hello F R O M K R IS T I

I’m off again, this time to Houston for the Texas Travel Industry Association’s Unity Dinner. Tourism professionals from across the state will gather for industry updates, educational opportunities, and networking. I’m really excited about this conference--for many reasons! First, they asked me to present a session! I am blown away and excited that tourism professionals are recognizing the economic impact you all have on our area, and that they are intrigued by our method of doing things. Second, they asked me to serve on their board as a representative of the South Texas region! This is all very exciting (and a little nerve-wracking), but I know no one in the tourism industry knows the Winter Texan lifestyle like I do, and I plan to give them my very best. Hopefully this will translate into marketing up north more than ever before. Wish me luck! • We’re just connecting the dots,

Kristi

araoke in the streets; people and flamingo watching, swim-up pool bars, eating and celebrating--all part of the 5th Annual Cruise with Kristi. This year’s adventure began at the Port of Galveston as Valley Winter Texans and Converted Texans boarded Royal Caribbean’s Liberty of the Seas, with stops in Roatan, Honduras, and Cozumel and Costa Maya, Mexico.

We’re just connecting the dots.

For seven days, the Cruise with Kristi group enjoyed spectacular views of the western Caribbean, amazing food, laughter, and relaxation, not a bad way to spend a week in the middle of winter! The adventure was coordinated by the team at Travel by Welcome Home, led by Kristy Meyer, a.k.a. Travel Kristy, whose parents joined her on the ship. CRUISE MEMORIES CONTINUED ON PAGE 4 >>

Pharr Resort Native Texan Leads Efforts

to Benefit Local Children Through Handiwork Through the So Sews Club at Pharr’s “It’s always such a special occasion

Winter Haven Village, Sandra Moon combines three of the things she loves the most: sewing, mingling with her friends, and giving back to the community. The native Texan from Arlington moved to the Valley full-time in 2014 and has helped make thousands of teddy bears for children at local hospitals since. Members of So Sews gather and get to work every Thursday morning. With all hands on deck, they operate as an assembly line and can finish upward of eight teddies a day. “Somebody cuts the fabric, then somebody e m b r o i d e r s the face,” she e x p l a i n e d . “Somebody else dresses it. We have two ladies that make the sweaters, and then a few of us pitch in to make the pants and skirts. It’s just a group effort. We pass it down, and everybody does their thing.” Moon said the goal is to put smiles on the children’s faces and let them momentarily forget about their pain or illness. Once they have about 50 bears complete, they deliver them to one of three local hospitals. She estimates the record for created and donated teddy bears in a single year to be above 600; since the group was created in 1998, just under 7,800 have been given out.

when we go drop them off with a nurse at one of the hospitals,” she said. “You can tell how much they appreciate it.” Though the park has a small yearround population, those who remain continue to meet. And in recent years, they have diversified their crafts. Moon recruited her husband and other talented woodworkers in the park to give the bears another accessory: cars. Most recently, the group has turned to life-size work. “We’ve been making bears a long time and were beginning to get a little bored, I guess you could say” she said. “So we started making pillowcase dresses for babies and toddlers to distribute to a local charity here.” While this latest venture has just gotten off the ground, Moon estimates they’ll have a big enough batch to drop off by the time the park’s Winter Texans head home in April. She adds she is hoping to recruit more sewers in the park to continue keeping the group active year-round. “And it’s fun for us because we socialize the whole time we’re working,” she said. “We’re all friends, and we just enjoy helping the children. Plus, we get to feel like we’re being useful. It’s a good thing all around.” •

“O.

M.G.! It was the best trip ever!” That’s the exuberant answer you get from Welcome Home RGV owner Kristi Collier when asked, “How was Puerto Vallarta?” Kristi’s trip to the resort town on Mexico’s Pacific coast happened in November of last year. Her adventure began at the McAllen International Airport. “We left McAllen late morning, and we were checked into our hotel rooms by 4:15 that afternoon,” Kristi explains. The Aeromar flight to Puerto Vallarta departs from McAllen and makes a stop in Guadalajara, where travelers go through customs; the trip from Guadalajara to Puerto Vallarta is under an hour. Once you arrive in Puerto Vallarta, you’re on resort vacation time! “The people are so friendly…and the food!” Collier exclaims. “The food is first class.” Kristi shares that Puerto Vallarta appears to be an active retirement community, with expatriates from all over the United States and other

