Cool, Crisp and Delicious: Making Vietnamese Salad Rolls at Home

Vietnamese salad rolls, also known as goi cuon, are a refreshing and versatile dish that combines vibrant flavors, colors and textures. Wrapped in delicate rice paper, they typically include fresh vegetables, herbs, vermicelli noodles and protein like shrimp or tofu. Not only are they a feast for the eyes, but they’re a healthy and delicious nocook meal, perfect for hot weather.

Making Vietnamese salad rolls at home is not only easy, but also budget friendly. By purchasing simple ingredients like rice paper, fresh vegetables and noodles, you can enjoy these delicious rolls for a fraction of the cost that you’d pay at a restaurant. Plus, homemade rolls allow you to customize ingredients to your personal taste.

Basic Vietnamese Salad Rolls

Yield: 4 to 5 servings

Total Time: 20 minutes

For the Salad Rolls: 8-10 rice paper

wrappers

1 cup vermicelli noo-

dles (cooked according to package instructions)

2 cups lettuce, chopped or shredded (romaine or butter lettuce works well)

1 cup carrots, julienned or grated

1 cup cucumber, julienned

Fresh herbs (like mint, cilantro or Thai basil)

Protein and specialty ingredient, see ideas below Cook the vermicelli noodles according to package instructions. Rinse under cold water, drain and set aside. Prepare the vegetables and herbs. Choose and prepare your protein and specialty ingredients.

To assemble:

Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10 seconds until it’s soft but still slightly firm (it will continue to soften while rolling). Lay the softened rice paper on a clean, flat surface. These are sticky; you may wish to use parchment paper as your preparation surface. Word of advice: Rolling these takes a little practice. Don’t expect your first try to come out perfect. Remember, even the ugly ones are still delicious!

In the lower third of the wrapper, place a small handful of vermicelli noodles, followed by a few pieces of lettuce, carrots, cucumber and herbs. Add protein and other ingredients. Roll the salad roll: Start by folding the bottom edge of the wrapper over the filling. Then fold in the sides tightly, followed by rolling it away from you to enclose the filling completely. The rolls should be snug but not too tight. Continue this process with the remaining wrappers and filling ingredients.

Here are some delicious combinations to customize your salad rolls:

Shrimp & Avocado: Cooked shrimp (peeled and deveined), sliced avocado, lime juice for extra flavor.

Tofu & Mango: Firm tofu (pressed and sliced), ripe mango slices, fresh cilantro.

Chicken & Peanut Sauce: Grilled chicken breast (sliced), shredded cabbage, drizzle with peanut sauce before rolling. Pork & Pickled Veggies: Cooked pork (thinly sliced), quick-pickled

8 oz. bacon, chopped

1 (32-oz.) package of frozen tater tots

10 eggs

1 Cup milk

1/2 Cup sour cream

1/4 teaspoon salt

carrots and daikon radish, fresh mint.

Vegetarian Delight: Grilled eggplant and/or zucchini, sliced bell peppers, fresh basil and a sprinkle of sesame seeds. Don’t forget the dipping sauces! Here are a couple of quick options: Peanut Sauce: Mix peanut butter with soy sauce, lime juice and a bit of water to reach desired consistency. Hoisin Sauce: Simple and classic, just serve straight or mix with a little sriracha for heat. Remember, you can prep the fillings in advance and assemble the rolls just before serving to keep everything fresh. To serve, keep the rolls covered with a damp paper towel to prevent them from drying out. So why not roll up your sleeves and give these vibrant Vietnamese salad rolls a try? They’re a delicious way to beat the heat, nourish your body and satisfy your taste buds.

2 Cups shredded colby jack cheese, divided

Heat a large skillet over medium heat. Add the bacon and cook, stirring occasionally, until the fat has rendered and the bacon is crispy, 6 to 8 minutes. Transfer the bacon to a paper towel-lined plate to drain the fat and cool.

Spray a 13-by-9-inch casserole dish with nonstick cooking spray. Place half of the tater tots in a single layer in the bottom of the dish. Meanwhile, in a large bowl, whisk together the eggs, milk, sour cream, salt, and pepper until smooth. Stir in the scallions, pimientos, and parsley. Reserve 1/2 cup of the cheese and stir the remaining cheese into the egg mixture. Stir in the cooled bacon. Pour the mixture evenly over the tater tots in the casserole dish. Place the remaining tater tots in a single layer over the top and press gently into the egg mixture.

Preheat the oven to 350°F. Sprinkle with the remaining 1/2 cup of cheese. Bake until the top is golden and the egg mixture is set in the center, 55 to 60 minutes. Let rest for 10 minutes, then top with more parsley and serve.

To assemble the skewers, use 16 wooden skewers. Onto each skewer, thread 1 donut hole, 1 hulled strawberry, 1 tangerine segment, 1 pineapple cube, 1 kiwi slice, 2 blueberries, and 2 red grapes in that order. Repeat with the remaining fruit and donuts. Serve chilled with the yogurt dip.

