As I write this,
I’m somewhere out in the middle of the ocean onboard our 5th Annual Cruise with Kristi. (That’s me!) We had to take a hiatus last year, no surprise, and we’re all very thankful we were able to set sail--but not without issues, of course, Royal Caribbean’s protocols changed, leaving us with no other option than to cancel the motorcoach from the RGV to Galveston. We had some in our group cancel, as a result, because the bus portion is definitely part of the fun. When we left the port, we had 70 on board with us, a manageable number. We are used to having 200+! Next year, we’ll board the Allure of the Seas for a fun-filled adventure, and we’d love to have you join us! There’s nothing quite like traveling in a group. It’s a great way to meet new friends, reconnect with old ones, and share experiences that go down in history books. We will start booking for the 2023 cruise as soon as we get back to the Valley next week, so start packing your bags! • We’re just connecting the dots,

Donna Couple Forever in the Christmas Spirit
ike many, Marvin and Sheryl Podemski believe Christmas is the most wonderful time of the year, so much so that they choose to celebrate it yearround. Whether at their seasonal home at Donna’s Quiet Village II RV Park or their home state of Iowa, they keep the spirit alive. Traditional ornaments on their Christmas tree are swapped with pink and red hearts for Valentine’s Day, clovers for Saint Patrick’s, and stars for Independence Day. “I think the lights and festiveness of Christmas, overall, just makes everyone happy,” Sheryl said. “I know last year a lot of people were talking about putting their decorations up early in November because everyone has been so down with COVID. So I say, if it makes you happy, decorate your whole house! Christmas stores are bad for me.” And with his rosy cheeks, hearty laugh, and lush white beard, Martin takes it to the next level, embodying Santa Claus himself. His likeness has allowed him to spread the joy of Christmas all year long, so he never intends to shave. “We’ll see kids while out shopping and pretty soon start hearing the whispers, ‘There’s Santa,’” Marvin said. Parents tell their children to stop staring; however, Marvin doesn’t mind and is happy to speak to them and remind them that Christmas is coming.

“I just tell them, ‘You better behave because I’m watching and taking notes,’” he said. Though he’s recognized as Santa in his everyday wear, he also owns ‘the suit.’ For the past 30 years, he has fully stepped into the role, visiting local schools every year, often accompanied by Sheryl--or Mrs. Claus. “Years and years ago, some of our friends asked if I could play Santa for their kids on Christmas Eve, and then it just kinda grew from there,” Marvin said. “Now we usually visit four elementary schools a season.” With Marvin’s features, a simple errand is never just that. Sheryl recalls a visit to the post office a few years back. It was a trip she’ll never forget. “There was a small boy, probably three or four years old, with his sisters, and he was just standing there in awe looking at us,” she said. “Then he came running over and asked, ‘Are you Christmas?’ It really made me cry because he was just so happy.” While the children are more obvious with their curiosity, the Podemskis say people of all ages get a kick out of spotting Santa. “We just enjoy visiting with people and making them smile and making them happy,” Marvin said. “It’s nice getting together with people to spread the magic of Christmas.” •