“They had a great time and loved all the Cruise with Kristi swag!” Travel Kristy said. Costa Maya received rave reviews. Travel Kristy reports the port utilized the past few years to update, and it shows. Traveler Linda Anklam shared how beautiful this stop was and how she enjoyed watching dolphins, birds, and iguanas. Travelers also shared that time with friends was a big highlight. Entertainer Curt James and his wife, Stella, from Alamo Country Club, said the trip provided a few days with friends from Victoria Palms. One was celebrating a birthday, and as a special treat, Curt took to the streets of Costa Maya to sing karaoke-between stops at the shops and visiting a flamingo sanctuary. It was a tie for Linda’s top favorite

things--between the entertainment and the meals. Relaxing was right up there, as well. Same for Travel Kristy, who hoped to relax on the trip and did just that from the moment they set sail. And then there was the laughing. Lots and lots of laughing. Curt sums it up: “It was a great opportunity to stop thinking about everything negative in life and focus on living, laughing, and loving! It was one big country song!” The 2023 Cruise with Kristi is scheduled for February 5 - 12, 2023, on Royal Caribbean’s Allure of the Seas, with ports of call in Roatan, Honduras, and Costa Maya and Cozumel, Mexico. A

s usual, in January, we kicked off the new year with our 8th Annual Yarn Tasting, and it sure had hatitude! Our annual fundraiser is a fun event for everyone. It’s also a FOURday yarn party! We always kick off the Yarn Tasting with the announcement of the final Donation Chest count for the year. In 2020, the final count was 4777 of donated items and for 2021 it was…(drum roll, please)…4812! Every year surpasses the previous one, and we are so very grateful. That just means many more people can be served. So many of you add to this ministry and add to our Donation Chest every year, and your “hat-itudes” of care and giving are an inspiration to us all. We want to encourage that hat-itude of helping others in all we do. It has definitely been true lately that days can be challenging, and your positive hatitude always helps add a little sunshine. We had a great week of sharing a few of the fun hats and things made last year during our Make-Along. Our theme for that was Fine Feathered Friends in South Texas, and boy did these items have hat-itude! It was lots of fun to see all of the fun color and design combos come into the Donation Chest. We had kiskadee hats and green jay mitts and painted bunting scarves, just to mention a few. This year’s Make-Along begins in March, so be on the lookout for more

information here or on our website next week for this year’s theme and monthly updates. We were also thrilled at this year’s Yarn Tasting to feature one of our Indie-dyers, Kristy’s Furry Fiber Friends Yarn. She has an amazing use of color, and we are thrilled to have her in the shop. Hope you were able to join us for fun and fiber during Yarn Tasting, but if you missed it, no problemo; you can find yarn fun at The Lamb’s Loom every day. Mark your calendar now for next January’s Yarn Tasting. Our Sit-n-Knit is open and ready for y’all to come enjoy some yarn fun, meet some new friends, and learn how you can be a PEG at The Lamb’s Loom. Pray. Encourage. Give. Remember, The Lamb’s Loom is not just a yarn shop; it’s a ministry and a mindset. It’s also a HAT-ITUDE! We love hearing from you, and there are lots of ways to stay in touch. You can join us on our website at thelambsloom.com and follow us on Facebook and Instagram. And, of course, there are lots of fun articles right here in Welcome Home Winter Texan. The Lamb’s Loom is located at 1102 Tamarack in McAllen. We are open Wednesday through Saturday, 11 a.m. to 4 p.m. Additional parking is available in the rear via Upas Avenue. •

Things I Have Learned by Bill Ward

was lying in bed unable to sleep recently when an old memory surfaced. Lying there in the dark, I enjoyed the moment all over again. About a decade ago, the nursing facility I managed had a significant anniversary. We held an open house and wanted to give attendees something interesting to do. We decided to cover the corridor walls with photos of people who had passed through our facility at their end of life.

