A one-time purchase of a souvenir mug is required for tasting. Mugs from previous years will not be filled. Tasting tokens are required for beer purchase. Only 2014 tokens will be accepted.* Tokens cost $1 per — sold in packets of five — and equals a 4-ounce taste. Full 12-ounce pours are 4 tokens. A variety of food is available from outstanding local vendors listed on Page 4. Cash is required. There is an ATM on site. The merch table will accept credit cards. All ages are welcome until 7 p.m. each night with a parent or guardian in attendance. Parent/guardian is required to sign a pledge or acknowledgment for the responsibility of preventing children from consuming alcohol and the penalties for the parent and child. DRINK RESPONSIBLY: We’ve all heard this before, but it’s important. Even a small amount of beer can impair your judgment, so don’t put yourself in a position where you can harm youryourself, others, or turn into a complete fool. Here are some ways to achieve this:

DRINK BETTER. DRINK LESS. There’s plenty of beer to be had, with plenty of time, so pace yourself. Drink for flavor, not just for impact. Always practice moderation when drinking. Get to know your limits, and don’t exceed them. If you feel that moment of absolute cheer, take a break and grab some water and food.

HYDRATE & EAT. Water is your friend. Drink plenty of it to help detoxify and counteract the alcohol stripping water from your system. Eating also replenishes the system, slows down your rate of consumption, and helps to absorb alcohol so you don’t find yourself inebriated after a few beers. However, though eating will slow the absorption of alcohol, it won’t necessarily stop its impact.

the River?

A Few Things to Do ... In Between Beers Need a break from the plethora of scrumptious suds? Looking for some other unique activities while you’re here for Brewfest? Look no further than across the river! There are 13 restaurants serving everything from sushi to sandwiches to pizza, mixed in with 36 retailers, Naked Winery, candy and ice cream. If food or shopping isn’t on the agenda, the Old Mill District offers a bevy of fun options for those of you in the mood to play. Rent a Surrey bike and ride through the Old Mill District and along the river trail. Wheel Fun Rentals has surreys, coupes, cruisers, mt. bikes, tandem bikes, norgeboards and loads more. Not in the mood for a bike ride? Head down the path to Tumalo Creek Kayak, and rent a paddleboard or kayak and get on the river in style. Prefer not to get splashed? Stop into some of the beautiful art galleries and exhibits from Lubbesmeyer Studio and Tumalo Art Co. Enjoy the Nation’s only fly fishing casting course and hone in on your skills. Stop by Confluence Fly Shop and they can loan you a rod and teach you how to use it, and give you a map of the course. If you need to escape the heat then take the whole

family to a movie and cool off to some great entertainment. After the movie, take everyone down to the Ticket Mill located next to Anthony’s restaurant and borrow some free binoculars to check out the incredible array of birds along the Deschutes River. Birds not your thing? Then why not just walk along one of the river paths and take in the bounteous flowers and the serenity of the river. If you make your way toward Riverbend Park, you can rent an inner tube and take a lazy float down the river. There is no end to the abundance of activities! Cheers!

History of the Old Mill District For nearly a century, timber production was the unchallenged king in Bend. Hardy men used axes, crosscut saws, horses and “highwheel” rigs to cut down huge Ponderosa pines in the surrounding forests. The first of the big mills, operated by the Shevlin-Hixon Co., opened in March 1916. A month later, a rival company, Brooks-Scanlon, began operations at its “Mill A” complex on the other side of the river. In 1922, Brooks-Scanlon established a new, bigger mill complex up-

stream from Mill A. This “Mill B” site makes up the largest portion of the Old Mill District. At their peak, the Brooks-Scanlon and Shevlin-Hixon operations were two of the largest pine sawmills in the world, running around the clock and employing more than 2,000 workers each. In 1950, facing dwindling timber supplies, Shevlin-Hixon sold its interests to Brooks-Scanlon. Brooks-Scanlon’s Mill A closed in 1983 and was in a state of near ruin before being restored in the early 1990s. The old brick powerhouse building, and its three towering smokestacks, still stand. In 1993, River Bend Limited Partners purchased the land with the intention of developing a mixed-use area that would help revitalize Central Oregon. Prior uses on the site were the greatest challenge. Eight decades of industrial use left behind pockets of contamination. The voluntary cleanup and ensuing development opened 14,000 linear feet of riverfront access previously unavailable to the public, created welcomed job growth and a beautiful place for locals and tourists to visit. In 2001, the redeveloped Old Mill District opened to the public. Enjoy!

