WEST HQ IS HOME TO PEOPLE OF ALL AGES, BACKGROUNDS, AND ABILITIES WHO COME TOGETHER NOT ONLY TO ENJOY THEIR SHARED SPACES, BUT TO PLAY A KEY ROLE IN THE IMAGINATION, CREATION, AND SUSTAINMENT OF THE REGION’S IDENTITY. Over the last decade, Sydney’s Western Corridor has seen a level of unprecedented growth which is unlikely to tire itself out any time soon; this has brought about change and development which has of course been challenging at times but has also paved the path for opportunities previously unheard of and completely unimagined. West HQ is at the core of that opportunity, helping our district make the most of Greater Western Sydney’s growth by creating ways for businesses to thrive without being tied to revenue from the gaming industry.
Richard Errington, CEO, West HQ
WELCOME TO THE ALL-NEW VIEW BY WEST HQ I’m delighted to invite you to our very first edition of this publication which is packed with vibrant content, and designed to bring you, our valued patrons, all the exciting things that are happening at Sydney’s leading landmark destination of Western Sydney, West HQ.
and reinvent the concept of public spaces. We want you to be able to take part in the collective; to help us create a destination hub for all things entertainment, fitness, lifestyle and accommodation that truly represents the heart of Western Sydney.
Our annual publication will endeavour to share with you all the ‘Views’ from our iconic destination for entertainment, fitness, lifestyle and accommodation, will enthuse you with the abundance of options for business and social events, celebrations, daily outings, gatherings with friends and family, exercise, health and wellbeing and what is on at our venues.
The core of West HQ is about more than just extraordinary development or facilitating better urban design. We understand that the greatest of public spaces are never measured on the basis of their physical beauty alone; they must also serve the people that live within them, acting as a vital resource, and offering function as well as form.
The pages that follow will unravel the stories and the passion that sit behind each of our outlets, celebrating the great things in life that not only bring colour to our lives but also create a social connection between people and places, bringing us together. In transforming West HQ Limited into the premier dining and entertainment precinct of Western Sydney, we were inspired to reimagine
We started this journey with a shared belief in the importance of connections between people, and one of the best ways for human beings to connect is by strengthening people’s relationships with the spaces they inhabit, and the spaces they share. The connection we wish to continually build on is one where people will want to be; a cultural connection hub, with an intrinsic understanding of the myriad identities that define a place and support the region’s ongoing evolution.
In creating West HQ, we observed, listened to, and asked questions of the people who live, work, and are entertained here, to understand their needs and aspirations for the future of the space and the region as a whole. With this knowledge, we believe we have created an iconic destination for the neighbourhood to look after every aspect of their wellbeing, from fitness and health to dining and hospitality, nightlife, entertainment and accommodation, and businesses to answer any call as to how they spend their leisure time. West HQ was designed with people in mind; we have focussed on the social and cultural importance of building a lively regional epicentre around inviting public spaces. We encourage our patrons to take ownership of their neighbourhood, to walk the streets with confidence, safety and a sense of belonging, all while contributing to the buzz of a vibrant social life in one destination, right here at West HQ. Ten years in the making, the much-lauded Sydney Coliseum Theatre is due to open later this year. A world-class establishment, beautiful in its architectural design and technically superior as a lyric theatre, the Coliseum will put the genius and creativity of the Australian entertainment industry on the global cultural map; an achievement Greater Western Sydney can call our own and be truly

A MASTERPIECE IN THE MAKING Your first moments inside Sydney Coliseum Theatre begin with a walk along the crystal bridge, featuring stunning displays of light brought to life by the bridge’s spectacular LED floor, providing a truly unique and exciting way to start your arrival experience. As you step into Level 1 you will receive your first glimpse of the stunning, grand staircase as its descends into the main foyer. Surrounded by huge floor-to-ceiling glass panels, the venue’s foyers are flooded with natural light that dances across Terrazzo lined floors, marble benchtops and accents of blackbutt timber panelling. Intentionally designed to be a main focal point of the Sydney Coliseum Theatre is the main bar located on the ground floor foyer. Framed by the curvature of the staircase, the circular bar is a true moment, featuring a spectacular LED chandelier overhead which washes the room with vivid colour. Designed thoughtfully by the award-winning team at Cox Architecture, the venue features luxurious glazed ‘nooks’ jutting out along the exterior of the building. Fitted with plush couches and furnishings hand selected by Interior Designer Brooke Lloyd, these spaces provide cosy spots for pre-show cheese, nibbles and drinks. On balmy nights, a sip of champagne is perhaps best enjoyed in the gorgeous alfresco garden courtyard, and is also the perfect outdoor venue for corporate VIP entertaining under the stars. For a more intimate corporate or group experience, the VIP Suite located on the Mezzanine Level provides the perfect 5-star experience, complete with personal server and fast access to your seats.

