Crispy, Crunchy, Caramel Dream: The

Secret Behind Salted Caramel Honeycomb Granola

You guys! The crunch. I can’t stop eating this stuff. Make this recipe at your own risk.

You know I love creating recipe mashups, right?

Well, I wanted to do something fun with the old standby, granola. So, I spent a day in the kitchen going all “mad scientist” to create a totally new twist. I thought of the smell of burnt sugar, nostalgic like caramel corn at the mall. Oh, yes. Then, how about the crunch of light-as-air honeycomb? Yes. Are you with me?

What if granola, caramel corn and honeycomb had a baby? And we ate it?

I did it! It is amazing.

If you’ve never made granola from scratch, you’re really missing out. It’s easy, cheap and tastes so much better than the stuff you buy at the supermarket. But this. This recipe is exceptionally delicious, if I do say so myself. So light and crisp that it practically melts in your mouth. It’s gluten free, too.

I kept it simple and affordable. The main granola ingredients are oats, peanuts or almonds, and crispy rice cereal. I chose to add crispy rice cereal to the oats because it’s so light and crispy, and it adds great texture to this recipe. And the honeycomb caramel is just butter, brown sugar, honey or corn syrup, and baking soda.

Of course, you can add anything you like to this granola, I only suggest you choose ingredients that stay crunchy. Items like additional nuts and seeds, shredded coconut or toasted quinoa would be good. I’m not so sure about chewy dried fruit or chocolate. But if you try it and like it, let me know.

SALTED CARAMEL

HONEYCOMB GRANOLA

Yield: about 7 cups

Total Time: 35 minutes

What You’ll Need:

2 cups old fashioned oats

1 cup peanuts or sliced almonds, or more to taste

3 cups crispy rice cereal

1 cup brown sugar

1/4 cup honey or corn syrup

1/2 cup (one stick) butter

1/2 teaspoon kosher salt

1 teaspoon vanilla

1/2 teaspoon baking soda

Here’s How:

Preheat the oven to 350 degrees. You’re going to do two things at once, like chewing gum and walking. Line a rimmed baking sheet with parchment. Spread the oats and peanuts on the pan. Place this in the oven for 5 minutes to toast. Stir and return to the oven for 5 minutes more.

Meanwhile, place the crispy rice cereal in a large heatproof bowl and set aside. In a saucepan on medium heat, melt the brown sugar, butter and honey or corn syrup. Stir this occa-

sionally until it begins to bubble, then let it bubble for about 5 minutes.

Now get the toasted oats and peanuts out of the oven and mix with the rice cereal in the large bowl.

Next, remove the caramel from the heat and add the salt and vanilla, and stir. Next, whisk in the baking soda and watch as it gloriously foams and froths. Immediately pour this over the oat and cereal mixture in the bowl. Mix it all together with a couple of wooden spoons until the cereal is coated. Spread the mixture back on the prepared baking sheet. Bake for 10 minutes at 350 degrees, stirring halfway through. Allow it to cool before breaking up and store at room temperature.

So, what to do with all this scrumptious stuff?

You can serve this mashup on yogurt, ice cream or French toast, or use it to top sweet potatoes or give extra crunch to baked apples. Or eat it by the face full. I highly recommend it.

CREAMY CUCUMBER SALAD

Instructions Wash the cucumber and cut it into slices ¼-inch thick. In a large bowl, whisk the sour cream, mayonnaise, dill, vinegar, sugar and 1/8 teaspoon salt. Add the cucumbers and onions if using and gently toss well to coat. Refrigerate for 1 hour before serving.

Taste and season with additional salt and pepper and sprinkle with fresh additional dill if desired.

ZUCCHINI CAKE WITH CHOCOLATE CHIPS

INGREDIENTS FOR THE CAKE

1/2 cup butter room temperature

1/2 cup vegetable oil

2 eggs

1 3/4 cups sugar

1 teaspoon vanilla

1/2 cup buttermilk

2 1/2 cups flour

4 Tablespoons cocoa

1 teaspoons soda

1 teaspoons cinnamon

1/2 teaspoons salt

2 1/2 cups zucchini

INGREDIENTS FOR THE TOPPING

1/2 cup brown sugar

1 cups semi-sweet chocolate chips

1 cup chopped walnuts

Instructions

Preheat oven to 350 degrees. Grease a 9” x 13” baking pan.

Cream together butter, oil, eggs, sugar and vanilla, about 2 minutes

Stir in buttermilk and vanilla.

Add flour, cocoa, soda, salt, and cinnamon to the bowl and whisk. Or add to a sifter. Mix the dry ingredients with creamed ingredients until combined. Add grated zucchini and gently mix just until combined. Overmixing will “wring” the water out of the zucchini making the batter runnier. Spread the batter in a greased 9 x 13” pan. Sprinkle brown sugar, walnuts, and chocolate chips over the top of cake. Do not stir. Bake 350 degrees for 35-40 minutes. Be careful to not overbake the cake. To check for doneness stick a toothpick in the middle of the cake, it should come out clean, or with a few crumbs.

CANNING SALSA VERDE

removed and halved or quartered

1 cup coarsely chopped onions

1 cup coarsely chopped peppers (I use a mix of green bell, jalapenos, and thai chilies to add heat)

6 cloves garlic, chopped

1/3 cup minced cilantro

2 1/2 teaspoons cumin

3/4 teaspoon smoked paprika

1 1/2 teaspoons kosher salt

1/2 cup bottled lime juice

Instructions

Have jars ready for canning, sterilized and hot.

Preheat oven to 500 degrees F. Place 3/4 of the chopped tomatillos on a baking sheet, reserve remaining 1/4. Roast in the oven for about 20 minutes or until they are slightly charred and their juices are seeping out.

While they are roasting, put the onions, peppers, and garlic into a food processor, pulsing until finely chopped. Empty this mixture into the sauce pot you will be using to cook the salsa.

Then remove tomatillos from oven, let cool a few minutes, and add to food processor. Put in the raw tomatillos you reserved. Pulse until finely chopped. Add all tomatillos and juices to the sauce pot that has the onions/peppers/garlic, along with the cumin, paprika, salt, and lime juice. Bring to a boil and then turn down heat to a simmer for 15 minutes. During the last minute of cooking add the minced cilantro. Ladle hot salsa into hot sterilized jars, and leave 1/2 inch head space. Place sterilized rings and lids on top, then return to boiling water bath for 15 minutes. Remove and let completely cool on a flat towel; listen for the pop so you know that it is properly sealed!
