The Chefs’ Warehouse Artisan Cheese Collection: Parmigiano Reggiano, Cravero Giorgio Cravero (1808-1880) as head of the family started selecting Italian cheeses in 1855. Since then, the Cravero family has handed down this tradition from father to son, maintaining the same passion for the art of curing high quality cheese – in particular Parmigiano Reggiano. The Cravero family works closely with 3 cheesemakers to select the Parmigiano Reggiano wheels they mature and have been working with the same producers for several years to ensure consistency and the highest level of quality. Proper maturing guarantees the wheels are in the best condition allowing them to achieve the optimum balance of flavor and texture. Most Parmigiano Reggiano consumed in Italy and the United States is used as an ingredient to add flavor during the cooking process or as a finishing agent. Cravero matured Parmigiano Reggiano is a cheese that can stand alone. The quality of the cheese allows it to be the focal point of a cheese board and will take a dish to a whole new level. Parmigiano Reggiano, Cravero Cravero Parmigiano Reggiano is a raw cow’s milk cheese made by a small producer in Emilia-Romagna and matured in Bra, Italy. It is made by hand in the tradition of Parmigiano Reggiano and expertly matured. Cheese maturer, Giorgio Cravero, selects and matures each wheel to reach its optimum flavor profile and balanced texture. A recent tasting of September 2006 wheels had a tropical sweetness with hints of fresh baked bread and dried grass. Our Cravero selected Parmigiano Reggiano is aged 24-28 months and has a shelf-life of 3-4 months in its original packaging and should be consumed within 3-4 weeks once the cheese has been cut.
