Bit-O-Heaven RV Park & Mobile Home’s reputation for warmth and kindness precedes it. Converted Texans of 10-plus years and leaders of the Welcome Wagon, Anne Klein and Judy Hagen, help keep it so. The idea for the Welcome Wagon arose five years ago, and the friendly pair have been managing it for the past three. “Someone had indicated that we’re such a friendly park, why don’t we consider welcoming new residents as they come in?” Klein said. “And so, that’s how we got started.” Beyond simply introducing themselves, they take the time to show the people around, invite them to explore the Park’s amenities, introduce them to others, and even prepare welcome bags. “We pick up stuff from any vendors or businesses that would like us to welcome people to the Valley and communicate to them where they can shop and get their goodies,” Klein explained. “Within a week or so of new residents coming into the Park, we deliver that and ask them if they have any questions about the Park or area.” Whether new to the RGV or just the

Park, they all receive the same time and attention. “In the beginning of the season, it’s pretty busy with new people coming in,” Klein said. “We may even just get a transient that’s in for a few days. We try to catch them before they leave to ensure they get a good impression of the Park. Maybe they’ll stay longer the next time they come. It’s the friendliness of the park that helps us.” As such a large park--with more than 800 sites--they keep busy. And because they were once new and unsure how to make friends or get around town, they’re happy to be able to help guide others. “I remember when I moved down here and was trying to figure out how I’m going to get to know people; I started with the activities,” Klein said. “At the time, there was no Welcome Wagon, but just seeing a friendly face coming to say hi made me feel special. So for anyone now in that position, we try to make certain we’re giving them the essentials. It’s very important when you’re in a new area, and this is such a welcoming community. We want people to get to know the Valley and residents. We feel very strongly about that.” •

Alamo Rose Honors Veterans at Annual Dinner Story and photos by Eryn Reddell Wingert

T

he Alamo Rose Summer Quilters spend months quilting and sewing patriotic-themed quilts to honor veterans who live and visit Alamo Rose RV Resort. The culmination of their efforts is the highlight of an annual dinner honoring veterans. This year’s event took place February 22 in the resort hall. Park residents were invited to attend to honor those who have served in the United States military. The ceremony began with a video presentation showcasing the story behind Francis Scott Key’s “Star Spangled Banner.” Veterans then advanced into the hall carrying the United States and military-branch flags. During the flag procession, attendees stood at attention, saluting or with hand-over-heart. After the posting of colors, the reverent atmosphere turned lively as the dinner commenced. The aroma of homemade goodness filled the air, as lines formed for the buffet-style meal. The highlight of the veterans’ dinner was the presentation of the handmade quilts. A veteran’s name would be called, and as he or she received a personal quilt, a short biography of the veteran’s military

service was read. In total, 28 quilts were made and presented to Alamo Rose veterans. The event ended with the retreat of the flags, but not before the Alamo Summer Quilters were asked to stand and applauded for their volunteerism and support of local veterans. •

Retiree Pens Humorous Novel for Boomer Generation Special to Welcome Home RGV

C

oming-of-age stories are plentiful, says retiree Jenny Cummings, who decided to write an entertaining novel about “coming of old age.” Her humorous, heartwarming story, Just Jackie: My Life is Like a Fruitcake, was released in December. “The book’s heroine is a snarky southern senior who always seems to have her britches in a bunch,” Cummings said. “Jackie brings the reader along on this romp through her past, which is filled with rowdy friends and romantic disappointments, spiritual insights and comic relief. Her life is like a fruitcake: pretty nutty at times, occasionally crummy, but oh, so sweet during those moments when she gets it right.” Although the novel is filled with humor, the author says there are some tears mixed in with the laughter. Jackie has her fair share of challenges and many lessons to learn. Ultimately, one of her biggest

