here’s just no way around it. Like everything else in 2020, Christmas and the assorted seasonal celebrations are going to be radically different than in the past. Staff parties, friend groups, family gatherings — everything will be affected by regulations aimed at keeping our loved ones safe. So how do we make merry in a year when we really — maybe desperately — need to let loose and celebrate life, love and everything good? Squamish-area party planners and hospitality folks don’t have any silver bullets. A recurring theme is to make the best of it and possibly adjust our expectations. Winter celebrations may have something to learn from the experiences of event planners who had to turn on a dime to the COVID pandemic and associated health regulations. Caroline Hyatt, owner of Love and Confetti, a Squamish and Whistler wedding and event planner, has some lessons from months past to apply to Christmas present. First, the bad news. No dancing. Booze service ends at 10 p.m. Maximum attendance is 50 but this includes bubbles of no more than six who must stick close to their own tables and not mingle with others. No buffets. If you need to use the washroom, get up, use it, sanitize and return to your assigned table. It doesn’t sound like a recipe for the kind of freewheeling shmoozefest most people envision when planning their nuptials. Christmas parties are usually even less formal, with plenty of mingling and, often, lots of spirits. That’s not happening this year.

importance on that standby: food. “All the attention is on the food now, more so than it ever was,” said Hyatt. With some of the trappings of a conventional party on hold, attention turns more critically to the plate. With a shorter guest list, hosts may be able to afford to spend more liberally on the meal. Maybe hire a personal chef to come in. For families and other smaller groups, Hyatt suggests substituting what might usually be a raucous party of extended relations to a smaller “experience.” Get in the car and view the seasonal light displays. Walk around town and look in the decorated shop windows. Sing Christmas carols like days of yore. In other words, use imagination and don’t expect things to be like they always are.

Hospitality personnel know probably better than almost anyone the rules and regulations around safe social distancing. Around the end of the year is a time when restaurant staff parties allow a team that is run off their feet all year long to kick back together and enjoy being served for once. It’s not uncommon for restaurants and bars to pair up — your team comes to our place for your party; ours comes to you — but this year will likely not see so many big shindigs. To avoid disappointment, Hyatt suggests making an attitude adjustment. She cites two examples of events she organized this year. In one case, a couple decided to go ahead with their wedding largely as planned, but observing bubbles and other requirements. By trying to maintain the structure of the original plan when some of the core elements – like dancing and table-to-table visiting — were not permitted, disappointment was perhaps inevitable. “I don’t think the bride and groom had much fun, which was unfortunate,” said Hyatt. “They just had something else that they imagined and, in hindsight, they probably should have waited.” By contrast, another couple downsized a large festivity to an intimate occasion at the Audain Art Museum, in Whistler, and it was a smash. “They were so happy because they found a great venue and everything turned out so well,” she said. Hyatt’s “tips and tricks”: Plan alternate activities. Since dancing and mingling usually play such a big part in an event, find ways to fill that time with things that allow people to participate without leaving their bubbles. Play games. Pit table against table. Focus on photos. Hiring a DJ is maybe less appropriate at a dance-free occasion. For one event, Hyatt booked Greg Neufeld, a finalist in two seasons of Canadian Idol and, she says, attendees were thrilled. “People were seated in their groups, but they could not stop raving about his music,” she said. Perhaps the most important factor is an added

Ben Reeder, marketing director of Backcountry Brewing, has been a little busy with renos to their facility to think too much about the staff holiday party. Social distancing has slashed his room’s capacity from 50 to 30. So they are adding space to the building, including an additional washroom, to have enough room to return to serving 50 customers. Still, whether it’s a staff party or a friends’ outing, he suggests mixing it up a bit. Do something outdoors like snowshoeing or skiing and then come indoors for an après celebration. Like Hyatt, Reeder recommends unconventional activities since moving around the room is verboten. “Colouring contest for adults, that could be funny,” he said. “You could do bingo, bingo works, everybody gets their own dauber. Just because you might not be entertaining at home as much as in years past, keep spirits up with elaborate or elegant seasonal decorations. Laura Murfitt, the owner of Day Sixteen Events, urges people to look for the silver lining. Smaller events invite more creativity and extravagance with the décor and the food and beverages. “You can personalize your event more, you can have nicer cocktails, signature cocktails, that you’ve had specially prepared,” she suggested. “You can have entertainment that you didn’t think you might be able to have. You’re going to be able to socialize with your guests on a more personal level because now there are fewer.”

Driving the long distance isn’t ideal with a young child. So this Christmas might be slower, closer to home, and more relaxed than any in memory.

Jessica Minnie, the owner of Petite Pearl Events, noticed something unexpected this year. Some newlyweds who might have been browbeaten by family into throwing a huge reception jumped at the opportunity to marry in small ceremonies more appropriate to their style. This Christmas might offer similar, unexpected blessings. In her family’s case, getting together with extended

“Just like those couples who are able to take advantage of this year having a smaller guest count, we’re kind of looking forward to a slower, more relaxed Christmas because it’s usually such a busy time of year,” she said. 