Most cities have well-maintained municipal walking trails, great for a daily, sweaty jaunt. But for that romantic evening stroll, take a walk on the wild side and mix it up. Find yourself a quiet park or trail for a sunset stroll or afternoon picnic. Find your special spot. Pharr has an intimate trail, perfect for getting up close and personal with your sweetheart--and rare birds. The Vanguard Academy Nature and Birding Center is known for seasonal rare-bird sightings and has a sweet trail with benches, perfect for stealing a kiss, as well. For those needing a bit more excitement than a city-park stroll, try a moonlight hike at a state park. Most parks, like Estero Llano and Quinta Mazatlan, offer guided walks to check out the critters crawling, flying, and slithering after dark. If you don’t want to commit to playing it cool while a tarantula walks across your shoe to score those points with your partner, how about a sunset cruise? Several spots are offering them on South Padre Island and Port Isabel, many including drinks and dinner. Not a fan of boats? No worries. That sunset bouncing in your sweetheart’s eyes is just as spectacular as you walk on the beach. dine at an oceanside restaurant, or dance in the moonlight at an island bar. Or just grab a big blanket and throw some champagne in a cooler, build a bonfire. and let Cupid do his job. Keep in mind, there are different rules at different access points, so find the spot that’s right for you. Trust us’ there’s plenty of intimate spots for canoodling. if you don’t mind sand all up in your…ears and hair. There are so many quiet corners one can sneak off to in RGV cities. Coffee houses can be a great spot to share a few special moments. There are several locally owned that offer great ambiance and atmosphere, like Coffeehouse 707 in San Juan. There, you and your date can relax on sexy indoor velvet couches or enjoy outdoor seating with live music. Find a local ice cream shop, and share a banana split with your sweetie--or a pie shop, and sample each other’s slices. Or maybe, since it’s Valentine’s, you’ll cut loose and feed each other.
If you want to go full old-school, grab some clean socks and dust off those old balls to go bowling for the night. There are a bunch of cool classic lanes throughout the RGV. There’s also roller skating for those brave enough to lace up. Many of our local rinks offer an adults-only, old-school night, playing the beats we all loved. If you are hoping to make things a bit more personal, where it’s just the two of you snuggled-up with the lights out, we have just the place-the WesMer Drive-In. What better way to step back in time and feel like naughty kids again? It’s a great way to get that tummy aflutter from butterflies--or indigestion from the concession-stand hotdog, whatever comes first. Either way, as the movie plays on the big screen, you’ll be there in the comfort of your car, creating a memory with that special someone. Another option is to skip the movie and find a midnight diner, like the Junction in Pharr, where you can sneak out to share a moonlight milkshake and French fries. If you want to show your partner off, get dressed for the evening, grab an Uber, and go dancing, or grab a fancy cocktail in a more elegant setting like Casa De Palmas in McAllen. Or dress to the nines to go taqueria hopping; whatever works for you and yours. No judgment from us. In fact, romance with tacos is a favorite pastime in the RGV. Several of the local taquerias are taking special orders right now for heart-shaped taco plates. It’s just like it sounds, a platter with about 30 tacos placed in the shape of a heart. Trust us. T
he devastation of the coronavirus since early 2020 has affected everyone. But the greatest damage has been to small businesses, which were especially vulnerable. Thousands of these businesses have been destroyed. These losses created real hardships for their owners and especially their workers, who relied on this employment to provide their families’ livelihood. Owners who have survived the pandemic have done so by overcoming huge obstacles. The Robindale Plaza in Brownsville is an excellent example of how businessowners have stood up to the effects of this virus. When their backs were against the wall, they fought on bravely, fighting the virus with the fortitude and resolute determination that has become the trademark of Texans everywhere since the formation of this state. Veronica Ramirez, owner of Ju-Ve Boutique, a women’s fashion store, had just opened her doors. “It was an extreme struggle to keep my business afloat,” she explained. No one was buying clothes because
they were staying home, afraid to go out. It got to the point where she had to rely on her husband to help her pay the rent and other expenses just to stay solvent. She finally ended up raffling off many of her clothes, just to make ends meet. Marbelia Uribe, owner of Sweet Nails and Spa, summed up the feelings of many shop owners when she described the feeling of hopelessness they all felt many times. “I am a single mom,” she said. She was so afraid of losing her business, and she had nothing else to fall back on. “We were all so frustrated and sick of the situation. Every time we turned on the TV or went on social media, the messages we got only seemed to make matters worse.” Marbelia lost a large number of her clients, especially when she was forced to close her doors. Kansans Gathered in the Rio Grande Valley for Big Celebration of Kansas Day Submitted by Larry Schmitt and Jan Bergman

s the Kansas Day Celebration for 2021 could not occur, it was great for the event to be held January 26, 2022. Considering all the challenges these days, 210 Kansans from various parks/resorts throughout the Rio Grande Valley met to commemorate the state’s 161-year anniversary of its admission to the Union January 29, 1861. The old-timers enjoyed meeting the 33 Kansans attending for the first time. Yea! The event was held at Trophy Gardens RV Resort in Alamo. Ballis Catering of Mission served a delicious sit-down, plated meal at noon. Comments on the food and service were “ultra-complimentary.” Rusty Rierson, homegrown
entertainer from Augusta, Kansas, provided the entertainment. Rusty delighted the Kansas crowd with jokes, songs he composed, and many all-time favorites. Jan Bergman, chair, and Larry Schmitt, communications and reservations, facilitated the day’s events. No event of this size can occur without impressive volunteers. Jan and Larry give thanks to the following, who were involved in the setup/tear-down of tables and chairs, registration, collecting monies, and/ or distributing of the raffle prizes: Randy LeMasters, Benny Robbins, and Hank Waggoner from Chanute; Pat and Richard Carey from Ottawa; Ivalee Vanderhoff from Halstead; Bill