challenges is facing the realities of retirement and not wanting to admit her age. She finds that 70 is the new 50 and continues to have more hilarious adventures. “Jackie is a very relatable character, especially for the Boomer Generation,” Cummings said. “Her flashbacks will remind readers of what life was like ‘way back when’ we graduated from high school, went to college, entered the workforce, and started a family. She also reminds us that we’re never too old to learn something new about ourselves and make changes in our lives.” The novel can be ordered through bookstores and is available in e-book and print formats on Amazon. presented to 30 veterans in 2020. It was such a wonderful feeling to honor our veterans who had given so much! They made great sacrifices so we Americans can enjoy a peaceful nation. Their sacrifice gives all of us the freedom of religion, freedom of the press, freedom of speech, freedom to protest, the right to a fair trial, and the right to vote. The project began with honoring veterans who served in World War II. Later, veterans from other conflicts

were honored in the following years. The pandemic did not prevent the dedicated quilters from honoring 20 veterans at an outdoor presentation in 2021. Folks watched, cheered, and saluted our veterans from their golf carts on a beautiful spring morning. This was another great, emotional event as the red, white, and blue lap-size quilts were presented to the honored veterans. The most recent event, presenting 56 quilts to our honored veterans,

ropic Star Park hosted a very special event Sunday, March 6. Fifty-six veterans were honored with the presentation of a patriotic quilt made by the quilting ladies of Tropic Star. This very special event began three years ago. Someone shared the idea of honoring the veterans in our park with a patriotic quilt. Identifying the veterans in our park was completed by a dedicated committee. Their results were shocking!! How could our quilting group produce all the

quilts needed? Work began, and word spread about the project. Soon, many folks were supporting the project. The quilters sewed, others cut the fabric, and some pressed as the sewing progressed. Some quilters made the tops at their summer homes. Many contributed funds to purchase fabric and pay for the quilting. What an exciting adventure! To date, 108 quilts have been presented to the veterans residing in Tropic Star Park. The first quilts were

South Texas Ecotourism Center:

A Vision Becomes a Reality

W

hat was a vision three years ago for David Garza, Cameron County Commissioner for Precinct 3, became a reality Tuesday, February 22, with the grand opening and ribbon cutting for the 10-acre South Texas Ecotourism Center (STEC) at 501 W. State Texas 100 in Laguna Vista. This $12 million project was funded by the Cameron County hotel occupancy tax (HOT) and the Texas Parks and Wildlife Department and supported and voted on by the entire Cameron County Commission. The 10-acre site was generously donated by the Town of Laguna Vista. The STEC mission is to give visitors, students, and locals the opportunity to experience the beauty of nature in one location, interpreting the four major types of habitats found in the Rio Grande Valley: coastal prairie, lomas, savanna, and thorny brush forest. The Center includes an 8,000-square-feet indoor classroom, exhibit, and event space. Another feature will be a water lab, which will be used for local training of potable and wastewater plant operators and to test water samples

locally instead of sending them off. It also features bird blinds, a pond system that collects water from runoff, outdoor exhibits with interpretive panels and over 48,000 plants and stainless-steel sculptures of native animals, a large lookout boardwalk with interpretative panels and viewers, an outdoor classroom created with leftover material, and Wi-Fi connections. The interpretive panels in the displays feature QR codes, readable by smart phones and tablets to show information about the exhibits. Education is the major goal of the Center and will offer curriculum for grades 2-8 online, free to teachers, covering nature and ecotourism and approved by the Texas Education Agency. Another important component of the Center is to promote tourism and economic development and keep visitors longer--spending more on lodging, restaurants, and sites. All of this will help in the long run to generate more HOT tax revenue to fund the Center. The STEC will also promote other nature-related sites and venues. •

was truly full of emotion. Around 300 folks (family and friends) stood to honor the 56 veterans as they proceeded down the aisle following the Tropic Star Flag Bearers of America and representatives from each branch of the service. Some veterans proceeded with their walkers and some with crutches but all proud veterans. The honored folks, including three ladies, served our country in a variety of ways and in many conflicts. The Veterans Quilting Committee

proudly displayed the full quilt before it was presented to the veteran. Patti Hoerr, chairperson of the Sewing Room at Tropic Star, shared the veterans’ specific service as the quilt was presented. Fiftysix quilts, each a different design made by folks who wanted to show appreciation for the sacrifices the veterans made. Sewn in each quilt is a label that reads, “One Quilt to Warm You– Thousands of Stitches to Thank you, Tropic Star Military Quilters.” •

