I've taught two service learning courses at Unity College titled "The Environmental Citizen" where we partnered with a local volunteer food pantry and built a root cellar, complete with a concrete roof and smart ventilation controls that draw in cool fall nighttime air to ready the cellar for fall crops earlier. The locally grown produce is stored and later used in campus meals and distributed to food-insecure families. Dana Meadows wrote an editorial suggesting the root cellar could make the 8th Sustainability Wonder of the world -- my course drew on these insights. Along with adjunct teaching at Unity College in Environmental Sustainability, I've designed and been building a near passive house for our family along with help from friends. The majority of the wood has been milled on-site. I could also send photos and a bit more detail. Other notable work has been authoring a chapter for a book on simplicity in Australia.