That project involved a lot of work, scanning and printing all of those photos. Being always short of staff, the project fell on me. I thoroughly enjoyed the process of resurrecting memories as I went through old files and photo archives. In the end, I had over 80 large photos scattered throughout the building. Of that group, I had known every one of them. Some had been with us for years, others for just a short time. Each had left a bit of their personality with us. We had learned their stories and the things about them that made them proud, sad, happy, and anxious. We had come to know their families and how they were cherished, or not, by those around them. Some had become friends. A few had been immigrants, many were second-generation Americans,

A somewhat random and reckless look at life from a fairly old guy

Remembering the Beautiful People growing up with all of the hardships of starting life in a new country. Most had already lost a spouse, some had even lost children, and yet they remained vibrant, interesting people. Obviously, each was also struggling with physical disabilities by the time they joined us. I was happy to see that our exhibit was a success. Visitors walked the halls, pausing to delight over photos of folks they knew and sharing stories. We got a lot of compliments for the effort. One thing I have learned is that people have a very powerful presence in life. Just standing back and pondering the collection of 80some portraits and the collective experience of the people they represented was impactful. I had known them. At that stage in life, they weren’t pretty. However, they

sure were beautiful! I’m just sayin’. •

Sisters Reunite in Retirement Submitted by Ace Moore

A

Chris Sargent and her sister, Joanne Spindler, display the materials needed to produce their pheasantfeather-matted picture frames.

s a child growing up in South Dakota, Chris Sargent was the youngest of four sisters. The age difference was enough that she had little interaction with her older siblings. The main thing that kept them together over the years was a few get togethers organized by their mother. It’s only been in the past few years that the sisters have been reunited because now the three surviving sisters (Chris, Joanne, and Norva) all call Palm Resaca Mobile Park in Brownsville their winter home. In fact, Chris and Joanne live right across the road from each other, and both have a sign on their lawns reading “sister crossing.” “This is the best thing that ever happened!” Chris said with a big smile. “We started to realize how similar we are in things we like and activities we enjoy doing.” “In fact, our voices are so similar people sometimes have difficulty recognizing who’s talking,” added Joanne. The sisters enjoy water aerobics, walking, and just lying around in the sun. They’ve also made throws from

Crown Royal bags. When they get an idea, they make it happen. They try to include older sister Norva in some of their activities, as well. A little while ago, Chris started her own business. She got the idea to make feathered mats for picture frames. The idea came when someone showed her a clock wreath trimmed with feathers. She thought that was too big to do, so she decided to make picture frames. It’s a very time-consuming task. Chris explained all the steps that must be taken to produce the final product. First, she pelts the bird and puts the pelt in borax to cure. Each pheasant has up to five different types of feathers, and each one has to be clipped off the pelt individually. Because each bird has slightly different colors, the feathers have to be grouped in sets of “similar colors” so the final result is more aesthetic. Mats are then cut to specific sizes, and tweezers are used to mount the feathers using carpenter’s glue. “You have to be careful to follow the bird,” Chris explained. “You put SISTERS REUNITE CONTINUED ON PAGE 12 >>

• Turning a Minus into a Plus • W

hen my husband and I were young and had small children, we were really learning and growing in our walk with God. For a while, it seemed like Heaven on earth with everything going our way. Then, in one week, the clothes washer broke down, the dishwasher quit working, and the car needed repairs. It felt like our whole world was falling apart. We learned a Bible strategy through God’s Word to use when going through trials and troubles that we have continued to use for the last 50 years. First, we search our hearts to make sure we are not walking in any known disobedience t o the Lord or in any unforgiveness. I John 3:19-22 Second, we make sure we are up to date on our tithing and giving to God so God can rebuke the devourer for our sakes. Malachi 3:10-11 Lastly, we try to find a way to turn the minus into a plus. Romans 12:21 This part gets really exciting! When all of those appliances broke down in one week, we decided to give a special monetary gift to the church in the same amount that was taken by the repairs. Those appliances and our car never broke down again for the rest of the time we had them. That was a real plus, instead of a minus! One time when we were trying to prepare our home to put on the market, there was a repair we needed to make that just seemed impossible to do after many attempts. The Lord prompted us to help build up the House of God while we were trying

to “spruce up” our own home to sell. The very next attempt to make that repair went perfectly smooth and without any trouble, and the house sold for more than it was appraised for. Another plus! Years later, our new home was burglarized by a neighbor on another street while we were out of town. I asked the Lord how we could turn this minus into a plus. He led us to share the Good News of Jesus with our whole neighborhood. So we drove by every house in our area, prayed for each family, and left a Gospel tract for each home, and our insurance paid us more than we needed! Another minus was turned into a plus! It’s exciting to find ways to turn negative situations into positive ones. he art scene on South Padre Island has grown over the years, and there are many options for art lovers planning to visit. Some of the most significant additions have been the murals around the island. Wyland’s Whaling Wall and the new Sea Life mural being the most notable. The Wyland’s Whaling Wall is called Orcas off the Gulf of Mexico and is located at the South Padre Island Convention Centre. This mural is designed to raise awareness of the environmental dangers orcas face. The Sea Life mural at the Marriott is the newest and was painted by Marcos Zamudio, who previously painted smaller murals at the Marriott. His underwater mural takes in key aspects of local sea life, such as sea turtles, redfish, and the Christ of the Fisherman statue. For a more active art experience, we also have the sea turtle and sandcastle art trails. These art trails take you throughout South