Celebrate Heritage and History Days at the Museum of South Texas History Special to Welcome Home RGV

he Museum of South Texas History in Edinburg presents Heritage and History Days 2022, two history-packed weekends, February 12 and February 19. The two-weekend programming kicks off with Community History Saturdays from 10 a.m. to 3 p.m., featuring food, crafts, historic exhibits, live music performances, and fun for the whole family. Both Saturdays will feature local folklórico dance groups and handson activities, such as cattle roping, butter churning, free crafts, history demonstrations, and the world-class Rio Grande Legacy exhibitions. M
y mother recently sent me a link to one of those sites that contains photos of all the trappings of our youth, things today’s kids would have no idea about. It showed items like baseball cards, 8-track stereos, banana-seat bicycles, flashcubes for our cameras, and the like. Each photo took me to a place in my mind where things were comfortable. Then it showed the scene of a small-town business district. It wasn’t my town, but it sure popped memories of my town. From there, my mind roamed to Wednesday night band concerts, movies at the
theater, working in the grocery store, and so much more. It was a fun little journey through my own mind full of memories. I feel for the kids growing up today. They are missing the stuff that made our lives, and now our memories, so rich. I suppose they could say the same. We all grew up without the benefit of all the stuff and opportunity they have. We have such different foundational experiences between the generations. How can we even relate to each other? How will they ever be OK when they don’t have the same solid foundation that made our generation such great people? Then I remembered. I used to employ a lot of those kids. Few of them would have known what most of the items in my mother’s email were. Yet, they were some fantastic

kids, great workers and employees, and compassionate caregivers at the care center, as they related well to people two generations above them in age. Earlier this summer, I played a small outdoor event, belting out some old rock tunes from the 50s and 60s. Our community’s ambassador candidates were all there. I called them up on stage for a song. What could they all know of that old music? Well, we did “Lollipop,” a song by the Chordettes from 1958. I was shocked! They knew it. Here were five 17-year-old girls surrounding a 70-year-old man, singing their hearts out. It was great! I kind of like today’s younger generation, even if they don’t know what an 8-track is. Maybe the ‘stuff’ doesn’t matter so much. I think they will be just fine. I think…most
of them…well, I hope…anyway. I’m just sayin’. •

My sweet husband searched for scriptures on sleep so I could commit them to memory and put my faith in God’s promises for GOOD sleep. I just said, “Oh, thanks for the list” and didn’t act on it. The Holy Spirit spoke to me one day while we were driving, and He said, “All you have to do is agree with God! He is for you. He always wants what’s best for you. Agree with Him for everything you need in every area of your life. He’s got you covered--just agree with Him!” Jesus said in Matthew 4:4 when He was tempted by the devil for 40 days in the wilderness, “It is written, Man shall not live by bread alone, but by every word that proceeds from the mouth of God.” Jesus was quoting from Deuteronomy 8:3 regarding the Israelites wandering in the wilderness for 40 years, where God met all their needs. Same truth--O.T. and N.T. Psalm 107:2 reads, “Let the redeemed of the Lord say so, whom He has redeemed from the hand of the enemy.” If we are supposed to agree with God and say what He says about us, --Why do we say, “I can’t,” when God says, “I can do all things through Christ Who strengthens me”? (Philippians 4:13) Jesus will strengthen us to do His will and works. --Why do we say, “I don’t have enough money,” when God says, “My God shall supply all your needs according to His riches in glory by Christ Jesus”? (Philippians 4:19) All needs will be met. --Why do we say, “I’m scared to death,” when God says, “God has not given us the spirit of fear, but of power, and of love, and of a sound mind”? (2 Timothy 1:7) Faith not fear.

(1 Corinthians 1:30) We can pray for wisdom whenever we need it. --Why do we say, “I am worried sick,” when God says, “Casting all your care upon Him Who cares for you”? (1 Peter 5:7) Worry is seeing the future without God in it. Not a good idea. If we’ll agree with God and say what He says about us, we’ll be overcomers and glorify Him! I’m sleeping better and better every night! •

