Richard Simmons in 2013 BY TONY RIZZO HOLLYWOOD -- Former exercise guru Richard Simmons has kept a low profile for the last five years, but came out of hiding to denounce a proposed film starring comic Pauly Shore as Simmons. “Hi, everybody!” wrote Simmons on a Facebook post. “You may have heard they may be doing a movie about me with Pauly Shore. I have never given my permission for this movie. So don’t believe everything you read. I no longer have a manager, and I no longer have a publicist. I just try to live a quiet life and be peaceful. Thank you for all your love and support!” Unfortunately for Simmons, they don’t need his permission to make a movie about him. Celebrities are considered public domain. Now should the filmmakers defame or malign you, then you have recourse to sue. But he’s got another problem besides the feature film rumored to be in development. A short film starring Shore as Simmons, titled “The Court Jester,” already premiered at the Sundance Film Festival on Jan. 19 and is available on YouTube. ***

Big game, big easy bites: Mardi Gras meets Super Bowl in a flavorful fete! note)

BY PATTI DIAMOND ince the Super Bowl is Sunday, Feb 11, and Mardi Gras is Tuesday, February 13, choosing just one celebration to feature for the week felt impossible. So, why limit the joy? Let’s do both at the same time! A Mardi Gras and Super Bowl combo is like a party explosion waiting to happen as we combine the vibrant flavors of Louisiana with the finger-licking goodness of Super Bowl snacks. Let’s make Jazzed-Up Jambalaya Nachos and Creole Queso. We’ll transform the classic Super Bowl nachos by topping them with a zesty jambalaya mix, loaded with spicy sausage and shrimp. A generous dollop of Creole Queso completes this festive fusion. And I’ll share my creole seasoning recipe too. What’s the difference between Creole and Cajun seasoning? While both share common elements, Creole cuisine has a milder flavor compared to Cajun, which tends to be spicier and more robust. If you enjoy spicier foods, swap the Creole seasoning for Cajun.

1 celery rib, sliced 1 tablespoon Creole seasoning 1 (12 ounce) bag tortilla chips 12 ounces large or medium shrimp, raw, peeled and deveined 2 teaspoons seafood seasoning (like Old Bay) 1 recipe Creole Queso OR 2 cups Colby Jack cheese, shredded *Note: If you can’t find the frozen veggie blend, use 1 small yellow onion, diced; half red bell pepper, sliced; and half green bell pepper, sliced. Heat a large skillet over medium-high heat. Slice the andouille into thin half-moons and saute in 1/2 table-spoon olive oil for 3 minutes. Add onion, bell peppers, celery and seasoning, cook for an additional 5 minutes or until veggies are soft. Line a baking sheet with foil, and spread tortilla chips. Top with the sausage mix. Meanwhile, in a bowl, toss shrimp with remaining 1 tablespoon oil and seafood seasoning. Cook in the same skillet for 3 to 5 minutes, or until the shrimp is opaque. Sprinkle shrimp over the nachos. Drizzle with Creole Queso or sprinkle Colby Jack cheese on top. Preheat the oven’s broiler to low, and broil until cheese melts.

CREOLE QUESO Yield: 5 cups

Total Time: 10 minutes 1 (8 ounce) block cream cheese, softened

JAZZED-UP JAMBALAYA NACHOS

4 cups Colby Jack cheese, shredded

Yield: 8 servings

1 (10 ounce) can diced tomatoes with green chilies

Total Time: 30 minutes 1 (12 to 14 ounce) andouille or other smoked sausage, sliced

1 tablespoon Creole seasoning 1/2 to 1 cup milk, warmed

1 1/2 tablespoons olive oil, divided

In microwave-safe bowl, combine all ingredients. Microwave in 60-second intervals, stirring until cheese is

Here’s a Creole seasoning recipe that’s perfect for these recipes. But the magic doesn’t stop here; sprinkle it on roasted vegetables, grilled meats or even popcorn for a Creoleinfused treat.