Artistic lamps by Fulper Pottery

Before the use of electric lights, lamps were designed to cast as much light as possible. With the introduction of electric light bulbs, invented in 1879, lamps took on new forms and functions. In some cases, lampshades had to soften the light instead of amplifying or directing it.

In the early 20th century, designers created lamps with new materials and previously unseen shapes. Fulper Pottery, established in New Jersey in 1860, started its artware line, Vasekraft, about this time. Its Vasekraft lamps had pottery shades and bases decorated with Fulper’s famous glazes. The shades had inset panels of stained glass to let the light through.

These aren’t the only lamps that Fulper made, however. This parrotshaped pottery lamp with tilted head, slightly open beak and colorful plumage was made by Fulper. It sold for $375 at an auction by Dennis Auction Service, Inc. There is a socket for a light bulb concealed in the base; the entire parrot and the top of its perch detaches and acts as the shade.

A: Wedgwood pottery started in Burslem, England, in 1759. Florentine pattern was designed in 1931. The ornate border with mystical dragon-like creatures was made in many different colors. Pieces were made with or without center decorations. Recent prices for Florentine demitasse sets with no center decoration range from about $20 to $48. A demitasse set with Coral border and floral center was listed for $70. Orange seems to be rarer than other colors and may sell for more. Wedgwood is still in business and currently makes Florentine in Turquoise. It also includes some Florentine accent pieces in its Renaissance collection. The company lists a Florentine Turquoise cup and saucer for $140.

Q: My mom loves watching Drew Carey host “The Price Is Right.” I told her that there used to be a funny sitcom he starred in, but I couldn’t find it on streaming or cable. Is there a way to watch it? -- K.L.

A: “The Drew Carey Show” is one of those series that hasn’t been released on modern streaming services because there’s so much licensed music in it that hasn’t been cleared yet. However, a free streaming service (with ads) called Plex recently released all nine seasons with some changes to the music. For example, in one episode, some generic rock music was added to a scene that previously played Van Halen’s “Panama.” The show was created by Carey and Bruce Helford (“Roseanne”) and aired on ABC from 1995-2004.

It’s hilarious ensemble cast included Diedrich Bader (“Veep”), Ryan Stiles (“Whose Line Is It Anyway?”), and former “Late Late Show” host Craig Ferguson. Hopefully, they’ll eventually be able to get all the music rights cleared, and the show will eventually end up on an ad-free platform like Netflix. But in the meantime, Plex is a great app with a library

Powell’s “Twisters” grossed $134 million during its first weekend, and his rom-com “Anyone but You” grossed $220 million from a $25 million cost. Now that Paramount merged with Skydance, they’re now planning a “Top Gun” threequel. The last sequel, “Top Gun: Maverick,” grossed $1.496 billion. Powell’s schedule is tight, but the threequel news comes from Powell, who confirmed that he has a date to start shooting “Top Gun 3.” The plan’s to reunite him with Tom Cruise and Miles Teller. “There is going to be some fun stuff being announced soon,” Powell teased. “Twisters,” which is projected to land half a billion dollars, will have a sequel with the same cast. This explains why they left the story

of various popular TV shows and films. You just have to be patient and sit through some commercials.

Q:Is it true that the Disney series “Wizards of Waverly Place” is being rebooted? Is Selena Gomez starring in it, or is it a new, young cast? -- D.W.

A: Selena Gomez and David Henrie, who played siblings in the hit Disney series “Wizards of Waverly Place,” are producing a sequel series called “Wizards Beyond Waverly Place.” Gomez will star in the first episode, and Henrie will lead a new

open-ended. Meanwhile, Powell’s currently shooting a black comedy called “Huntington,” with Margaret Qualley and Ed Harris. Teller shot the musical drama “Michael” with Colman Domingo, which is due on April 2025. Teller also has two rom-coms coming up — Apple TV+’s “The Gorge” with Anya Taylor-Joy and Sigourney Weaver and A24’s “Eternity” with Elizabeth Olsen and Da’Vine Joy Randolph. Keanu Reeves, who turns 60 on Sept. 2, was shooting Aziz Ansari’s “Good Fortune,” with Seth Rogen, Keke Palmer and Sandra Oh, when he fractured his knee. It wasn’t from doing a stunt, like in “The Matrix” franchise, but from tripping on a rug in his trailer. He used a crutch on set, except while filming, but a salsa dancing scene had to

cast of youngsters through the rest of the season, including Billie, who is played by Janice LeAnn Brown (“Euphoria”) and has special powers. The original series ended 12 years ago, and the new spin-off will begin airing later this year on both Disney Channel and the streaming platform Disney+.

The young couple will be living in the same town where “Young Sheldon” took place, so expect to see guest appearances by some of the cast you miss. For example, Georgie’s mom, grandma and sister (Zoe Perry, Annie Potts and Raegan Revord) are all expected to pop up at least once during the first season.
