Last week was full of excitement, with our 1st Annual Bayside Fiesta! I have to admit, I was a little worried planning an outdoor event in January, but one thing’s for sure; Texas weather can be unpredictable (at least in the winter, anyway). But the stars aligned, and the weather cooperated, which set the stage for an incredibly fun-filled day. The entertainment was phenomenal, with Rusty Rierson, Curt James, Winnie Brave, Ron Moshier, Rick McEwen, and Leslie Blasing. That’s the entertainment dream team! While this was technically our first event on South Padre Island, we have a whole lot more planned across the Rio Grande Valley for next season. We enjoy bringing people together. It’s what we do, and we look forward to our 2nd Annual Bayside Fiesta January 25, 2023, sprinkling in some surprises along the way! hey were lining up outside Louie’s Backyard on South Padre Island well before doors opened at 10 a.m. Couples, singles, friends, all anticipating a day of live music with bayside views. Alamo Couple Finds Energy, Joy Helping Others and Lynn Massingill seem to do it all. The couple, married 54 years, have called Alamo’s Trophy Gardens RV Resort home for the last seven years, but their time in the Valley dates back decades. While they left Virginia to retire full time in the RGV, they previously lived in Brownsville and other parts of Texas. The region has tremendously grown in the decades since, but there remains a familiarity that makes them feel right at home. “It isn’t totally new to us,” Glenn said. “We like the people, and we like to be warm.” Around the park, they help with the dances, church, pickleball, fundraisers, golf-cart parades, and more. “We have a good time; we don’t tell our kids half of what we do,” Lynn said. “When our daughter calls us and asks, ‘What do you guys have planned for today?’ we’re like, ‘Well, we’re going to be busy,’ but we don’t share just how busy. She wouldn’t believe it if we did.” The Massingills have even taken up selling houses, and it happened by accident. “It started off with one couple that had a nice park model here, and they decided during the summer they weren’t going to be able to come back because of health reasons,” Lynn said. “They called me and asked if I would help sell

their house, so I did.” From then on, they’ve helped sell more than a dozen homes in the park, with Glenn handling the paperwork. “If we can help somebody else, we’ll help them,” Glenn said. “Our park is good at helping--all of us. That’s our way of making friends. If we just sat there and didn’t do anything, we would grow old. So we socialize and take part in all the different things and find ways to help.” They also stay active by traveling. Typically, they travel and visit family during the summer, but they haven’t in the past few years due to the pandemic. However, this has deepened their appreciation for the park, pushing them to be even more involved and building upon their friendships. “With COVID, we actually learned that we like it a lot down here in the summertime; it’s different,” Lynn said. “There are not nearly as many people in the park, but we like all those people and get to do a lot together during this time.” Lynn adds, the more they take on, the better off they are. “I believe you have to keep going and doing things or else pretty soon you can’t,” she said. “So this is our exercise, our entertainment; it’s all kinda mixed together.” •

he Museum of South Texas History presents the spotlight exhibit Otis Bell’s Edinburg, in observance of Black History Month, February 1 27. In the late 1990s, Bell’s granddaughter, LaTanya Bell, was tasked with interviewing Otis Bell for a college class assignment. The oral history includes historical information about the city of Edinburg between the 1930s and early 2000s and its local families, businesses, and school system. The spotlight exhibit will feature the full oral history, photos of Otis Bell, and a variety of photographs of historic Edinburg locations. Visitors
can view the exhibit in the Annex Hallway at MOSTHistory, included in the regular Museum admission fee. Soon, the bar was hopping and wait staff were hustling to serve draft and bottled beer, cocktails, soft drinks, and baskets piled high with fried fish or shrimp. Rusty Rierson, a well-known entertainer in the Winter Texan community with a baby face that makes one question his age, took to the stage, kicking off the day’s entertainment as he played country medleys and a tongue-in-cheek song about a questionable fur coat. Despite the chill of the morning and brief cloud cover, when Curt James the Entertainer asked from the stage if it still beat winter in the Midwest, the crowd responded in unison with a resounding, “Yes!” As patrons continued to eat, drink, dance, and laugh, James, emcee for the morning portion of the event, introduced himself as the next performer with signature humor. He brought the crowd to their feet not with his rendition of “Where the Stars and Stripes and the Eagle Fly.” Americana duo Winnie Brave took to the stage, adapting classic hits like “9 to 5” and “Bobby McGee,” with their unique style and suitcase-drum accompaniment. By mid-day, the sun was out for good as Rick McEwen sang, played guitar, and garnered laughs from the crowd, with jokes about an encounter on the local nude beach. Later, Ron Mosher kept the partying going, working the keyboard and even the accordion, injecting a bit of polka into the mix. Leslie Blasing’s set closed the show as she incorporated impromptu duets with McEwen and Mosher, taking to the audience, microphone in hand, allowing for a front-row experience for patrons in the back. Blasing packed the dance floor with hits like “Uptown Funk.” As you might have guessed, it was a pretty spectacular way to spend a Wednesday in January. Sunday Drive to Mission
Hoping it’s just intermission at historic Rio Theater by Gretchen Losi
I
n 1912, a Spanish emigrant who was a bricklayer by trade, decided the people of Mission needed a place to come to hear lectures, watch plays, and be entertained. So, Juan Bautista Barbera used his skills and built El Teatro La Paz (Peace Theater). His labor of love served as a special staple of the community for generations, including as a soup kitchen during the Great Depression. After the Depression, some of Mexico’s biggest names from the silver screen could be found-there on the big screen delighting generations. The name changed, with ownership, around the end of the war in 1945 when it became the now iconic Rio Theater. It has been under ownership with that family since and, like before, also served the community in a variety of ways. There is currently an air of
uncertainty about the future of this structure. There are only one or two businesses still existing in the decaying structure. For locals, this is bittersweet, as it still holds a special place in the hearts of those who know its charm. But many are hopeful that René Barbera, the great-grandson of the original builder, will once again turn it into a labor of love so it might return to its rightful place as a sparkling jewel in Mission’s crown once again. Barbera has said on more than one occasion it is his dream to bring the theater back to the Barbera family to once again be a significant art and cultural hub for South Texas. •

