper flakes, or to taste • 1/4 tsp cayenne pepper, or to taste • 2 tsp kosher salt • 2 (28-ounce) cans diced San Marzano tomatoes, un-drained • 1/4 cup minced fresh basil leaves • 1 (15-ounce) can white cannellini beans, un-drained

Sauté the onions in the oil over low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 additional minute (taking care not to burn the garlic). Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Add the tomatoes to the pot with the basil. Bring to a boil, and reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. Add the beans and cooked chicken to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings. Suggested toppings for serving: • Avocado slices • Diced red onions • Blue corn tortilla chips • Sour cream
