Dad’s Smoking Jacket Inspired by the smoky flavor of the bitters, this cocktail utilizes maple syrup aged in whiskey barrels. Ingredients:
Dad’s Smoking Jacket Dad’s Hat
2 oz Dad’s Hat Pennsylvania Rye Whiskey 2 big dashes of Crude Small Batch Bitter “Pooter” (Smoke and Salt) ½ oz of Dad’s Hat Small Batch Maple Syrup 1 large ice cube Orange peel for garnish
Directions: Apple Cider Martini 1675 Spirits
Combine the maple syrup and bitters then muddle together. Add the ice cube and whiskey to the combination and stir until the flavors are melded. Garnish with the orange peel.
Apple Cider Martini Made from local Shady Brook Farm apples, this fall favorite can be whipped up hot or cold. Ingredients: 3 oz apple cider 1 tsp sugar ½ tsp brown sugar 1 oz Alpine Spice wine from Sand Castle Winery 2 oz of 1675 Spirits’ whiskey Ice Apple slice for garnish
“ Be careful not to add too much maple syrup. If you’re using our Maple Syrup Whiskey use a little less, if you’re using our regular Rye Whiskey use a little more!” – Herman Mihalich, Dad’s Hat
Directions: Put the ice into a shaker and add all the ingredients. Shake until combined and strain into a martini glass. Garnish with apple slice. If you want to make this warm, you’ll want to add this to a sauce pot to heat instead. FALL/WINTER 2019 | 17

Sip, sip, hooray! Meet the connoisseurs behind some of Bucks County’s wonderful wineries. These wine experts spoke to us about how they got their start as winemakers, as well as what makes Bucks County a pivotal place to plant vineyards‌
Rich Fraser Wycombe Vineyards
How did you get into the winemaking business? RAY: I grew up in South Africa and after school visited the town of Stellenbosch, which is in the heart of the wine growing region in South Africa. This was my first introduction to wine and I absolutely fell in love with the area, culture and winemaking process. I then completed a Bachelor of Science degree in winemaking and worked at various wineries before moving to the U.S. TOM: When I was ten, my family moved to the farm on which Crossing Vineyards is now located. Following my college graduation I lived in California to pursue an acting career, but kept dreaming of my roots back in Bucks County. In 1999, I moved back to pursue my lifelong dream of winemaking. Four years later, Crossing Vineyards and Winery opened its doors to the public. Its been full-steam ahead since then! RICHARD A.: In 1997, I moved to the U.S. from Slovakia. I worked as a winemaker and vineyard manager. In 2005, I left and started a trucking company. It was the only path that I saw at that time to make real money, enough to start a dream. I worked with wine for 30 years. It took a lot of blood, sweat and tears.
What is your winemaking process? Kevin and Cindy Bishop Bishop Estate Vineyard & Winery
Ed Ullman Rushland Ridge Vineyards
JERRY: Our winemaking process is unique in that we are one of the most automated, technologically advanced and equipped small wineries. Our mechanical harvesting, automated processing and high-speed bottling allow us to make consistently high-quality wine. We still use many traditional methods, but with greater control. ED: Our winemaking process is traditional and simple. By growing our own grapes, we have complete control over the grapes we use to make our wines and this affords us to make wine with a simple process. Pick the grapes, add the yeast and mother nature takes care of the rest. Yes, we do filter our wines but using few inputs has made our wines simple, approachable and easy to drink. RICH F. : All of our grapes are handpicked by the public and processed within an hour or so. One cannot get a fresher grape than this. All the grapes are pressed in a
traditional European fashion using a handoperated basket press and fermenting in smaller batches. We utilize stainless steel to minimize over-oaking a wine. The flavor of the grape is way more important than the flavor of the wood in a European style of winemaking. As an added accent, all of our labels contain family archive photos of family relatives that lived, worked and died on the family property. Most photos were taken circa 1929 through 1947.
