We all know why we put a pause on the Tour in 2020 and 2021, but there is nothing that is going to stop us in 2022. Canadian Winter Texan Says Helping Others a Tradition for Quilters To Sandra Johnson, part of being
a quilter is giving back. So she was thrilled when she found out about Texas Grandmas at her Alamo resort, soon after she and her husband began traveling down from Ontario in 2012. The group at Casa del Valle meets weekly to craft quilts for local organizations in need. “I wasn’t sure what they were until I started asking, and I thought, ‘Oh yeah. I’ll do that,’” she said. “Learning from my grandmother, that was something you always did, along with making your own. So it’s been fun for me.” They have already given out 130 quilts this season, and Johnson estimates they’ll have another 50 complete before she and the others return home. Even then, the work doesn’t stop. “We have a few people that take the in-progress quilts home and bring them back finished the next year,” Johnson said. “We enjoy the time we spend together, and part of the reason I think people come is just to have somewhere to go and to be productive at the same time.” Working as a team, they decide where to get involved and how to best use the funds they receive from others wanting to support with materials and equipment. “It’s a collaborative effort, for sure,” Johnson said. “And we’re tight enough that we can tease each

other and laugh and make fun of our mistakes because we do make a few or we forget things. It’s not always about what we’re doing; it’s also the camaraderie of just getting together.” One organization they provide with quilts is Texas Oncology. They also donate to churches to distribute into communities, and they most recently partnered with the Texas Organ Sharing Alliance (TOSA). “They sought us out and asked if we would make quilts for their patients doing their final journey, and then they present the quilts to their families,” she explained. “I mean, there was no discussion about it. We all just kind of looked at each other and said, ‘Yes, we want to be a part of this.’ It was just too awesome not to be. We are really, really proud to be part of their organization.” Johnson adds it’s been a learning year for the group, with many of the members not yet having returned this season due to COVID-19 and others still hesitant to gather. “It’s been different, but we’re forging forward with what we can do,” she said. “We’re just so grateful to help meet a need. We can barely keep up with demand, but we all know that we’re working together toward a good cause. It just makes you feel good at the end of the day for having taken your small part.” •

ynn Tidd of Bentsen Palm Village took up kayaking when she and her husband, Gary, first came to the Rio Grande Valley from Ohio 11 years ago. “I fell in love with it down here,” she says. Lynn shares her passion with Bentsen Palm Village resort visitors, guiding kayaking tours Tuesday and Thursday mornings at nearby Bentsen State Park. Typically, vehicles are not allowed in the park; however, the resort has special permission to drive kayaks in.
RV-park residents ride their bicycles in and meet Gary with the kayaks at the resaca within the park. Lynn refers to the area as one of South Texas’ little gems. One particularly foggy morning in early February the group launched into the still resaca and soon began spotting birds like pelican, kingfishers, egrets, and hawks. Soon, the fog had lifted, and blue skies appeared. “It’s very meditative,” Lynn shares. “It starts my day out right.” •