BROADLY DEFINED BEER STYLES

flavor and a pleasing nuttiness. They may also be somewhat sweet or hoppy.

AMBER ALE is a general term used to describe copper-colored ales or lagers, which are more full-bodied than golden ales, often with a medium maltiness and moderate to strong, hoppy bitterness.

CREAM ALES are generally light colored and mild, lagered at cold temperatures or combined with a lager.

BELGIAN ALES are an entire universe of beer from the most diverse brewing tradition in the world. They are typically complex and harmoniously balanced. BOCKS are somewhat strong lagers with a pronounced malt character. A mailbock is pale in color and has a somewhat more pronounced hop character than the dark, rich doppelbock. BROWN ALES are malty, with a coffee-like

DEFINING ABV

ABV stands for “alcohol by volume.” It is a standard measure for how much alcohol (ethanol) is contained in an alcoholic beverage, like beer.

DEFINING IBU

IBU stands for “International Bittering Units.” This is a measurement of the actual bitterness of a beer as contributed by the alpha acid of the hops. Generally speaking, beers with IBUs of less than 20 have little to no apparent hops presence. IBUs from 20 to 45 offer a mild to pronounced hops presence, and IBUs greater than 45 — while still considered mild by many Northwest brewers’ standards — offer a more pronounced hops flavor and bitterness. 10 • Bend Brewfest 2014 | Thursday-Saturday, August 14-16

ESB stands for Extra Special Bitter. These traditional English-style ales feature a wellbalanced hoppiness and sweet maltiness. FRUIT & HONEY BEERS are usually very light-bodied ales with fresh fruit or honey added. They should be delicate and therefore low in hops. The fruit flavor should be fresh, vibrant and easily identifiable. Honey adds subtle flowery undertones and a honey flavor. Fruit and honey ferment very well, so these beers should not be overly sweet, but may present some malt flavor and apparent sweetness due to low bitterness. INDIA PALE ALES, usually known as IPAs, were originally pale ales brewed extra strong and hoppy for shipment to the English colonies in India. American brewers are notorious hopheads, and they often use the IPA to show off their hopping prowess. IPAs should have a pronounced fruity or earthy hop aroma and flavor. A rich body from the pale malts and sometimes caramel malts should be present as a foil for the hop flavor. They are often intensely bitter and have a dry finish. KOLSCH is a pale, dry German ale that originated in the city of Cologne (Köln). They are light-bodied and refreshing. Although they are not bitter, Kölsch may present flowery flavors from subtle use of noble hops. The malt flavors are delicate and sometimes reminiscent of Chardonnay. LAGERS are malty and lightbodied with predominant flavors of toast and caramel. PALE ALES are based on the English bitter style and are often not all that pale. They may encompass a wide range of types such as Golden, Amber, Red or ESB. Pale Ales are characterized by yeast varieties that give fruity

aromas and may be either mildly or well hopped. Hops are usually apparent in the aroma, flavor and the bitterness. Darker versions have caramel flavors from dark malts and are usually more hopped than golden ales.