Dream Valley Ranch Hosts Senior Cornhole Tournament Submitted by Charlotte Myers
D
ream Valley Ranch Park of Palmview recently hosted its first Senior Cornhole Tournament for the eight Martin Valley Ranch parks. The turnout and support from everyone were overwhelming. We had three classifications: Men’s, Women’s, and Mixed Couples. The rules and distance went by “senior” regulations. There were first-, second-, and thirdplace winners, and we offer a big congratulations to all of them. (We were not able to get a photo of the Men’s team winners as they left too soon, but we were able to get photos
of the Women’s teams and the Mixed Couples teams. A great time was had by all. Refreshments were also available for purchase. There will be another tournament held in February and in March. The dates have not been set at this time but will be shortly. A shout out to all who put the time and effort in to make this event the success it was. Hopefully it will only be bigger. Watch for the notices. Thank you to all of the Martin Valley Ranches that participated. We could not have done this without you. •

he internationally renowned group, The Diamonds, will perform a Broadway music extravaganza live at Christian Fellowship Church, 901 N. Loop 499 in Harlingen, Wednesday, February 16, at 7:30 p.m. “…a sellout both nights.” ~Crown Uptown Theatre The Diamonds first rose to fame in 1957 when their single, “Little Darlin,’” sold over a million copies and went on to earn the title of National Anthem of Rock and Roll. Since then, the band has thrived, earning three gold records, having 33 appearances on American Bandstand, performing on the soundtracks of American Graffiti and Happy Days, and celebrating inductions into the Vocal Group Hall of Fame and the Doo-Wop Hall of Fame. Despite the changes in personnel over the years, the Diamonds have
managed to maintain their status as one of the world’s most elite vocal groups. In their latest touring show, the Diamonds are bringing their classic harmonies in the form of Broadway’s biggest hits, from shows like Jersey Boys, Grease, Mamma Mia, Motown, and more! Clorox wipes, hand sanitizer, and a smoke gun to disinfect and hired extra help to clean her shop. “I had to open,” she explained. “Even if I only made a few dollars a day, it was a blessing. It allowed me to stay open. We had to put food on our tables and pay our rent.” Even though she had many extra expenses, Marbelia has not raised her prices and continues to offer the same exceptional service. As she explained, manicures and pedicures now took twice as long because customers’ nails had been neglected for so long because they couldn’t come in. Regrettably, she did have to lay off some employees.
Some were sick and some refused to come to work because they were afraid. The government provided two types of loans that were available to small businesses. The Payroll Protection Program and the Small Business Association loans were intended to help owners. But as Marbelia explained, you had to meet qualifications, and for some people, this was difficult. “Most of our extra expenses, we paid out of our own pocket,” she said. Nohemi Castillo of Nohemi Cast, a hairstyling salon, faced a difficult struggle, as well. She lost five of her six stylists during the
pandemic because they were afraid of contacting the virus at work. This greatly reduced the number of clients she could service. Nohemi made sure she kept her salon clean and followed all the protocols to ensure everyone’s safety. “When we reopened, we struggled a lot at first, but we have survived!” she said. Jacqueline Serna, manager of Ricardo’s Restaurant, said, at the pandemic’s worst, they lost 75 percent of their business. “I have never seen a restaurant so depressing,” she said. However, like the other owners, she said quitting was not an option. “We are strong women, and we stick together and
support each other. We call each other vecinas (neighbors), “said Jacqueline. “Not only did we have to work extremely hard to keep our businesses going, but we had to go home and run our houses and raise our families.” These women exemplify the true Texas fighting spirit that has made this state such a great place to live. They are proud of what they have accomplished during the pandemic, and they have definitely earned our respect. We must applaud their efforts, and we must continue to support small businesses like this everywhere. •

After a busy time distributing all of the items brought to our Donation Chest at The Lamb’s Loom last year, it’s time to begin again. Sometimes that can seem like a daunting task, but then all of you make it happen. Every year, our Winter Texan friends have gone above and beyond, but the last two years have been absolutely amazing. From mailing packages to us full of handmade hats and shawls to those who support us financially every month, you are all a blessing. Throughout the year, we have the fun of the “shop,” teaching and learning about new yarns, sharing ideas, and making new friends, and you have been on this journey with us every stitch of the way. When you
enter The Lamb’s Loom, the first thing you see is our Donation Chest, the heart of all we do here. Over the years, tens of thousands of handmade items have gone out to those in need of a hug, some warmth, and a gift of kindness, and that has been provided. Brown Pelicans South Padre Island It was a rarity mere decades ago to spot a brown pelican along
the Texas coast, let alone a squadron, one of the terms used for a gathering of pelicans. According to a June 2021 nature report by local legendary nature reporter/videographer Richard Moore, in the 1960s and 70s, there were fewer than 100 brown pelicans in Texas. Now, Moore explains, there are an estimated 12,000 breeding pairs along the Texas Gulf Coast. •