The first stop is Rocket Ranch, a campsite along the Rio Grande. A handful of small, retro campers line the riverfront, adjacent to a larger house with a large deck. Patti says the ranch rents to travelers, as well as employees of SpaceX. Nearby is a pavilion, a dock, and short-term and long-term campers. Patti connected to the ranch through a SpaceX representative after inquiring about potential tours of the site. SpaceX doesn’t offer public tours but referred her to Anthony Gomez of Rocket Ranch. “He just loves space,” says Patti about Anthony. “And his enthusiasm is so contagious.” Anthony initially agreed to guide two tours of 10 people each. When Patti announced the opportunity at a park meeting, her sign-up sheet was full within five minutes, she says, and overflowed with a waitlist of 150. Patti reached out to Anthony again and asked if he could secure a bus. He did, an old school bus painted with out-of-this world terrain designs and dubbed the Astrobus. This allowed more Llano Grande residents and guests to take part in touring SpaceX South Texas. As the tour rambles out the winding road from the ranch--near the historic marker of the last battle of the Civil War, Palmetto Hill--Anthony shares insight into the fauna that lives on the land, such as ocelots, nilgai (a large breed of antelope), and javelina. Within minutes of leaving the secluded ranch and historic site, there are signs of what lies ahead, not only for the tour but for the future. Crews line Boca Chica Boulevard/Highway 4, replacing wood poles with towers to support the power needed down the road at SpaceX. The SpaceX South Texas facility was established near Brownsville at Boca Chica Beach late last decade. According to visitbtx.com, it is a rocket-production facility, test site, and spaceport. Anthony navigates the Astrobus directly to the Starship program launch site eight miles away. The group gathers directly across the road from the launch pad, as Anthony shares--in great detail—the scope of massive project. The Starship program is underway
at the site, reporting a successful test launch and landing of the SN15 in May 2021. The purpose of the test flights, according to SpaceX.com: These test flights of Starship are all about improving our understanding and development of a fully reusable transportation system designed to carry both crew and cargo on longduration interplanetary flights, and help humanity return to the Moon, and travel to Mars and beyond.” This is what brought Anthony to South Texas. While on vacation at the ranch, he says watching a launch was life-changing. He sold everything and invested in Rocket Ranch. “I came down here because I wanted to see what this program was going to do for humanity.” After the launch site, the group loads back onto the bus for the short drive to the active rocket build site. The launch and build sites are known as Starbase. Anthony instructs the group to stay in line along the road as we walk into the site, reminding us that the area is very active with vehicles and workers. He leads the group of 40-plus directly to what is called Rocket Garden. It’s captivating to be this close to rockets that have been utilized as stepping stones in this incredible endeavor. The next stop is The Outpost, a satellite (excuse the pun) site to Rocket Ranch. The Outpost is a small property that sits in the site line of SpaceX, offering an ideal location to witness launches. A cargo container sits in the middle of the property, housing a screen for launch watching and a gallery of launch-site photography. Above the container is a double-deck observatory for optimal viewing and recording. Throughout the tour, Anthony and tour assistant Jessica Kirsh’s enthusiasm is infectious and warranted. The project is massive and, as Anthony reiterates, is moving at the speed of private industry. Work at the site is 24/7. “It’s not just about going to space. Look at all the computer stuff we’ve gotten off the space program,” says Patti. “The whole program is for enhancement of the world. It’s not just about going to space.” •

22nd Annual Canada vs. USA Senior Softball Game Special to Welcome Home RGV March 8 in McAllen PLAY BALL! The Senior Texan Softball League is hosting the 22nd Annual Canada vs. USA Senior Softball Games on the fields of McAllen’s Westside Park, 1000 S. Ware Road, a quarter mile north of Expressway 83. Opening ceremonies start at 9:15 a.m. There will be two games, one for each division. The “B” Division game will start at 9:30, with the “A” Division game starting shortly after the end of the first game. These games are the grand climax of the season and can truly be called the Mini Senior World Series. Senior American and Canadian players from many states and provinces will play
for this year’s title and bragging rights. Trophy presentations will take place following the second game. Admission is free, and there will be door prizes. Fans are encouraged to bring their flags and to wear their country’s colorful t-shirts and hats. There will be spirited, friendly competition by the players and fans from both countries and lots of fun for everybody. We are never too old to have a ball! Making Sleeping Mats for the Homeless Submitted by Sheila Freeland
A
t Fig Tree Resort in Harlingen, we have a wonderful group of men and women volunteers that get together for a couple of hours every Monday to create sleeping mats for the homeless here in the RGV, made from donated plastic bags. These mats have two purposes--to help make life a little better for those less fortunate and to keep plastic from reaching the landfill. In 2022, there are over half a million homeless people any given night in the U.S. In Texas alone, there are 25,848 sleeping in temporary shelters or transitional housing. Some are sleeping in places not meant for habitation (like abandoned buildings) or are out in the elements with absolutely no shelter above their heads. To make one mat, it takes 500-700 plastic bags and roughly 100 hours of work. No need for everyone to know how to crochet because we have volunteers flattening the bags and cutting them into strips. Others take those strips and tie them together and roll them into balls of “plarn.” The crocheters then use their 10mm crochet hooks to make a 6-by-3-foot mat. These mats are made of plastic, allowing the recipients to keep their blankets and sleeping bags dry, thus keeping them dry and warm. The mats can also be used as blankets to help stay dry when it rains. Given that they are plastic, they are easy to clean, too. For ease of transporting, the volunteers crochet a strip onto the end of the mat so they can be rolled and tied. As for the second purpose of the mats--did you know it takes plastic 400 years to degrade? That means the bottle you are drinking from will be here for the next 16 generations! There is such a global problem of overloaded landfills, but we can all