Things I Have Learned by Bill Ward

A

s we wrap up another great season in Texas, I will leave you with a good story to ponder. In my writing, I enjoy highlighting the ingenuity of our older citizens and including their accomplishments in the history books I write. The following story is one that came to me in a roundabout way, having been mailed many years ago. The writer did not know the subject of the story. When I opted to include it in an upcoming book, I attempted to confirm its truth and find out “who done it.” The contributor is gone, but I did find his son. However, all he could share was that his father swore it was a true story. Perhaps it is. You be the judge. Sometime in the period of history when trucks and horses were both common elements on the farm, a farmer in my home community in Minnesota had a bull he wanted to sell. On the appointed day, a truck arrived to haul the hapless critter away. Now bulls are known to be a little bullheaded at times, and so it was on this fateful day. Try as they might,

they could not get the bull up the chute into the truck. That is when the farmer had a bright idea. This all happened in the summer during the haying season. They had been using the hay trolley to lift hay up into the hayloft. For you city folk, a hay trolley is a system of ropes and pulleys strung up from the ground into the door of the hayloft high above. One end of the system is hooked to the load of hay, the other to horses or a tractor that pulls on the rope to lift the load. When the load reaches the top, just outside the big hayloft door, it trips a switch, allowing the load to change from vertical to horizontal movement heading into the barn. At the desired spot, someone pulls a trip rope, and the load falls to the hayloft floor. Then a counterweight comes down, pulling the mechanism back out the door and down to the ground as the horses or tractor back(s) up. It is all pretty slick. Maybe too slick. That bright idea? “Let’s put the sling under the bull and raise him up, just high enough to back the truck under him, then let him down

A somewhat random and reckless look at life from a fairly old guy

The Accidental Bull Flight slowly. What could go wrong?” So, they hitched up the two horses and hooked up the pull rope. They got the sling secured to the bull, and the truck driver backed into position, ready to snatch the bull out of the air. The signal was given, the horses moved, and the ropes tightened. Everyone held their breath. Then all hell broke loose! As the ropes tightened under the bull, it let out a loud, frightened bellow. This spooked the horses, and they took off on a run. Quick as a flash, the bull rose to the roof of the barn, tripped the carrier at the top, and headed in through the loft door. At this point, it is unclear if the ropes broke or the farmer tripped the slings. The result was the same. He now had a bull in the hayloft with no way to get him out. Those pulley systems only work one direction, and the bull wasn’t going to fit in the hay chute where hay was thrown down to the lower floor. To make a long story short, the bull was butchered in the hayloft. In the words of the contributor, “That’s

The McAllen Wind Ensemble’s music director, Roger Olivarez, has expressed his enthusiasm with directing this year’s ensemble and feels the audience “will heartily enjoy the new level of literature the band is performing.” The McAllen Wind Ensemble’s next concert, Viva South Texas!, will take place April 5 at 7:30 p.m. at the McAllen Performing Arts Center. You may recognize the concert’s name. COVID caused the cancellation of the program two years ago. The Ensemble is pleased to have the chance to finally perform this toetapping collection of compositions. The program will consist of paso dobles, traditional dances of Mexico, and Latin-themed music by composers Alfred Reed and Frank Ticheli. The concert will also feature

piano master Francisco Rocafuerte, who will repeat his Carnegie Hall premier performance of “Danzon” by Marquez. The McAllen Wind Ensemble’s 48th season, Celebrate the Music, wraps up with the May 10 concert, With Heart and Voice. The concert features some of the newer music written for wind ensemble, as well as the Ensemble’s best-loved classics. The concert is titled after David Gillingham’s composition, “With Heart and Voice.” When Gillingham wrote this beautifully lyrical piece of music, he pictured the band members’ instruments as their voices…voices (instruments) singing together, raised in a song from the heart. The piece was written with a variety of emotions coming to a conclusion with a feeling of joy and celebration. How could there possibly be a better way to end this season? Could You Go Back in Time, • What Would You Tell Yourself?