Braised Chuck Flats

Method:

Ingredients:

1lb Beef Chuck Flats 2 TBSP Ethical Table Maple-Espresso Rub* 4 TBSP Garlic Olive Oil 2 cups Carrots (diced) 2 cups Celery (diced) 2 cups White Onion (diced) 2 cups leeks (diced) 2 cups Parsnip (diced) 2 Garlic Heads (halved)

2. Mix 2 tablespoons of olive oil and maple rub together and rub the chuck flats.

1 L Yellowtail Jammy Red Roo WIne

3. Allow to marinade for 4hours MINIMUM.

2 L Beef Stock

4. Remove from marinade and blot dry.

1 cup Red Wine Vinegar

5. Season the chuck flats with salt and pepper. Heat up a rondeau pot on medium-high heat.

4 Fresh Thyme Sprigs

6. When the pot is slightly smoking, add oil and sear chuck flats on ALL sides. Remove meat and set aside.

2 Fresh Oregano

7. Add 2 more tablespoons of garlic oil to the pot. Add carrots, leeks, onions, celery, parsnips, and garlic. Sweat the vegetables then continue to cook until caramelized.

2 TBSP Black Peppercorns

1. Cut chuck flats into 7-8oz portions.

2 Bay Leaf

8. Add tomato paste, maple rub, and cook until fragrant and takes on a copper color.

2 tsp Coriander Seeds

9. Deglaze the pot with the red wine vinegar and reduce until almost dry.

4 TBSP Tomato Paste

10. Add the red wine and reduce by 1/3. 11. Add the beef stock stir well and bring to a simmer.

1 TBSP Ethical Table Maple-Espresso Rub*

12. Turn off heat and place chuck flats back in the braising liquid.

13. Cover with lid and place in oven at 300 degrees degrees for 4 hours

14. The beef is cooked when it can pull apart with a fork. It is overcooked if it simply just falls apart in the liquid. Shelf Life: 4 days

Ingredients:

1 (750-ml.) bottle red wine 1 orange, sliced into rounds, plus more for garnish 6 whole cloves 3 cinnamon sticks, plus more for garnish 3 star anise 1/4 cup honey 1/2 cup brandy

Method:

In a medium saucepan over medium heat, combine all ingredients. Bring to a simmer not a boil, then reduce heat to medium-low. Simmer gently over low heat for 10 minutes. Serve warm and garnish with more citrus slices and cinnamon sticks.

In a year that has been a struggle for so many, retailers are hoping that the holiday shopping season will be a rare bright spot. But business owners and other officials say that depends on the choices consumers make in the coming weeks.

K

eenan Yang, assistant manager of the Funky Monkey Boutique, says that about 30% of the year’s sales come in the holiday shopping period. In a year that has seen businesses shut their doors for weeks and rely on government supports to stay afloat, that places great expectations on a merry Christmas shopping season. Her store is stocking up on small- and medium-sized gifts, most in the $30 to $50 range, things like comfy socks, kitchen gadgets and mugs with inspirational and uplifting messages. “People like something special,” Yang said. While the store does not offer online shopping, they do mobilize digital platforms for raising awareness of their stock, posting unique items on Facebook and Instagram. They are also offering gift certificates.

Across the street at Anna’s Interiors, owner Jake Mathauser hopes that folks are cozying up at home and maybe looking for ways to enhance their surroundings. With most people opting against snowbird getaways, sticking close to the hearth might include shopping locally for some items to make

staying home more attractive. A big chunk of his clientele these days are furnishing new condos. With the ever-growing population of Squamish, Mathauser is in a good place to provide a lot of the things new homeowners need. But he does make an effort every year to bring in festive holiday décor, too.

Louise Walker, executive director of the Squamish Chamber of Commerce, is reminding consumers how important it is to support local businesses. For every $100 spent at a local shop, she said, $63 is reinvested into the community.

Like everything else, though, even the routine process of stocking seasonal items was knocked off the rails by COVID. He would normally travel to gift shows throughout the year, surveying the wares from an array of providers. Those were cancelled. Travelling sales reps who make frequent visits to stores like his have also scaled back their routines.

“That compares to $14 for multinationals,” she said. “Local businesses are more likely to use local suppliers, they’re more likely to support local charities, sponsor local hockey teams, and the owners live here. You’re not supporting a company with its headquarters in New York. You’re supporting your Squamish neighbours.”

Nevertheless, his customers will know it’s Christmas and he hopes that some of the cash people save on cancelled Hawaiian or Palm Springs getaways will go into home improvements.

A couple of doors down, at Empire of Dirt, owner Laura Bradley is thinking of some innovative ways to get customers in the doors. She shares the space with two other retailers — Hearth and Mantel, in the back of the sprawling 3,000-square-foot space, and the Watch Bar in the front — and together the three entrepreneurs are plotting a successful holiday shopping season. One idea might be a personalized, after-hours shopping experience with a glass of wine in hand. They are also offering gift cards and are just ramping up to move some of their products onto online sales platforms.

“It’s a great way to give quality gifts, to give rewards to staff or to give gifts to teachers,” said Walker.

Like retailers all across the country, these Squamish small businesses face uphill challenges. A survey by the B.C. Chamber of Commerce indicates that 65% of businesses in the province have remained afloat only because of government support programs. Fewer than three in 10 believe they will return to anything like normal business when those supports wind down. Scary numbers like these are why organizations like the Squamish Chamber of Commerce and

the Downtown Squamish Business Improvement Association are mobilizing to help local retailers.

Kerry Neil, executive director of the Downtown Squamish Business Improvement Association, is urging her members to innovate. “Now is a time to dig deep into your business and look at what you can offer, reward programs, flexibility, discounts, gift cards, online services,” she said. The BIA is working on a range of public awareness campaigns, special holiday events and possibly an altered Christmas market. She wants customers to be confident about shopping locally. “We would like to reassure locals that our downtown businesses have gone above and beyond to ensure their safety. Each business has reopened with the customer and their staff’s safety at the forefront,” she said. “The businesses need support and buying local is more important for our town than ever before.” 