A
steady stream of people flowed through the 36th Annual Rio Grande Valley Woodcarvers Show in January at the Nomad Shrine Club in Pharr. The curious browsed the individual booths showcasing various wood-carving and woodworking techniques, as hobbyists and experts shared tips. Artist Becky Anthony took Best in Show with her piece, “Leather and Lace,” a large gourd artistically manipulated to look exactly like both. Expert carvers Adair Rucker and Rich Wetherbee served as judges in a multitude of categories.
The RGV Woodcarvers group meets every Thursday, 8 a.m. to noon, October through March, at the Nomad Shrine Club in Pharr, 1044 West Nolana Loop. hat right do we have to be happy? Is being happy an entitlement, a gift given and sometimes taken away from us? Is being happy “hard-wired” in our personalities, and just why are some happier than others? Loneliness is a circumstantial choice a person can make. However, an incarcerated person in solitary confinement did not make that choice. Yet one can still choose to be lonely, happy, sad, or any other human emotions that span the feelings one can have. What keeps us from sorrow and sadness, as each emotion and feeling conjures up different emotional responses to our life circumstances? We look forward to traveling in our RV to places we have visited before because they create happiness in the planning-the trip and what we remember from the last time we were there. But sometimes disappointment sets in. This time the memories are not as sweet, precious, or exciting as we thought. Why is that? What has made the difference this time? We embellished our previous memories and created a false sense of how much fun and happiness we had, and this time is a different reality. Happiness is not a right, a privilege assigned to us at the beginning of life or our RV trip. Happiness comes from accepting the circumstances of the situation we are in now. Someone said, “We make happiness from the circumstance we are presently in, just as we can create sadness, sorrow. It is up to us to decide our emotion.” Wow. That is an emotional mouthful to digest. When we have a breakdown with the RV, we know there is a traveling schedule change and an opportunity to be upset or agree to the new timeframe. Making the best of what is offered is something we can accept. The Bible, in Psalm 46:10, says, “Be still and know that I am God.”

Perhaps much of our happiness comes from being still and listening to the quiet, thundering voice of God as He speaks to our hearts. Although we do not see breaking down as a good thing at the time, there could be many reasons about which we are not aware--severe weather, traffic--yes, even a speed trap! When we had a tire that blew out as we were going 55 miles per hour, the incident became a positive experience. I first thought this would ruin our day, but it was just the opposite--with a divine appointment. It turned out we were in for a pleasant surprise. Not only did the repairman fix our tire, but we had a great discussion about faith and divine appointments, not just a chance meeting between RV owner and RV rescuer. We were finally on our way, safe and happy; just another example of Christian happiness, this time repairing a tire. •

Let’s Go to Raymondville!

f you’re looking for a beautiful drive that leads you to some stunning architecture, tasty burgers, and the quintessential panadería, head to Raymondville. The drive is special, no matter what end of the city you’re driving in on. The country scenery, fields of sugarcane, and giant birds of prey fill the sky for miles. Keep your eyes open for a roadside fruit stand, and you may go home with some of the freshest Texas pecans money can buy. Once upon a time, the city was home to a couple of the world’s foremost bootmakers, Abraham and Zeferino Rios. They arrived in the Rio Grande Valley around 1925 and started their boot empire in Raymondville in 1928. Since then, their iconic boots have been worn by celebrities and world leaders, including Prince Charles. Rios eventually moved their manufacturing to Mercedes, but the original, historic building still stands. Today it is home to the Boot Co. Restaurant. Now famous for their
catfish and hamburgers, the eatery did a great job of maintaining the integrity of the original boot factory and kept the decor as an homage to the boot history that helped put the tiny town on the map. You’ll find decades-old news clippings and photos on the walls and kitschy décor, including quite a few of Rios boots, peppering the establishment. Raymondville has a couple famous burger spots the locals love, which brings us to Grandma’s Kitchen. Second only to her famous hamburgers, what the locals love most about Grandmas is her commitment to the Dallas Cowboys. Her pride can be spotted everywhere, from the Cowboys-themed Volkswagen Bug in the front parking lot to the painted murals throughout the restaurant. Another roadside stop is the Raymondville Public School. Established in 1924, it has been transformed into the Willacy County Historical Museum, highlighting the region’s accomplishments and those who helped. The structure, which also serves