Fans of both traditional theatre, live music concerts through to corporate clients will delight in the technology-first approach to the European designed and built Jezet seating. The fully retractable seating system means that within an hour the room can be transformed from a traditional theatre to a ballroom fit for an opulent banquet or even a standing room concert. Whilst brilliant in function, the custom designed theatre seats are superbly comfortable making your theatre experience truly relaxing and enjoyable.
ACCESSIBLE ARTS FOR ALL Arts and live entertainment should be enjoyed by all with equal access to brilliant seats and amenities. Hearing loop accessibility from every seat ensures there are no barriers to a beautiful night at the theatre for patrons with accessible requirements.
FLAWLESS DESIGN Inspired by the freedom of expression in arts and music, the imposing building will become a landmark for the residents of Greater Western Sydney, with majestic curves reminiscent of the flow of a curtain, the movement of dance or the way you imagine a musical note making its way through the air, dancing with every beat. Tim Morgan, Design Director at Cox Architecture explains: “The overall design philosophy of the building was to create a ‘journey of transcendence’ from light, rigidity and exhibitionism to darkness voyeurism and fluidity – from being viewed to viewing.”

TIM MORGAN, DESIGN DIRECTOR, COX ARCHITECTURE TALKS DESIGN HAVE THERE BEEN ANY FIRSTS FOR COX IN THE DESIGN OF THIS VENUE?
This venue will be the biggest performing arts venue that we have designed and built, holding 2,000 patrons. It is also a building that has been created, simply as a veil or curtain wrapping an operationally functional venue that heightens the curiosity and intrigue to see what’s inside. The foyer has pushed the structural design to its limits giving the illusion of the stair and balconies floating. To be a part of conceiving a building that is a celebration of the culture of Western Sydney is so exciting. We are honoured to be involved in the creation of Sydney’s newest world class Sydney Coliseum Theatre.
STRIKING ARCHITECTURE AND EXQUISITE INTERIORS
NURAISHIKIN SALLEH, PROJECT ARCHITECT, COX ARCHITECTURE EXPLAINS … WHAT DESIGN FEATURE WOULD YOU SAY MAKES SYDNEY COLISEUM THEATRE SUCH A MASTERPIECE?
The curvature and verticality of the building’s façade is an iconic structure that creates a visual impact against the surroundings and instils a grandeur impression when viewed from all angles. The façade panels are made up of precast concrete with materials sourced locally which create a building shape that is very unique and yet respond to the characteristics of the site and showcase the flair of the arts and culture that is held within. The auditorium is designed to offer a flexibility in function, from Orchestra to a rock concert or a sitting banquet. Each function requires a different setting and this auditorium has acoustic banners, roller blinds and retractable seating to specifically cater for each of them, without compromising the quality and comfort of the end user. This is a unique feature that has not been repeated anywhere in the nation.
With these key design features, Sydney Coliseum Theatre is a masterpiece for the Western Sydney, if not the entire country. WHAT WAS YOUR INSPIRATION FOR THE DESIGN OF THE BUILDING?
The design of the building is inspired by the freedom of expression in arts and music with the fluidity in its form, curving the façade to create intimate spaces and nooks, and the playfulness of revealing glimpses of the inside and outside through the slithers of windows. The grand staircase becomes the spine of the building connecting layers of activities and the popout windows allows visual connection between the outside public areas and the inside private areas. The multi-purpose auditorium allows the flexibility for a variety of events and shows. The curves of the timber battens embrace the audience and allows them to immerse in the entertainment of the night.

