Cooking like a pro, mastering spaghetti squash

Whether you wish to lose weight, improve digestive health, eat more veggies, lower your carbohydrates, go paleo or gluten free, or just love delicious food, you’ll want to say hello to my little friend –spaghetti squash.

This squash is cooked into long tender strands like, well ... spaghetti.

I’m not going to tell you it tastes exactly like pasta, because it doesn’t. But it’s delicious! The taste is sweet and mild, so this guilt free spaghetti alternative is a perfect substitute in your favorite pasta dishes.

The health benefits are significant with this nutrient-dense squash. You’ll get vitamins, antioxidants, fatty acids, minerals and fiber. One cup of cooked spaghetti squash has 31 calories and 5.5 grams of net carbs, compared to 221 calories and 43 grams of carbs in one cup of cooked pasta. And can we be honest? Does anyone eat just one cup of pasta?

Spaghetti squash is easy, inexpensive and versatile. Stock up when it’s on sale, because it keeps for a month stored in a cool dry place and up to three months in the fridge.

This big yellow squash can look intimidating, but I promise it’s easy to prepare. Like all hardshell squash, the rind is hard to cut. To make this easier, pierce the squash with a knife and cook in the microwave for 3-4 minutes to soften before cutting.

The easiest preparation is to roast

the squash in halves. Use a sharp knife to cut lengthwise and scoop out the seeds. Place it cut side down in a roasting pan. You can add a little water and cover with foil if you like, but it’s not necessary. Bake at 400 degrees for 40 to 55 minutes depending on size. It’s done when it’s easily pierced with a knife.

You can also microwave spaghetti squash. Slice lengthwise and remove the seeds. Place squash cut sides down in a 9x13 glass baking dish. Add an inch of water and cover tightly with plastic wrap. Microwave the squash on high for 15 minutes; check to see if the squash is thoroughly cooked. If not, microwave for 5 more minutes. Carefully remove the squash from the microwave and let stand until cool.

like strands. As an entree, try it with marinara, pesto or Alfredo sauce.

This fresh, versatile recipe is a favorite as a light lunch or smartly paired with chicken, fish or shrimp.

LEMON BUTTER

SPAGHETTI SQUASH

1 (2 pound) spaghetti squash

1 teaspoon olive oil

Pinch of salt

1/4 teaspoon black pepper

2 tablespoons butter

1 garlic clove, finely minced

1 lemon, juice and zest

2 tablespoons chopped fresh parsley or basil

2 tablespoons sliced almonds, optional Preheat the oven to 400 degrees. Line a baking sheet with parchment or foil.

Slice the spaghetti squash in half lengthwise, scrape out the seeds. Brush all sides lightly with olive oil and sprinkle with salt and pepper. Place

it cut side down on the prepared baking sheet. Roast for 45 to 55 minutes, or until easily

pierced with a knife.

About 5 minutes before the squash is finished roasting, heat

a small saucepan over medium-low heat and melt the butter. Stir in the garlic and cook for 1 minute. Stir in the lemon juice, zest and a sprinkle of salt and pepper. Bring mixture to a simmer, then remove from heat.

Scrape the squash strands into a serving bowl or platter. Toss, gently, with the lemon butter mixture. Top with parsley and almonds.

Squash Puree: 1 medium (~2.5 lb) butternut squash, cut lengthwise and cleaned

1 teaspoon vegetable oil

Topping:

1/3 cup light brown sugar, packed

1/3 cup all-purpose flour

1 pinch salt

1/2 teaspoon ground cinnamon

3 Tablespoons butter, melted

1/3 cup chopped pecans

Bread: 1/2 cup sugar

1/2 cup light brown sugar, packed

1/4 cup vegetable oil

4 tablespoons butter, melted

2 large eggs

2 Tablespoons water

1/2 teaspoon vanilla extract

1 1/2 cup all purpose flour

1/4 teaspoon ground nutmeg

1 teaspoon ground cinnamon

3/4 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

For the Squash:

Preheated the oven to 350 degrees and line a large rimmed baking sheet with foil. Rub the cut and cleaned (seeds removed) butternut squash with oil and place cut-side down on

RANCH CHICKEN AND RICE SERVES 6

6 boneless, skinless chicken thighs

Kosher salt and freshly ground black pepper to taste

½ cup ranch dressing store-bought or homemade

2 tablespoons olive oil

1 cup diced onion

1 bell pepper any color, diced

1½ teaspoons minced garlic

1 cup dry white rice

1 cup frozen peas and carrots

1 tablespoon ranch seasoning store-bought or homemade

2 cups low-sodium chicken broth

Fresh parsley optional, for garnish

the baking sheet. Roast for around 40-50 minutes, or until the thickest part can be easily pierced with a sharp knife. Flip over and let cool for 20 minutes. Leave the oven on. Scoop the cooled, cooked squash into a food processor and puree. Measure out one cup of pureed squash for this recipe. Set the one cup aside, in the food processor. For the Streusel: In a small bowl, combine the brown sugar, flour, cinnamon, and salt. Using a spoon or rubber spatula, mix in the melted butter until a crumbly dough forms. Add the pecans and use your hands to toss and distribute evenly. Set it aside.

