Maximizing flavor and savings with TVP: A tasty twist on cottage pie

In an era of rising prices, exploring versatile, budgetfriendly ingredients is crucial. Textured vegetable protein (TVP) is a versatile and costeffective meat substitute made from dehydrated soy flour or soy protein concentrate. It’s used as a meat extender or substitute, making it a popular choice for frugal people looking to stretch their meat budget or those following a vegetarian or vegan diet. TVP is known for its high protein content and ability to absorb flavors, making it a suitable extender or replacement for ground meat in many recipes.

To rehydrate TVP, use a 1:1 ratio of TVP to liquid (by volume). This means for every 1 cup of dry TVP add 1 cup of liquid. The dry TVP expands into 2 cups of meat substitute and can be stored in the fridge for three to five days.

When using TVP, season it generously with flavorful liquids, herbs, spices and sauces along with ingredients like onions, garlic and vegetables to enhance its neutral flavor.

Today, let’s explore TVP with a classic favorite: Cottage Pie. This offers significant savings without skimping on the pleasures of a hearty meal.

Savory Half-and-Half

Yield: 6 generous servings

Total Time: 1 hour 10 minutes

For the mashed potatoes:

6 medium potatoes, about 2 lbs. or equivalent

leftover or instant

mashed potatoes

1/4 cup milk

1 tablespoon butter

Salt and pepper to taste

For the Filling:

1 cup Textured Vegetable Protein (TVP)

1 (14.5 ounce) can (1

1/2 cups) beef broth, divided

2 tablespoons olive oil

1 large onion, chopped

2 tablespoons tomato paste

2 cloves garlic, minced

1 pound ground beef

2 tablespoons Worcestershire sauce

1 (16 ounce) bag frozen peas and carrots

1 (14.75 ounce) can

creamed corn

1 cup cheddar cheese, shredded

Prepare a 9-by-13 baking dish with cooking spray. Preheat oven to 350 degrees. While it’s heating, peel and chop your potatoes. Place your potatoes in cool, salted water, then bring them to a boil for 10 minutes. This gradual heating ensures even cooking, preventing the outer layers from overcooking before the insides are tender. Once they’re cooked and drained, mash with the milk and butter, and season to taste with salt and pepper. Meanwhile, rehydrate the TVP. Heat 1 cup of beef broth in the microwave (or on the stovetop) until simmering. Add the TVP to rehydrate for 5 minutes.

In a large skillet, heat olive oil over medium heat. Add chopped onions, sauteing until tender and slightly caramelized. Stir in the tomato paste and continue cooking and stirring for 3 minutes, allowing it

1/2 cup tahini

Ingredients: 1 sheet frozen puff pastry, thawed

2 (8 ounce) packages cream cheese, at room temperature

3/4 cup granulated sugar

3 large eggs, at room temperature

3/4 cup heavy cream 1 teaspoon vanilla extract

1/2 teaspoon kosher salt

3 tablespoons all-purpose flour

2 cups fresh blueberries granulated sugar and confectioners sugar, for dusting (optional)

Directions:

1. Place a rack in the middle of the oven.

Preheat the oven to 400 degrees F. Grease a 9-inch spring-form pan and line the bottom with parchment paper.

Add Worcestershire sauce, peas and carrots, creamed corn and the remaining 1/2 cup broth, and simmer the mixture for 10 minutes. Add salt and pepper to taste.

Transfer filling to the baking dish and spread it evenly. Spoon the mashed potatoes over the filling, creating an even layer. Top with cheese. Place the baking dish in the preheated oven and bake for 20 minutes. Cool slightly before serving. While savoring this scrumptious Cottage Pie, remember that TVP offers benefits beyond versatility and low-cost. Directions:

1. In a bowl, combine the yogurt, olive oil, cubed chicken, garlic, shallots, paprika, oregano, chili flakes, and a large pinch each of salt and pepper. Let marinate for 15 minutes at room temperature or up to overnight in the refrigerator.

2. Preheat the oven to 425° F. Arrange the chicken on a baking sheet. Bake 15 minutes, toss and bake another 5-10 minutes, or until cooked through. Switch the oven to broil. Broil 1-2 minutes, until the chicken chars on the edges.

3. Meanwhile, combine the cucumbers, avocado, lemon, dill, salt, and pepper.

4. To make the tahini. Combine all ingredients and 1/4 cup water in a blender and blend until smooth. If needed, add water to thin the sauce as desired. Season to taste with salt.

5. To assemble, add lettuce to a bowl. Top with chicken, cucumber/avocado, feta cheese, and any other desired toppings. Add a few dollops of Tzaziki sauce. Drizzle over the tahini.