MEET WEST HQ’S OWN WORLD CUP CHAMPION: EMMA NEDOV TELL US WHAT INSPIRED YOU TO FOLLOW A SPORTING CAREER IN GYMNASTICS AT SUCH A YOUNG AGE
I started gymnastics when I was 6, purely because my mum thought I’d enjoy it. I apparently cried in the car on the way to my first trial because I didn’t want to go, but as soon as I entered the gymnasium my mouth dropped and I was in awe. It’s been my life ever since! It was a hobby and a sport I was doing for fun in the beginning. I didn’t realise where I could go with the sport until I was about 9 or 10 when the Australian National coach started recognising me. WHAT DOES SGAC MEAN TO YOU?
I started training at SGAC in 2014, when it had just opened and I attended my first World Championships that year. SGAC has been so supportive to me throughout the past few years I have trained there. I’ve been through ups and downs struggling with injury and questions of retirement and no matter where I end up I know I have the support of SGAC behind me every step of the way and for which I am very grateful. YOU HAVE A REMARKABLE COLOURFUL CAREER SO FAR WITH NO SIGNS OF SLOWING DOWN. WHAT DRIVES YOU?
Thank you! I have a larger goal in mind which ultimately drives me. However, I find that setting smaller goals in order to achieve the bigger ones is the key to keeping things going at a steady pace. I’ve been competing pretty consistently this year and there’s more competitions to come so I focus on each step at a time. I’m also extremely fortunate to have the best support system around me, from my family and friends to coaches and mentors who also contribute to keeping me motivated.
WHAT IS YOUR FAVOURITE GYMNASTICS SKILL AND WHY?
My favourite gymnastics skill is a ‘front aerial’ on beam. I just find them really easy to do and have been doing them for roughly 10 years now! CAN YOU NAME SOMEONE IN THE SPORTS WORLD AND SOMEONE IN THE REAL WORLD WHO INSPIRES YOU AND WHY?
There are so many people both in and out of the sports world who inspire me. To pick one, for me in gymnastics I’ve always looked up to a Romanian gymnast Catalina Ponor, who was an Olympic champion on beam. I admired her style and the way she trained and competed. Outside gymnastics I’d have to say my mum. Now that I’m older I can look back and realise how much she did for me and I can honestly say I wouldn’t have been able to achieve what I have without her or my dad. She is a real life superwoman. WHAT DOES THE FUTURE HOLD FOR EMMA?
At this stage, I’m obviously hoping to make the Tokyo Olympics next year which could bring a number of exciting things for the future. After that, I’ll be moving on to new things! I’ve got my side business ‘Artium Sport’ that I’d like to build on, and I’ll possibly start studying again. It’s been a long 17 years in gymnastics so this will be my final cycle.

INTERVIEW WITH WARREN TURNBULL
BURGER LOVE IT WASN’T LONG BEFORE CHUR BURGER WAS DISCOVERED BY SYDNEY’S FOODIES, FOOD CRITICS AND BLOGGERS. IN FACT, JUST 6 WEEKS AFTER OPENING THEIR DOORS IN SURRY HILLS, THE BURGER JOINT WAS NAMED THE BEST BURGER IN THE GOOD FOOD SECTION OF THE SYDNEY MORNING HERALD. A newfound love, Chur Burger is the brainchild of award-winning chef Warren Turnbull, who has been successfully operating eight venues bringing his delicious gourmet burgers to Brisbane, Sydney and Melbourne since 2010. In 2017, the mouthwatering menu of good oldfashioned burgers and tasty milkshakes found its home in the hottest new food and drink destination to hit Western Sydney, West HQ. The cult-favourite joint is known for offering a casual, relaxed dining area to enjoy great burgers at amazing prices.
We had to ask… Street art and laid-back vibes give Chur Burger its friendly, comfortable and award-winning reputation, but with its prominent edge of maintaining just the right level of ‘trendy’, has foodies wrapped up in burger love. Diners can be spoilt for choice. From the OG Beef and the notorious P.I.G, Chur’s Mac Daddy to the signature Chur Beast loaded with double grilled beef, double bacon, double cheese, tomato jam, BBQ sauce and Mustard Majo, there is something for every palette. And if that is not enough there is a great selection of sides including sweet potato fries, potato gems or the spicy and smoky mac & cheese or choose a fresh coleslaw kiwi style or crispy iceberg salad with buttermilk dressing. West HQ has the perfect spot for all ages to find burger love. It is no secret. Chur burger was born from a simple vision… Warren’s love for burgers.
WHAT MAKES A GOOD BURGER IN YOUR OPINION?
The perfect burger in my opinion starts with using the best produce and ingredients. Using the best you can find makes it all that bit easier. If you have the best pattie and perfect bun you are 90% there. The rest is just the customer’s personal preference. I am also a massive fan of using a chargrill to cook our beef, lamb and chicken burgers. WHY ARE YOU SO PASSIONATE ABOUT CHUR BURGER?
I have always loved what we offer in the way of really top quality food in a relaxed friendly environment. Six years on I still feel we are doing this well and our food has actually gotten even better. We are always looking at ways to improve what we do, which I think is really important. I think the day you become complacent it is time to stop. WHAT WILL THE MENU AT CHUR BURGER WEST HQ BE LIKE?
Our menu is very similar to our flagship store in Surry Hills with special additions of some crazy delicious options created by the chefs at West HQ.