Padre Island, visiting the sculptures located at various businesses and restaurants. One of the significant proponents of art on South Padre Island is the Art Business Incubator (ABI). Their primary focus is the growth of art culture on the island. They do this by helping flourishing artists--with their residency program--to navigate the early stages of business development (for those looking to open an artrelated business). The ABI also hosts various art classes throughout the year for people interested in learning more about the art world. Their next class is the Mardi Gras Still Life Paint & Sip. This class teaches the basics of still life composition by observing Mardi Gras items, such as masks, beads, and wine bottles. Enjoy the class while enjoying a nice glass of wine. Let’s Go to Roma

Discover remnants of Zapata and petrified forests by Gretchen Losi

T

o get a sense of what life in the Rio Grande Valley was like back in the days of Poncho Villa and Emiliano Zapata, one must simply visit Roma. Some of the Valley’s oldest architecture graces the streets of this once vibrant border town. As you walk the historic downtown, taking in the masterful architecture from an art lost generations ago, you will find beauty from the past on every corner. The Oblates arrived and left their mark on this town in a big way. The historic church the Oblates’ sweat and prayer established still stands proudly today as testimony of a time--but not their faith—long forgotten. The church holds mass, weddings, and baptisms regularly. And the tiny town still honors the Oblates with a mural of them in its downtown square. The architecture in this border town is unique to this country. Very few sites hold the art and mastery that went into Roma’s downtown, but it is beginning to crumble and be lost. Thankfully, Hollywood has captured the streets of Roma in the Hollywood motion picture Zapata! The church is among many Roma buildings featured in the AcademyAward-winning movie. Though time is taking its toll on the brick and wood-framed structures that still stand, some residents are reclaiming their ancestors’ buildings to refurbish and welcome guests once again. Grandchildren are purchasing the land, homes, and businesses once owned by their family and restoring

what they can to bring joy to future generations. The owner of one such property, as close to the border as any, restored his great-grandfather’s business and holds special gatherings like baptismal parties and weddings. Among locals, everything in Roma is valued for its history. Even the rocks. Once home to a petrified forest, much of which was used for construction around the RGV, there isn’t much left of the forest today. But you can easily spot it in old, stone fencing and architecture around town (and likely in your town, too, if you look hard enough). And there’s still petrified rocks to be found around Roma for the rockhound with patience. While the rockhounds look down, the birders look up. Known for its birding opportunities, tourists from everywhere flock to Roma. The birding observation deck is unique. While looking up above the Rio Grande River you may find something as colorful and interesting as you do when you are looking straight across into Mexico. This birding balcony is directly on the Rio Grande River, with a “bird’s-eye” view into the back yards and parks of our neighbors to the south. It is likely you will hear gunfire while on the deck, but this is perfectly normal. (At least that’s what the locals kept telling us.) Whether the architecture, movie history, rocks, birds, or bucket-list items bring you to Roma, it is quite spectacular and worthy of a visit. •

one color on one side, then another on the top, and so on until the frame is complete.” Doing the corners is the most fun because you can be very creative with the feathers here. There is a real art to doing this, but with a lot of patience, the results are quite eyecatching. She has used feathers from turkeys, Canadian geese, pheasants, mallard ducks, Hungarian partridges, and grouse. “I haven’t made a mat using Muscovy ducks yet,” she chuckled. “When you get used to doing the matting. it becomes very relaxing,” Chris said. “I enjoy doing this, and it definitely keeps me occupied.” Dennis Rausch, Norva’s husband, makes a lot of picture frames for Chris to use. When she gets her product finished, Chris has been selling them at sporting-goods stores, pheasanthunting lodges, and gift shops and on the internet. She even had a website called “Feathers 4 Friends.” She quickly learned from the huntingand-game authorities that you can’t

Joanne Spindler watches as her sister, Chris Sargent, patiently uses tweezers, feathers, and glue to create another picture frame. “I tried it for a few minutes,” said her husband, Kirk, “but I didn’t have the patience. Let the ladies do it!”