2. Gently roll the puff pastry out on a clean surface to 1/4 inch thickness. Press the pastry inside the pan and up the sides of the pan. It is OK if the pastry does not go all the way up the pan. Transfer to the fridge and chill while you prepare the batter.

3. In a medium-sized mixing bowl, beat together the cream cheese and sugar on medium speed, scraping down the sides of the bowl until very smooth and creamy, about 2 minutes. Add the eggs, 1 at a time until the eggs are fully incorporated. Scrape down the sides of the bowl, then reduce the mixer speed to medium-low. Add cream, vanilla, and salt, and beat until combined, about 30 seconds.

3. Sift the flour into the batter, then beat again to combine, about 30 seconds. Pour the batter into the prepared pastrylined pan. Gently sprinkle the blueberries over the batter, some will sink. Gently fold the corners the pastry over the berries. Sprinkle the top of the cake with 1-2 tablespoons granulated sugar.

4. Transfer to the oven and bake for 55-65 minutes, until deeply golden brown on top and still very jiggly in the center. Let the cake cool 5 minutes, then unmold. Let cool completely. Slice into wedges and serve at room temperature or chilled. I like room temp best.

Ingredients:

Heat oil (or ghee) in a large pot over medium-high heat until shimmering. Add onion, celery and salt; stir to coat. Cook, stirring occasionally, until the vegetables are softened and begin to turn golden brown around the edges, about 10 minutes. Stir in tomato paste, sage, white pepper and crushed red pepper, if using. Cook, stirring constantly, until fragrant, about 1 minute. Add stock, increase heat to high and bring to a simmer. Once simmering, add peanut butter, whisking until it melts into the stock. Reduce heat to low and simmer, stirring occasionally, until the soup is slightly thickened, 15 to 20 minutes. Remove from heat. Using an immersion blender or in batches in a blender, process the soup until it is very smooth. Stir in vinegar. Serve the soup topped with chopped peanuts and chives (or parsley).

HOLLYWOOD -- Oscar winner Jamie Foxx (55) was on a fast-moving career train starring in four films this year when his train disappeared from the tracks. The speculation is that Foxx disappeared, too? On top of the world! In September 1909, The New York Times published Robert Peary’s claims of reaching the North Pole in April of that year, crediting him with the pole’s discovery. However, just a week earlier, another newspaper claimed that Frederick Cook had reached the pole the year before. Both claims have been disputed since then, but they were sensations at the time.

The journey to the North Pole inspired commemorative figurines, souvenirs and games.

This North Pole game has a patent date of 1910. It is a game of skill in which the player rolls one of the included metal balls along the winding track, earning points for each hole the ball passes without falling in. The rules are printed on the back of the board, along with a scene of two explorers approaching the pole.

This game sold for $480 at Morphy Auctions. The lot included the colorfully lithographed tin game board, two metal balls, the instructions sheet and the box with a color picture of a family in early 1900s dress playing the game. Commercial game boards sell for higher prices when they come with the original box and pieces. * * *

Q: How can I safely clean old coins?

A: Coins should not be cleaned. Collectors want coins with the patina unchanged. If your coins are collectible, they should be protected from fingerprints and stored properly. Don’t touch the coins to examine them unless you are wearing white gloves. The oil from your skin will damage the coin. If you must touch a coin, hold it by the edge. Coins should not be stored loose in a box or envelope. They may be scratched. Paper, cardboard, plastic and wood give off chemical vapors that speed corrosion. You can buy archival coin holders online or at a coin shop. Coins should be kept in a cool, dry location. You can find more information on properly storing coins on the American Numismatic Association website, money.org.

Now Frasier returns to his roots in Boston for a new sitcom filmed before a live studio audience. Alas, the late John Mahoney is gone as Frasier’s cranky father, Martin, and David Hyde Pierce is reportedly not returning as Frasier’s brother, Niles.

A two-episode premiere of the new “Fraiser” will debut on Paramount+ on Oct. 12 with weekly episodes to follow. It’s reported that the same episodes will also air on CBS on Oct. 17 as a special event, but viewers will have to subscribe to Paramount+ to watch the rest of the season.

Nancy Dussault played his wife, and Lydia Cornell and Deborah Van Valkenburgh played his two grown daughters who rented the apartment below. Jim J. Bullock was a hoot as Monroe.

The show changed its name and concept to “The Ted Knight Show” during its final season. Sadly, the sitcom ended in 1987 after Knight lost his battle with cancer at the age of 62.