MOMENTS OF INDULGENCE AT CORNER CAFÉ EVERYONE’S IDEA OF WHAT MAKES THE PERFECT TREAT IS DIFFERENT. For some, it’s a perfectly crispy ricotta cannoli, dusted with icing sugar and crushed pistachios. For others it’s a classic baguette, filled with smoked leg ham, French brie cheese, and Dijon mustard. Others still just like to be surprised. Whatever your taste, you’ll find it at Corner Café – Western Sydney’s newest French-style patisserie at West HQ. Its delightful little menu is infused with all the best of traditional European cooking, poised to flex and make the best of time-worn favourites. Its sweet selection is dotted with classic Italian favourites, as well as its very own homemade zuccherati; Italian-style filled donuts; something you won’t have tried before but may well blow your mind. Then there’s the Belgian
waffles, enveloped in chocolate layers of smooth indulgence, and a range of perfectly baked, amber-glossed Danish pastries, buttery-crisp on the outside and warm and doughy on the inside. If it’s something savoury you crave, you haven’t lived until you’ve tried a hot bacon and brie croissant. There’s even something for the wellnessminded among us, with a range of salad bowls inspired by the world’s freshest, most luscious, and healthful ingredients. Your next surprise awaits you, and it’s right around the corner.

AUSTRALIA’S FAVOURITE GELATO WHAT IF THERE WAS A HEALTHIER, MORE DELICIOUS ALTERNATIVE TO ICE CREAM? One taste of Gelatissimo’s artisan-created gelato at West HQ, and you won’t even remember what “ice cream” means.
36
Gelato is often described as Italian ice cream, but it’s actually nothing like it: unlike ice cream, which uses cream, gelato is crafted with whole milk. That means it contains a whole lot less fat, yet it tastes a whole lot creamier; and the gelato at Gelatissimo is the best and creamiest of them all. The delicious, authentic gelato is churned out fresh in-store every day, using only the finest ingredients on offer, and containing absolutely zero artificial flavours or colours. What’s not to love? Gelatissimo has options for everyone including vegan-friendly, gluten and nondairy friendly and an extensive range of delicious flavours on offer to suit every taste and satisfy every craving. Flavour-wise, you can do so much more with gelato than you could ever hope to achieve with ice cream. Sure, there are always the classics – rich Italian Chocolate, smooth Vanilla, or traditional Italian Hazelnut, Cookies and Cream – made unforgettably better in true Gelatissimo style. Or you could try the award-winning Mango or the Salted Macadamia and Dulce Del Leche flavour and the super Deluxe range including Wicked Double Choc Brownie and Decadent Cookie Dough. There are low sugar options too!
If you’re ever planning a party, running late to a family dinner, or just feel like treating yourself to something special, the Gelatissimo flavours are awe-inspiring and will always leave you smiling.
“AT GELATISSIMO WE BELIEVE IN BRINGING PEOPLE TOGETHER TO SHARE MOMENTS OF HAPPINESS, ONE SCOOP AT A TIME. THE AROMATIC SCENTS AND RICH FLAVOURS OF FRESH STREET FOOD FROM THE MOMENT YOU STEP INTO THE BRIGHT AND VIBRANT DINING SPACE OF WEST HQ’S NEW TOWN THAI STREET FOOD, IT’S CLEAR THERE’S GOING TO BE A NEW FAVOURITE IN TOWN. THE MENU TURNS TRADITIONAL SOUTH-EAST ASIAN DISHES INTO DYNAMITE, DELIVERING ABSOLUTE KNOCKOUTS FROM YOUR FIRST BITE TO YOUR VERY LAST SPOONFUL OF DESSERT. Small, exotic bites like the roast duck spring rolls with black fungi, garlic, coriander and vermicelli with a plum sauce, and our signature Wow Wings – fried battered chicken wings and sweet chilli dipping sauce – lead into a rockstar arrangement of hot pot soups and exquisitely light bites, like battered soft shell crab seasoned with sea salt, pepper, fried garlic and green wakame seaweed. The Crying Tiger – grilled, marinated beef slices, served with sticky rice and Nam Jim dip – is anything but ordinary; and we haven’t even got to the mains yet. The classic Massaman beef curry, Pad Thai and Pad Se Ew noodles, and a range of Wok favourites are reinvigorated using the freshest, boldest ingredients, all of which are customisable to suit every taste via the Build Your Own options. Aromatic street food specials – like the whole steamed barramundi and the lemongrass lamb – designed with the Asian shared-food philosophy in mind, bring balance to the feast.
Begin with a tipple, or dip your toe into a sea of Thai-style drinks to brighten your palate; the aptly named Sunshine Juice, or Pink Dragon Iced Tea are sure to please, but we recommend the Panthai Thai Iced Tea – made with Panthai tea, palm sugar, and coconut milk – for a dose of authentic goodness. Take your pick from a treasure trove of Australian wines, and an international beer list; you’ll have no trouble finding the perfect accompaniment to your meal. With the aromatic scents and rich flavours of East-Asian street food on the steps of Western Sydney, New Town Thai Street Food is sure to impress for a long time yet.