H

ave you ever made a wrong turn in your RV? Have you ever wished you could go back in time and change something you said or did? Here is something to think about; if you could go back in time, knowing what you know now, what would you tell your fledgling self? What would you change, what direction, turn, or different road would you decide to take? Though all of our memories and experiences shape who we are today, and the past cannot be changed, we can work on today and tomorrow. Many times, we don’t--or cannot-forgive ourselves for what we have done in the past, but Jesus already has. The history is forgotten “as far as the east is from the west.” The apostle Peter said he would never deny Christ and so stated that during the Last Supper, yet he denied Him not once but three times! (Matt 26:69-75). Imagine Peter’s feelings of regret, sorrow, abject emotion of rejecting the One who was sent to teach and save him and the world. Here is where the grace and mercy of Jesus come into the clarity of focus. Jesus gave Peter three other occasions to publicly express his love for Jesus, which is recorded in the gospel of John. If Peter found a way forward, we can, too.

s this season for y’all winds down, we wish you safe travels home. It has been so wonderful to see so many of you this year and to share a little sit-nknit time together. We hope you know how much you are appreciated by so many people down here in South Texas. It is a better place because of how much you pour of yourselves into this little corner of the world. Your volunteering, in so many areas, is just a-ma-zing. Plus, we all know that when you drive south, you are the ones pulling a few cool breezes our way. Otherwise, we would stay at 100 degrees forever. Here at The Lamb’s Loom, we are continually grateful for all of our Winter Texan friends. You volunteer here during the “winter” and work up handmade items for our Donation Chest year-round. Whether you bring them here with you the next season or mail them during the year, we know they all go to bless and encourage another person. They give a hug where it is needed and put a smile on people’s faces and in their hearts. For those who give financially, thank you so very much for your support. To all of our new friends who found us this year, what a blessing to meet you. We hope you will put us on your calendar of field trips for next season. A very special thanks from all of the mission groups we work with. In 2021, over 4800 items were sent out across the world. Twenty groups were served in 2021, from South Texas to Bangladesh, mission groups in several states across Mexico, and many groups here in the U.S. recovering from natural disasters last year. We are blessed to hear stories of encouragement given to someone in the form of a shawl, comfort to a family with warm hats, and joy for a sweet child with a new blanket. It’s all God passing out love and hugs in every stitch!

In 2019, Welcome Home RGV took our show on the road and had a great time exploring the Midwest and seeing exactly from where many of our Winter Texans hail. We saw beautiful country--lakes, rivers, and pumpkin patches--and enjoyed delicious fare. There were so many great cheeses, which helped us understand a little more why you return to the Midwest each spring. W

hether you call it “Joe” or mud or battery acid or one of a hundred other names, most people start their morning with a cup of coffee. It’s the second most popular drink--besides water--and the second most widely used product--next to oil. For many of us, it’s the jolt we need to start our day, and it’s definitely a social lubricant when we are with others. That is one of the main reasons morning coffee sessions are so popular in Winter Texan Parks. Palm Resaca Park in Brownsville is no exception. Long time resident Teddi Wheeler has been attending morning coffee sessions for 20 years. “It’s a great way to start the day with your friends,” she explained. “There’s usually a lot of laughter and kibitzing.” Sometimes someone will bring treats to share with others, and that is always appreciated. One time, Teddi made biscuits and gravy and brought them down for all to share. The coffee club can quickly turn into a spur-of-the-moment breakfast outing or plans for an afternoon shopping spree. One thing Teddi emphasized is that the coffee group always makes sure to greet newcomers cheerfully and make them feel welcomed. Caryl Unger attends morning coffee sessions on a regular basis. “We have told so many stories over the years that we have enough material to write a book,” she chuckled. “In fact, we could be a whole TV series, like The Housewives from wherever. Only there definitely wouldn’t be as much drama in our series. We’re too much into joking and telling funny stories.” Laurie Haase from Minnesota had only been in the park for a few months when she stumbled into the coffee club by accident. She was out walking early one morning and wondered about the noise coming from the Thomas Center. “I came in and was greeted so warmly that I felt like I was being adopted,” she said. “It’s a great way for me to meet new people and

