NOW in the Garden Make this natural table decoration using flowers and leaves from the garden.
Plants have always played a big part in Christmas festivities. The holly and ivy we sing about in photo by Brian North traditional carols have been used for centuries to bring fresh leaves and colour into homes at this cold and dark time of year. They were even used in pre-Christian times at winter solstice festivals to ward off evil spirits and celebrate nature. Other plants connected with the festive season are rosemary, known as the ‘remembrance herb’ and used to remember the birth of Jesus, and laurel, which was worn on the head as a wreath to mark successes.
These hardy evergreens also brighten up the garden at Christmas time. Hollies come in many sizes and shapes, but only female plants produce berries. And those with variegated leaves, such as Ilex altaclerensis 'Golden King' and Ilex aquifolium 'Handsworth New Silver', add even more sparkle to a wintry scene. Laurel is ideal for hedging, and ivy can be used to cover a garden fence or post, where it’s black winter berries will provide invaluable food
8
Brighten up your home with seasonal leaves and berries
for birds. While holly, ivy and laurel all grow happily in shade, find a sunny spot for rosemary, and plant it near a path where its tantalising scent will be released as you brush past the leaves. Studies by researchers from the University of Northumbria have shown that rosemary’s scent may also help improve memory – so its traditional association with remembrance seems to be well-founded. I also use evergreens, berries and winter flowers from the garden to make beautiful Christmas decorations, such as wreathes, swags and table displays, which all make lovely personalised gifts too. To find out how to make these natural decorations why not come along to one of my Winter Wonderland workshops?
Combine rosehips, rosemary, cones, cinnamon sticks and dried oranges and limes to make a pretty Christmas swag.

Consumer Advice NOW Jonathan Vernon-Smith is the Sony Award winning mid-morning show presenter for BBC Three Counties Radio. During his consumer hour he helps listeners with their consumer problems and now shares his advice here with you.
How to buy safely on the Winter-Web The internet has been with us since the mid 90s and while it has brought some fantastic benefits, it has created some headaches as well. The fact the entire world is accessible in our homes is a wonderful thing, but it’s worth noting that there are lots of internet companies, particularly those in other countries that provide a less than desirable service. The most important thing is to avoid buying items from dodgy internet companies in the first place. It sounds simple, but you’d be amazed how many people still find some weird company online that nobody’s ever heard of and hand over hundreds of pounds. They are then amazed when they find themselves out of pocket without the goods they’ve ordered. So, always make sure you research the internet company you are planning to buy from. Find out where they’re based, look for a UK telephone number, check reviews and complaints about them so you know exactly who you’re dealing with. Make sure their delivery timeframe will ensure your gifts arrive in plenty of time for Christmas. Make sure you’re paying a sensible price. If a company is selling an item at a ridiculously low price,
there’s usually a reason why. Often the items are fake. Always pay for goods by credit card when buying over the internet. You are not protected by the consumer credit act unless you’re paying over £100, but you’re still more likely to get your money back using a credit card rather than debit card, cheque or bank transfer. I would go so far as to say you should NEVER buy goods from a company that asks you to transfer money directly into their account. If you decide you’re going to buy Christmas presents from an online auction site like ebay, it’s worth familiarising yourself with their safety advice. You generally have fewer rights when buying goods in this way, particularly if they’re second hand. Paying by Paypal and ensuring that you NEVER collect items in person will go some way to protecting yourself. Only buy from highly rated sellers, based in the UK. It is worth remembering that when you buy new items over the internet, you are protected by the distance selling regulations. Because you haven’t had the chance to see the item in the flesh, you have 7 days from delivery to change your mind and send it back for a full refund. Unless the company specifies their returns postage policy, they are liable for the postage too. Make sure you order things online in plenty of time to allow for this, after all, you don’t want unhappy friends and relatives whose presents are NOT under the tree! To hear more why not tune into The JVS Show weekday mornings from 9am.

Christmas Baking Lebkuchen This richly spiced traditional German festive biscuit provides a grown up alternative to gingerbread. Slathered in rich dark chocolate and studded with sweet cherries, these are chewy and sweet, with a spicy kick. Perfect with a cup of strong black coffee. 100g ground hazelnuts 70g almond flour 350g plain flour 3 tbsp cocoa powder 2 tsp cinnamon 2 tsp nutmeg 1 tsp mixed spice 3 tsp ground ginger tsp salt
tsp baking powder tsp baking soda 150g dark brown sugar 225ml clear honey 50g butter 3 medium sized eggs 200g glacé cherries 300g dark cooking chocolate
Preheat the oven to 170 degrees. Prepare all dry ingredients and sift together in a large bowl until combined. In a separate bowl, combine honey, sugar and butter, and beat with an electric mixer until light and fluffy. Add one egg at a time to the mixture and beat until well mixed. Gently fold the sugar mixture into the dry ingredients. The mixture will be sticky and dense. Add glacé cherries into the lebkuchen mixture until evenly distributed. Prepare a large tray with greaseproof paper. Place heaped teaspoon sized portions across the tray, with plenty of space around them. Bake for 10-12 minutes. The biscuits will rise and be firm to touch, with a little softness to pressure. Remove and allow to cool overnight. Once cooled, prepare the coating by crumbling the chocolate in a large bowl, over hot water. Stir until the evenly melted, and of a smooth, glossy consistency. Dip each biscuit into the chocolate mixture. You can either dip the front surface only, coat half a biscuit, or submerge the entire thing! (You may need more chocolate to do this for the entire batch.) Place dipped biscuits on a tray and allow to cool and harden. Store in an airtight container. These can be kept uncoated for up to a month in an airtight container, so are ideal to make ahead of the festive rush, to be dipped in chocolate later on.