PILSNERS are pale straw to deep gold in color. The traditional German or Czech styles represented at the festival are crip lagers with a smooth, malty flavor. They are often well hopped with German (often the flowery Hallertau) or Czech (the spicier Saaz) hops. However, the hops should not overwhelm the malt flavor. The finish is clean and often fairly bitter. PORTERS are complex, dark, strongly flavored ales that are said to take their name from the dockhands who originally brewed this style. Porters are similar to stouts but without the bitterness. STOUTS are dark brown to inky black ales that feature the rich flavors of roasted malts that include chocolate, coffee, toffee and charcoal. They can be light-bodied such as draft Guinness, or rich and thick. Although hop flavor and aroma are low, they sometimes display a noticeable bitterness from both hops and roasted grains. STRONG ALE is a catchall category for beers from 7 percent alcohol by volume and above. Characteristics will vary greatly, with some sharing similarities with Barleywines and Old Ales. Barrel aging is certainly not out of the question. WHEAT BEERS are either in the Bavarian or American style. Compared to a Belgian Wit, the use of malted wheat in a Bavarian Weizen gives a more pronounced bready wheat flavor, and they are not spiced. They may be filtered and clear (“kristall”) or unfiltered and hazy (“hefe”). The most remarkable aspect of these beers is the traditional yeast, which gives pronounced flavors of clove and banana. American interpretations may substitute hop flavors for the Bavarian yeast flavors. American wheat beers have a neutral yeast character which is often replaced by a gentle hop aroma. WIT is a wonderful summer wheat ale style from Belgium, sometimes referred to as a “white beer.” The use of unmalted wheat gives it a light body and a hazy, whitish color. They are usually spiced with coriander, with its characteristic grainy, citrus and minty undertones, and orange peel, which gives a slightly bitter, tea-like palate.

Lime Kolsch Burnside Lime Kolsch is brewed as a German-style Kolsch made with premium pilsner malt and a touch of wheat and Munich malts. They have a unique aroma with quite a bit of citrus and a heft of herbal goodness. The recipe features clusters in the kettle, in the hopback and especially in the fermenter for dry-hopping. Pilsner and honey malts form the baseline; clusters form the melody. X-TAP: Brandi’s Dopplebock Brandi’s Dopplebock is a concoction of the OSF Brewers. We took our Educator Dopplebock with all its caramel malt flavors and bold complex profile. Although there is a mellow hop flavor, we have added something a bit extra. American Oak chips were soaked in McMenamins Pot Still Brandy for about two months. These chips were then added to one ¼ BBL of Brandi’s Dopplebock for another two-month conditioning. What comes out is a quaff with a touch more sweetness but a dry and wood quality in the background. Beer Battered Green Beans These lightly battered green beans resemble tempura. Perfect for dipping and snacking! INGREDIENTS: 3 cups vegetable oil; 1 cup flour; 2 tsp. ground turmeric; 12 oz. amber beer; 1 lb. green beans, trimmed; sea salt & ground black pepper DIRECTIONS: Heat oil to 350 degrees in a small, deep Dutch oven or heavy bottomed saucepan. Whisk together flour and turmeric in a large bowl. Slowly whisk in beer, stirring until mixture is smooth. Toss a large handful of green beans at a time in mixture until coated. Carefully transfer battered green beans to hot oil and cook until golden brown, about 2 to 3 min. Use a slotted spoon to transfer green beans to a paper towel lined plate. BEER ANGELS: THESE GALS

The Beer Angels are a 300 member women’s beer club who get together for beer education, events, socials, beer festivals, and raise money for charity. They take pride in being active members of the community by participating in different activities for businesses and breweries. Our very own Volunteer Coordinator and Beer Maven, Chelsea Woodmansee interviewed Beer Angels club President, Gina Schauland (who doubles as Social Media Coordinator for Deschutes Brewery) about the Angels.Here’s a peek into their world. And if you want to catch a glimpse of your very own Beer Angel, look out Friday night. They’re volunteering en masse.