Kirk chuckles as he says, “When these two get that look in their eyes, you know something is going to happen. But you can never be sure what it is until the dust settles.”

oin us at Speer Memorial Library in Mission Tuesday, March 1, for a discussion of the book Your Second Life Begins When You Realize You Only Have One, to take place in the library’s Community Room at 5:30 p.m. in Spanish and at 6:30 p.m. in English. Everyone is welcome to attend and discuss the book. In Paris, 38-year-old Camille has a good job, a nice family, and seemingly everything she could want. Yet she feels despondent, lethargic, and disillusioned--with a sense that happiness has passed her by. One evening, she is returning from work when, with limited visibility from a torrential downpour, she runs into something, blowing out a tire and damaging her car. With no cellphone reception, she walks through the rain to the first house she sees. A kindly man named Claude invites her in. Camille explains the situation to Claude and then, sensing he’s a good listener, tells him about her unhappiness with her life. Claude diagnoses her condition as “acute routinitis.” He ought to know; he’s a routinologist. Written by Raphaëlle Giordano and first published in 2015, Your Second Life Begins When You Realize You Only Have One is an inspiring story of how we can discover and change our

own thought processes, understand ourselves better, and make choices that matter for us, lifting ourselves out of our ruts and finding true happiness and fulfillment. We will have some copies of the book available for check out to those who sign up for the book discussion, or you can stop by our Reference Desk or call at 580-8754, and we will try to obtain a copy for you via Interlibrary Loan. This title is also available in English as an eAudiobook at https://ebook.yourcloudlibrary. com/library/HidalgoCountyLS. For more information or to sign up for the book discussion, please call our Reference Desk at 580-8754 or send an email to reference@ missiontexas.us . (Please include your name and telephone number.) Speer Memorial Library is located at 12th and Kika De La Garza in Mission. The library is open (except for holidays) Monday through Thursday from 8:00 a.m. until 9:00 p.m., Friday and Saturday from 8:00 a.m. until 5:00 p.m., and Sunday from 12:00 until 5:00 p.m. The Library’s homepage can be accessed for information via the internet by entering mission.lib.tx.us. Industrial Nature by Michelle Stitzlein Brings Large-Scale Recycled Sculpture to IMAS Special to Welcome Home RGV

T

he International Museum of Art & Science (IMAS) in McAllen will be exhibiting Michelle Stitzlein’s largescale sculpture exhibition, created entirely from recycled materials in a large studio converted from a former grange hall in Baltimore, Ohio. Industrial Nature will be exhibited at the International Museum of Art & Science in the Cardenas and Main Galleries February 26 through August 21. This exhibit is made possible by an Arts Respond Grant from the Texas Commission on the Arts. The artistin-residence stay is supported by an Arts Create 2 Grant from the Texas Commission on the Arts. Celebrate the opening of Industrial Nature with visiting artist Michelle Stitzlein, who will be at the IMAS for both the installation of the exhibit and an artist-in-residence program. IMAS Members are invited to an opening reception for Industrial Nature Saturday, July 28, from 5:00 - 7:00 p.m. Learn more

about membership online, call 956681-2800, or visit the IMAS to register or renew your membership. During Stitzlein’s artist residency, community members will have several art-centric opportunities to learn from--and create with--the artist at the IMAS. Saturday, February 25, features an interactive art workshop, “Beetle and Butterfly Recycled Collages,” open to adults who preregister. Sunday, February 27, at 2:00 p.m., the artist will share her process during a presentation titled “Creative Use Inspired by Nature.” March 2 and 3, from 2:00 - 4:30 p.m., IMAS visitors of all ages can drop in to the Ann Moore Art Studio to join Stitzlein in creating upcycled art with materials such as plastic bottle caps, CDs, and plastic lids. Finally, Friday, March 4, museum visitors can participate in community artmaking with Stitzlein during the Polk Dot Bottle Cap Sculptures workshop. As a collaborative effort, participants will help create outdoor sculptures