do our part…big or small. Did you know half of all plastic produced is designed to be used only once and then thrown away? By creating these mats and using recycled plastic shopping bags, we can give the bags a second job, thereby keeping more plastics out of the landfills. We have chosen to give our mats to Loaves and Fishes; they distribute them to those in need. As of this season, we have created and donated a total of 13 mats. That’s 9100 plastic bags that have been saved from going into the landfill! We know these mats aren’t going to fix the homeless situation or save the planet, but we do hope that it can make one person’s night a bit more bearable and make the landfill a little smaller. Note: According to the organization’s website, Loaves and Fishes of the RGV Valley, Inc., offers food, shelter, job training and placement and provides monetary and non-monetary aid to those experiencing a lifealtering event that takes away their ability to afford the necessities of life. •

et your motor running. Head out on the highway. Looking for adventure…” and lunch. That’s R.O.M.E.O., Retired Old Motorists Eating Out, a nationwide community that unites motorcyclists within communities. Each Friday from October to May 1, local Winter Texans meet up for lunch. How do they know where to go? Every Tuesday, Fox Turner, who’s been riding for 70-plus years, posts Friday’s destination to romeroriders. com/forums . Fox’ time on wheels began when he was a child. In 1942, after Fox was stricken with polio, his father built him his first trike (a threewheel motorcycle) using two bicycles and a gas-powered Maytag washing machine engine. “I thought, ‘he likes me,’ but then he made me get a newspaper route,” Fox shares with a guffaw. He’s always enjoyed the mechanical side of things, retiring 20 years ago from selling heavyduty truck parts. He estimates he’s owned more than 50 motorcycles in his lifetime. “I bought a lot of them in a basket. People would take them apart and didn’t know how to fix it. I’d put them back together.” Fox has seen some things on his countless rides, like the sunset over the Grand Canyon and the vast expanse of Canada. He’s cruised Route 66 from Chicago to Santa Monica, California, six times. And, when Fox and a friend decided they weren’t “south enough” after snow fell on South Texas in 2004, they hopped on their bikes Christmas morning and headed to Belize. In Fox’ post to the R.O.M.E.O. website for the February 11 destination, Joe’s Oyster Bar, he included an invitation to gather at La Feria’s American Legion Post 439 to ride north, then east, taking back highways to Port Isabel. At Joe’s, a long table is set up in
the dining room, and it’s filled with the overflow, seated at adjacent tables. “We’ve had as many as 100 people show up,” says Fox. They ride from as close as the neighboring town or as far as Alice, Texas. Kenny Gregory and Jerry Lubbers rode 175 miles that morning from Zapata to join the group. Kenny plans to spend the night on South Padre Island while Jerry plans to take a different, scenic route home. “You never take the same rode twice,” shares Joe Howald. He and his wife, Kathy, have been visiting the Valley for years. Joe rode motorcycles off and on since his teen years, but after retiring, he says, the couple rides quite a bit more. This past summer, the Howalds purchased a new trike and have already put 8,000 miles on it. They’ve been associated with the R.O.M.E.O. group for about six years. “We enjoy the camaraderie,” says Kathy. Chatter fills the room as the group animatedly visits with each other before piles of shrimp, oysters, fish, and fries are delivered to the tables. Then, the volume lowers as people enjoy their lunch. Afterwards, the riders and their friends and family file out into the adjacent parking lot. The Point Isabel Lighthouse shines white just a few blocks away against a bright blue sky. A few more conversations take place as the riders put on jackets and helmets, and the R.O.M.E.O.’s start rolling out. Fox is one of the last riders to leave the lot. Earlier, when asked what he loves most about riding, he chuckled and offered a sheepish grin before replying, “I don’t know. The air, the wind…” he trailed off, looked down, and then said, “The freedom.” •