as a community center, is stunning, using the old, red-brick design from the early 1900s. If you stop, be sure to walk the halls, as the beautifully designed patriotic murals are worth the entire trip. They honor the brave men who fought in world wars and local soldiers lost in battle. The most impressive architecture in town might be the Willacy County courthouse. It’s on the main road and stands regal, with its red brick and white trim. The structure is breathtaking and takes you back to a different time, with its hand-carved wood trim. The building is so sturdy it served (and may still) as a fallout shelter. While it is currently undergoing maintenance and a makeover, it can still be viewed from the grounds that also serve as the town’s small, but impressive, Veterans Memorial. As you drive through the downtown, be sure to take in the classic, artdeco architecture of the historic Texas Theater. While no longer in business, it stands as a nostalgic reminder of simpler days, with hoop
skirts and saddle shoes. While you’re in town, be sure to stop in at Lara’s Bakery. Her traditional empanadas and conchas have kept generations smiling and coming back for more. It’s a wellknown and loved local panadería. Once you have your pan dulce, you’re ready to hit the road for one more stop. Just 20 minutes east of Raymondville is the beach at Port Mansfield. or those whose tummies rebel when eating citrus, because of the acid, tangerines may be the answer. You’ll get the same tangy sweetness as oranges, the fragrance of lemons, and the defined segments (as from a grapefruit) but with only a subtle tartness and less acid. They peel easily, and some varieties are seedless. The segments come apart readily. Using citrus fresh, as in this sauce or dressing, is a great way to enjoy the flavor without cooking it away.• Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the Winter-Texan season at Palm Shadows RV Park in Donna. This season, Sandy will be sharing recipes to help readers enjoy the abundance of delicious fruits we find in our local markets. Sandy claims she’s been “a bit fruity” since childhood. ½ cup tangerine juice • 2 tablespoons unseasoned rice vinegar 1 teaspoon grated tangerine zest • 2 teaspoons Asian toasted sesame oil 1 large clove garlic, finely minced • 1 tablespoon finely sliced green onion Kosher salt and freshly ground black pepper to taste
Combine all ingredients, except the seasonings. Whisk together well; then taste and adjust for necessary salt and pepper. Spoon this dressing over roasted or grilled vegetables. (Can also be used as a dressing for a simple green-lettuce salad.) •

Makes 1 loaf • 1 large orange • Boiling water, up to 1 cup • Raisins or dates, up to 1 cup • 2 tablespoon butter, melted • 1 cup sugar • 1 egg, beaten
• 1 teaspoon vanilla extract • 2 cups flour • ¼ teaspoon salt • 1 teaspoon baking powder • 1 teaspoon baking soda • ¾ cup chopped pecans
Preheat oven to 350 degrees. Lightly grease and flour a loaf pan. Remove orange peel from orange with a sharp knife, scraping away all of the white pectin from the peel. Cut orange in half and squeeze juice into measuring cup; add boiling water to make 1 cup. Grind orange peel in food processor. Grind raisins or dates in food processor and add to orange peel to make 1 cup. Cream butter and sugar; add egg and vanilla. Sift dry ingredients together and add to creamed mixture, alternating with peel mixture and juice. Beat well; add nuts. Bake for 50 minutes. love chowders for dinner. Especially with this colder weather we are enjoying. They are quick and easy to prepare, usually fairly healthy and always warm and satisfying. This one has ingredients close to our local hearts (gulf shrimp) and will not disappoint your taste buds. Bon Appétit! • • 2 tablespoons unsalted butter • 1 bunch green onions, thinly sliced & divided • 2 stalks celery, diced • 1 red bell pepper, diced • 2 tablespoons all-purpose flour • 1 teaspoon Old Bay Seasoning • 2 cups heavy whipping cream
• 6 cups water • 1/2 cup long-grain white rice • 1 1/4 cups corn kernels (from 2 ears corn or frozen) • 1 pound medium shrimp, peeled and deveined • Kosher salt and freshly ground pepper • 2 tablespoons dry sherry (optional)
• • • Heat the butter in a large pot over medium-high heat. Add half of the green onions, celery and bell pepper and cook, stirring occasionally, until the vegetables are crisp-tender, about 4 minutes. Add the flour and Old Bay Seasoning and cook, stirring, until the flour is lightly toasted, about 1 minute. Add the milk, 6 cups water and the rice. Bring to a boil and then reduce to a simmer over medium and cook until the rice is tender, about 15 minutes. Add the corn to the pot and cook 3 minutes. Stir in the shrimp and cook until they curl and turn opaque, about 3 more minutes. Season the chowder with salt and pepper and stir in the sherry. Ladle into bowls and garnish with the remaining green onions. •