Wonderful Woodcarvings Created at La Floresta

T
he La Floresta Park in Mercedes is filled with artists who bring with them many different talents and skills. One such artist is Harry Seurkamp, a woodcarver from Whitney, Texas. Woodcarving is one of the oldest types of art. Harry has always been into woodworking. After attending a carving show, his wife gave him a knife, a book, and a piece of wood and signed him up for woodcarving classes. He was making box clocks at that time and thought carving would enhance them. He has been carving for 30 years.
Harry also enjoys teaching woodcarving and willingly lends his tools to those who want to try their hand at it. He is currently teaching a class at La Floresta. “The whole idea is to promote woodcarving. It is becoming a lost art,” Harry said. La Floresta hosts an annual auction fundraiser, and this year Harry donated one of his pieces, The Golfer Cowboy. “That was one of my earliest pieces, created in the 1990s,” he said. “It was time to share it.” Harry draws out patterns, enlarges
them on his computer. Then, using his band saw, he cuts a piece of wood to fit his design. Harry has donated pieces to raise money for golfing events, Alzheimer’s, and other charities. He has entered many competitions and normally teaches classes at shows. He has entered an upcoming competition coming in Kerrville, Texas, where he will attend a few classes and set up a table to display his items, some of which will be for sale. Roger Goertzen from Mountain Lake, Minnesota, is one of the woodcarving students at La Floresta. Roger had never carved before but took Harry Seurkamp’s class two years ago. He started out carving small holiday decorations and has advanced to larger and more intricate projects. Roger is currently working on this cardinal and has spent approximately twelve hours on it.

Strawberry Lettuce Salad • 2-3 bags of prepackaged, washed romaine lettuce • 8 oz. package finely shredded mozzarella • 1 cup finely chopped pecans • 1 quart fresh strawberries, sliced
Dressing:
• ½ cup neutral vegetable oil • 2/3 cup white sugar • ¼ teaspoon sweet paprika
• ¼ cup red wine vinegar • ¼ teaspoon kosher salt • 1/8 teaspoon ground white pepper
Combine the dressing ingredients in a mason jar or covered container and shake well to dissolve the sugar. (It may not totally dissolve, but that’s okay.) Chill the dressing for 1-2 hours to blend the flavors. In a large, deep serving bowl, layer 1/3 of the lettuce, 1/3 of the berries, 1/3 of the cheese, and 1/3 of the pecans. Repeat twice more, ending with the nuts on top. Just before serving, shake the dressing well, and pour it over the salad. •

• ½ cup grapefruit juice • 1 Tablespoon Dijon mustard • Olive or avocado oil, to desired consistency • Salt and pepper, to taste

Combine all ingredients in a blender or food processor and blend. Add liquid or oil to desired consistency. NOTE: This recipe adheres to Whole 30. •

Shrimp Dumplings
n celebration of the Lunar and Chinese New Year, here I offer some delightful shrimp dumplings, simply dressed with rice vinegar and zesty sesame oil. It’s quite simple to chop and season the filling, and the grocery store-bought wrappers are easy to fill and seal. Four minutes in boiling water and you’ve got this dumpling dinner on the table. Bon Appétit! • FOR THE DUMPLINGS: • 1 pound shrimp, peeled, cleaned and roughly chopped • 1 teaspoon kosher salt • ½ teaspoon coarsely ground black pepper • 1 tablespoon grated ginger • 1/3 cup chopped scallions
• 1 teaspoon toasted sesame oil • ½ cup chopped cilantro,leaves and tender stems, plus a few sprigs for garnish • 1 serrano chile, finely chopped (optional) • 40 round dumpling wrappers, 3 1/2-inch diameter
FOR THE DIPPING SAUCE: • ½ cup rice vinegar • 1 teaspoon spicy sesame oil
• 2 scallions, thinly slivered

Put chopped shrimp in a bowl. Add salt, pepper, ginger, scallions, sesame oil, chopped cilantro and serrano chile. Mix well with a wooden spoon, then cover and refrigerate at least 1 hour. (Mixture may be prepared up to 1 day ahead.) You should have about 2 1/2 cups filling. Working in batches, line up dumpling wrappers on a work surface. Place 2 teaspoons filling in the center of each wrapper. Lightly moisten the edge of each wrapper with water and pinch together to surround filling and form a half-moon. Pleat edges to secure the seal. Bring a large low pot of well-salted water to boil over high heat. Meanwhile, make the dipping sauce: Whisk together rice vinegar, spicy sesame oil and slivered scallions in a small serving dish. Add 12 dumplings at a time to the pot. When they bob to the surface, simmer 4 minutes, then remove with a slotted spoon or spider. Serve each person 3 or 4 dumplings in a small bowl. Drizzle with 1 teaspoon dipping sauce and garnish with cilantro sprigs. •