Chelsea Woodmansee (CW): How did the Beer Angels get their start? Gina Schauland (GS): I saw that there were often ladies at beer events but not a lot of us. The ones I met at the events were awesome and loved craft beer but wanted to learn more or felt uncomfortable asking questions so I decided to start this all women’s beer club in Central Oregon. CW: What is your favorite part of being an Angel? GS: That there are women of all ages (from 21-75) who come together to learn about beer, have fun and to meet new people. There are homebrewers in the club, brewery employees in the club and women who just love craft beer. The craft beer industry is huge here in Central Oregon, and we are a big part of that. CW: Where did the passion for beer begin? GS: When I moved to Central Oregon from So Cal. Wine had a bigger influence on me because where I went to college, we were so close to the Santa Ynez Valley so I was a wine snob first and belonged to a few wine clubs. When I came to Bend for the first time, my husband and I visited Deschutes Brewery, and we ordered a beer sampler tray, a pretzel and the sweet and spicy mac and cheese. That was it! We were hooked. My first craft beer that I remember was Cascade Golden Ale, then I worked my way up to dark and malty beers and found my all time favorite, Black Butte Porter. After that, I wanted to try more and more beers and found that there were so many out there and that there was an infinite amount of different beers you can make using ingredients in different ways. Then I got a job as a tour guide at Deschutes and worked my way up in the company and knew I wanted to do this job and work in the craft beer industry for a long time. Everyone in the craft beer industry is so nice, approachable and passionate about what they do. It’s great to be a part of this! CW: What is your favorite beer that you have brewed so far and why? GS: I am not a homebrewer but many of the ladies in the group homebrew. We had a recipe development event with GoodLife Brewing where the ladies came up with a recipe and it was brewed on their large 30 bbl system. It’s called the Beer Angel Belgium. Try it! The ladies added the hops, orange peels that we all peeled, and shoveled the grain. Also, Julie Brown, one of our homebrewers, won a competition at Bend Brewing Company and she got to brew her beer, “Citra-POP!” on their system with Ian and Josh. CW: How many members do you currently have? Where can people find out more and sign up?

GS: We currently have 300 members for the 2014 year and overall current and past members about 450. We are full right now and will have sign-ups for the 2015 year in January. CW: Share an outstanding memorable experience that has happened with the BA’s. GS: My favorite and most memorable event every year is Hiking the Butte With A Brewer. We hike up the butte with snacks and beer and everyone shares their beer stories, their beer, their food and we watch the beautiful sunset and hike back down as we belt out tunes from Lauranne’s speakers. CW: What do you want people to know? GS: We are planning our 2015 year of events soon so let us know if you have any event ideas, if your business wants to be on our membership card or if you’d like to be considered for our non-profit partnership in 2015. We’ve raised over $6,000 for local charities so far and will continue to help out our community as much as we can. Cheers!


Moonlight Ride Blackberry Ale The aroma of ripened Oregon blackberries on a crisp moonlit September night is what inspired our blackberry ale. We think we got it just right. Aged on 126 pounds of pureed blackberries per 10 barrel batch. Subtle hints of blackberry, Enjoy the Ride! ABV: 5.5% IBU: 15

For centuries, hops have been a beloved component of beer. They are a natural preservative, help to clear beer by acting as a natural filter, lend a hand in head retention, bring balance to sweet malts, and act as the primary contributor to flavor and aroma (phew!). Described as floral, herbal, spicy or citrus, hops are capable of imparting nearly any flavor — the “spice of beer.” More than 30 varietals of hops exist on an ever-growing list. This is a short list of some of the most common varieties used in Northwest brewing:

CASCADE is a very popular U.S. variety with a moderate bitterness level and fragrant, flowery aroma. Cascade is often used in highly hopped West Coast ales that have a citrus-floral hop character.

CENTENNIAL is described by some as a “Super Cascade,” but it’s not nearly as citrusy. This type can be used for aroma as well as bittering. Bitterness is quite clean and can have floral notes, depending on the boil time. CHINOOK is described as a pine forest washed with exotic spice and infused with grapefruit. Chinook hops offer an alluring aroma and a high bittering value.

CITRA has made a quick impact on the worldwide beer scene. It’s a very fruity hop, specifically: citrus, peach, apricot, passionfruit, grapefruit, lime, melon, gooseberry, lychee fruit, pineapple, mango, papaya and other tropical fruit flavors and aromas.

MOUNT HOOD is an aromatic variety derived from Hallertau with a refined, spicy aroma and clean bittering. “Clean” commonly describes it. A good choice for lagers.

WILLAMETTE is the king of aroma hops in the U.S. with its modest bittering value and the joyous harmony of flowers, fruit, earth and spice. Willamette offers a quality aroma hop with a smooth, soft flavor.
