The Big Scoot, Bike and Trike Challenge The race is on to have winning wheels this summer. With lots of events cancelled, it's time to find a new challenge to keep the children busy. Lockdown Cubs Dakota, one of Woburn Safari Park’s lionesses, has her paws full this summer after giving birth to five adorable cubs. The latest arrivals were born during lockdown in the early hours of the 24th April. These cubs, along with the pair born in July last year to Dakota’s daughter, Zuri, has seen the pride increase to 13 lions. The 29th June marked their first day out, as the mini pride discovered their new playground; the outdoor paddock adjacent to their specially designed house. This is Dakota’s second litter, following the five she gave birth to in 2014, and she is yet again proving herself to be a natural mother. Keepers have increased Dakota’s feeds to ensure she is producing plenty of milk for her large litter, until they are fully weaned at around six to eight months old. www.woburnsafari.co.uk
Knebworth House & Gardens The Gardens, Dinosaur Trail and majority of other attractions including the House, Park and Adventure Playground are now open. The 28 acres of Gardens and the Dinosaur Trail are great locations to see the seasonal flowers while children can follow the trail of 72 life-sized dinosaurs through the wilderness garden. Caring & Sharing Sandridge 10K The first ever Sandridge 10K and family fun run is going ahead with a few covid19 related changes. All runners will complete their 10K or 1 mile distance on 12th September on routes they have individually planned. This can be anywhere‌Heartwood Forest if you can make it. Run for health, for fun, and for the children of Sandridge Primary School. Stick to government advice and run only with others if it is safe to do so. Please follow footpaths and avoid running over flower meadows. The 10K was due to be a trail route, see if you can make yours off road too. Remember to hydrate well before, after and during your run. If you can, run with a smart watch or phone, link up to Strava or Garmin (or another tracking app) and send in the results. Medals will be awarded to all finishers. Food Glorious Food Baked Camembert Serves 2 250g Camembert 15g root Ginger 1 tsp chilli puree or sauce 1⁄2 fresh chilli Pre-heat oven 180C / Gas Mark 4 Make 2 x 4cm cuts into the top of the Camembert. Glaze the top with chilli puree or chilli sauce. Finely grate the root ginger evenly over the top and allow any juice to drip onto the Camembert. Slice the fresh chilli into small pieces and spread over the top, for extra heat insert pieces into the cuts. Put into a ramekin, and place on the middle shelf of the oven, cook for 25-30 minutes, or until the Camembert appears oozy. Leave to cool slightly and serve with crusty bread. Variations: Rosemary insert two sprigs of rosemary into the cuts. Garlic and rosemary insert two sprigs of rosemary and two peeled garlic cloves into the cuts. White wine and pear make the cuts, glaze the top with wine, thinly slice 1/4 of a pear and place on top of the cheese, glaze with extra wine.
King Prawn, Squid and Chilli Spaghetti Serves 4 Extremely quick to put together and so colourful on the plate 450g spaghetti 1 small onion, finely chopped 3 cloves garlic, peeled and finely chopped

2 red chillis, finely sliced 1 bag frozen raw king prawns, shelled 4 fresh squid (or frozen), sliced into rings 1 glass white wine 10-12 small cherry tomatoes, quartered Large handful parsley, finely chopped Olive Oil Salt and Pepper Parmesan (optional) Cook the pasta in a large pan of well salted water, meanwhile, heat a glug of oil in a large pan and gently fry off the onions for 3-4 minutes, add the the garlic and chilli and cook for a couple of minutes. Stir through the prawns and squid and cook for a minute. Add the wine and tomatoes and let the sauce simmer fairly vigorously for a couple of minutes to reduce the wine. Add in the chopped parsley and season to taste. Drain the pasta and stir it well into the sauce. Leave for a couple of minutes so the pasta takes on the flavours of the sauce. Serve immediately with Parmesan.

NOW for a Good Read Ready Reads From July a new service will allow residents to collect a pre-selected book pack from 10 Hertfordshire Libraries including St Albans Library. The service will be extended to Harpenden and other libraries across the county once safety measures are in place. To request books you will need to complete an online form, or just call the customers services staff who can complete the form for you. They will tell you when your pack is ready to collect, just take your library card or another form of ID and a bag. All returned items will be placed in quarantine for 72 hours before going back into circulation. Books borrowed before lockdown can also be returned to libraries offering Ready Reads.