WHAT STEFANO SAYS ABOUT HIS CRAFT CAN YOU TELL US WHAT ITALY MEANS TO YOU?
Italy is where I was born and remains a large part of my culture. Italy provides a contrast to my life in Australia. Though I spent my formative years in the western suburbs – my schooling at Blacktown Public and Blacktown Boy’s High – I’ve spent the last 40 years re-connecting with Italy through my restaurants, food, writing and books. WOULD YOU SAY PIZZA IS MORE THAN JUST A FLATBREAD WITH TOPPINGS?
BRINGING AUTHENTIC ITALIAN STREET FOOD TO WESTERN SYDNEY NESTLED IN SYDNEY’S NEWEST DINING AND ENTERTAINMENT QUARTER, WEST HQ, IS PIZZAPERTA MANFREDI, A PIZZERIA THAT WILL CHANGE EVERYTHING YOU THOUGHT YOU KNEW ABOUT PIZZA. Brought to you by the godfather of modern Italian cuisine in Australia, Stefano Manfredi, PizzAperta pizzas are crafted from the finest of artisan flours stoneground and imported direct from Italy. Using both traditional and modern techniques, PizzAperta Manfredi is bringing the best of classic Italian street food to the streets of Western Sydney.
Pizza may be seen as the humblest of Italian cuisine, but a true pizza is only achieved through the mastery of a multi-stage process rich in complexity and cultural heritage. As Manfredi himself says, behind the tradition is dedication, a ton of work, and a singlemindedness in striving for perfection. First, the dough is fermented using a biga, a pre-dough that is then left overnight before being carefully mixed with more flour and water to a final dough that is shaped into balls. These are left to ferment slowly at 4 degrees for 24 hours. The entire process takes a minimum of 36 hours. Then, into the state-of-the-art Marana oven it goes, fired with local ironbark wood from the Blue Mountains, topped with the highest quality, fresh seasonal ingredients. PizzAperta creates pizzas with deliberately simple flavours, designed to enhance and complement the fragrant, handcrafted base. But the flavours are strong, bold and innovative, keeping to the spirit of New Wave style. You will never look at pizza the same way again.
A lot of people regard pizza making as an art but I’m of the opinion that it is pure refinement and mastering of craft. To start, you have to ask yourself what sort of pizza you want to make. Then you have to study and master all its elements and techniques. It takes tenacity and dedication, rather than art. HOW WOULD YOU DESCRIBE THE PIZZA CULTURE IN AUSTRALIAN IN COMPARISON TO ITALY?
My view is that pizza culture in Australia is – for the most part – stuck in what I would call the “international Naples model”. Most pizzerie begin with dough made from highly refined “00” flour, a good dose of yeast and relatively short fermentation times. In Italy there has been a movement over the last 15 years to rediscover the idea of pizza, starting with stoneground and ancient grain flours, long and slow fermentation times, and the quality of the toppings. I would call this movement ‘New Wave’. YOUR MULTI-AWARD-WINNING RESTAURANTS HAVE HELPED SHAPE AND DEFINE ITALIAN DINING IN SYDNEY. WHAT WILL PIZZAPERTA MANFREDI BRING TO THE TABLE?
The first PizzAperta Manfredi to open in 2014 caught the attention of Italy’s Gambero Rosso and through their annual guide, Pizzerie d’Italia, awarded us their coveted 3 slices. We were among a small group of pizzerie outside Italy to be given this honour. We will continue to make our pizze with the best stoneground flours, slow fermentation and the best quality ingredients to bring to our guests’ tables fragrant, tasty, healthy slices.

BIG ON FLAVOUR YET SIMPLE, AUTHENTIC AND ELEGANT PERFECTION AUSTRALIA’S BEST QUALITY STEAKS AND FRESHEST SEAFOOD ARE HEADING WEST. Combining the best seasonal produce with a vibrant menu selection of premium cuts of prime Australian beef, cooked and served within 15 minutes from order. The menu is big on flavour. The 1 kilo T-bone steak makes a great option to share with two, three or even more. The rapid fire pre-theatre steaks are sure to be popular as will be the slow roast pork ribs with spicy cherry cola glaze, the ocean trout cutlet and the old-timefavourite bangers & mash. There is something irresistibly tasty for the kids too. From sliders and fries, the popular mac & cheese, the snag sarnie with potato crisps to super crunchy fish fingers & fries, the kids menu will have even the fussy eaters impressed. Brunch, lunch or dinner, this is the perfect destination from laid-back catch ups to celebrations in a relaxed and cheerful yet luxurious dining space.