Cancer Society Golf Tournament

I
t was a beautiful day for the 26th Annual American Cancer Society Golf Tournament held at La Floresta RV Park in Mercedes. A total of 57 golfers, from beginners to those with advanced skills, participated in the tournament. We all know someone who is, or has been, affected by cancer. The purpose of this event is to raise funds and awareness of cancer, and we congratulate all of the survivors. Through golf fees and other miscellaneous donations, over $1,600 was raised this year. This
brings us to a total of approximately $52,000 raised by the La Floresta family over the past 26 years. We pray our donation will help speed up a cure. Team 7 won the tournament. klahoma didn’t become a state until 1907, but it has a distinct history that extends far before that time. Today, travelers can visit a host of historical attractions to explore the stories of the 46th state. Those who want to learn about the 39 American Indian tribes headquartered in the state will find a variety of cultural centers and museums, many run by the tribes themselves. The Chickasaw Cultural Center in Sulphur, Choctaw Cultural Center in Calera, and Citizen Potawatomi Nation Heritage Center in Shawnee are all immersive attractions in which each tribe shares its story through interactive exhibits, art, and artifacts. The Chickasaw Cultural Center and Choctaw Cultural Center, which opened in 2021, both having living villages, where visitors can see traditional dwellings and watch dance, stickball, and craft demonstrations. In the northern part of the state, the Standing Bear Park, Museum & Education Center in Ponca City tells the story of the state’s six northcentral tribes and of Standing Bear, the revered Ponca chief and civilrights leader. Over in Tahlequah, the Cherokee Nation runs a host of museums that highlight the history of its people, including the Cherokee National History Museum, which opened in 2019. In Woodward, the Plains Indians & Pioneers Museum gives visitors a glimpse into the history of the Plains tribes, including the Cheyenne and Arapaho, and features exhibits about the area’s early frontier days. The Museum of the Great Plains in Lawton also focuses on the area’s early days; its collections spotlight the cultural and natural history of the Great Plains.
For a collective look at the history of the tribes that now inhabit Oklahoma, travelers can stop by the First Americans Museum in Oklahoma City. Opened in 2021, this sprawling facility contains a breathtaking collection of art and artifacts, along with interactive exhibits that help visitors understand the tribes’ journeys and their presentday lives. Oklahoma also has a rich Western legacy. The Chisholm Trail cut across the western part of the state, and today the Chisholm Trail Heritage Center in Duncan tells the story of the famous thoroughfare, with immersive exhibits that include a 4-D video and an audio-animatronic Jesse Chisholm, who tells the story of his namesake trail. Chisholm is just one of the colorful characters in Oklahoma’s past. Legendary oilman Frank Phillips made quite the impact, and his former home is open to the public as Woolaroc Museum & Wildlife Preserve in Bartlesville. Inside, visitors can see items from Phillips’ incredible collections of guns, Native American artifacts, Western art, and other one-of-a-kind items. Outside, a variety of exotic animals--along with native species like longhorn, bison and elk--roam the grounds. Bison can also be found at the Old West Buffalo Company in nearby Pawhuska. Opened in 2021, the attraction features a film that tells the story of the American bison and the species’ comeback after being hunted to near extinction. A bright beacon on our Gulf

W
hen you drive through Port Isabel, the word “charming” will likely pop into your mind. With its quaint shops, galleries, and eateries, the charm is everywhere. But pull back a few layers, and you’ll discover the depths of its history reveal much more. It’s a rich history--often told by fishermen and several whoppers from their shrimp-boat families--that includes miracles, pirates, and war stories from generations past. The area’s story began around the late 1700s when water sellers would come to Port Isabel to get clean water. Pirates were no strangers to our Gulf coast. Among our local pirate legends is one that claims notorious pirate Jean Laffite dug a 15-foot well somewhere around Laguna Vista. Treasure hunters have had fun spending many a day looking for lost booty in these parts. While legend has it there’s still plenty to be found, today it’s mostly folks like us combing the beachfront, without
metal detectors. But you never know! The Catholic church arrived in the mid-1800s when the Oblates of Mary Immaculate rode in. They established one of the town’s most iconic and little-known historic gems, Our Lady by the Sea Church. Located in the heart of one of Port Isabel’s most historic neighborhoods, with old anchors and shrimp-boat pieces adorning the front yards, you’ll find this pearl of a parish. It is easily one of the more beautifully unique churches I’ve visited. As you walk inside, you’re greeted with a calming, spiritual energy amid a pastel mural depicting a celestial backdrop for a giant, opened clamshell that hosts different religious statues and crosses throughout the year. It is as inspiring as it is original. Services are held several times a week, and there’s a small outdoor altar for prayer and reflection, open daily. A few years later, in 1859, the Port Isabel Lighthouse was built, with a whopping price tag of $7,000. It has
a crazy, tumultuous history--being bombed and rebuilt during the war-but it still stands as the Valley’s beacon. This is where our modernday adventure begins. It’s located in the heart of Lighthouse Square on the main road; you can’t miss it. Visitors can purchase a ticket from the Keepers Cottage, also known as the local Chamber of Commerce and Visitors Center. Then take a nice walk up 75 steps before stepping out onto the balcony overlooking the city and the Gulf. The view is magnificent. And if you go on a turbulent day, for a moment, as the wind howls and bites at your nose, you get a small sense of what those lighthouse keepers felt…on a good day.
While you are in Lighthouse Square, stop into the many shops and galleries, each unique, charming, and incredibly well-priced for a tourist town. Keep walking toward the bay and you’ll get as close to any pirate you’ll find--at Pirate’s Landing. Stop in and check out the shops or grab a bite to eat, but don’t leave without walking out onto the pier. It’s a great experience, and yes, you can fish from there. Or you can go grab a charter just down the road and really find out what you’re made of. There’s so much to do and so many places to shop and eat, Port Isabel offers something for pirates of all ages. •

