Peyton Thompson “Completing six OP eligible subjects alongside my traineeship was hard work, but I am glad to have had the opportunity,” says Peyton Thompson.

Initially they work together on a Long Term Challenge for up to six weeks. Subsequently during the competitive event participating groups develop a response to a three hour challenge which is presented in dramatic format. They also have a spontaneous ten minute challenge where they are judged on teamwork, problem solving and the quality of their final response. The third component of the Challenge is an Ideas Forum during which they sell an idea that will make our world a better place.

Peyton completed a Certificate III in Information, Digital Media and Technology during her Year 11 and 12 studies while employed one day a week at Our Lady of the Southern Cross College. In 2016 she continued her studies in this field by Tayla Harvey enrolling as a student in the Bachelor of Information and Technology course at Tayla Harvey loves a challenge. Not only is she a member of the successful Opti-MINDS team but she recently succeeded at an elite level Griffith University. in The Education Perfect World Series, an annual online competition Peyton was the only trainee to receive a in which schools compete in Social Sciences, Languages, Maths and double nomination in the recent Darling Downs South West Regional Science events. Tayla answered 33,000 questions to be placed ninth Finals. Growing up around horses has influenced Sarah Gwynne’s passion for riding and she has now represented the school at a state and national level in equestrian events. With her horse, Secret Score, she came third in dressage and eighth overall at the EQ Interschool State Championships.

Tayla went on to compete in the English and Science Series and these results, combined with her scores in the Language Series, placed her as the fourth top student overall in this international competition. “It is a great experience and so beneficial,” says Tayla. “I highly recommend it to others.”

While then being selected to represent Queensland at the National Interschool Phoenix McArthur Championships in Sydney was a thrill, it was Sarah’s nomination as vice-Captain of the Queensland Combined Training team which (Pictured top left) Phoenix is a budding scientist. BBQ Chicken and Bacon Rissoles Ingredients 2kg Chicken Mince 2 Eggs, lightly beaten 1 tbsp minced garlic 1/2 Cup BBQ Sauce 1 Cup Bread Crumbs 2 Tbsp Chopped Fresh Chives (can substitute with dried) 2 Tbsp Chopped Basil Leaves (can substitute with dried) 20 Rashes Bacon, halved Salt and Pepper 1 cup BBQ Sauce Extra Method Combine mince, eggs, garlic, breadcrumbs, chives, basil, salt and pepper and bbq sauce in a large bowl. Shape into 2cm thick rissoles - I like to use a large ice cream scoop for the perfect, even sized rissoles every time. Remove the 'eye' piece from the bacon and set aside for later use. Remove and discard rind from tail pieces bacon. Wrap one piece of bacon around each rissole and secure with a toothpick. Pre Heat oven to 180 degrees. Spray a large non-stick frypan with oil and heat. Cook rissoles until browned. Transfer to a lined baking tray and brush with remaining bbq sauce, toss to coat. Bake for 15-20 minutes until cooked through.