A VIEW FROM THE MAN BEHIND THE GRILL – SEAN CONNOLLY WHAT IS YOUR FOOD PHILOSOPHY?
WHAT BROUGHT YOU TO WEST HQ?
My philosophy is to keep it simple and try not to over complicate things. I prefer to let the produce speak for itself and I focus on good technique rather than tricky overdressed food. I want my food to be accessible, food for everyone.
The opportunity to be a pioneer. I love a challenge and I find it hard to say no to any good opportunity.
HOW WOULD YOU SAY YOUR STYLE OF COOKING HAS EVOLVED OVER THE YEARS?
As a young boy cooking in Yorkshire, it was very much a roast beef and Yorkshire pudding culture. A very traditional classic British/French style of cooking very different from when I arrived in Australia. I was blown away with the cultural diversity of Sydney and fusion of cultures from Asia and the Indigenous outback. In the 80’s it was really an interesting time in Australia as it was the time when the Sydney food scene was developing its own identity. Experimenting with flavours helped me grow as a chef and helped me better understand where I felt most comfortable.
All through my career I’ve taken risks and will continue to do so. I strongly believe that without taking any risks there’s no success to be had. What also brought me to West HQ are the two Steves. Mr Manfredi from PizzAperta Manfredi and Mr Anastasiou from Chu Restaurant who also have their own unique dining spaces at West HQ. I’ve admired both them for many years. Stefano is an amazing chef and he has been part of the fabric of the Australian food scene. Steve Anastasiou on the other hand is an inspiring entrepreneur and restaurateur and above all a great friend. FOLLOWING THE SUCCESS OF YOUR PREVIOUS RESTAURANTS, DINERS ARE IN FOR A TREAT. WHAT SHOULD THEY EXPECT WHEN DINING AT STEAK & CO.?
These days I cook from the heart. Choosing tradition over trend. If I stumble across a modern fun dish I will serve it but I usually prefer cooking that comes from a place of heritage and authenticity.
I’m looking to showcase the best of Australian butchery and fishmongers’ produce.
YOU HAVE SIX AWARD-WINNING RESTAURANTS IN THREE CORNERS OF THE GLOBE. WHAT DRIVES YOU TO HAVE SUCH PRESENCE ACROSS SO MANY DIFFERENT FOOD CULTURES?
Somebody recently asked me what the ‘& Co’ in the name stood for. I said ‘c’ is for crustacean and ‘o’ is for oysters.
As a chef I believe there are simply no cultural boundaries around food. No matter in which country I’m invited to cook, the more and more I discover that quality food is recognised in every language, across any culture. The nod or the wink from a happy customer is all I need to know that what I’m doing is pleasing to people.
Serving great quality steak, oysters and crustaceans.
I’m so looking forward to my guests coming in and choosing a steak from the butchers window, sitting down to relax enjoying our crumbed oysters and prawn cocktails and drinking a carafe of wine whilst their steaks are cooking.