I
t is early, and the sun is up; the Arizona temperature is down, so the bicycle ride begins. Morning time in the Arizona desert is a time of thundering quiet awaking as if a sleeping sand giant yawns, stretches, and wakes up. Perhaps spring is when God colors the pallet of the desert sand with every imaginable pigment available in His world of many colors. There is bottle brush, with its striking red flower, cacti--each unique--blooming at separate times in the spring with a statement of hue that individualizes each one. Some cacti are adorned in an orange/red while others capture pure white accented with yellow, others any shade you can imagine. People think the desert is more flat than hilly. People need to think again. You peddle up, coast down, peddle up again, and coast time and time again. Unseen birds call as you ride by hailing your intrusion into their specified territory. Peddle on, push up the next hill, wind in your face, conversation at your side. “Be still and KNOW that I AM God” slams into your consciousness like the opposite quiet of the movement of your bicycle as you peddle up yet another mound of a hill to a destination not yet in sight. A coyote yelps in the distance, distributing the sound of the wind as it weaves its way through the saguaro cacti that stand as silent sentinels guarding the serenity of the desert. They hover tall, reaching to the sky, arms outstretched, holding countless secret stories of the passing of time. Saguaro cacti grow as slow as the minimal existence of rain, sometimes only a foot a year. Yet they stand bravely tall, a place

for birds to land carefully, a landmark, as each one is formed differently, like people, fearfully and wonderfully created by the ultimate Creator. A cottontail rabbit holds its pose, hoping you, the coyote, or other natural enemies don’t notice him. Then you peddle too close, and it is a race; the rabbit wins, finding safe refuge under a fallen cactus. The temperature starts to increase, like the “burn” in your legs that matches the Arizona heat, yet you peddle on and on, knowing your destination is closer than it was just a few minutes ago. Your destination is down the road, but the goal of seeing God’s creative wonder of an awaking planet is the true and direct journey as His beauty pierces your heart and memory with how much He loves you to give you all this beauty, where there is minimal water and maximal sunlight. This is His quiet time with you…and yours with Him. You are peddling toward eternity, and He is waiting, waiting for you to come closer in your walk, your ride, your life. •

hen you want something with fruit and it has to be delicious but easy-peasy, it’s okay to use some prepared or convenience products to speed things along. This recipe can also be made with homemade “from scratch” vanilla pudding, but it has to be a thick one that will hold up under the fruit. You can also make your own homemade pie crust; you decide how much effort you want to put into this yummy dessert. • Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the Winter-Texan season at Palm Shadows RV Park in Donna. This season, Sandy will be sharing recipes to help readers enjoy the abundance of delicious fruits we find in our local markets. Sandy claims she’s been “a bit fruity” since childhood. Raspberry-Peach Tart • • • • • •
1 refrigerated, ready-to-use pie crust 2 small ripe peaches, peeled, pitted 1 regular-sized box French vanilla instant pudding 1¾ cups fresh red raspberries 1¾ cups whole milk 3 tablespoons peach jelly, not jam
Preheat the oven to 450 degrees. Unfold the pastry; it should be an 11-inch round, but if not, roll it out to 11-inches. Press into the bottom and sides of a 9-inch tart pan with a removable bottom. Trim the edge of the pastry to meet the top edge of the pan. Prick the pastry and blind-bake it according to package directions for a single-crust pie. (Put some rice or loose dry beans inside to keep it from buckling). Cool on a wire rack. Meanwhile, prepare the pudding mix according to package instructions but using 1¾ cups milk. Once the crust has cooled, spread 1 cup of the pudding over the bottom and reserve the rest of the pudding for another use (or eat it!). Cut the peaches into a total of 12 wedges and fan 4 or 5 of them decoratively in the center of the tart. Place 1 raspberry in the center of the slices, and line the perimeter of the tart with the remaining peach slices. Fit the raspberries in all of the remaining spaces between the peaches. Melt the jelly in a small dish in the microwave for about 25 seconds on high. Gently brush the fruit with the melted jelly and let the tart set before cutting. •