inspired by nature with repurposed plastic bottle caps. These caps, formerly destined for the landfill, were collected by the community and will be utilized in a new format as colorful art material. Arranged like pixels on a computer screen, participants arrange the circle caps into patterns and then drill them into place. These whimsical sculptures will then be placed on a display outdoors at the museum. We invite community members to donate plastic bottle caps of various colors between 1” and 3” and clear or colored plastic lids larger than 5”. Please bring collected items in a jar or bag (that will not be returned) to the museum during the hours of operation. About the Artist, Michelle Stitzlein During her travels Stitzlein has met artists in countries including South Africa, Namibia, Guatemala, Mexico, Bolivia, Colombia, and India and has been inspired by their

resourcefulness and ingenuity with found materials. A graduate of the Columbus College of Art & Design, Stitzlein has also taught workshops, as an artistin-residence, at elementary schools, art camps, and arts festivals. Using the humble plastic bottle cap as her medium, she encourages recycling through the means of art making. She has assisted children all over the U.S. in making colorful murals and whimsical outdoor sculptures utilizing thousands of bottle caps that would otherwise end up in a landfill. She published the how-to books Bottlecap Little Bottlecap and Cool Caps! as resources for parents and teachers. Projects from both books have been represented in the Ranger Rick magazine, as well as on HGTV. •

Corazón y Cultura: Heart and Culture Mariachi and folklorico performances February 26 – 27 in La Joya Special to Welcome Home RGV

T

Mission Chamber Celebrates Winter Texan Community February 24 Winter Texan Fiesta to take place at Market Square in Downtown Mission. Special to Welcome Home RGV

T

he Greater Mission Chamber of Commerce is pleased to announce their annual Winter Texan Fiesta sponsored by Mission Regional Medical Center. The festivities will be held at a new location this year, the Greater Mission Chamber of Commerce grounds, 202 W. Tom Landry, Thursday, February 24, from 11:00 a.m. – 3:30 p.m. The annual event is free, open to the public, and held to show appreciation to Winter Texans who call the Rio Grande Valley home during the winter season. As in previous years, tickets are not required to enter the concert. However, meal vouchers will be available on a first-come/first-serve basis for the first 1,000 attendees. “We missed this great tradition last year due to the pandemic limitations, but are excited to once again show the Winter Texan community and Chamber friends how much we appreciate them,’’ said Brenda Enriquez, president and CEO at

the Greater Mission Chamber of Commerce. “The Winter Texan Fiesta is our opportunity to express our southern hospitality while thanking them for choosing the City of Mission and the Rio Grande Valley as their home away from home.” Attendees can expect to enjoy live music and entertainment from Rick McEwen and Curt James, an outdoor market with a variety of local vendors, and, for the first time, attendees will be able to purchase beer and wine from 12:00 - 3:30 p.m. It’s going to be a fun-filled day with good music, friends, and lots more. We’d like to remind our guests that they are encouraged to bring their own lawn chairs, but please note that no outside food or beverages will be allowed. Parking and event information are available on the image above. For more information about this event, visit missionchamber.com or call 956-585-2727. •

he La Joya Independent School District has been generating fantastic mariachi and folklorico student productions for the past 40 years that have been open for the public to enjoy. Many of our Winter Texan friends have witnessed these concerts year after year when you arrive in the Valley, diligently marking your calendars so you don’t miss them! One misconception, however, is that there is only one school, or one weekend show annually. La Joya ISD is comprised of three comprehensive high schools, each of which produces its own mariachi and folklorico concerts each spring. For La Joya Juarez-Lincoln High School, this year marks the fourteenth year featuring Grupo folklorico “Sol Azteca” and mariachi “Sol de Oro” in their concert series titled Corazón y Cultura. Grupo folklorico “Sol Azteca” is an award-winning folklorico dance

company that cultivates self-directed students who perform with strength and heart. They strive to inspire audiences to celebrate culture and diversity through the art of folk dance. Similarly, mariachi “Sol de Oro” truly embraces Mexican roots through timeless melodies that resonate with traditions, values, and ways of life. Under the leadership of new program directors, this year the talented dancers and musicians will perform the weekend of February 26 and 27 at the Alejandro “Alex” H. Saenz Performing Arts Center, 604 N. Coyote Drive in La Joya. There will be two shows Saturday, 1:00 p.m. and 5:00 p.m., and a final matinee Sunday at 1:00 p.m. We invite you to visit our part of the Valley to experience live music and dance by the hard-working and skilled student artists of JuarezLincoln High School. See you there! •