FINE CHINA: AN EXQUISITE DINING EXPERIENCE IN WESTERN SYDNEY Coming to the West HQ dining and entertainment precinct in September 2019 is Chu Restaurant. Brought to Western Sydney by restaurateur Steve Anastasiou, Chu is a sister restaurant to the celebrated, multi-award-winning institutions China Doll in Wolloomooloo and the CBD’s China Lane. Echoing the same refined palette of delicate pan-Asian flavours, the menu at Chu is designed so that everything is meant to be shared and enjoyed. Together with Head Chef Ben Haywood, Anastasiou is working closely with his team of talented epicures and connoisseurs at the newly created venue to bring the vision of contemporary Asian cuisine to life in West HQ. Accompanied by a painstakingly hand-selected wine list, the menu will feature a host of familiar favourites, including handmade dumplings crafted fresh daily, succulently roasted Chinese meats, locally sourced seafood, as well as a smattering of signature dishes from its heritage restaurants. Chu will also introduce a range of new and unique dishes, created especially for Western Sydney, made with the highest quality ingredients and the freshest local produce.
Chu’s menu exemplifies the same poignancy as Anastasiou’s more mature creations in its modern take on culinary traditions from China, Hong Kong, Japan, and South-East Asia. Designed by Bianca Foster of The Unlisted Collective, the 250-seat space at Chu will immerse diners in the glamour and theatre of 1940s Shanghai; a perfect complement to a night out at the soon-to-open Sydney Coliseum Theatre. Whether you are catching a world-class musical, live music, symphony, dance, comedy, or family entertainment event at the iconic 2,200-seat proscenium theatre, Chu is the ideal destination for your pre-theatre dinner or postshow nightcap. Chu is a celebration of the best of contemporary Asian cuisine, bearing all the hallmarks of an exquisite dining experience without the need to travel from Western Sydney.
INTERVIEW WITH STEVE ANASTASIOU WHAT SHOULD DINERS EXPECT TO EXPERIENCE IN YOUR NEW RESTAURANT?
We certainly aim to deliver a new level of dining experience to West HQ. We have been lucky enough to have secured a great space that is large enough to allow us to create multiple levels of dining and introduce a warm but lively ambience in the space. From family gatherings and celebrations to intimate dining, the venue will have the capabilities to provide separate areas and allow our guests choices, whether it be pre or post theatre at the new stateof-the-art entertainment centre, to celebratory dining for all occasions and even corporate events. In addition, we will create spaces for casual catch ups and a quick drink and snack. WHAT SETS CHU APART FROM THE REST OF THE AWARD-WINNING CHINA DOLL RESTAURANTS?
What sets Chu apart is its size and location that will allow us the capability to cater for a multitude of our guests. We can also deliver a larger and extensive food offering that our other venues restrict us from providing due to size constraints, and the main point being that we have award-
winning chefs collaborating on the menus which is a definite bonus for our guests at Chu. WHY DID YOU CHOOSE WEST HQ AS THE DESTINATION FOR YOUR NEW RESTAURANT? WHAT ATTRACTED YOU TO WESTERN SYDNEY?
West HQ has set a very high standard in its facilities and entertainment; it delivers on all levels from its food offering to indoor athletics stadium, and accommodation. I was extremely impressed by the operators that have been hand selected to provide the very best in dining experiences that Sydney has to offer. On another note, being born and raised in the west, it wasn’t a hard decision for me. To be involved in this exciting project created by some very talented people and their vision was an opportunity one can’t refuse. HOW WOULD YOU DESCRIBE TODAY’S FOOD CULTURE IN AUSTRALIA? HOW DOES THAT COMPARE TO THE PAST?
Food culture in Australia can simply be summarised in a few words. Given the diverse multicultural population and the abundance of the very best fresh food from vegetables to meat and seafood – in my opinion are the best in the world – makes us world leaders in the food trend ranks. Having the most talented team of chefs and front-ofhouse staff on ground is also a recipe which makes for a great offering to the general public.

MAGICAL STAYS THERE’S JUST SOMETHING SO LUXURIOUS ABOUT STAYING IN A HOTEL. Sure, sometimes the experience can get a little jaded, turning up stressed, sometimes late at night. Arriving in a crumpled heap direct from the backs of taxis, or exhausted from having fought your way through a crowded airport or train station. Then, the gilded glass doors open, and you step into a delicately scented foyer, muted music pulsing at your temple. You are shown to the elevator and step inside, to be carried up to a different place. A private world; a second heaven.

AT WEST HQ, WE ASPIRE TO BUILD A CULTURE OF TRUST AND RESPECT, WHILE CELEBRATING OUR PEOPLE FOR THEIR EXCELLENCE IN SERVICE, COMMITMENT, LEARNING, AND DEVELOPMENT. Every month, we ask our team to nominate someone they believe has demonstrated our company’s values of Teamwork, Trust, Customer Focus, Achievement, and Diversity, and have gone above and beyond the call of duty in their day to day role and responsibilities. Nominations can be made via paper or electronically, to be reviewed by a panel of industry insiders from across our business. The panel votes and decides on a winner – never an easy task, with the volume of high-calibre nominations received each time. That winner is announced as the West HQ Employee of the Month – dubbed the West HQ Hero – and receives a prize of $250 cash, while going into the draw to win West HQ’s Employee of the Year at the Annual Awards Dinner.
WEST HQ IS A FAMILY BEFORE ANYTHING ELSE
We understand that the future of our business depends on the team of talented, passionate people who spend their days bringing our vision to life. That is why we choose to invest in our West HQ team, creating internal initiatives that focus on recognition and rewards, developing skills for professional and personal life, and empowering our people as leaders. 1