Serves 6 – 8
• 2 pounds lean ground meat • Salt and pepper to taste • 1 large onion, chopped • 12 corn tortillas • 1 pound grated mild Cheddar cheese, divided • 1 (10½ oz.) can condensed cream of chicken soup • 1 (15 oz.) can Ranch Style beans, undrained • 1 tablespoon chili powder • 1 (10 oz.) can diced tomatoes and green • 1 teaspoon garlic powder • chilies Preheat oven to 325 degrees. Lightly grease 13 x 9 casserole dish. Sauté onion and meat until meat is browned. Drain. Add undrained beans, chili powder, garlic powder, salt, and pepper. Mix well. Cut 6 tortillas in strips; line bottom of dish. Cover with meat mixture. Then sprinkle ½ of cheese on top. Cut other 6 tortillas in strips and place on top. Top with remaining cheese. Mix condensed soup with tomatoes and green chilies and pour over top. We’ve made new friends, too, taught classes, and just shared the day in the Sit-n-Knit area. Whether you’re here or back “home,” we have truly been blessed to be able to keep in touch with so many with fun visits in the shop and sharing projects via our weekly Zoom time on Wednesdays; we want to keep that going throughout the coming year. Once you all make that long trek home, we don’t want you to lose touch. So here are a few ways to stay connected. You’re welcome to join in on Wednesday Zooms. We enjoy chatting, keeping y’all updated on Lamb’s Loom happenings, and, of course, sharing lots of show-n-tell on projects we are all working on. Just drop us an email, and we will add you to the list. Throughout the year, many of our Winter Texan friends fill our Donation Chest with your handmade items. It is always a treat when the mailman brings in a box (with an address north of Falfurrias ), and it is full of your handiwork. We are so grateful for your hearts that keep giving. What a blessing you are to so many! Last year, we had a blast doing our first ever Make-Along. What’s a MakeAlong, you ask? It is a fun time of creation and giving all wrapped into one. Every month, we will provide inspiration based on our theme for the year. You then create an item for the Donation Chest at The Lamb’s Loom. It was so much fun that, beginning in March, we’re doing it again. Our theme last year was Fine Fibered Friends--birds of all kinds that live here and migrate through the area. This year’s theme is Flowers & Fibers. One of the many things that attract our Winter Texan friends to the area is seeing all of the wonderful birds that live here year around, and those that migrate through the area.

Our South Texas weather keeps the blooms blooming all year and that attracts the birds. Every month on our website, we will introduce you to a different flower in the area, provide yarn suggestions, and off you go. Make your favorite project, like a hat, scarf, blanket, or shawl for the Donation Chest every month. You are welcome to purchase your yarn here (which supports our mission, too), or dive into your own stash and find something fun that works with the theme. At the end of the year, we will celebrate those who participate with prizes and HUGE thanks for “blossoming talents” on this project and giving of your time to support and help so many. Oatmeal Chocolate Chip Cran-Raisin Cookies
I
have been in a baking mood lately and this is a favorite cookie recipe of mine. These cookies are not only delicious but they are also the best of both cookie worlds – the chocolate chip and oatmeal cookie all in one yummy treat! And there is no need to feel guilty about enjoying more than one - they are practically a granola bar! If you like, feel free to substitute the semi-sweet chocolate chips for white chocolate chips and/or the cran-raisins for traditional raisins. Happy baking! Bon Appétit! • Makes about 4 dozen
• 2 sticks unsalted butter, softened • 2/3 cup granulated sugar • 2/3 cup packed light brown sugar • 2 large eggs • 2 teaspoons vanilla extract • 2 cups all-purpose flour
• 2 cups rolled oats • 1 teaspoon baking soda • 1 teaspoon cinnamon • 1 teaspoon salt • 2 cups semi-sweet chocolate chips • 1 cup cran-raisins
• • • Beat the butter, granulated sugar and brown sugar in a bowl with a mixer on medium speed until fluffy. Add the egg and vanilla; beat. Whisk the flour, rolled oats, baking soda, cinnamon and salt in a bowl. Add to the butter mixture and beat until just combined. Stir in the white chocolate chips and raisins. Refrigerate the bowl of cookie dough for 30 minutes. Preheat the oven to 350 degrees F. Using a small-medium scoop, place rounded tablespoons of dough onto parchment-lined baking sheets about 2 inches apart. Bake until the cookies are golden on the bottom, 12 to 15 minutes. Do not over-bake. Cool on the baking sheets, 10 minutes, then transfer to racks to finish cooling. •