For the Bread:

Spray a 9x5-inch loaf pan with cooking spray and line the bottom and sides with a strip of parchment paper, forming a sling. Make sure the paper hangs over both sides-this will make removing the bread from the pan easier. To the 1 cup of butternut squash purée in the food processor, add the sugar, brown sugar, oil, melted butter, eggs, water, and vanilla. Process to mix, scraping down the sides once. In a large bowl, combine the flour, cinnamon, nutmeg, baking soda, baking powder, and salt. Whisk to break up any lumps. Add the butternut squash mixture into the flour mixture. Use a rubber spatula or wooden spoon to mix just until combined. A few small lumps of flour are fine. Scrape the batter into the prepared loaf pan. Sprinkle the streusel evenly over the top. Bake at 350 until well-risen and the streusel has browned-about 1 hour. A cake tester or toothpick inserted in the center all the way to the bottom should emerge clean without any liquid batter. A few crumbs are okay. Let the bread cool in the pan for 5 minutes. Use the parchment sling to lift it out and onto a cooling rack. Cool completely before serving.

Put 4 to 8 tea bags into a clean 2 quart or gallon glass container (4 teabags for a 2-quart container, 8 tea bags for a gallon container). Add fresh mint if desired. Fill with water and cap. Place outside where the sunlight can strike the container for about 3 to 5 hours. Move the container if necessary to keep it in the sun. When the tea has reached its desired strength, remove it from the sun and put it in the refrigerator. Refrigerate the tea and drink it up pretty quickly-a day or two. It will not keep as well as iced tea made from boiling water.

Season the chicken thighs with salt and pepper, then place them in a large mixing bowl and pour the ranch dressing over them. Allow the chicken to sit in the dressing for 10 minutes.

Heat oil in a large sauté pan set over medium-high heat. Add the chicken thighs to the skillet and brown for 3 minutes on each side, or until just golden. Remove the chicken to a plate and set it aside.

Add a bit more oil to the pan, then sauté the onion and pepper for 2-3 minutes, until softened. Stir in the garlic and cook for 30 seconds, until fragrant. Splash in a bit of chicken broth and deglaze the pan. Add the rice and toast it for 1 minute, then add the frozen peas and carrots, ranch seasoning, and chicken broth and stir to combine. Return chicken thighs to the rice. Cover the pan, lower the heat to medium and cook for about 20 minutes, stirring occasionally, until the liquid has evaporated and the rice and chicken are cooked through. Remove the pan from the heat. Fluff the rice with a fork, season with salt and pepper if desired, and serve garnished with parsley.

A:According to Geraldo Rivera himself, he was both let go and left of his own accord. He was fired from the weekday show “The Five,” but then decided to quit the network altogether. He stayed until the end of June and was even given a cake and balloons.

Rivera also watched a montage of his career highlights with the network and received farewell messages from colleagues like Jesse Watters and Sean Hannity. Notably missing was any message from his former co-host Greg Gutfeld, of whom Rivera was not fond.

As for his firing, Rivera had been suspended briefly from “The Five” after he “profanely criticized some of fired primetime host Tucker Carlson’s theories.” His return didn’t last long, and that’s when he departed the show. At first, he said he quit, but now says he was fired. Fox released a statement simply stating “we reached an amicable conclusion with Geraldo over the past few weeks.”

Rivera, who turned 80 on July Fourth, isn’t necessarily ready to retire. He recently told his fans that he has “restless energy when it concerns issues important to the American people.” ***

Q:When is “Reacher” coming back to Amazon? I hope it hasn’t been canceled. Wasn’t it a pretty big hit? – L.K.

A:Not only was the first season of “Reacher” a success, apparently Amazon is leaning toward renewing it for a third season before the second one has even aired. According to TV Guide, expect season two to premiere in the latter months of 2023. They reportedly finished filming the episodes back in February, and the show promised to be bigger and better than ever.

Q: Is “Who Wants to Be a Millionaire?” ever coming back in any form? I really enjoyed it when it was on during the weekdays, but I’d be happy if it came back in the summer during prime time again. – A.K.

A:As of now, everything is on hold due to the WGA Writers Strike, but even if that weren’t an issue, “Who Wants to Be a Millionaire?” has been canceled. Adapted from the British game show of the same name, “WWTBAM” was a huge sensation when it debuted in the U.S. in 1999. Hosted by Regis Philbin, it became appointment TV when ABC aired it as a twoweek daily special event.

It had a very successful run in syndication and later returned in the summer of 2020 for a special 20th anniversary run. It’s since been put on indefinite hiatus, but I wouldn’t be surprised if it returns for, perhaps, its silver anniversary?

Q: I recently saw some dishes with red, green and yellow flowers labeled “Delft.” I always thought Delft was blue and white. Was I mistaken, or were the dishes mislabeled?

A: Delft, or delftware, is a type of tin-glazed pottery like faience and majolica. It was first made in the city of Delft in Holland in the 17th century, and later in England and other countries. It is often white with blue decorations but sometimes can be multicolored, known as polychrome. Pieces are

usually everyday-ware like dishes and tiles. Delft marked “Holland” was made in 1891 or later. If it is marked “Delft,” it is probably from the 20th or 21st century. Today, blueand-white porcelain may be marked and sold as Delft. Authentic Delft is pottery and softer than porcelain, so antique pieces often show signs of wear. Prices depend on age and condition.

Q: I have a set of three wooden nesting tables. They’ve been in our family for as a long as I can remember. They are lightweight and small. The top on the largest one is only 20 inches by 14 inches. Who invented nesting tables and are antique ones valuable?

A: Nesting tables were made in England in the 18th century. The cabinet maker Thomas Sheraton is credited with being the first to make them. They were designed to be functional while taking up very little space in small English houses. Sets of antique nesting tables similar to yours have recently sold for $90 to $240.