for them to meet me. Sure, we talk about a lot of things but it’s not a gossip group,” she continued. “It’s a very positive group, and I learn a lot of things about what’s going on in the Park, Brownsville, and the surrounding area.” Laurie said she was so impressed with how friendly everyone was and says she loves being a member of such a wonderful Park. Roe Abschire, a full-time resident in our Park, explained why he likes the coffee club. “I get up very early, and I don’t like sitting in the house alone. So it’s nice to have someplace to go to that’s so close where I can interact with others.” That particular morning, there were many discussions about belt buckles, barbeques, and places to eat and shop, a general rehashing of the news of the day, and general talk about what was going on in the Park. “Every day, you learn something different,” said Roe. “People come from such varied backgrounds that I am always learning something new.” “The people who come to coffee club are the nucleus of the Park,” said John Moulton, a Winter Texan from Minnesota. “They are the ones who you normally see at Park functions and like to be active participants when things are going on. We do a lot of talking, and it’s a chance for people to share different ideas with each other.” The coffee club goes on every morning throughout the year. There is no charge to attend. The Park Recreation Club pays for the coffee. But some people make donations of coffee or other items or even bring treats to keep the club going. We definitely like the treats. There are some great cooks in our park, and we enjoy anything they have to donate to coffee time. Coffee definitely plays a vital role in almost every aspect of our social life. It gives Park residents a time to enjoy each other’s company and have a few laughs. In short, it’s a great way to start the day. •

M

artha Little and her husband, Irv, first came to Palm Gardens RV Park in Harlingen in 2008 and enjoyed the area, finally buying a place in 2010. Martha came from a long line of quilters. Her grandmother made quilts out of sugar sacks while her mother used old clothing. Martha’s youngest daughter is also learning to quilt. When she first came to Palm Gardens, Martha brought her sewing machine and material. During the first year she invited other quilters from the park to her house for lessons. Once she had a few other people, they started quilting at the Hall. In the spring of 2010, Martha learned she had cancer and had chemo treatments, resulting in the loss of her hair. During the chemo sessions, she met other sewers and discussed making chemo caps. Her quilt guild in Port Perry, Canada, obtained a couple of patterns and made several caps. Martha lived with the cancer until her death in May 2014. During this period, she joined a cancer support group at Hearth Place in Toronto.

The ladies of Palm Gardens RV Park

The group provided support for the patient plus the family and is run solely on support from the public. The Port Perry Quilt Guild made several caps that were donated to Hearth Place. After Martha died, Irv approached the quilters at Palm Gardens and spoke to Sherry Polk about making caps. That year, residents made over 50 caps that were later supplied to Hearth Place. Each cap was given to a cancer patient who has lost her hair during chemo. Several of the caps

made by Palm Gardens were also donated to St. Jude’s for the children cancer patients. For the past seven years, every February, Palm Gardens residents get together to make cancer caps that are given to Texas Oncology and Valley Cancer Associates and also send some back to Port Perry with Irv. Over the years, the group has also made and donated port pillows, which provide cushion between the chemo port and a car’s seatbelt. This year, residents obtained patterns to

also crochet and knit caps. Thanks to Martha’s vision and the initiative she started and to the residents of Palm Gardens who cut and sewed caps and port pillows, who crocheted and knit caps, and who provided monetary donations, we are happy to donate the following to Texas Oncology and Valley Cancer Associates and to Port Perry in Canada: 186 tee-shirt-material caps, 86 cotton-material caps, 250 crochet or knit caps, and 125 port pillows. •

While not as healthy as just eating the fruit out of hand, they are so good it’s hard not to enjoy them when we can. • Lifelong foodie, restaurant reviewer, cooking teacher, and summer Iowan, Sandy Olson spends the WinterTexan season at Palm Shadows RV Park in Donna. This season, Sandy will be sharing recipes to help readers enjoy the abundance of delicious fruits we find in our local markets. Sandy claims she’s been “a bit fruity” since childhood. Fresh Fruit Cobbler • • • • • •

