When did you start at Leonardo’s? I come directly from Italy by the owner of Leonardo’s and started immediately. What is your earliest memory of cooking? Influenced by my grandma; learning to make pasta. Started cooking at 16 on the Amalfie coast and at 18 went to work in Milano.
What is the one cooking utensil that you could not live without? Pasta machine.
Who was your influence? Grandma when a child. Chef Giovanni Cinnque in Milano Claudio Sadhler.
What places do you like to go to in the city? Brighton pier. Sea Life Centre. Pavilion. Take a coffee and watch the people of this city.

health&lifestyle How are your energy levels? Do you struggle to get out of bed in the morning? Do you suffer from energy dips? Do you use coffee to keep you going? Do you just want to slump in front of the TV in the evenings? There are lots of things you can do to increase your energy levels, here are some of the easiest and most effective. Increasing Energy Levels Drink plenty of water. When you’re dehydrated, your bodily fluids (blood, lymph, etc) thicken and your body and brain simply cannot work properly, leaving you feeling tired and lethargic. Drink around 2 litres of water or unsweetened herbal tea each day and you will really feel the difference. Eat raw foods. Salads, fruits, vegetables, nuts & seeds contain enzymes (which cooking destroys) that are essential for the body’s metabolism so include plenty of them in your diet to help keep your body energised. Keep your blood sugar levels consistent. Caffeine and sugary foods may give you a quick burst of energy but the metabolic process they trigger will result in a blood sugar dip a short while later, leaving you feeling very tired and sleepy. Eat small protein rich meals to help keep your energy levels consistent. If you find you get drowsy or bloated shortly after eating, you may be intolerant to some foods. Find a practitioner who can test you to find out which foods you would be better avoiding. 10

Take a good quality Multi-Vitamin and Mineral supplement. If you’re really busy and stressed, taking extra B-Complex and Magnesium supplements in addition to the multi can really help. Complete any unfinished tasks. Sounds crazy perhaps but believe me, all those half finished projects will suck energy from you, so either finish them or make a proper decision to let them go altogether. Exercise to unblock stagnant energy!

What Can You Do? Sat 26th, Theatre Royal Brighton-based writer, director and actor Neil Bartlett OBE makes his only UK stage appearance in 2012 for this special, retrospective recital piece that casts a look at his prolific 30 year career. filmclub As the sun starts to show its face more and the great outdoors seems more appealing Hollywood seems to want us to spend more time in a darkened room. This year’s blockbuster season has a more fantastical edge as Batman, Spiderman and Ridley Scott’s return to the Alien universe grab the headlines. More on these over the coming months but in the run up there’s still a few heavy hitters. Martin Lampitt: cinema@whatsonguide.co.uk
Silent House In Cinemas, Fri 4th Sarah (Elizabeth Olsen), her dad and uncle are repairing their old farmhouse in the middle of nowhere. Without any light or electricity the house is suddenly besieged by unknown assailants. In this age of torture porn and teen slasher flicks it is very rare to find a horror film that is genuinely scary, so it was refreshing to come across something as absolutely pant-wettingly terrifying as this. Impressively filmed in one continuous take, this remake of a Spanish film (‘La Casa Muda’) ratchets up the tension to unbearable levels and has the feel of ‘found footage’ taken to the extreme. The camera follows the totally believable Olsen closely as she explores every creepy nook and cranny meaning we’re just as in the dark (literally) as the terrified

victim; making the shocks all the more effective. A scene using a Polaroid camera still makes you jump out of your skin even though you know exactly what’s coming. However, where this is very much its strength, it is also what stops it from being a completely satisfying experience. When the denouement arrives, your nerves are so frazzled that what should be the most horrifying part of the story becomes more of a relief that you can actually breathe again. This is a small niggle though, as the filmmakers have provided some of the most skilful tension that I can recall seeing on the screen for many a year. Not for the faint hearted but I highly recommend that you see it on the big screen for maximum impact.

Dark Shadows In Cinemas, 11th Based on an oddball American soap of the 1960s, Tim Burton once again teams up with Johnny Depp and Helena Bonham Carter for this gothic comedy. Depp plays Barnabas Collins, a vampire that is unleashed into the world of 1972 after two centuries of captivity. This looks like one for fans of ‘Beetlejuice’ and ‘Sleepy Hollow’ and could be a return to those glory days.
Men In Black 3 In Cinemas, 25th Will Smith and Tommy Lee Jones return for a further outing protecting the earth from the scum of the universe. This time around Agent J (Smith) travels back in time hoping to stop the assassination of Agent K (Jones) by aliens. Josh Brolin plays Jones’ younger self and is an uncanny likeness but be prepared for another annoying theme song, Big Willy style.
The Lucky One In Cinemas, 2nd A marine travels to North Carolina after serving in Iraq and searches for the unknown woman he believes was his good luck charm during the war. Zac Efron and Taylor Schilling star in one of those films that seem to be created in a Hollywood lab to produce the perfect date movie. One for the ladies and all of you hopeless romantics out there.

The sixth annual Bloc festival is about to take place at the brand new and mind blowingly exciting Docklands venue London Pleasure Gardens; the brainchild of the team behind Glastonbury’s
