Prime your tastebuds, hold your nose and dig out your Nordic sweater: it’s lutfisk season in Minnesota again. (For you Norwegian readers, that’s lu-te-fisk.) The beloved Scandinavian delicacy will be served up fragrant and steaming in church basements and dining halls everywhere from now till January. Diehards (or lye-hards, as the
case may be) will have lots of chances to feast on the jiggling whitefish before the season ends. Some of them will eat lutfisk every chance they get, according to Julie Erickson, public relations coordinator at Gammelgården Museum in Scandia. (Yah, it’s lut-fisk for you Swedes.) “The people who come usually don’t just pick one lutfisk dinner to go to,” she remarked. “They like to go to all of them.” Gammelgården will hold its popular
Lutfisk and Meatball Dinner Thursday, Nov. 19 at Elim Lutheran Church, Scandia. Tickets are $18 per person and sold by seating times: 11:30 a.m., 1, 2:30, 4 and 5:30 p.m. Proceeds of the fundraiser go toward Gammelgården Museum building restoration and renovation, which is constant, according to Erickson. Last year, the dinner drew 500 people, she said. “We always cook for 600 — you never want to turn anyone away from lutfisk.”
The subject of folklore and more Ole and Lena jokes than you can shake a fork at, lutfisk is dried whitefish, usually cod. It’s soaked for several days in water, then in lye. That’s right, the caustic substance used, in other forms, to make soap and to clean ovens. Not to worry, another four to six days’ soak in cold water and a smothering of salt makes the formless fish edible and ready to be cooked. SEE LUTFISK, PAGE 10