sell anything using parts of migratory birds. They’ll only allow you to do so if you give the product away. When the demand for her product got too great, Chris decided to take down her website and produce less. She had tried to train others how to do the matting process, but it was like “watching kindergarten kids play with glue” she chuckled. Chris’ husband, Kirk, tried putting the feathers on with the glue, but he gave up after a few minutes because he didn’t have the patience. “All I

am now is the feather gatherer,” he laughed. Joanne seemed to be the only other one who could do the matting correctly. “When your hobby starts to become a job that takes up too much of your time, it’s time to reevaluate your goals,” Chris explained. “We don’t sit well,” they both chimed in. “We need to keep busy and be as creative as we can doing fun things that we really enjoy. After all, isn’t that what retirement is all about?” •

Chris and Joanne stand in front of a wall decorated with pictures framed with their pheasant-feathermatting process. The matting seems to make the pictures really stand out.

Another “not as healthy as fresh” but delicious way to use the large variety of apples available year-round. Apples are always at their best in the fall, but when using them in cooking, the crispness isn’t as much of a factor as eating them raw. •

Red-Crowned Parrot • McAllen D

id you know red-crowned parrots are native to the Rio Grande Valley area? You may have heard them chatting it up as they fly around neighborhoods from Mission to Brownsville. Their call is distinctive, especially when dozens chime in at the same time…but not quite in unison. These locals are primarily green, with a distinctive red patch between the eyes and above the beak. This single, perched parrot was not alone; its flock could be heard flying nearby, just above a McAllen neighborhood. •

Apple Tart • 2 large Granny Smith apples, peeled and cored • 1 tablespoon lemon juice • 2 tablespoons white sugar

• 1 sheet frozen puff pastry, thawed • 1 large egg, beaten • 1 tablespoon apple jelly

NOTE: When using frozen puff pastry, it’s important not to let those ultra-thin sheets dry out. Take the thawed sheet and place it between two damp kitchen towels to retain some moisture while you prepare the apple slices. Preheat the oven to 375 degrees. Cut the apples into ½-inch-thick slices, and toss with the lemon juice and sugar in a large bowl. Roll the puff pastry into a 10x7-inch rectangle, and cut a strip about 2½ inches wide from one long end. Place the larger piece of pastry on a baking sheet; prick with a fork. Cut the smaller piece lengthwise into ¾-inch strips. Brush the borders of the larger piece with the beaten egg. Fit the strips of pastry over the brushed borders to make a rim, and brush them with egg. Overlap the apple slices in 2 rows down the length of the pastry. Bake for 30 minutes. Transfer the baking sheet to a wire rack and let cool briefly. Remove the tart from the pan and onto the rack. Meanwhile, melt the apple jelly for a few seconds in the microwave, and brush it over the apples to glaze the tart. •

bon appetit! with

Executive Chef Bettina

Tolin

Sweet & Salty Peanut Butter Sandies I

f you like peanut butter cookies, you will love these. They are saltier, richer and tangier than the usual crisscross variety and like any good “sandy” cookie, they have a soft, crumbly texture that melts in your mouth. Bon Appétit! • • 1 cup ( 2 sticks) unsalted butter, softened at room temperature • ¾ cup granulated sugar • ¾ cup packed light brown sugar • 1 heaping teaspoon kosher salt • 2 cups unsweetened peanut butter, creamy or chunky

• 2 eggs, at room temperature • 2 cups all-purpose flour • Flaky sea salt and coarse sugar for sprinkling

• • • Heat oven to 350 degrees and line 2 baking sheets with parchment paper or nonstick liners. In a mixer fitted with a paddle attachment, cream the butter and sugars until smooth and fluffy, at least 3 minutes. Add the peanut butter and eggs, and mix. Add the flour and salt and mix just until well combined, with no white flour showing. Using a small cookie scoop (about 2 teaspoons capacity), scoop dough onto prepared pans. The tops will be rounded but edgy. The cookies will not spread much or change shape when they bake, so you can place them about one inch apart. In a small bowl, mix 2 tablespoons sugar with 1 tablespoon salt. Sprinkle each cookie lightly with sugar-salt mixture. Bake 12 to 15 minutes, until cookies are set and golden-brown. Take care not to over-bake. Carefully lift or slide off baking sheets and cool on racks. Store in layers separated by parchment paper, in airtight containers. •