DIY CREOLE SEASONING BLEND Yield: About 3/4 cup

Total Time: 5 minutes 2 1/2 tablespoons paprika 1 1/2 tablespoons salt 1 tablespoon onion powder 1 tablespoon garlic powder 1 tablespoon dried oregano 1 tablespoon dried basil 1 1/2 teaspoons dried thyme 1 teaspoon black pepper 1 teaspoon white pepper 1/2 teaspoon cayenne pepper, or to taste In a small mixing bowl, stir all ingredients until combined. Store in an airtight container.

PIÑA COLADA BREAD Makes 2 loaves

2 Cups granulated sugar 3 Cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon cinnamon 1 Cup pecans, chopped 3 eggs, beaten 1 Cup vegetable oil 1/2 Cup water 2 Cups ripe banana, mashed 1 Cup crushed pineapple with juice 2 teaspoons vanilla extract

Stir together sugar, flour, salt, baking soda, and cinnamon; add nuts; set aside. Beat eggs in a large mixing bowl. Add remaining ingredients and mix slightly with wooden spoon. Add dry ingredients, stirring just until batter is moistened. Pour into two greased and floured loaf pans. Bake at 350 degrees for 1 hour and 5 minutes, or until done. Cool for 10 minutes before removing from pans.

In a large mixing bowl, combine the blackeyed peas, black beans, tomato, bell pepper, Makes 6 cups red onion, jalapeño, cilantro, olive oil, vinegar, Worcestershire sauce, seasoned salt, cumin, and 1 15-oz. can black eyed peas, drained and black pepper. Mix well to combine. Serve with rinsed 1 15-oz. can black beans, drained and rinsed tortilla chips. 1 1/2 Cups diced roma tomatoes 1 jalapeño pepper, chopped 1 yellow bell pepper, chopped 1/2 Cup red onion, chopped 1/4 Cup chopped cilantro 3 Tablespoon olive oil 2 Tablespoon red wine vinegar 1 Tablespoon Worcestershire sauce 1/2 teaspoon seasoned salt 1/2 teaspoon ground cumin 1/2 teaspoon ground black pepper Tortilla chips, to serve Cup blue cheese crumbles (plus more for BUFFALO CHICKEN DIP 2/3 topping) - CROCKPOT STYLE Chopped chives (for topping)

In a 6-quart slow-cooker, stir together the 4 Cups shredded, cooked chicken chicken, cheddar cheese, pepper jack cheese, cream cheese, buffalo sauce, ranch dressing, (about 1 large rotisserie chicken) and blue cheese. Cover and cook on low for 2 to 8 oz. shredded sharp cheddar cheese 4 hours, stirring occasionally. 8 oz. shredded pepper jack cheese Before serving, top with blue cheese crumbles, 2 (8-oz.) packages cream cheese, softened buffalo sauce, and a sprinkle of chives. Silhouettes and profile images date to ancient times. Usually limited to the head and shoulders, the shape is a filled solid color attached to a highcontrast background. Featureless, but easily recognizable, they offer fast identification. Silhouettes were at their peak of popularity in the late 18th century as an inexpensive way to create a portrait miniature. Cutting a person’s likeness from paper was the simplest and most economical way to document their image. They have been used on coins since ancient times and still are today. Because they are used on currency, some of the most recognizable silhouettes in the United States are former presidents. Can you recognize any in this framed set? He began using the name William H. Bonney in 1877. Supposedly there is only one known photo of Billy the Kid. An authentic photo could sell for several hundred to thousands of dollars or more, especially if the other people in the photo can be identified. The photo needs to be seen by an expert to authenticate it. It’s a film adaptation of the Tony-Award-winning Broadway musical, which was based on the novel written by Gregory Maguire. “Wicked” the motion picture will star Ariana Grande as Glinda Upland, otherwise known as Glinda the Good Witch, and Cynthia Erivo as Elphaba, aka the Wicked Witch. The film adaptation appears to be in good hands with director Jon M. Chu at the helm. He’s also directed the hit film “Crazy Rich Asians” and the well-received musical film “In the Heights.” Chu recently thanked his cast and crew on social media, stating it was “the most ambitious cinematic production I have ever been a part of, or, frankly, ever witnessed.” *** Q: What can I look forward to seeing Tom Ellis in now that “Lucifer” has ended?
