1. Place the potatoes and onion into a bowl, and stir in eggs, salt and flour as needed to make the mixture hold together. With wet hands, scoop up about 1⁄3 cup of the mixture per patty, and form into flat round or oval shapes.

2. Heat the vegetable oil in a large skillet over medium heat until it shimmers, and gently place the patties into the hot oil. Fry until the bottoms are golden brown and crisp, 5 to 8 minutes, then flip with a spatula and fry the other side until golden.

3. Line a colander or strainer with 2 paper towels, and drain the cooked latkes in the colander. Serve hot.

RECIPE

Maple Bacon-Wrapped Roast Turkey Breast SERVES 6 INGREDIENTS 3 lb. bone-in turkey breast, skin on ¼ cup (4 tbsp.) Kowalski's Unsalted Butter, room temperature 1 tbsp. finely minced fresh sage leaves - kosher salt and freshly ground Kowalski's Black Peppercorns, to taste ¼ cup Kowalski's Pure Maple Syrup 1 tbsp. hot water 8 strips Kowalski's Applewood Smoked Bacon

DIRECTIONS Place breast on a rack in a roasting pan, rib-side down; allow it to dry and come to room temperature (about 1 hr.). In a small mixing bowl, mix butter and sage until well combined; season with salt and pepper. Liberally sprinkle the breast on all sides with salt and pepper. Slide your fingers under the skin to lift it away from the meat; use your hands to smear a thin layer of butter under and over the skin. In a small bowl, mix together syrup and hot water; brush a thin layer evenly onto turkey and reserve the remainder for basting. Roast turkey in a preheated 350° oven, basting with syrup mixture every 15 min. for 1 hr. Remove turkey from the oven; wrap overlapping strips of bacon over and around the breast. Return to the oven for about 30 min., basting with syrup every 15 min. If the bacon is done or the turkey gets too dark before it reaches temperature, shield it with foil and continue cooking until turkey registers an internal temperature of 160°. Loosely cover with foil and let rest for 10-15 min. before carving (temperature will increase to 165° as the turkey stands).

Kowalski’s dinners making it easy to stay home for the holidays

athering for holiday celebrations will be particularly meaningful in a year as challenging as 2020.

Amid the ongoing spread of COVID-19, many families will make their holiday a little smaller this year to keep everyone safe and healthy. Kowalski’s Market in White Bear Lake can help make that a little easier this year.

“We’re used to potlucks; large gatherings where everybody brings something,” said Rachael Perron, the culinary and branding director at Kowalski’s.

With fewer guests, you don’t

have to worry about feeding a small army, but you might also miss a few of your seasonal favorites. That’s where Kowalski’s can lend a helping hand.

“There’s no reason you have to make it all; you can actually pick up some things and not stress out about making everything from scratch,” Perron said.

For instance, pumpkin pie from the Kowalski’s bakery is basically the same recipe she makes at home.

“I can save my time for making

something more complicated. It’s worth it just to save yourself the time. You should be enjoying yourself.”

If you want to save as much time as possible, Kowalski’s is once again offering its popular ready-made holiday dinner packages.

“Everything in it is heat and eat, but the turkey is fully cooked,” Perron said. You’ll also get a wide array of holiday favorites: mashed potatoes, stuffing, dinner rolls, cranberry sauce, green beans and more.

The options are flexible—you can get just the sides or just the turkey on its own, and the amount of food varies based on how many people you need to feed. New this year, customers have the option to order an ovenready raw turkey. The bird comes dressed and rubbed with butter, salt, and pepper along with a roasting bag and pan. This is a great option for people who want the experience of cooking the centerpiece of the meal at home without the mess of dressing and preparing the bird yourself.

The holiday meal packages can be ordered by phone or on the Kowalski’s website, and are available for in-store pickup, curbside pickup, or delivery during limited hours.

Although there’s a lot of tradition behind holiday foods, Perron also encouraged people to consider trying something new this year. With so much time spent isolating at home, many people have explored cooking and baking as new hobbies this year.

“For some people, holiday foods are their favorites,” she said. “But there are some people who could take it or leave it. Make what you want to make; don’t worry so much about having to make those traditional dishes if that’s not your thing.”

As a professional chef, traditional holiday foods are already passé in Perron’s household by the time the holidays roll around. So she and her family have a new tradition: Mexican food instead.

“There are no rules.

Enjoy the holiday,” Perron said. “Make those dishes

that are special to you. If you want a pan of stuffing with some enchiladas next to it, do what you want to do.”

Whatever your choice, Kowalski’s can supply anything you’re looking for.

For optimum safety, everything is available for pickup at Kowalski’s, which means that you don’t have to go inside and stand in the long holiday lines, which will be even longer this year with social distancing practices.

Perron recommends thinking ahead, getting your ingredients before the week, and making pickup orders to reduce contact.

Make a list and send only one member of the household to shop if you’re going in person. Visit the store during early or late hours to avoid the busiest times.

“Unfortunately, that’s just the way it’s going to be this year,” Perron said. “We’re going to do our best to keep the store safe and keep people socially distanced.

A plan for when and how you’re going to shop is going to be better for everybody.”

Maybe you’re cooking for fewer people, or maybe you’re ready to explore something a little outside the norm this holiday. For a new take on turkey, try the Kowalski’s recipe for this succulent mapleglazed, bacon-wrapped turkey breast. “It’s an easy dish and impressive at the same time,” Perron said.

As far as dessert goes, she recommends a bourbon pecan pie, which complements the other autumn harvest flavors with sweet, gooey richness. This may be the year to try something new, or to rely on old favorites.

Whatever your fancy, Kowalski’s is the perfect place to find your holiday meal this season.