Mini Christmas Cakes For the cake 250g butter, softened 250g dark muscovado sugar 4 medium eggs, beaten 350g plain flour 2 tsp ground mixed spice ½ tsp ground cinnamon ½ tsp ground cloves zest of 1 lemon, finely grated 800g mixed dried fruit 100g glace cherries, rinsed, dried and chopped 100g chopped mixed nuts For the decoration 750g marzipan Icing sugar, for dusting 4 tbsp apricot jam, warmed and sieved Mixed coloured glace cherries, walnut halves, Brazil nuts and chopped dried apricots Preheat the oven to 150C/300F/gas 2. Grease and line the base and sides of a 20cm square cake tin with a double thickness of greased, greaseproof paper. Place the butter and sugar in a large bowl and cream together until pale and fluffy. Gradually beat in the eggs. Sift together the flour and spices then fold into the creamed mixture. Fold in the lemon zest, dried fruit, glace cherries and nuts and mix thoroughly. Spoon the mixture into the prepared cake tin and smooth the surface. Use the back of a metal spoon to make a slight dip in the centre (this will help to give an even rise). Bake in the preheated oven for 3¼ - 3 ½ hours or until firm to the touch and a skewer inserted into the centre of the cake comes out clean. Leave to cool in the tin. When the cake is completely cold, use a sharp knife to cut it into 9 smaller square cakes. Brush the sides of each cake with a little apricot jam. Divide the marzipan into 9 pieces. Dust a surface lightly with icing sugar and roll each piece out to a strip long enough to go around each cake. Wrap the strips around the cakes pinching the ends together to seal. Top each cake with a selection of cherries, nuts and apricots.

NOW for a Good Read Tom Jones once sang ‘Baby, it’s Cold Outside’, so as December descends why not curl up in front of the fire with our selection of books that will chill you to the bone…one way or another
Into Thin Air John Krakauer Sometimes the most extraordinary stories we read are those that are true. This is certainly the case in Krakauer’s account of 24 hours of hell at the top of Mount Everest. With photos documenting the scale of the ‘murderous storm’ that bore down on Krakauer and his fellow climbers, it’s clear to see why five lost their lives. Dealing with the guilt that comes from surviving such a disaster whilst others didn’t, Krakauer’s writing is incredibly compelling and the retelling of the 1996 disaster will leave you gasping.
Cold Mountain Charles Frazier This is a story of two people: injured Civil War veteran Inman, and Ada, the woman who waits for him. To reach her, Inman must leave his hospital bed and walk the long way home to Cold Mountain. Of course, his epic journey means he encounters many a strange character along the way. Ada, meanwhile, has her own internal struggles to contend with as she battles with her upbringing and the future that Cold Mountain represents. This brilliant and beautifully-written book is one everyone should read at least once in their lifetime.

Snow Falling on Cedars David Guterson With his hauntingly beautiful descriptions of the wild nature of America’s Pacific Northwest, Guterson’s story of a murder soon reveals itself to be one of a complex love triangle. It’s 1954 and well-respected local fisherman, Carl Heine is found dead in one of his own fishing nets. Local Japanese-American, Kabuo Miyamoto is accused of killing him. In the grip of a terrible snowstorm, the town of San Piedro is forced into dealing with its recent history, and a wave of Anti-Japanese sentiment following World War 2. To complicate the matter, the local newspaper reporter is in love with Kabuo’s wife. If the snow falls and covers everything, is all forgotten?
In Cold Blood Truman Capote It’s 1959 and a Kansas family is brutally murdered. This hugely controversial book focuses on their two killers: Perry Smith and Dick Hickock. Whilst there’s little doubt that the killing of a husband and wife, along with their two children, is despicable, Smith and Hickock come across as alarmingly normal and recognisable. Capote has written a very clever true crime work of non-fiction, brought to us in the style of a novel. The whole thing is a bit disturbing really...and at the same time, you just can’t put it down.
The Spy Who came in from the Cold John le Carré Spymaster le Carré’s thriller has stood the test of time with reading audiences continuing to be gripped by the powerful combination of love and betrayal that would leave Daniel Craig running crying to his mummy. Set in 1960s Berlin, spy Alex Leamas is basically ready to throw in the towel. Of course, ‘one final assignment’ always spells disaster ahead. Is this really a case of ‘mission impossible’ and will he live to walk away from this one?
Frozen in Time Ali Sparkes One for the younger readers, a novel about two children who are ‘frozen in time’. Freddy and Polly were put into cryonic suspension in the 1950s by their father. But the experiment was only meant to be for a couple of hours; something went drastically awry. Enter Ben and Rachael, who unwittingly uncover the human ice-lollies. Suddenly it looks like the summer holidays aren’t going to be so dull after all.