2 tablespoons and 1 cup white sugar 1 cup all-purpose flour 1½ teaspoons baking powder ½ teaspoon salt 1/3 cup shortening, such as Crisco® 3 tablespoons milk

1 large egg, slightly beaten 3 tablespoons cornstarch ¾ teaspoon ground cinnamon 3 cups peeled, sliced, ripe peaches 2 cups unpeeled, sliced red plums (6-8 large) 1 cup fresh blueberries

Preheat the oven to 375 degrees. Whisk the 2 tablespoons of sugar with the flour, baking powder, and salt. Cut in the shortening until it resembles coarse crumbs. Mix the milk and egg together in a bowl and add to the dry ingredients. Stir until a dough has formed; set aside. Mix one cup of sugar, the cornstarch, and cinnamon in a heavy, 3-quart saucepan. Stir in the peaches and plums, plus any juice they have given off when slicing. Cook over medium-low heat, stirring constantly, until the mixture thickens and boils. Boil and stir another minute. Remove from heat and stir in the blueberries. Pour the fruit into an ungreased 8-inch-square baking dish. Drop 9 spoonfuls of the dough evenly on top of the hot fruit mixture. Bake until the topping is golden brown, 25-30 minutes. Serve warm with ice cream or real whipped cream on top. •

My Mom Gloria’s Favorite Blueberry Scones

T

oday is my late father Rick’s birthday. I adored him. He was an impressive man and he loved food, especially Italian food. He did NOT, however, like a scone. My mother on the other hand does enjoy scones and this scone is her personal favorite. On his birthday, I couldn’t help but to happily reminisce on all Easter brunches I would make a lavish buffet for them of all their favorites, including scones for my mother. Every year she would lovingly pass the basket of scones to my father, saying “here dearie, have a scone”. And he would say, “now dear you know I don’t care for a scone”. Oh my. Whether you are or are not a scone fan - it’s probably a texture thing and the fact that they are slightly moist but are not too sweet is just the beginning. Trust me, you really do owe it to yourself to master the art of the scone. The key is to not over mix or knead the dough. Think biscuits. Just mix enough to barely combine it. Here is a fool proof and easy recipe for lovely blueberry scones. If you would rather try a different variety, feel free to substitute the blueberries for cranberries (and add a little orange zest too) or maybe even chocolate chunks. All scones are fabulous in my world! Bon Appétit! And Happy Birthday Dad! • • 2 cups all-purpose flour • 1 tablespoon baking powder • 1/2 teaspoon salt • 2 tablespoons sugar

Lemon Glaze

• 5 tablespoons unsalted butter, cold, cut in pieces • 1 cup fresh blueberries • 1 cup heavy cream, plus more for brushing the scones

• 1/2 cup freshly squeezed lemon juice • 2 cups confectioners' sugar, sifted

• 1 tablespoon unsalted butter • 1 lemon, zest finely grated

Preheat the oven to 400 degrees F. Sift together the dry ingredients; the flour, baking powder, salt, and sugar. Using a pastry blender (or two forks), cut in the butter to coat the pieces with the flour. The mixture should look like coarse crumbs. Gently fold the blueberries into the batter. Take care not to smash or break the blueberries or their color will bleed into the dough. Make a well in the center and pour in the heavy cream. Fold everything together just to incorporate; do not overwork the dough. Press the dough out on a lightly floured surface into a rectangle about 12 by 3 by 1 1/4 inches. Cut the rectangle in 1/2 then cut the pieces in 1/2 again, giving you 4 (3-inch) squares. Cut the squares in 1/2 on a diagonal to give you the classic triangle shape. Place the scones on an ungreased cookie sheet and brush the tops with a little heavy cream. Bake for 15 to 20 minutes until lightly golden brown. Let the scones cool a bit before brushing on the glaze. For the glaze: mix the lemon juice with the confectioners' sugar until dissolved in a heatproof bowl over a pot of simmering water (double-boiler). Whisk in the butter and lemon zest and continue whisking in the double boiler. Whisk the glaze to smooth out any lumps and then drizzle the glaze over the scones. Allow to set a minute before serving. •