Celebrating our people The Awards Dinner is a moment to celebrate our team and thank them for their contributions to creating the West HQ family. Earlier this year, David Galea was named the West HQ Employee of the Year for 2018, winning $2,500 in prize money and being presented with the full “Miss Congeniality” treatment on stage with sash, sparkling crystal trophy and a chocolate flower bouquet. David began with us back in February 1991. He currently holds the position of Maintenance Team Leader, making significant contributions to his team. Over the years, he has proven himself to be a loyal and dedicated member of the West HQ family, making a real difference to the business and becoming a worthy recipient of the award. Day to day, David ensures that highest of standards of maintenance is applied across all electrical equipment across our site. Needless to say, his role carries a big responsibility. Throughout his time at West HQ, David has experienced the evolution of West HQ to what it is today. When he first started, Novotel Sydney West HQ, originally branded Country Comfort, was still being built and there were certainly a lot less development in the precinct.

When asked, David said he enjoys being part of the West HQ family – every day there is something different, something new to see, learn or do. Variety keeps David enthusiastic about his work and the team have become his second family. He places high value in the quality of staff at West HQ right across the business and he believes that is what makes it such a great place to work. Testament to his longevity is, he feels, the sense of accomplishment when completing each project. It is people like David, who set the example for everyone, showing up with a friendly smile and always willing to help whoever comes across their path - other members of the team, members of West HQ, or guests of the precinct. Further to our awards scheme, we also present awards to our team members who have reached milestones with us throughout the year, such as hitting their 5th, 10 th, 15th or 20 th service anniversary, those who have participated in learning and development initiatives, champions of workplace health and safety, and of course, our West HQ Brand Ambassadors. We celebrate our people with pride and excitement of what’s next for their career development as we grow together. 4

Our Brand Ambassadors In 2017, the West HQ Ambassadors program was introduced, with the purpose of enabling ourselves to better identify team members across the precinct who consistently prove themselves as courteous, reliable, passionate, and dedicated. People who have been nominated as Employee of the Month on more than three occasions without yet winning the West HQ Hero were instead recognised for their excellence by being named West HQ Ambassadors. In 2018, the Ambassadors Program welcomed to its ranks Billy Maybury (Food and Beverage Attendant), Ruba Mirian (Gaming Team Leader), Celine Soriano (Gaming Team Leader) and Nordine Mejrouti (Kitchen Steward) as its first members. In April this year, Courtney Knapp (Aquatics Operations Manager), Melanie Pollock (Roster Administrator) and Tayla Hutchen (One55 Member Services) joined the program. Our Ambassadors are commended on their service, and stand as examples to our whole family, sharing the West HQ energy, and embodying our message for members and guests. We are proud to support them, as they have supported us so well, and are grateful for the contributions, the feedback and insights the Ambassadors Program has added to our business. 1

Leading the way The newest and most ambitious of West HQ’s people-led initiatives is our Leadership Program. The initiative is designed to allow various leaders across our business to develop their skills and to empower them to better manage our people. We believe the program will develop leaders who can help guide the business as we continue to grow and diversify as an integrated entertainment and leisure destination. Kicking off in March this year, the Leadership Program brought together 20 of our leaders across all departments in a bespoke training program facilitated by organisational psychologist Paul Lyons. Rolled out across two groups and due for completion in October 2019, the Leadership Program will assist the leaders of West HQ to build on their communication skills, create and manage high-performing teams, and to better understand the nuances of emotional intelligence in the ways they work with their teams. Session one of the Leadership Program is a full-day workshop, focussing on how to lead a high-performing team, and exploring how emotional intelligence can help leaders better connect with their teams. The leaders who take part in this program will learn how to understand the behaviours of a high-performing team, and how to foster trust, manage conflict, while encouraging commitment and accountability. The second session will cover how to have quality conversations with team members and people you manage, with each attendee acting out a difficult conversation with a NIDA-trained actor. The idea is to take people out of their comfort zone, letting them live their worst-case professional scenario in a fun and safe environment.

The Leadership Program also offers attendees 1.5 hours of individual, private coaching with Paul Lyons. Paul is passionate about personalised coaching, working closely with each member of the team and helping them find guidance for future development and goal-setting. In addition to the Program, West HQ provides training for our leaders on how to conduct Probation Reviews, Performance Management, Employee Assistance Program, Awareness for Managers, and Accidental Counsellor training. We believe that the more opportunities we can provide our people for individual learning and development, the better equipped they will be to not only lead our teams and contribute to the business, but continuously learn and improve themselves as people.
AT WEST HQ, WE ASPIRE TO BE BETTER EVERY DAY – AND WE DO EVERYTHING WE CAN TO HELP OUR TEAM DO THE SAME. Join our family, and we can do the same for you.
